1 teaspoon dry
yeast 

15 oz. of warm water
(adjust water based
on elevation and humidity level you might use 15- 25oz for this recipe)

250 grams of rice
flour

baking powder

1/2 teaspoon salt

1 teaspoon guar gum
or xanthan gum

1 teaspoon of honey

2 eggs (organic
preferably)

3 table spoon of virgin

Haitian Hot Chocolate 
A month ago I went to Haiti and I brought back with me some raw Haitian chocolate. I set about making the real deal this morning, hot chocolate Haitian style. No hot water or little packets of cocoa powder were involved in the making of my hot chocolate.  Roasted and stoned ground Haitian Criollo cocoa beans were the stars of my hot chocolate which I sweeten with

Nope! I mean just that: Tokay (tok-eye)! 
Tokay means buddies, pals, and partners in crime in Haitian Creole.  It is a very specific Haitian word, for a very specific set relationship.
 People who shares first names are said to be “tokay”. Twins are naturally, as in every culture

A  Birth Certificate:   or "Act de Naissance" is issued by a local registry officer  "officier  d’état civil" to parents in french speaking countries, such as Haiti.  Birth Certificate applicants need a Marriage Certificate or a child  Certificate of Birth to apply. The Birth certificate when issued has a  raised seal of the Haitian government on it.

I thought. Finding the information I needed was very difficult.  I come across a few promising sites.  But they all wanted to charge me to look at their “samples”.


I finally found these two samples for free, posted to the left. These

  When I was little my mother would made me “Te  fey Asowosi” when I had fevers.  After I drank that tea I would be on my feet chasing after chickens in no time.  So I
