Nothing. Except that they were birthday cakes from sister to sister. The one with flowers was ordered by a customer. These flowers were manually rolled and shaped. The process was tedious. I had wanted to get a sugarcraft gun but it was quite expensive. Took me quite awhile to make them but the result was satisfactory. I took 1 and 1/2 hour to bake and decorate. The speed is relative to the design as well. I am not sure if anyone is a fan of Kogepan (burnt bread-man) but both me and my sis are. I still possess handphone lanyards, handphone charms, stuffed toy, pencil case, etc., all well-kept and unused. Earlier this year, I had promised her to bake her one. What's worse was I had orders that day. Good thing was that Kogepan-san's lines were simple and straight forward. Here's a brief introduction about Kogepan. Kogepan always has this sad and empty look. As he was slightly burnt in the oven, it was left on the shelf. He drowns his sorrow in milk. But this Kogepan should feel happy. Do bakers bake their own cakes on their birthday? Not this one. I had an almost cake-free day, except that I had to bake in the evening for an order. As for birthday presents, I received a recipe book which 2 of my sis S's recipes were in it, a 'voucher' to get a haircut which I badly need, some recipes books from friends and a fridge. I picked practicality in place of a jewellery piece. It was a tie, between a new mixer and a fridge. I figured I could wait for the next sale season for the mixer, weheras the fridge was already offered on sale. Thank you for all the birthday wishes I received on mobile, emails and Facebook. I appreciate the reminder of me approaching 40 in another 5 years' time.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Well now, back to this blog post where a fortunate boy whose loving parents ordered 2 airplane cakes for his birthday celebration. Kids these days are so lucky. Often, they get 2 cakes for their birthdays. With the permission of the loving mummy, I am allowed to post her boys' pic on my blog. The control tower and plane were assembled on site. They decorated their home with a departure/arrival hall. This is the pilot and his co-pilot, complete with uniform. Was it, 'Oh shit, how am I going to pull this through?' or was it, 'Wow, thanks for having faith in me.' Making one for a friend and making one for a client is a totally different experience. For the former, I was all relaxed. However, as time goes by, knowing more about fondant, reading all the horror stories about how the cake could go wrong, I am all nerves.&lt;br /&gt;&lt;br /&gt;I made plans a month before the wedding to learn how to make gumpaste roses from a book. Sad to say, with my clumsy fingers, they were not realistic enough thus not up to par. I had to scrap the idea of using roses. The thing about this client was that she left the design all up to me, as long as the cake was purple and that she wanted a traditional wedding couple topper. There's good and bad about this. The good thing was that I had the liberty to do whatever I want with the cake. The bad thing was that; it was not my cake afterall. Without understanding what she wants, I could never know how she had envisioned her cake to be. So upon seeing the cake, we could be devastated or delighted. So there wasn't really a place where I can set up the cake against a nice backdrop. It was drizzling then but was glad that my homemade marshmallow fondant decided to behave and didn't sweat. I had a mild scare while transporting the cake though. Despite my warning to the cab driver to drive slow, he made a sharp swerve. I thought I heard a small 'thud' at the back. Fortunately, the cake was unharmed. I was told by the bride later that the relatives thought that the cake was a dummy. Honestly, when I married, I didn't have a wedding cake. I changed the destination to 'Mama's House'. It just made the walking trip a little more pleasant and fun. Now it's Ah Boy's turn to sing it. I am blessed with 2 lovely kids who play on their own, as long as I am within their sight. Though