Mezclamos todos los ingredientes de la masa: harina, sal, agua, aceite y la levadura. Después amasamos unos 5 minutos con energía y dejamos fermentar hasta que doble el tamaño.&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div style="text-align: justify;"&gt;Desinflamos un poco la masa dándole palmada&lt;strong&gt;s&lt;/strong&gt; y le damos forma sobre la mesa con un poco de harina. Lo mejor será hacer un rectángulo que después untaremos con la salsa de tomate dejando 4 dedos por los bordes. Enrollamos.&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div style="text-align: justify;"&gt;Trituramos los ajos en el aceite y con esto pintaremos la masa. Incluso, si nos sobra algo podemos volver a pintar una vez que saquemos el pan / la pizza del horno.&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;
&lt;/div&gt;Horneamos a 210 º D durante unos 13 minutos.&lt;br /&gt;

250 g de harina de fuerza, 125 ml de agua tibia, 15 ml de aceite de oliva, 3 gr de levadura de panadería deshidratada y sal.Además necesitaremos 4 cucharadas de salsa de tomate o también nos vale tomate triturado natural y 2 cucharadas de tomate concentrado, 50 ml de aceite de oliva virgen extra y 4 dientes de ajo.&lt;br /&gt;

Dora bien el tocino en un sartén. Retira del fuego y reserva. En el mismo sartén sella la carne de res con un poco de la grasa del tocino, hasta que haya perdido su color rojo. Sazona con sal y pimienta al gusto.&lt;br /&gt;
&lt;br /&gt;
2.&lt;br /&gt;
Cuece los tomates, los chiles y el ajo en las 3 tazas de agua. Licua, cuela y vierte sobre una olla de presión. Agrega la carne sellada y su jugo junto con los cubitos de caldo de pollo.&lt;br /&gt;
&lt;br /&gt;
3.&lt;br /&gt;
Tapa la olla y cuece a fuego medio-alto hasta que suba la presión. Reduce inmediatamente la flama y cuece a fuego lento durante 30 minutos.&lt;br /&gt;
&lt;br /&gt;
4.&lt;br /&gt;
Sirve con frijoles de la olla, tocino, cebolla y cilantro. Acompaña con tortillas de maíz.&lt;br /&gt;

