4 филета от пангасиус /500 гр./&lt;br /&gt;
100 мл. бяло вино&lt;br /&gt;
100 гр настърган кашкавал за поръсване&lt;br /&gt;
&lt;br /&gt;
За марината:&lt;br /&gt;
4 с.л. зехтин&lt;br /&gt;
сока от 2 лимона&lt;br /&gt;
копър&lt;br /&gt;
риган&lt;br /&gt;
черен пипер&lt;br /&gt;
1/2 ч.л. подправка за риба&lt;br /&gt;
&lt;br /&gt;
За карамелизирания лук:&lt;br /&gt;
4 средни глави лук&lt;br /&gt;
2 с.л. зехтин&lt;br /&gt;
сол&lt;br /&gt;
3 с.л. оцет&lt;br /&gt;
1 с.л. мед&lt;br /&gt;
30 мл. бяло вино&lt;br /&gt;
мащерка&lt;br /&gt;
&lt;br /&gt;
Приготвяне:&lt;br /&gt;
Мариноваме филетата в маринатата и оставяме в хладилник за около 1 час. След това ги поставяме в намазана със зехтин тава и ги заливаме с виното и половината от маринатата. Завиваме тавата с алуминиево фолио и печем 20 мин в предварително загряна фурна на 180 градуса. След това махаме фолиото и допичаме докато остане на мазнина. Върху всяко филе поставяме карамелизиран лук, наръсваме с настърган кашкавал и допичаме във фурната докато хване коричка. Поръсваме с магданоз или пресен копър.&lt;br /&gt;
&lt;br /&gt;
Приготвяне на карамелизирания лук:&lt;br /&gt;
Нарязваме лука на кръгчета и притриваме с пръсти, за да се отделят.Поставяме го в загрят тиган с мазнина и запържваме до зачервяване. Прибавяме виното и солта и задушаваме докато остане на мазнина. • 150 мл. кондензирано мляко &lt;br /&gt;
• 200 г шоколад &lt;br /&gt;
• 30 г масло &lt;br /&gt;
• 30 г орехи &lt;br /&gt;

Кондензираното мляко (150 мл.) се изсипва в малка тенджера и се загрява на котлона. Щом почти заври, се добавя натрошеният шоколад (200 г) и се бърка до разтопяването му. Накрая се добавя маслото (30 г) и натрошените орехови ядки (30 г) и всичко се бърка, докато се смеси и сгъсти. Получената смес се изсипва в много малка правоъгълна тавичка, в която е поставено готварско фолио. Заглажда се и се покрива с фолио и отгоре. Поставя се в хладилника за няколко часа, докато се втвърди. Замесва се тесто, разделя се на 6-8 топки. В средна тавичка  разточваме с масло питките като между всяка слагаме плънка от 2-3 яйца и сирене.Нарязваме на парчета .&lt;br /&gt;

Продуктите са за 4 гювечета.&lt;br /&gt;
&lt;br /&gt;
&lt;b&gt;Приготвяне:&lt;/b&gt; Обелете патладжана, нарежете го на филийки и го накиснете в солена вода. След 20 мин. го изпържете, като всяко парче го топите в брашно. Нарежете моркова на тънки резенчета. Домата нарежете на кубчета. Нарежете и кренвиршите и гъбите. Сложете малко мазнина в гювечетата и разпределете нарязаните продукти (без кашкавала и яйцето) в тях. Захлупете и печете 30 мин., след което сложете отгоре кашкавал и чукнете по едно яйце. Върнете във фурната докато се изпече яйцето.

&lt;br /&gt;
&lt;b&gt;Приготвяне&lt;/b&gt;: Отделяме 4-ри белтъка и ги разбиваме с 1 каф.ч.захар и 1 каф.ч.брашно. Към сместа прибавяме орехите и така е готова  бялата смес. &lt;br /&gt;
&lt;br /&gt;
Останалите яйца е 4-рите жълтъка разбиваме с останалата захар, олиото и брашното. &lt;br /&gt;
Разделяме на две към едната прибавяме какао . Във формата изсипваме първо кафявата после бялата и на края жълтата смес.&lt;br /&gt;

