Hopefully, you had a year to celebrate and hold dear to your heart.

I hope it didn't fly by so fast that you missed the blessings woven into each day.

My year caused my head to spin at times, but I tried my best to slow down and take notice of the good things around me. My camera helped me do this. I now have some memorable moments captured just so I can smile again!

I hope your year was filled with memorable moments.

If your year wasn't so great I wish you a better year ahead.

I'm grateful that we have the opportunity to shake of the dust, so to speak, and pick ourselves up and start over again. A new year means hopeful expectation of what can be.

May we be thankful, not only for a new year and a chance to start over, but for the actual opportunity to start over whenever we choose. If we need to, we can start over every single day! I'm thankful to God for his gift of never-ending grace (the real reason we get a new beginning is what He did for us, He offers it freely).

I'll choose to grab hold of His outstretched hand and see just where He wants to lead me today! I'll follow the path He lays out before me...but if I just happen to misstep I'll choose to turn back to Him for the grace which never ends!

Amazing, isn't it?! Truly Amazing!

His love is immeasurable!

He loves me! He loves you!

I'll wake up each day and say "Thank you God for loving me. Help me to abide in you and keep me Lord, keep me!"

It's the beginning of a new year

and a chance to start fresh...

Yet each new day offers a clean slate

Splendor and promises

The splendor of his majesty!

I can’t help but to carry my camera everywhere with me these days! Esp. this fall! I just want to capture every magnificent moment …every sunset…every color and every bit of nature that is popping so vividly, so vibrantly before me!

I see beauty in the shadow on the old oak tree outside my window…the way the sun casts a display of wide lines which resemble a music sheet across the massive trunk and in the upper the left, the shadow resembles a half note which says let the music begin!

Songs are in the air…a song of the cardinal; the bluebird; even the red headed woodpecker which calls to his mate in between hammering thumps on the sturdy, solid trunk of wood he so diligently works on. Just below the hill at the edge of the tree is another shadow. This one on the ground…more limbs stretched outward, creating a type of map across the lawn. This map leads my eyes across the pavement and to the other side of the winding road where I notice deer tracks near the hedgerow. My eyes are now on to a new quest... I search for the deer. I turn my attention toward the back road which leads to a pond where the geese spend most of their time, and I see him…the very stout and apparently well fed buck…standing still, then moving slowly, stepping out cautiously, as if to say "I’ve been alive much too long to be careless…I must approach this open expanse carefully and continue to blend in with the tree line". He blends in so well...so well that I am sure there have been a multitude of times when I've missed him. I’m sure I’ve walked right past him on many occasions, only to have him stand silently, motionless, watching every move we made!

And to think, we are the one’s who love to observe nature….

while nature is observing us!

And do we realize just how well nature does observe?

Along my walk, the squirrel stops and watches with a careful eye until it is safe to romp forward…but scurries up the tree to flee to safely if I get too close. Think about the fly…how keen his eyesight is?! Flitting to and fro; landing on a light, to a window, across to another, taunting us and as we approach, disappearing before our eyes can discern where he will land next! The deer watches silently from behind the hedgerow; the chipmunks dive into their caves; the cat stops and watches, knowing he can outrun us if he has to; and the bird flies off as the child approaches with outstretched hand holding a morsel of bread and a look of wonder at its rejection of this great gesture.

On and on I could go…as I observe nature and nature watches my every move. And now I see that the painting on the trunk of the old oak has changed in these few moments of my dialog…along with the road map on the lawn and across the pavement. The squirrel has moved on; birds flew off in a different direction; buck vanished with the first passing car.

Now another gift of nature taps me on the leg…makes a small murmur and tips its little head to the left then right…ears perked...and I realize the promise I made to her just before I sat to write about this beautiful day…I promised her a ride in the car with with windows open; I promised her! She hasn’t forgotten. She, this little natural beauty, has been watching me this entire time and wants to hold me accountable! For this, I also give thanks!