occasionally, they like to fiddle with my sugar dough and tools, basically they understand that it is not 'Okay' to touch the decorated cake. Better to be safe than sorry. I thoroughly enjoyed decorating this cake. It is more time consuming but the result was better than what I expected. I almost forgot the frills on Dora's socks. The only thing was; I couldn't get Dora's songs out of my head while making this. It got a little irritating after a while. Now typing this post, the songs came back again. I do not have to bake and consume 2 cakes. But when it comes to decorating the cake, there is no such thing as a theme. You see, what has Ben 10 Alien Force Omnitrix got to do with Thomas the Tank Engine? Apparently, she forgot that she had a Ben 10 Alien Force cake to celebrate at her kindergarten. I told her she actually celebrated twice. She was convinced only after I placed the Omnitrix on the cake. Kids. Speaking of this; I wish to thank &lt;a href="http://stores.shop.ebay.com/Little-Fun-Store__W0QQ_armrsZ1"&gt;Little Fun Store&lt;/a&gt; from Ebay. I placed order for stuffs needed for Ah Girl's birthday celecbration at the school at the very last minute. Thanks to her, I got my order really quick, in time for the party. The poor boy burnt his finger. Brave boy didn't cry, just clenched his fingers together. I had to pry his fingers open to apply ointment. Till now, whenever he sees a candle or saw these pics, he will say 'hot hot'. Silly boy also got a 'Harry Potter' scratch between his eyebrows before his birthday.&lt;br /&gt;&lt;br /&gt;Comparing last year's pictures, they are growing up so fast. One sunday, my kids happened to be napping. I do weird stuffs like holding their hands, kiss their palms/fingers, smell their hair, planting kisses on their cheeks while they are asleep. Last month, I received 3 Kitty orders in a row. I was really tempted to get a Hello Kitty baking pan for the order. However, I found out that it was too small. So I did this without the mould. Was glad that it turned out well. Could it be since my first taste of &lt;a href="http://allthatmatters2rei.blogspot.com/2009/01/pineapple-tarts.html"&gt;pineapple tarts&lt;/a&gt;? Not so recently (due to my back logs mostly), McDonalds has this 'Cinnamon Melts' added to their menu. It kick start my cinnamon obsession. I could really eat cinnamon rolls, cinnamon melts everyday but as a 'sensible' adult, we all know it is unhealthy. So another way to satiate this addiction is to find an healthier alternative. Moreover, they told me McD is not selling cinnamon melts anymore. &lt;br /&gt;&lt;br /&gt;I want a simple recipe as I do not want to get through step 1 to 10 before I can have my fix every time the cravings set in. I searched and settled on this recipe which I found from &lt;a href="http://www.taste.com.au/recipes/10436/basic+cinnamon+apple+muffins"&gt;Taste.com.au&lt;/a&gt;. This recipe is a keeper. I wouldn't change anything except I added some grounded nutmeg (my preference) and topped it with some cinnamon flavoured streusels for the extra mile.&lt;br /&gt;&lt;br /&gt;&lt;u&gt;&lt;b&gt;Basic cinnamon apple muffins&lt;/b&gt;&lt;/u&gt;&lt;br /&gt;&lt;b&gt;Ingredients&lt;/b&gt;&lt;br /&gt;300g Plain Flour&lt;br /&gt;1 Tbsp Baking Powder&lt;br /&gt;2 Tsp Ground Cinnamon&lt;br /&gt;3/4 Tsp Ground Nutmeg&lt;br /&gt;150g Brown Sugar&lt;br /&gt;&lt;br /&gt;2 medium Granny Smith apples, cored, peeled, chopped&lt;br /&gt;120g Raisins&lt;br /&gt;&lt;br /&gt;125g Butter, melted and cooled&lt;br /&gt;2 eggs, lightly beaten&lt;br /&gt;185g milk&lt;br /&gt;&lt;br /&gt;&lt;b&gt;For the topping: &lt;/b&gt;&lt;br /&gt;60g Plain Flour &lt;br /&gt;2 Tbsp Brown Sugar &lt;br /&gt;1/2 Tsp Ground Cinnamon &lt;br /&gt;30g cold Butter, cut into small pieces &lt;br /&gt;&lt;br /&gt;&lt;b&gt;Method&lt;/b&gt;&lt;br /&gt;1) To prepare the toppings, in a bowl, add all dry ingredients and rub in butter till it resembles breadcrumbs. Alternatively, you can use a fork to break up the butter for you. Chill in the fridge for later use.