1 л пр. мляко&lt;br /&gt;
1½ ч.ч.захар&lt;br /&gt;
3 суп. лъжици желатин&lt;br /&gt;
7 яйца 2 суп.лъж. брашно&lt;br /&gt;
3 суп.лъж. какао&lt;br /&gt;
2 ч.ч. млени орехи&lt;br /&gt;
есенция - ром, коняк, шоколад или др. по избор&lt;br /&gt;
&lt;span style="font-weight: bold;"&gt;&amp;nbsp;&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-weight: bold;"&gt;Приготвяне:&lt;/span&gt;  Слага се млякото със захарта да ври на водна баня , като се разтопи захарта се слага желатина (предварително накиснат в ½ ч.ч.вода). Сместа ври около 5-6 мин. Прибавят се жълтъците добре разбити с 2 лъж. брашно с 1 каф.ч. вода. Сместа ври още около 10 мин. Смъква се от огъня и се оставя да изстине. През това време белтъците се разбиват като за целувки. Като изстине млечната смес към нея се прибавят белтъците и се разбърква добре с миксер. Разделяме на 3 равни части:&lt;br /&gt;
&lt;br /&gt;
І част - се слага конячната есенция;&lt;br /&gt;
ІІ част - прибавяме 3 лъж. какао и шоколадовата есенция;&lt;br /&gt;
ІІІчаст - прибавяме орехите и ромовата есенция;&lt;br /&gt;
&lt;br /&gt;
Първата смес сипваме във форма леко намаслена с олио, оставя се в хладилника да се по втвърди около 10-15 мин. Втората смес се изсипва върху първата и пак се слага в хладилника за 10-15 мин. След което сипваме третата смес и оставяме за 1 час&amp;nbsp; (може и повече от час). Разклаща се за да се отлепи и се обръща на поднос. Съхранява се на студено.&lt;br /&gt;

След около 20-25 минути се прибавя ориза. Като се свари и той се слага доматения сос, в който предварително са разтворени брашното и малко червен пипер. Още докато са топли се  пасират и към тях се прибавя яйцата /сурови/, брашното и подправките.&lt;br /&gt;Продуктите за пълнежа се нарязват на кубчета и се разбъркват. Върху  мокра тензух кърпа се изсипва картофената смес и с ръка се оформя блат с  размери 30/30см. Върху така полученият блат се разпределя равномерно  плънката. Завива се на руло и се поставя в тава предварително намазана с  2сл олио. Сиренето се натрошава, пиперките се нарязват и се &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_5"&gt;смесват&lt;/span&gt; със  сиренето и царевицата и се разбъркват. В тиган с малко мазнина се  запържва лукът до розово, прибавя се каймата(кренвиршите), да се запържат и  те, и се слага доматеното пюре. След това в йена се подмазва със  масло, слагат се първо спагети, над тях сместа със сиренето, пак спагети, и  другата смес със каймата. Най-отгоре пак спагети и се настъргва кашкавал. За крема: 1 литър прясно мляко, 1ч.ч захар, 4 яйца, 6 с.л. брашно, ванилия, масло.&lt;br /&gt;&lt;span style="font-weight:bold;"&gt;Приготвяне:&lt;/span&gt; Във врящата вода се слага разтопеното масло, маха се от огъня и постепенно се прибавя брашното с постоянно бъркане до получаване на гладко тесто, което се отлепва от съда. След изстиване на тестото се прибавят с бъркане едно по едно яйцата. С лъжица се поставят топки в намазнена тава и се пекат в загрята фурна.&lt;br /&gt;&lt;span style="font-weight:bold;"&gt;Крем:&lt;/span&gt; Затопля се млякото със захарта, в малко  вода или мляко се разбиват брашното и жълтъците и се прибавят при млякото с постоянно бъркане. Вари се крема около 15 минути, слага се ванилията и маслото. Нарежда се в намазнена тавичка половината от сместа за кекса, настърганите ябълки, поръсени с канела, захар и счукани орехи. Върху ябълките се изсипва другата половина от сместта. В йенска тава, предварително намазана с масло се нареждат половината от картофите, спанака със сиренето, останалата част от картофите. Най-отгоре се поръсва с разтопено масло и настърган кашкавал или с разбитите яйца с киселото мляко.