Picar muy fino el diente de ajo.&lt;br /&gt;&lt;br /&gt;Calentar el aceite en una sartén de pared alta, echar el aceite y después la juliana de zanahorias, revolver durante 2 minutos, agregar los fideos bien escurridos dejando cocinar otros 2 minutos más antes de agregar los camarones crudos, el germen de soja y los guisantes.&lt;br /&gt;&lt;br /&gt;Revolver bien durante 1 minutos y sazonar con la sal, el ajo y el jengibre rallado; después añadiremos las salsas de soja y la agridulce. Poner una olla al fuego con un par de litros de agua y una pastilla o dos de caldo de pescado, añadir el congrio y dejarlo a fuego muy lento. colar todos los caldos obtenidos tanto de las gambas como de las chirlas con los mejillones y añadirselo a la olla. Las chirlas se pueden echar tb asi como la carne del mejillon. trocear la sepia y añadirla a la olla. &lt;/li&gt;&lt;li style="font-family: Arial, Helvetica, sans-serif; line-height: 18px; padding-left: 5px; padding-top: 0px; list-style-position: inside; "&gt;Ya tenemos la base, ahora vamos por el refrito que es la clave. picar finamente la cebolla y los pimientos y pocharlos en aceite de oliva muy despacito que si se quema la cebolla luego afea la sopa con puntos negros.Cuando este pochadita tendremos ya los tomates pelados y picados que los añadimos al refrito dejamos siete u ocho mtos y lo pasamos por la batidora o el pasapures, sin que pasen pellejos, ayudaros echando un poco de caldo de la olla para que pase mejor. bueno pues lo echamos en la olla que ahora si ha cogido color y lo removemos bien, rectificamos de sal y le damos un poco de caña al fuego para que coja bien todos los sabores. Al final entre el refrito y los caldos nos tiene que salir una olla con bastante sopa. En un plato pisa la palta, con un poco de cebolla picada muy fina y tomate, con un tenedor; luego ponla en un bowl y agrégale jugo de limón, sal, cilantro y unas gotas de Tabasco.&lt;br /&gt;&lt;strong style="font-style: normal; font-weight: bold; "&gt;3&lt;/strong&gt; En una sartén con aceite vegetal (lo tradicional sería hacerlo con grasa de cerdo, pero es un poco pesada), saltea las cebollas, el ají picante sin semillas, el ajo y los pimientos, unos 3 o 4 min. Enmanteca dos moldes redondos para horno, coloca papel manteca en sus fondos y enharínalos, quitando lo que sobre.&lt;br /&gt;&lt;strong style="font-style: normal; font-weight: bold; "&gt;2&lt;/strong&gt;Derrite en una cacerola la manteca. En otra cacerola, derrite el chocolate a baño maría, revolviendo de vez en cuando, durante 5 min.&lt;br /&gt;&lt;strong style="font-style: normal; font-weight: bold; "&gt;3&lt;/strong&gt;Bate en un bowl las yemas, agrega el chocolate, la manteca derretida y la esencia y bate para unir los ingredientes.&lt;br /&gt;&lt;strong style="font-style: normal; font-weight: bold; "&gt;4&lt;/strong&gt;En otro bowl, bate las claras con la sal hasta el punto nieve, mientras vas agregando el azúcar de a poco sin dejar de batir. Mezcla 1/3 de las claras con el chocolate y luego vierte la preparación de chocolate con las claras restantes. Espolvorea la superficie con harina y con una espátula, en lugar de batir como para la mousse, revuelve hasta que no queden rastros del color blanco de la harina, con cuidado de no mezclar durante demasiado tiempo.&lt;br /&gt;&lt;strong style="font-style: normal; font-weight: bold; "&gt;5&lt;/strong&gt;Vierte esta preparación en los moldes por partes iguales. Coloca en el horno durante 30 min hasta que la masa esté seca (para eso, introduce la punta de un cuchillo en uno de los moldes y controla que salga seca). Retira del horno, despega con un cuchillo las paredes de la torta y desmolda con cuidado. Deja enfriar.&lt;br /&gt;&lt;strong style="font-style: normal; font-weight: bold; "&gt;6&lt;/strong&gt;Para preparar la cobertura, coloca en una cacerola a fuego mínimo el chocolate para taza, la crema, el azúcar y el jarabe de glucosa. Sin dejar de revolver, cocina hasta que se derrita el chocolate. Deja cocinando 5 min. más sin revolver (para saber si está listo, toma un poco de la preparación y colócalo en un vaso con agua fría. Si se forma una bolita blanda, significa que ya está listo).&lt;br /&gt;&lt;strong style="font-style: normal; font-weight: bold; "&gt;7&lt;/strong&gt;Bate despacio el huevo en un bowl y agrega 3 cdas. de la preparación anterior. Mezcla y vierte en la cacerola de la preparación. Mezcla todo con fuerza y con el fuego al mínimo, deja cocinar sin dejar de revolver hasta que la preparación se pegue a la cuchara de madera. Retira del fuego, agrega la esencia y deja enfriar.&lt;br /&gt;&lt;strong style="font-style: normal; font-weight: bold; "&gt;8&lt;/strong&gt;Una vez que las dos capas de la torta están frías, unta una con la mermelada de damascos y coloca la otra por encima. Vierte la preparación para la cobertura por encima, tratando de alisarla con una espátula lo mejor posible. Deja descansar hasta que la preparación se solidifique y con la ayuda de dos espátulas de metal, coloca la torta sobre una fuente. Esto lo dreimos todo con un poco de aceite o mantequilla. Cuando estén fritos se les añaden huevos, podemos echarle 4 huevos por ejemplo para estas cantidades, se puede añadir algo de agua. Tendremos que mover este hasta que estén los huevos cuajados. Si tenemos preparadas las tortillas pues las freimos y las enrollamos mojadas con la salsa que hemos preparado. Se sacan los chiles y se cortan en trocitos. Cada chile ya cortado se servirán encima de 4 tortillas chicas para que se coman en tacos.
