&lt;li&gt;&lt;b&gt;Huevos, 5&lt;/b&gt;&lt;/li&gt;
&lt;li&gt;&lt;b&gt;Aceite, 1 taza&lt;/b&gt;&lt;/li&gt;
&lt;li&gt;&lt;b&gt;Manteca, 100 g&lt;/b&gt;&lt;/li&gt;
&lt;li&gt;&lt;b&gt;Perejil picado, 3 cucharadas.&lt;/b&gt;&lt;b&gt;&amp;nbsp;&lt;/b&gt;&lt;/li&gt;
&lt;li&gt;&lt;b&gt;Sal y pimienta, a gusto&lt;/b&gt;&lt;b&gt;&lt;br /&gt;
&lt;/b&gt;&lt;/li&gt;
&lt;/ul&gt;&lt;b&gt;Preparación&lt;br /&gt;
&lt;br /&gt;
- Pelar las papas, cortarlas al medio a lo largo y luego en medias rodajas muy finas.&lt;br /&gt;
- Pelar y cortar la cebolla de la misma forma aunque un poquito más gruesas.&lt;br /&gt;
- Calentar en una sartén el aceite, incorporarle la manteca, y cuando esta esté derretida incorporar las papas y las cebollas.&lt;br /&gt;
- Dejar cocinar a fuego entre mínimo y mediano.&lt;br /&gt;
- Cuando las papas estén bien cocidas retirar con una espumadera.&lt;br /&gt;
- Romper los huevos, colocar el contenido dentro de un bol y mezclarlos hasta que queden homogéneos.&lt;br /&gt;
- Incorporar las papas y cebollas a la mezcla de huevos, condimentar con sal pimienta y perejil.&lt;br /&gt;
- Mezclar bien.&lt;br /&gt;
- Calentar una sartén (preferentemente antiadherente) ponerle un par de cucharadas de aceite dejar calentar bien y echarle la mezcla para la tortilla.&lt;br /&gt;
- En cuanto coagule la parte inferior bajar el fuego.&lt;br /&gt;
- Cuando la parte inferior de la tortilla de papas esté dorada y el interior algo cocido, dar vuelta.&lt;br /&gt;
- Dorar la otra cara de la tortilla, retirar y servir.&lt;br /&gt;
&lt;br /&gt;

&lt;b&gt; En una cacerola con fondo ancho, poner el aceite de oliva y dorar la superficie de los pedazos de asado enharinados, agregar la cebolla en juliana y el tomate en cubitos. Rehogar unos veinte minutos, entonces continuar con las papas peladas, limpias y cortadas grandes, el pimiento en tiras grandes, una cucharada de perejil picado, una cucharada de pimentón, 1 cucharadita de ají y sal necesaria. Terminar con el vino blanco seco. Cocinar hasta que las papas estén hechas, así deberá estar también la carne. Colocar en una olla o sartén 1 cda. de glucosa, 3 cdas. de azúcar, ½ taza de jugo de naranjas y ½ rama de canela. Dejar reposar unos instantes y revolver hasta integrar.&lt;o:p&gt;&lt;/o:p&gt;&lt;/b&gt;&lt;/div&gt;&lt;div class="MsoNormal"&gt;&lt;b&gt;Sostener las peras por el cabito y bañarlas con el chocolate, escurriendo el exceso. Otra opción es quitar el cabito, cortar a la mitad y bañar cada mitad sobre un plato para servir.&lt;o:p&gt;&lt;/o:p&gt;&lt;/b&gt;&lt;/div&gt;&lt;div class="MsoNormal"&gt;&lt;b&gt;Llevar al frío para que el baño se endurezca. Al cortar las peras podrá apreciarse la pulpa casi traslucida pero compacta, con la fina capa de chocolate por afuera. Hay que tener paciencia porque este paso puede llevar tiempo.&lt;o:p&gt;&lt;/o:p&gt;&lt;/span&gt;&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;&lt;span style="color: black;"&gt;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp; Cuando el maíz esté tierno, colarlo y dejarlo enfriar. Hacer hervir la leche con el azúcar y la vainilla.&amp;nbsp; Agregar el maíz. Cocinar durante un cuarto de hora el maíz con la leche y retirar.&lt;u1:p&gt;&lt;/u1:p&gt; Servir frío. Se puede condimentar con miel, canela, y también se le pueden agregar frutas al natural o en almíbar.&lt;/span&gt;&lt;span style="color: black;"&gt;&lt;o:p&gt;&lt;/o:p&gt;&lt;/span&gt;&lt;/b&gt;&lt;br /&gt;