&lt;br /&gt;&lt;br /&gt;2) Preheat oven to 170°C. In a bowl, add flour, baking powder, cinnamon powder, nutmeg powder and brown sugar. Use a whisk to whisk the dry ingredients together.&lt;br /&gt;&lt;br /&gt;3) Throw in apples and raisins, mix well.&lt;br /&gt;&lt;br /&gt;4) In a measuring cup, whisk milk, eggs and melted butter together. Pour the wet ingredients to the dry ingredients. Stir with a whisk, spoon or fork till just combined.the two.&lt;br /&gt;Add the milk mixture to the flour mixture and stir with a large metal spoon until just combined. It is important that the ingredients are only just combined. Do not overmix.&lt;br /&gt;&lt;br /&gt;5) Spoon the mixture into muffin paper cups. Top with some streusels prepared earlier. I didn't do anything dramatic for the occassion. Kitchen is closed today. Just a quiet day spent with my kids. I enjoyed watching them sleep, sneak a few kisses here and there. Holding them and playing games together; contentment and bliss. While we curse and cuss about the discontentment we feel, everything from government, policies, ERP to price hikes in hawker centres and our Kopi-Os; take a moment to count our blessings as a Singaporean. I am thankful for the stability and security it offers to my kids and that each child has a chance to basic education. Equal opportunities for men and women who are willing to work for it. Clean water and electricity is accessible to every home. Sure, it is not the most perfect place in the world but it is the only home I know. Happy Birthday Singapore and thank you for all things that I have always taken for granted. I didn't bake anything special, just a couple of birthday cakes I did for the past 2 months (I think). I have 5 or 6 virtual farms, imagine that! But really, it's my real plants that needed tending. They are all not growing well due to my neglect. I hope I will be able to find time this weekend to have them fixed. That's after spending some baking time with Ah Girl. She's been sulking about not being able to bake cookies with me.&lt;br /&gt;&lt;br /&gt;Anyhow, I would like to share this lovely recipe which I tried out at &lt;a href="http://www.kitchencapers.net/phpbb/viewtopic.php?t=9298&amp;amp;highlight=pancakes"&gt;Kitchen Capers&lt;/a&gt;, provided by Carrie. The recipe yields really soft and fluffy pancakes. I have had my share of tough pancakes, some with strong soda bicarbonate aftertaste. These are really good! Some compared them with MacDonald's Hotcakes. I'm not sure as I haven't had Hotcakes for quite some time. But, homemade is always best. You know what goes into them and you can pair them up with stuffs you like. I used the &lt;a href="http://allthatmatters2rei.blogspot.com/2009/05/basic-macaron-with-salted-caramel.html"&gt;Salted Caramel&lt;/a&gt; which I made previously and bananas. My kids ate them with honey. I believe they will taste great with blueberries too; they are in now.&lt;br /&gt;&lt;br /&gt;I re-shuffled the sequence of the ingredients slightly.&lt;br /&gt;&lt;br /&gt;&lt;u&gt;&lt;strong&gt;Fluffy Pancakes&lt;/strong&gt;&lt;/u&gt;&lt;br /&gt;&lt;strong&gt;Ingredient &lt;/strong&gt;&lt;br /&gt;100g Self Raising Flour, sifted&lt;br /&gt;A pinch of salt&lt;br /&gt;&lt;br /&gt;75ml milk&lt;br /&gt;2 Egg Yollks&lt;br /&gt;1tbsp vegetable oil&lt;br /&gt;1/2 tsp vanilla essence&lt;br /&gt;&lt;br /&gt;2Egg Whites&lt;br /&gt;2 Tbsp caster sugar&lt;br /&gt;&lt;br /&gt;Some butter for greasing&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Method &lt;/strong&gt;&lt;br /&gt;1) In a mixing bowl, mix sifted flour and salt together. If preferred, you can whisk the flour in the bowl instead of sifting.&lt;br /&gt;&lt;br /&gt;2) Using a measuring cup, measure milk, add egg yolks, vanilla essence and oil. Stir well. Make a well in the center of flour, pour in the mixture and stir into a smooth batter with a whisk.&lt;br /&gt;&lt;br /&gt;3) In another bowl, whisk egg white with sugar till stiff. Stir in 1/4 of the egg whites to the batter to lighten it, then fold in the remaining egg white carefully till incorporated.