I could sit and write about the splendor of nature without end. Its beauty never ceases. But if I don’t get up out of this chair and keep my promise, it will soon be dark and we might miss out on this gift of a sunny November day!

Yes, Abby, my sweet little pup…I hear you and I am ready to keep my promise!

I MISS MY DAD...

When I was a little girl, I would stand by the door
when it was time for my dad to arrive home from work...

all bubbly with excitement to greet him...

He'd pick me up

and give me a big kiss on the cheek

such a wonderful moment...

the best!

He was a hard working man; a wonderful provider for his family and a great example of what hard work really was. Knowing the value of a dollar, never squandering a cent, he always reminded us to save. He was a child during the great depression and knew first hand how difficult times can become. I don't remember him sitting down much. He would come home from work, and work some more...in his amazing vegetable garden, in the yard, in and around the house. He could and did repair and build anything... a jack of all trades, he took great care of us!

He served his country in the navy and fought in WWII.

He had the gift of discernment...to see through a facade and tell it like it is...he was a very truthful man.

He was a Golden Gloves Boxing Champion ~ As a result, he could be intimidating to some...(perhaps the reason I didn't have many dates)???!!!

My dad had a sense of humor...a silly one! He made us laugh quite often with antics, jokes, made up names, etc. He was most humorous when he wasn't really trying! ;)

He was a moral man and loved his family dearly and was "in love" with his wife, my mom with his whole heart and soul all the days of their life!

He loved God and had a great deal of wisdom (although I didn't always see it as wisdom until I matured a bit). He was one of my biggest cheerleaders in life; my mom was the other.

Yes, he was tough; he was strong and his "love language" was one of works mostly. I suppose I don't have as many soft and sugary moments to tell about my dad as I do about my mom. She was the soft place to land - he was our protector and defender...a place of security, with a sensitive heart hidden just beneath the surface. He had layers...depth!

Despite the fact that my dad is now home with his heavenly father, I still miss him! But...someday, I'll arrive home and he will be waiting by the door for me...

He will pick me up and give me a big kiss on the cheek. I will feel the security of the moment and the joy of being re-united with my dad.

At his memorial, the pastor said "I believe Jim is tending to the most beautiful garden he's ever laid eyes on right now, and I also believe that if Jim could tell you one thing, he'd say....'you've got to come here'!!!"

YES...I believe it too!

I wrote this poem after he had major heart surgery...his life was saved...

He Cried

He was a strong man,
Never shed a tear,
Solid as a rock
Carried no fear...

He was a tough guy,
A hard working man,
Showed his love by the work of his hands...

Not a man of flowery words,
Nor of many words at all,
But as far as I was concerned,
He was ten feet tall!

I was sure he could carry the world on his shoulders,
Sometimes I think he even tried,
Never a doubt in my mind,
That because of this strong man,
Life would be just fine...

Every day after work, I’d greet him at the door,
He’d pick me up and kiss me on the cheek,
There was nothing in the world I wanted more,
Than this moment of the day – so sweet.

Years later…
One day after work…
He laid down to rest,
He said he felt a “funny” pain - deep inside his chest...
We knew this was bad when he didn’t fight,
And the ambulance rushed him off that night.

His heart was opened by surgery,
And then it began to melt,
With words of kindness and expressions of love,
He finally told us how he felt!

The feisty fighter had a soft side,
He showed that side to mom and me,
In a three way hug that lasted a long time,
And his tear filled words “I love my family”!

Feelings trapped inside began to flow,
In words now, not just deeds,
The size of his heart began to grow,
His spirit was set free!

I’m grateful for the tears and expressions we shared,
They mean more than one could know,
I always knew how much he cared,
But I’m glad he found the words to show.

He was a strong man
And he made it clear,
That a strong man’s
Not afraid to shed a tear...

He was a strong man
With a gentle side,
The gift he gave me etched precious in my mind...