Dejar reposar unos instantes para que se funda y añadir la manteca. Aromatizar con el brandy o cognac. Llevar a la heladera en un recipiente tapado hasta el día siguiente para que endurezca.&lt;/b&gt;&lt;/div&gt;&lt;div class="MsoNormal"&gt;&lt;b&gt;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp; Retirar de la heladera y tomar pequeñas porciones con una cucharita. Dar forma de bolitas(con las manos limpias y sin anillos ni pulseras). Colocar las bolitas en una fuente forrada con film adherente y llevar nuevamente unos instantes al frío.&lt;/b&gt;&lt;/div&gt;&lt;div class="MsoNormal"&gt;&lt;b&gt;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp; Colocar en un cuenco pequeño el cacao amargo y pasar las trufas para rebozarlas. &lt;b&gt;Procedimiento:&lt;/b&gt;&lt;br /&gt;

&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;Pelar el diente de ajo y machacarlo. Colocar en una cacerola el doble de volumen de agua que el arroz, incorporar el aceite, el ajo machacado, la rama de perejil y sal a gusto. Cuando rompa el hervor, sumar el arroz y cocinar unos 15 minutos (el tiempo real depende del tipo de arroz que se use), removiendo de vez en cuando para que no se aglutine.&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;Una vez que el arroz esté cocido (no debe quedar duro, pero tampoco muy blando), colarlo y reservar.&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;Mientras se cocina el arroz, preparar la guarnición: Cortar los tomates al medio o en gajos. Pelar las bananas y cortarlas al medio o en rodajas. Freír los tomates en 2 cucharadas de oliva un minuto, retirarlos, salpimentarlos y reservar.&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;Freír las bananas en 3 cucharadas de aceite de oliva, vuelta y vuelta. Aparte, preparar los huevos fritos y freír las tiras de jamón o salchichas en el aceite restante. Salpimentar a gusto.&lt;/b&gt;&lt;br /&gt;

Escurralas y píselas con el pisapuré. Sazónelas sólo con sal y manteca(no lleva leche, tiene que quedar muy firme). Incorpore las yemas de a una por vez, batiendo tras cada adición. Agregue el jamón y el queso rallado. Salpimente a gusto.&lt;/b&gt;&lt;/div&gt;&lt;div class="MsoNormal"&gt;&lt;b&gt;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp; Mientras tanto, enamanteque bien una pizzera o tartera y espolvoreela con pan rallado. Vierta el puré y extiendalo parejo con una espátula mojada con agua fría por el piso y los bordes. Cocine la tarta en horno bien caliente hasta que la superficie esté seca y dorada(unos 10 minutos).&lt;/b&gt;&lt;/div&gt;&lt;div class="MsoNormal"&gt;&lt;b&gt;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp; Mientras la tarta se cocina, corte las cebollas en rodajas finas, sepárelas en aros y saltéelas en el aceite. Sazone con sal, orégano y ají molido. Procedimiento: &lt;br /&gt;
&lt;br /&gt;
Retirar el exceso de grasa del gigot, deshuesar y cortar en cubos.&lt;br /&gt;
Condimentar con sal y pimienta.&lt;br /&gt;
En una olla con aceite de oliva caliente, sellar el gigot. Agregar el jamón crudo, la cebolla, la zanahoria y el apio cortados en mirepoix. Incorporar el tomate cortado en cubos.&lt;br /&gt;
Colocar las especias en un mortero y pisar bien. Incorporar al braseado.&lt;br /&gt;
Verter el vino y dejar reducir. Tapar con papel manteca y agregar caldo a altura a medida que la preparación se vaya quedando sin líquido&lt;br /&gt;
A mitad de cocción incorporar el romero y los champiñones. Cocinar durante 2 horas a fuego muy suave.&lt;br /&gt;
&lt;br /&gt;
Cous cous&lt;br /&gt;
En una sartén con manteca caliente, sudar el ajo picado. Incorporar los higos secos cortados en trozos y las pasas. Saltear. Incorporar el caldo y condimentar.&lt;br /&gt;
Verter la preparación, en caliente, sobre el cous cous. Dejar hidratar por 10 minutos. Condimentar y agregar los piñones tostados.&lt;br /&gt;