&lt;br /&gt;&lt;br /&gt;4) Heat up a non-stick frying pan (low heat), grease lightly with butter. Drop a small ladle of batter (depending how big you want your pancakes to be) in the pan. Flip the pancake only when bubbles appear. Fry till golden brown. Serve hot with fruits, jams, honey, maple syrup etc.&lt;br /&gt;&lt;br /&gt;*Note : Batter should be thick.&lt;br /&gt;&lt;br /&gt;**Note : Recommend to double the recipe. I made this for my dad's doctor, who is allergic to chocolate. Strange as it seems, but this was the cake that movitated me to make macarons. Mainly because I know I cannot use chocolate transfers to conceal the flaws. I used a cake ring this time round and had a hard time removing it. I was too afraid to damage the 4 corners. The cake could have ended up an Octogon if things didn't work out. You have wait for the mousse to set before laying the next cake layer. Then after that you have to chill the cake for at least 3 hours before you can safely remove the ring. I used &lt;a href="http://wlteef.blogspot.com/2005/03/mango-mousse-cake.html"&gt;Florence's recipe&lt;/a&gt; for the mango mousse but my own sponge cake recipe for the cake base.&lt;br /&gt;&lt;br /&gt;Glad the cake turned out well and professional-like. If not I would be too shy to give it away. It is comforting to know that doc and his staff enjoyed the cake while I, as always, enjoyed the process, no matter how frustrating it might be. I know, I'm weird and have a penchant to make my life more complicated than it already is.&lt;br /&gt;&lt;br /&gt;&lt;u&gt;&lt;strong&gt;Mango Mousse Cake&lt;/strong&gt;&lt;/u&gt;&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Sponge Cake Base :&lt;/strong&gt;&lt;br /&gt;&lt;strong&gt;(A)&lt;/strong&gt;&lt;br /&gt;2 Egg Whites&lt;br /&gt;40g Fine Sugar&lt;br /&gt;1/4 Tsp cream of tartar&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;(B)&lt;/strong&gt;&lt;br /&gt;2 Egg Yolks&lt;br /&gt;30g Fine Sugar&lt;br /&gt;1/2 Tsp Vanilla Essence&lt;br /&gt;50g Milk&lt;br /&gt;24g Corn Oil&lt;br /&gt;&lt;br /&gt;68g cake flour&lt;br /&gt;1/4 Tsp bicarbonate of soda&lt;br /&gt;&lt;br /&gt;*Sift together&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Method&lt;/strong&gt;&lt;br /&gt;1) Prepare and line a 7 x 7 inch baking tin. In a clean bowl, whisk egg white and sugar. Add cream of tartar and whisk till peak.&lt;br /&gt;&lt;br /&gt;2) In another bowl, whisk egg yolks, sugar till pale and fluffy.&lt;br /&gt;&lt;br /&gt;3) Add vanilla essence, milk and melted butter to egg yolk mixture then fold in sifted flour mixture.&lt;br /&gt;&lt;br /&gt;4) Fold in egg yolk mixture into egg white mixture.&lt;br /&gt;&lt;br /&gt;5) Bake at 150°C for around 30 to 35 minutes or till skewer comes clean. Let the cake cool and slice horizontally 2 slices and trim them into 6.5 x 6.5 inch square.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Mango Mousse :&lt;/strong&gt;&lt;br /&gt;17g Gelatine Powder&lt;br /&gt;60g Hot Water&lt;br /&gt;&lt;br /&gt;350g Whipping Cream&lt;br /&gt;3 Tbsp Icing Sugar&lt;br /&gt;&lt;br /&gt;300g Mango Puree (if regrigerated, bring to room temperature)&lt;br /&gt;1Tbsp Rum&lt;br /&gt;&lt;br /&gt;200g to 220g Cubed Mango&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Mango puree topping:&lt;/strong&gt;&lt;br /&gt;150g mango puree (bring to room temperature)&lt;br /&gt;1 Tbsp gelatin&lt;br /&gt;4-1/2 Tbsp boiling water&lt;br /&gt;&lt;br /&gt;Slice/Cubed fruits &lt;em&gt;*optional&lt;/em&gt;&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Method &lt;/strong&gt;&lt;br /&gt;1) In a mixing bowl, whip whipping cream with icing sugar to mousse state. Refrigerate to chill.&lt;br /&gt;&lt;br /&gt;2) In a small bowl, dissolve gelatine powder in hot water. When the gelatine powder is fully dissolved, add to mango puree. Add rum to the mixture. Mix well.&lt;br /&gt;&lt;br /&gt;3) Add the mango mixture to whipped cream. Mix well till incorporated.&lt;br /&gt;&lt;br /&gt;4) Use a 7 x 7 inch cake ring, place a layer of cake and pour in mango mousse, or use a large piping tip to pipe the mixture. Do take note of the corners. Add mango cubes and cover them with some mousse. Let it slighlty set for about 10 minutes in the fridge.