DO YOU EVER WISH YOU HAD A CERTAIN TALENT
SOMEONE ELSE HAS?

I ADMIT I WISH I HAD A BEAUTIFUL SINGING VOICE.

WHAT DO YOU WISH YOU COULD DO?

RATHER THAN WISHING...

PERHAPS WE MIGHT THINK ABOUT WHAT WE DO WELL
OR WHAT WE LOVE DOING...

YOU HAVE A TALENT OR TALENTS
UNIQUE TO YOU!

WE ALL DO!

BACK DURING THE OLYMPICS, I WAS REMINDED OF THE FACT THAT THERE ARE DIFFERENT TALENTS (or gifts) GIVEN TO DIFFERENT PEOPLE. SOME CAN SKI OR SNOWBOARD OR SKATE OR EVEN CURL ( I was so inspired, for a brief moment, I actually thought this might be one I could handle). This sport made me want to get up off the couch and grab a broom and start practicing. Yet, just like all sports, curling takes precision and endurance. I don't have the "gift of curling" - nor do I have the desire --- My arms get tired just trying to hold the "curling iron" long enough to get my hair the way I like it! ~ Na! I won't be competing anytime soon ;)

Most of us would probably agree that the Olympics are entertaining and inspirational (I can feel their joy when I watch them do what they do best)...and certain competition in the right context can help push us to the next level...improve upon our talents...

yet...

In the "day to day" world -

Life itself is not a Competition

Life IS a Community!

What we do, who we are,

what gives us joy...

Is all in the sharing...

sharing the love

of something you do

with others...

spreading the joy...

Encouraging one another
to use our unique gifts...

C E L E B R A T I O N!

When I create, I feel God's pleasure! When I realize it is from him and give Him the glory for the gift, I feel even more joy!

My purpose on this earth is not just to create...not just to write...not just to cook...not just to design...but to glorify the one who knitted me together and who made these gifts my own. He is the designer; the artist; the master of all trades!

P R A I S E!

As I feel His pleasure, I'm compelled to run more quickly to Him...to quicken my steps toward the heartbeat of God...to be in His presence...abiding in Him.

Stars shine and stripes remind

My mom had a recipe book

she had written (by hand)...

A collection of her favorite recipes which she intended for me to have. Over the years, it disappeared…perhaps during one of our moves. I looked tirelessly for it, hoping it would pop up, but it didn’t.

Recently, I was telling my cousin Diane about it and she mentioned that my mother had sent her a few hand written recipes. She said she still had them and said that she was going to photocopy them and mail me the originals. A couple of days later, they arrived... I was extremely touched by the thoughtfulness and love of my dear cousin...

Cousin Diane's note to me

As I opened the envelope, I sat with tear-filled eyes, holding my mother’s recipe cards in my hands, and feeling like a part of her was still with me.

I held the paper she held

I studied the crafting of each letter in her penmanship…in the way she swirled her capital L; the way she blended the letters together in an artistic script, unique to her as she formed each word with pen on paper, in an articulate manner…such that when I read her words, I can hear her voice…the cadence in which she spoke; the tone; the softness; the upbeat and joyful spirit in which she communicated; the humor she interjected. I can see her smile when I read her sassy; witty side notes which bring back the memory of that sparkle in her eyes …that little sense of mischief…playfulness that she never failed to entertain us with.

and apparently, I was one of the 5 little piggies) :) ...

There is a little spot of something here at the top of the card...

it looks like a drop of an ingredient or a little bit of gravy…

The smudge just confirms that this recipe was used and enjoyed throughout the years…and passed along now to me and to others.

Oh, how I wish I could smell the gravy on this note!

My heart is warmed by the thought of times spent in the kitchen together while I measured ingredients and placed them side by side for my mom to incorporate into her wonderful creations. I can see her stirring, whipping, rolling dough, forming meatballs, sautéing onions and garlic for spaghetti sauce, placing roasts in the oven, removing the stew meat from the pressure cooker, frying bacon and eggs and measuring coffee into her percolator. I recall the comforting mornings of waking up smelling the wonderful aroma of that coffee and oh, yes, the bacon sizzling and wafting throughout house, waking me from my morning slumber…......no alarm clock needed!