&lt;ul&gt;&lt;li&gt;&lt;b&gt;Medio kilo de calamares.&lt;/b&gt;&lt;/li&gt;
&lt;li&gt;&lt;b&gt;Cantidad necesaria de harina.&lt;/b&gt;&lt;/li&gt;
&lt;li&gt;&lt;b&gt;Un huevo.&lt;/b&gt;&lt;/li&gt;
&lt;li&gt;&lt;b&gt;Aceite para la cocción.&lt;/b&gt;&lt;/li&gt;
&lt;li&gt;&lt;b&gt;Pimentón, sal, ajo y perejil a gusto.&lt;/b&gt;&lt;/li&gt;
&lt;li&gt;&lt;b&gt;Limón para servir!&lt;/b&gt;&lt;/li&gt;
&lt;/ul&gt;&lt;/blockquote&gt;&lt;b&gt;Preparación:&lt;/b&gt;&lt;br /&gt;
&lt;br /&gt;
&lt;b&gt;1- En primer lugar, tenemos que lavar los calamares y secarlos.&lt;br /&gt;
2- Los cortamos en rodajas de 1 cm aproximadamente, y salamos.&lt;br /&gt;
3- Batimos un huevo(se pueden hacer sin huevo tambien, solo con harina), condimentado con pimentón, ajo y perejil a gusto.&lt;br /&gt;
4- Pasamos primero las rabas por harina, luego por huevo y las echamos  en aceite bien caliente.&lt;br /&gt;
5- Es importante que no las cocinemos mas de dos minutos, para evitar  que se endurezcan.&lt;br /&gt;

&lt;/div&gt;&lt;/blockquote&gt;&lt;b&gt; Lave y seque las presas de pollo, condiméntelas con sal y pimienta. En una cacerola vierta con aceite hasta cubrir apenas el fondo. Caliéntelo bien y dore las presas de pollo de ambos lados. Escúrralos y reserve. En el mismo aceite rehogue la cebolla junto con los ajos cortados en tiritas y los morrones cortados en tira gruesas, cuando las verduras estén rehogadas agregue el arroz lavado y seco, siga revolviendo hasta que los gramos de arroz estén traslúcidos. Agregue los tomates picados y con todo su jugo, el caldo, el laurel, el orégano, el azafrán y las presas de pollo. Mezcle suavemente. Cocine a fuego lento y deje hervir despacio, agregándole, si le hiciera falta más caldo hasta que el arroz esté al dente. Agregue en la cacerola la conserva de tomate diluida en un poco de agua fría y las arvejas escurridas, mezclando. Cuando la preparación retorne el hervor apague el fuego, tape la cacerola y deje reposar 2 minutos. Sirva las presas de pollo formando una corona en la fuente y en el centro apile el arroz con toda su salsa.&amp;nbsp; Espolvoréelo con perejil picado y queso rallado.