&lt;br /&gt;&lt;br /&gt;5) Lay another cake layer and pour the remaining mousse. Let it set for 30 to 45 minutes in the fridge.&lt;br /&gt;&lt;br /&gt;6) Meanwhile,dissolve gelatine in hot water for mango puree topping. Mix in mango puree. Wait till the mousse is set and the topping is cooled, arrange sliced fruits, if using, pour in the topping carefully. Let the cake chill for at least 3 hours before removing the cake ring and decorate with macaroons (optional, recipe found &lt;a href="http://allthatmatters2rei.blogspot.com/2009/04/green-tea-macarons.html"&gt;here&lt;/a&gt; and &lt;a href="http://allthatmatters2rei.blogspot.com/2009/05/basic-macaron-with-salted-caramel.html"&gt;here&lt;/a&gt;) or chocolate shards.&lt;br /&gt;&lt;br /&gt;*Note : If you pour a little of the mango puree topping on the fruits, you do not have to glaze them again.&lt;br /&gt;&lt;br /&gt;I re-post this entry for those who have requested for the recipe. I did the design 3 times. I scrapped the cream and re-did and re-did till I think I got it right. By that time, I was near to tears already. I wanted to pull my hair out with my gloved hands, sprawl on the floor and cry. But I cannot do that in front of my kids, of course. My friends said I was just being anal and a perfectionist. Maybe, but I know well enough to not disappoint or upset an Ultraman fan. He might decide to zap me with his super-humanoid-power. And Ethan, thank you for not adding an alien into the picture. I probably would have died there. Glad you and your friends enjoyed the cake. Your liking it, made my 'sufferings' insignificant. Recently, I have been seeing them alot in the advertisement and on T-shirts. Is the fad back or it didn't even fade. I don't know, I am out of touch. Only after I had kids did I revisit all those familiar cartoon/book characters I once knew so well during my childhood. Taking in orders does has its advantages, though it meant less sleep; it gives me the opportunity to attempt stuffs that I don't usually do. I do enjoy challenges. More than I would like to admit, it does get addictive. Espcially making those minute details. I particularly liked the teapot and candle. The characters were chosen by the birthday girl, I think. I thought it would be a wee bit odd if I were to put the characters on the cake without a theme. I do not understand their hate but to curse my kids are way off limits and uncalled for. Leave my family out of this. I mostly keep to myself and do not think I have offended or attacked anyone online. I don't think I am cocky in any ways. Apart from being busy and reply comments late, I think I am in line with blogger's etiquette. I hope the hostility will stop and please, whoever you are, channel your energy to do something useful. I do not know you and because of that, your words can't hurt me. Taking a break from it for now till I try the other methods, not in the near future though. My weight is an issue, as always. It is on a upward trend and it looks comfortable there, without any desire to come down. Not that I tried hard enough. I might start on a porridge diet and see if it will work. Been busy with work and orders lately. These are the times when I feel that it is easier to bake without having to blog about it. It would be nice if I could just post pictures without any text. Maybe it's writer's block or I have exhausted any brain cells I have left after work and unearthly hours baking session.&lt;br /&gt;&lt;br /&gt;Among those first and last batch of macarons which I bought, I liked the one with salted caramel. So I thought it would be good to experiment making my own. Besides using it for macarons, it can be eaten with pancakes, crepes, bananas and scones. I did a weird combo the other day. I spreaded caramel with Nutella on bread, which was quite good. Alternatively, you can scoop right out of the jar and eat it on its own. I did. It's no wonder my weight wouldn't come down.