These notes...

represent even more depth of meaning to me because toward the end of my mother's life, a stroke robbed her of her words…she could no longer speak, but she would smile and clap her hands every time I went to visit…a huge blessing that she always recognized me! She would light up when I entered the room, wiggling her toes, clapping her hands and smiling and laughing , her entire body filled with excitement!

I’m reminded by her written word of how full of life she was….and I have tangible pieces of conversations here to hold in my hands; to press to my heart; to cherish…

and to taste

as I savor each morsel of her recipes…

for food…and for life!

In her words ...

Held me tenderly the moment I arrived,

Nourished me and nurtured me,

As she welcomed me to life…

Her hands…

Bathed; clothed and fed me;

Held my little hand and led me;

Taught me how to write….

Turned the pages of the books she read to me each night,

Folded as she prayed

And clapped for my school plays;

Her hands…

Like magic, turned patterns into clothes

And knitted slipper socks;

They softly styled waves into my curly locks,

Felt my forehead for a fever and rubbed Vick's onto my chest,

And wiped my nose and held me close and softly caressed….

When I skinned a knee,

They bandaged me

And carried me back home,

And never left my side…

I never felt alone;

Her hands

Cooked my favorite foods,

And baked my favorite pies,

And when I was hurt or sad

They wiped the tears from my eyes;

Her hands drew pretty pictures,

In fact they crafted art,

And they touched me with a mother’s love

As they held this child's heart!

Now I look down at my hands

And I'm amazed to see...

Her hands

Seem to have re-appeared,

As they live on....

In me!

I posted this a year or two ago...hard to remember...but I do remember the warm glow of sunshine that day...and the fresh air, so sweet. I love May! My hope is that by posting this, I'll encourage the weather to cooperate and let the season be what it should be (and what I want it to be) ;)

Sunday May, 4th .....Update....My encouragement worked! The sun came out yesterday and temperatures cooperated too.... just in time to celebrate the Merry Merry month of May! :)

Bright and sunny days replace the gloom,

open windows softly bring

fresh warm breezes to the room

angelic birds begin to sing,

buds of flowers now in bloom...

The cardinal is inviting me outdoors

To enjoy the beauty of God's creation

WHAT MUST IT BE LIKE TO BE YOU.....

LORD?!!!

All the great power you possess ~

The miracles you perform ~

The position of authority you hold~

the ability to change hearts and minds, heal the sick,

turn water into wine, walk on water;

Abolish death and bring life and immortality to light!

You are the breath of Life ~ You hold it ALL ~ this world and all eternity in your mighty hand; yet you chose to lower yourself to our level as human to human for our eyes to see and our hearts to love and our minds to learn from.

While you walked among us you conversed, taught, gave of yourself, worked, rested, ate and drank, laughed and cried, held the sick in your arms and touched the leper and healed all who asked!

YOU, our Fearless, Majestic, Eternal Savior...

chose to become more like us for a short time,

so that we might see that there is nothing about us that you do not know. You have felt it all...experienced it all...

from love, acceptance, respect, and kindness,

to heartache, blame, abuse and rejection...

Then you took it ALL....

All of our self-centered, flesh-serving, rebellious acts

upon yourself...

and paid the price for the sins you did NOT commit.

You were scourged for our transgressions
and with the stripes on your back
you carried the cross

That cross was covered with your blood...

yet, in your darkest moment you cried out in compassion,

Before your head dropped, you gasped “It IS Finished.”

Your lifeless body was then placed in the tomb.

And because you are LORD,
You rose on the third day...

You rolled away the stone and finally...

ascended to the Father’s right hand.

You returned to your position of authority!

YOU HAVE ALL POWER IN HEAVEN AND ON EARTH!

You did all of this out of LOVE for the inhabitants of the world...to set us free and give us the choice to LIVE! And if I would have been the only inhabitant you still would have done it all---for me!

You promised me a place in all eternity with you. But why?
I don’t deserve it! And to this I hear you say...

that is the point, my dear princess...you have been forgiven...this is grace...this is why it is called a gift...take the gift and humble yourself before the Lord as you receive the birthright I bought for you.

Your life is worth the price I paid. You are loved!

Oh, Lord...You reign in heaven and earth and in my heart ~ There is no word to describe the gratitude I feel!

As I shake my head in awe, I wonder....

As The Willow Weeps

After this winter, I'm sure those of us who have had to brave the snowy polar vortex can relate to the cries of the earth as it "weeps for spring". I published this poem three years ago. Although that winter wasn't as harsh as this year, it reminded me that the hope for spring is on-going. We got past that winter and enjoyed spring and summer, and then another and yet another! We will get past this one too. There is hope! There is always hope!

AS THE WILLOW WEEPS

Tall trees grounded,

firm foundation,

roots stable in the earth's floor -

fierce winds

snatch tossing limbs,

as they break from the solid core.

fixed branches...

reach for the sun -

praising heaven, open wide...

springtime showers have begun,

outstretched fingers grasp for life!

now the willow hangs its head,

docile limbs weighed down,

yielding to the ground,

as if all hope is dead.

"No! Not So!" - the red bird sings!

think of pure and lovely things!

sweet as the kiss of the morning dew,

New Year’s Eve....Ten degrees and snowy...

Around 1:00 as we lounged, just finishing lunch ~ cookies in the oven ~ checking e-mail, facebook, and watching another episode of h.g.t.v. house hunters, (simultaneously) ~ our recreation was abruptly interrupted as silence fell over the condo—power outage or too much use of power?

Greg picked up the phone to call down to the front desk to inquire but the phone was dead – oops, forgot the phone is hooked up to the modem! Thankful for cell phones, he was able to contact them via android. “Yes sir, we are aware of the outage in part of the building and our engineers are looking into it now. We hope to have the power restored shortly.”

“O.k.” I thought...” “It’s time to get fully dressed (get out of my fleecies) in case we have to vacate for some reason.” I pulled on tights, warm socks and a couple extra layers for warmth and I settled back into my chair. Husband began to nod off in sitting position; dog curled up inside her warm blanket...all was very very calm! I realized that I was enjoying the sound of silence. Free from the hum of appliances, background noise and computer keyboards, along with visual ping pong from tablet to t.v. to texts, I was forced to realize there is life without electronic toys! Of course I could have used the tablet or droid, but turned them off to conserve their batteries (just in case).

I decided to take advantage of a great opportunity to sit quietly with the Good Book. Seriously friends, does it take a power outage to get us to slow down and open the bible for some “real-time” conversation with God? I guess that’s what it took for me today...a reminder that I need to plug in to The Actual Power Source!

I randomly opened up the word to 1 Thessalonians chapter 4, verse 11 and beheld the direct word of God as it jumped off the page:

“MAKE IT YOUR AMBITION TO LEAD A QUIET LIFE"

I’m as serious as serious can be! This is exactly what I saw, heard and felt (simultaneously) with the noise removed and the peace of God speaking VOLUMES into my forcibly calmed soul!!!

Well then, let me read on because I know He has more to tell me and with all the clamor removed, I can hear Him LOUD AND CLEAR; SOFT AND GENTLE; STRONG AND POWERFUL; guiding my path into the year ahead ~~~

A Tribute to the Victims of Sandy Hook Elementary

Vern's Light Display

This crafty light display is just one of many fascinating masterpieces from our friend Vern's Christmas light show which he displays each year outside his home. Through the years Vern has been creating these gems with his very own hands, using pipes to construct the frames and his display has grown to be quite spectacular! As I drove friends past his amazing winter wonderland, we took numerous photos. I didn't get a good panoramic shot, but loved this one because it really tells his story well. It is a replica of one of his several antique cars he lovingly cares for and still exhibits at various car shows in several states....even now in his 90’s!