&lt;br /&gt;&lt;br /&gt;&lt;u&gt;&lt;strong&gt;Basic Macaron&lt;/strong&gt;&lt;/u&gt;&lt;br /&gt;&lt;strong&gt;Ingredients&lt;/strong&gt;&lt;br /&gt;50g Icing Sugar&lt;br /&gt;5g Cornflour&lt;br /&gt;&lt;br /&gt;*Sift together&lt;br /&gt;&lt;br /&gt;30g Finely Ground Almond&lt;br /&gt;&lt;br /&gt;35g Egg White (this time I used fresh egg white)&lt;br /&gt;30g Sugar&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Method&lt;/strong&gt;&lt;br /&gt;1) Prepare 2 11 x 14 inch baking tray, lined with silicon coated parchment paper (draw circles behind the parchment if required). Preheat oven to 160 degrees C.&lt;br /&gt;&lt;br /&gt;2) Add the ground almond to the icing sugar mixture, break up clumps if any.&lt;br /&gt;&lt;br /&gt;3 In another clean and dry bowl, whisk the egg white till frothy. Add in sugar in 2 additions and whisk till soft peak.&lt;br /&gt;&lt;br /&gt;4) Add in the ground almond mixture into whisked egg whites in 2 addition, fold till incorporated. Lift the spatula to see if it falls ribbon-like.&lt;br /&gt;&lt;br /&gt;5) Load the batter into a piping bag with round tip. Pipe into circles. Bake for about 5 to 8 minutes. The feet will start to form. Lower down the temperature to 110 degrees and further bake for another 15 minutes. Set aside to cool and remove from paper.&lt;br /&gt;&lt;br /&gt;6) Pair them up and sandwich with *salted caramel, buttercream or ganache. Refrigerate before serving.&lt;br /&gt;&lt;br /&gt;I have gotten the recipe of Salted Caramel from a reliable source, &lt;a href="http://tartelette.blogspot.com/2007/07/salted-butter-caramel-sauce-and-banana.html"&gt;Tartelette&lt;/a&gt;. I am pretty sure those who wanted to attempt making macarons visited her blog at least once. I can't say I followed her blog closely as I didn't have time to blog hop too much these days, but I do pop by once in a while to spy. Her creations are just incredible. It made me realise that I still have a long way to go and wonder if I have the stamina to go on.&lt;br /&gt;&lt;br /&gt;&lt;u&gt;&lt;strong&gt;Salted Caramel&lt;/strong&gt;&lt;/u&gt;&lt;br /&gt;&lt;strong&gt;Ingredients&lt;/strong&gt;&lt;br /&gt;240g Sugar&lt;br /&gt;80g Water&lt;br /&gt;115g Salted Butter&lt;br /&gt;150g Whipping Cream&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Method&lt;br /&gt;&lt;/strong&gt;1) In a saucepan combine the sugar and water and heat over low heat. Add butter when sugar is dissolved.&lt;br /&gt;&lt;br /&gt;2) Brint to a boil and cook till it reaches a **golden caramel color (not too dark).&lt;br /&gt;&lt;br /&gt;3) Remove from the heat and add whipping cream. At this point, the mixture will splatter. Wear a protective gear if you must. Whisk to combine and return to low heat. Bring to a boil and let it cook for 10 minutes till it reaches a creamy, ***flowing consistency. Pour into a jar to store.&lt;br /&gt;&lt;br /&gt;*Note : I sprinkled some sea salt on the caramel before sandwiching the macarons together.&lt;br /&gt;&lt;br /&gt;**Note : Do not cook till the colour becomes too dark, the mixture will continue to cook even after you remove from heat. I burnt my first batch.&lt;br /&gt;&lt;br /&gt;***Note : The caramel shouldn't cook till too thick. After cooling to room temperature, it will set. If it is cooked too long, it will set into a very oily butterscotch candy. I declared a disclaimer to mom; if I can't get it right, I would stick something else on the cake. Fortunately, the 'preciooouussss~~' were co-operative. I managed to nail it, twice in a row. These are the leftovers after assembling the cake. I had some &lt;a href="http://allthatmatters2rei.blogspot.com/2008/08/lemon-curd.html"&gt;lemon curd&lt;/a&gt; which I made for my scones, so I use it for these macarons. The tangy taste of the curd balances the sweetness rather well. This is the second airplane cake I have made. I modelled this with reference to Ah Boy's toy, thus the plane looked a tad fat. This was a 1kg chocolate mousse cake so the plane was smaller. I encountered some problem attaching the wings and rudder. I wanted to reduce the thickness of the ramp but it turned out