Vern gets a kick out of entertaining passersby with Christmas music playing softly in the background. If you open your car window, you can sing along with the carols as you marvel at his handiwork. He has even constructed mailboxes which look like the real deal where children can drop off their wish lists. I'm not sure if he still does this, but there was a time when he would drive to Santa Claus, IN to postmark his handwritten replies to the letters Santa received. What a jolly soul he is! I often wonder if perhaps he just might be Santa! ;)

YES That's Joey Fatone...(of "N Sync", boy band fame, movie star, dancing with the stars, star of My Family Recipe Rocks...and all around really great guy!)

The two chicks....my friend Deanna and me (Lorraine) ....united by a love for cooking, baking, laughter, miniature dachshunds, and God! Our paths were originally led together a few years ago by a cooking contest where we learned of one another through our home made cooking videos featuring our original weekly recipes in an on line cooking extravaganza. Since then, we've been sharing recipes via facebook and our blogs.

Last year about this time, I had the thrill of opening my home to the crew of a new show, My Family Recipe Rocks with host Joey Fatone , and this year Deanna had that same thrill. I'm wearing a great big grin as I recall the excitement of my experience and I continue to share in the fun now as Deanna's episode is about to air!

Meet my buddy Deanna Morauski...

Deanna’s love for baking and cooking began as she sat upon a baker’s stool as a little girl. Her love for people grew in the midst of church potlucks. She expresses her loves today creatively through speaking, writing for her foodie blog, television appearances as well as hosting guests, including celebrities, at her award-winning inn... The Old Hen Bed & Breakfast, Squanalme, Washington.

Deanna makes me giggle with her quick wit and I love the fact that she is just so real! As far apart as we are, it’s amazing at how technology has made it feel like she is right here. Well, one thing is definitely missing....I really want to sit face to face....hear her voice...see her smile...experience the warmth and coziness of her B&B, gobble up the delicious food she prepares, and laugh out loud together in person! Until then...I’ll be so delighted to watch her in action in her kitchen with Joey Fatone by her side, cooking up a storm! I can’t wait to see her episode air!

Here’s a preview of Deanna’s Cheesy Scalloped Potatoes Recipe:

A perfect comforting, hot dish that goes well with any meal!

Servings: 12

Ingredients:

2.5 pounds of russet potatoes

1 large yellow onion

1 cup milk

1 cup heavy cream

¾ cup flour

1 1/2 teaspoons of salt

1 1/2 teaspoons of pepper

1 cup sour cream

5 cups grated cheddar cheese (divided)

Directions:

Rinse and scrub about potatoes until clean.

Prepare a large bowl by filling with cold water and a couple of teaspoons of salt. Set aside.

Cut potatoes in quarters along the length of the potato. Cut out any undesirable spots.

Using a mandolin or… the quicker and easier food processor, slice potatoes thinly.

Place slices into cold salt water after each potato to prevent browning. Slice yellow onion thinly and place into a very large separate bowl.

Preheat oven to 350F.

Pour milk and heavy whipping cream into a medium bowl. Whisk flour into cream mixture.

Add salt and pepper and whisk again.

Drain water from potatoes.

Next, place sliced potatoes, cream mixture. Add sour cream and 3 cups of grated cheddar cheese into the large bowl with onions. Using hands, combine all of these ingredients very well.

Prepare baking dish (size 9 x 13 inches or comparable) by spraying with non-stick spray or smearing well with butter.

Place a layer of potato mixture into baking dish. Then, from the remaining 2 cups of cheddar, place a layer of cheddar cheese. Make about 3 layers total with cheese between each layer then pour any remaining cream mixture over potatoes.