not being able to support the plane's weight. I made the plane's wheels but that too, collapsed. So I had to choose between aesthetic and physics. Personally, I feel that all bakers, at some point of time, will take on the challenge of making this tempermental dessert. For me, the push factor was the price. Recently, I bought 4 macarons at Canelé. I should have stopped myself when I didn't see any price tag on them. They cost me $9.80! I just couldn't take the blow and felt like crying when I ate them. Even more heartache to come, I squashed 2 pieces during transport. I consoled myself, at least I get to taste some flavours which I might not be able to make at home, like Bergamot.&lt;br /&gt;&lt;br /&gt;These chocolate macarons were made in February, when I had plenty of egg whites to spare and too much time on hand. The reason for not posting earlier; I did not have the confidence. No confidence to admit that this might be a fluke or that I will be able to achieve those frilly feet next time round. Reason for posting this now? Recently, I revisited macarons twice (for decorating purposes), for a cake I made for another doctor. Having succeeded 3 times with the same recipe, I would say that this recipe and method is reliable and would love to share it.&lt;br /&gt;&lt;br /&gt;The following recipe and method is adapted from Bernice of &lt;a href="http://bakingjourney.wordpress.com/2007/10/27/secret-no/"&gt;Baking Journey&lt;/a&gt;. I find her methods easy and debunked some of the theories which I read extensively online. Some recipes asked specifically for how many strokes of folding. To be honest, I lost count of the strokes after a while. Some asked for the whipped egg whites to be pressed against the bowl (Don't!). Some recipes asked to wait till a layer skin to form, I lack the patience. Once something is ready on the baking tray, my instinct will ask me to pop it into the oven quick. According to Bernice, waiting for the skin to form will cause cracks. Some are using Italian Meringue and Swiss Meringue method, that I would love to try out some day as it was said that it would yield a more stable batter. But for now, we go French.&lt;br /&gt;&lt;br /&gt;&lt;u&gt;&lt;b&gt;Chocolate Macaron&lt;/b&gt;&lt;/u&gt;&lt;br /&gt;&lt;b&gt;Ingredients&lt;/b&gt;&lt;br /&gt;50g Icing Sugar&lt;br /&gt;15g Cocoa Powder&lt;br /&gt;&lt;br /&gt;*Sift together&lt;br /&gt;&lt;br /&gt;25g Finely Ground Almond&lt;br /&gt;&lt;br /&gt;35g Egg White (about 1 egg white, I used my stash, which I froze and thawed)&lt;br /&gt;30g Sugar&lt;br /&gt;&lt;br /&gt;&lt;b&gt;Method&lt;/b&gt;&lt;br /&gt;1) Prepare 2 11 x 14 inch baking tray, lined with silicon coated parchment paper (draw circles behind the parchment if required). Preheat oven to 160 degrees C.&lt;br /&gt;&lt;br /&gt;2) Add the ground almond to the icing sugar mixture, break up clumps if any.&lt;br /&gt;&lt;br /&gt;3) In another clean and dry bowl, whisk the egg white till frothy. Add in sugar in 2 additions and whisk till soft peak.&lt;br /&gt;&lt;br /&gt;4) Add in the ground almond mixture into whisked egg whites in 2 addition, fold till incorporated. Lift the spatula to see if it falls ribbon-like. The batter should look shiny, slightly thick, not runny. The tip of the dropped batter should flatten quite fast (hope you know what I mean).&lt;br /&gt;&lt;br /&gt;5) Load the batter into a piping bag with round tip. Pipe into circles. Bake for about 5 to 8 minutes. The feet will start to form. Lower down the temperature to 110 degrees and further bake for another 15 minutes. Set aside to cool and remove from paper.&lt;br /&gt;&lt;br /&gt;6) Pair them up and sandwich with Swiss meringue buttercream or dark chocolate ganache (I used both). For a Ben 10 fan, I think the ultimate gift is an Omnitrix. She did complained that I made her Omnitrix greasy. Okay, don't nag, I cleaned it up already. I am not very satisfied at the white stripes. I should have cut-and-joined. The cake was well received by the birthday boy and to the mommy, smiles on her kid's face is all that mattered.&lt;br /&gt;&lt;br /&gt;Ah Girl couldn't really tell the 2 Omnitrix apart when I presented to her in a box, I had to pass her the toy. Last night while I was fiddling with the pictures, she has finally settled on her birthday cake. Kids love Elmo, was it because of it's big smile? Red fluffy fur? Being cute and cuddly? I'm not sure. I never bonded with Elmo. I grew up watching the Muppets, liking Kermit, Animal and the Swedish Chef. For Sesame Street, I love Oscar the Grouch and Cookie Monster.&lt;br /&gt;&lt;br /&gt;Elmo is one of the most requested cake to date, besides Mahjong cupcakes. Instead of a 'flat' cake, this time round, I designed the eyes to be slightly higher, giving the cake more dimension. This cake is a 3 layered chocolate sponge cake with non dairy whipped cream with strawberries sandwiched between the layers. The nose and eyes are made of Marshmallow Fondant and the mouth and pupils are made of chocolate Marshmallow fondant.&lt;br /&gt;&lt;br /&gt;Don't get me wrong when I said Elmo is not my favourite character, I do enjoy making it. Achieving Elmo's red coat is always a challenge, no matter how many times I do it. But do trust me and take the plunge, they do taste great! My mom and sis (including me) love Isetan, especially when they have Hokkaido fair, Kyushu fair, etc. During these fairs, we will queue up (which I really dread doing, but will do when it comes to food) to buy specialties from that region. One of them is this Sweet Potato Cake that captured our hearts (my mom's, really).&lt;br /&gt;&lt;br /&gt;Although it is named 'cake', it is not a cake actually. It is usually sold during Hokkaido fair and the price is really steep. I mean, who would buy a piece of sweet potato for 10 bucks? Well, my mom did. So to deter her from ever doing this again, I decided to recreate it. All my mom had to do is to be my sweet potato supplier and I will do the rest. It is important to get good, big, Japanese sweet potatoes. Those with purple skin and bright yellow flesh. Those skinnies from Vietnam will not make the cut.&lt;br /&gt;&lt;br /&gt;&lt;u&gt;&lt;strong&gt;Japanese Sweet Potato Cake&lt;/strong&gt;&lt;/u&gt;&lt;br /&gt;&lt;strong&gt;Ingredients&lt;/strong&gt;&lt;br /&gt;500g to 550g Sweet Potatoes&lt;br /&gt;1 Egg Yolk&lt;br /&gt;1 Tbsp Honey or 10g Sugar&lt;br /&gt;15g Whipping Cream&lt;br /&gt;15g Butter, softened to room temperature&lt;br /&gt;&lt;br /&gt;1 Tbsp Honey for glazing (optional)&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Method&lt;/strong&gt;&lt;br /&gt;1. Wash and steam the sweet potatoes till soft. Left aside to cool.&lt;br /&gt;&lt;br /&gt;2. Slice cooked sweet potatoes in half and scoop out the centre, creating a cavity.&lt;br /&gt;&lt;br /&gt;3. Mash the flesh through a mesh. Using a hand whisk, whisk in all ingredients till well mixed.&lt;br /&gt;&lt;br /&gt;4. Spoon the mixture back into the cavity. Bake them at 180 degree C for 10 minutes or till browned. If decided to glaze; glaze with honey just before baking. Bake for about 4 or 5 minutes, remove from oven, glaze again. The doc painstakingly took the trouble and time to explain the surgical procedure to us repeatedly. Giving us the assurance to quell our anxieties. But what to bake for a doc who doesn't have a sweet tooth? I did ask what flavour he preferred. All I got was, 'Bake me whatever you are good at'. Seriously, I am still unsure of what cakes I am good at baking.&lt;br /&gt;&lt;br /&gt;So after much deliberation, I conclude that chocolate would be the safest choice and few could resist the velvety texture of chocolate mousse. If in any case, the doc didn't like chocolate, doc's missus, daughter and female staff could finish off the cake. Ahah. I went to Sun Lik to get some Valrhona chocolates for the cake. I spotted some chocolate transfer sheet. I have always wanted to test it out so I thought this would be a good time for me to do so. For the mousse, I turned to one of my favourite bloggers, Florence. I did not try out alot of her recipes but I do find her taste quite similar to mine (in terms of sweetness).