Finally, layer top with remaining cheese. Loosely cover potatoes with foil for the first 1-½ hours of baking so the top layer doesn’t over bake. Remove foil after 1 ½ hours. Bake for about two hours total or until a fork poked into middle of potatoes comes out easily.

It’s a good idea to put a baking sheet on the oven shelf underneath your scalloped potatoes in case they overflow.

For a fancier flavor, you can add some Gruyere or Comté cheeses in place of some of the cheddar, 1/4 cup of white wine in place of 1/4 cup of the milk, or add freshly chopped herbs or ham.

Serve while steamy hot.

SUMMER HAS BEEN EXTREMELY HOT THIS YEAR...

We are in a drought here in the Midwest. Day after day, it has been 100 degrees and more! The sky hasn't released any moisture in weeks! We're doing whatever it takes to stay cool this year. Even the neighbor's over-sized golden retriever has a buzz cut for summer...looking more like a lab.

Finally, yesterday the heatwave broke and it was as if it was SPRINGTIME all over again! People coming out of their air conditioned "hibernation"; kids riding their bikes again, mom's pushing strollers, families taking long walks with their four legged friends...

I WANT TO CAPTURE EVERY MOMENT...

SITTING OUTSIDE UNDER THE CLEAR BLUE SKY...

ENJOYING SUNSETS OVER THE LAKE...

Listening to kids laugh as they splash in the water, reminding me of my own childhood summertime fun, causing me to reminisce about all the wonders of childhood summers...swimming pools, watermelon, the ice cream truck, and Orange Julius! Do you remember Orange Julius? I haven't seen an Orange Julius store in years!

As my craving intensified, I decided to make my own...and since I'm off of dairy right now, I used coconut milk and came up with a pretty close likeness to those frothy citrus shakes!

PUT AN ORANGE

IN THE COCONUT

AND BLEND IT ALL UP! ;)

I wasn't precise with this recipe because I made it up as I went along...
(had fun tasting my way to the finish)

squeezed two fresh oranges into my blender,
added about a cup of ice,
1 1/2 cups of coconut milk

*(I make my own coconut milk to drink, by opening a can of pure organic 100% coconut milk and placing it into a tall plastic container, adding enough water to make it the consistency of cream or whole milk and shaking very well)*

(I refrigerate whatever is left and use it as cream in my morning coffee)

(the reason I do this, is because many of the pre-packaged coconut milks have additives that I don't want. This is pure and it's also more creamy)

o.k. back to the "julius" ...

then I added one to two tsp. coconut sugar

(more or less as you desire)

The air is so fresh and sweet today!

We're enjoying the May temperatures;

flowers in full bloom all around us;

and the vibrancy of the colors, especially the way the sun shines upon the newly cut green lawn!

We are spending time on the patio, in the parks and family barbeques. The kids are collecting a few grass stains as they play touch football and the dog seems to be smiling, as she springs into the air to catch the frisbee!

Of course there are a few negatives...

it's bug season again!

What a Hoot!

I was just about to end my afternoon stroll with my near to the ground sniffing four legged friend. As we approached a small ravine several yards from home, we were awed by massive wings fluttering above our heads exiting one of the lush old oaks nearby. It was one of our neighborhood owls!

I'm so intrigued by owls and was thrilled to see one in the middle of the day! I’ve spotted one or two during the several years we’ve lived here…usually at dusk and I’ve still not been able to grab my camera in time to capture them in a photo. Same goes for today!

As he landed in another towering oak, perched on one of the open limbs, staring back at me, I grabbed my antiquated flip phone and clicked on the camera (which of course has no zoom and if you don’t hit the save button, everything disappears)… no luck. One of these days I just know I’ll capture a good one. Until then, I’ll have to remain content with the sound of their night-time serenade, listening to their cooing as I drift peacefully off to sleep.

When we first moved to this neck of the woods, we were introduced rather quickly to sights and sounds we had not experienced since childhood, if ever. Coming from the city, where the nightlife is a different type of wild, we found this to be refreshing…until we heard the howling of coyotes in a marsh behind our neighbor’s lot. That was a sound that I had never heard before. I much prefer the peaceful sounds of nature.

A few months after we moved here was first time we heard our resident owl. I was excited to announce it to my husband who immediately replied, “how do you know it’s an owl? It could be someone hiding in the bushes making the sound of an owl as a decoy!” Really? I replied…Really! ;) I like to remind my city boy of that comment now and then.

Of course, I’m not innocent either because I did call the cops on a deer once! It was dusk and I glanced out the window to see someone standing on a hilly area near our window. I could only make out the silhouette and I swear I saw a head and broad shoulders of someone wearing tan or dark grey…not moving…head pointed in my direction.

I panicked, closed all the blinds and called to report a peeping tom!

Fortunately, the police encouraged me to never resist calling, even for deer because “you just never know”! Whew...glad they are close by!

They did locate the perp...the big guy was hiding with his accomplices behind the hedgerow...

Ah, the wild wild woods ~ A few adjustments here and there and a few years later, and I’m finally settled in…calm, cool and collected…keeping my eyes wide open and my camera nearby.

damp from the storms we had last night...

the sun can't decide if it wants to make an appearance today...

after all it is Sunday...day of rest...

but not for the sun...

the sun always shines...somewhere!

well, if it IS shining on you today,

and may this soup be one to warm you

from the inside out...

loaded with antioxidants

to bring you good health...

flavor to satisfy your taste buds...

warmth from the spice of ginger and garlic...

I like to call it

A BOWL OF SUNSHINE!

C a r r o t - G i n g e r Soup

Ingredients:

Approx. 2 - 3 Tbs. Olive Oil
1 Large yellow Onion, minced
3 - 4 Garlic cloves, minced (use more or less according to your taste for garlic)
2 - 3 tsp. grated fresh ginger (for more heat and if you love ginger, feel free to add more - I've been known to use quite a bit more - ;)
1 ½ lb. carrots, peeled and cut into 1-inch pieces
6 cups chicken stock (organic/all natural, no msg, lower sodium)
1 tsp. juice of fresh squeezed lemon
Salt and freshly ground pepper to taste

~ ~ ~ ~

Steps:

Since I like to do as many steps in one pan, I use a large soup pot for this entire recipe...

Drizzle the olive oil into the soup pot and warm over medium heat. Add the onion and cook until softened, 3-5 minutes. (I chop all ingredients right into the pan - no extra plates, cutting boards or utensils needed).

I press in the garlic, grate in the ginger and chop in the carrots and cook, stirring, for 5 minutes, and then add the stock. Cook the ingredients over medium heat until the carrots are tender, about 30 minutes.

After 30 minutes (or when carrots are tender), remove from heat and allow to cool slightly.

Using an immersion blender, blend the soup until smooth. Stir in the lemon juice and season with sea salt and pepper. (**You can also do this in a regular blender but wait until it is cool then re-heat in your soup pot, but of course, my immersion blender allows me to keep it all in the pot with less clean up)

Ladle hot soup into bowls (preferably warmed bowls). Garnish with a dollop of fat free sour cream or creme fraiche.. I like to use plain Greek yogurt. Add a sprig of parsley or cilantro. Serve immediately.

Serves 4 to 6.

P.S... If by chance there is soup left over, sometimes I'll use it to prepare a unique pasta sauce: Depending on how much soup is left, I like to stir in a tablespoon or so of plain Greek yogurt to the soup (just enough to thicken the soup into a sauce) and simmer over medium heat; add grated parmesan cheese and stir until bubbly and the consistency of a pasta sauce. I ladle over my favorite pasta, sprinkle with toasted chopped walnuts, fresh grated parmesan cheese & fresh basil and serve! I also love this sauce drizzled over a grilled chicken breast on a bed of quinoa or rice!)
