Though limes are small in size but they are loaded with nutrients.

Drinking lime juice provides a variety of health benefits.

1. Limes are high in active compounds that function as antioxidants in your body. They are good sources of antioxidant. Antioxidants are important compounds that defend your cells against molecules called free radicals. In high amounts, free radicals can damage your cells, and this damage has been linked to chronic conditions like heart disease and diabetes.

2. Limes are high in vitamin C, a nutrient that may help boost your immune system. It increases the production of white blood cells, which help protect your body against infections and disease. It also help wounds recover faster by reducing inflammation and stimulating collagen production which promotes healthy skin.

3. Limes are generally safe to eat, drink, and touch, but some people may have an adverse reaction to eating them or applying them to their skin. Limes are very acidic and best enjoyed in moderation. Eating many limes can increase your risk of cavities, as the acid in limes and other citrus fruits can erode tooth enamel.

4. Drinking lime water improves digestion. Limes are acidic and they help saliva break down food for better digestion. The acidity of limes can clear the excretory system when experiencing constipation.

5. Lime water helps you manage your weight. Citric acids can boost metabolism, helping you burn more calories and store less fat.

To prepare lime water or juice:

You only need to pick up a few limes from the lime tree or store. Wash fresh limes thoroughly to remove dirt, and insects. After filling a glass with water, squeeze juice from one or two limes into the glass. For the best results, drink lime water without sugar or other additives. Remember not to take too much of lime water.

Article by:

Oladoja Beatrice

Food, Nutrients & Health

.......

For other related articles, return home.

References:

Healthline

Medical News Today

THE FOOD LEGENDS

Milk

I strongly believe this can be anyone’s favourite delicacy. It is a typical dish made by long/short-grain rice, tomatoes, spicy, onions, chicken and meat, although the ingredients vary across different region, I believe this is why there is a controversy on which is better between Nigeria and Ghana Jollof Rice (lol).

Although there is no specific health benefits of Jollof Rice on the internet but based on what I realized I’ll be stating some of it health benefits which are as follows;

1. I hope you can relate when I tell you eating Jollof Rice brings Joy. There is this kind of joy you feel when you know you’ll be having that special dish especially party Jollof rice. Personally, I always look forward to days when my parents have a party to attend, on such days they bring back home party Jollof rice and fried rice (yummy) well you can’t blame me as I am a food lover I guess, hard to admit that (lol). When you are joyful it promotes a healthier lifestyle, relieves stress and pain, and support longetivity as well.

2. The chicken present in the dish contains the amino acid tryptophan which has been linked to higher levels of serotonin (the “feel good” hormone) in our brains.

Plant Based Diet simply refer to a diet made of food products from plants. Although, there seems to be many interpretations of “Plant-Based Diet”. But I need you to understand that it doesn’t necessarily mean elimination of every other animal food products, but rather a diet that is centred on food products from plants.

To have a broader understanding of Plant Based Diets, I would like to dive into the five group of food from plants.

1. Fruits

Fruit is a fleshy part of plant, which develops from the plant’s flower, usually containing a seed or more. Examples would include apple, banana, mango, orange, watermelon, pawpaw, grape, strawberry etc.

2. Vegetables

Vegetables are plants or parts of plants usually eaten by humans. Some of these plants can be eaten with exposure to minimal food processing techniques. A few examples are spinach, cabbage, lettuce, onions, jute leaf (Yoruba- Ewedu) etc.

3. Tubers

Tubers are enlarged structures in plant acting as food storage and growing in the ground, in or around the root region of the plant. Examples are yam, cassava, potato, carrots, sweet potatoes etc.

4. Whole Grains

Whole grains include foods like rice, wheat, corn, sorghum, barley, oat etc.

5. Legumes

They include beans, nuts, soybeans, cowpeas, and groundnuts.

Although there are several benefits of plant based diets but I would love to mention two major benefits;

1. Weight Control

Plant-based diets are nutrient dense and full of fibre, this makes them so effective for weight loss. Plant based diets can help you cut out excess calorie intake, because the presence of fibre can make you feel fuller. And fibres are indigestible, so serves are good measure for calorie intake control. Apart from making you feel full, fibre also makes the digestive tract healthier, aids digestion process and eases bowel movement.

2. Disease Prevention

The essence of plant based diet in living a healthy life cannot be over-emphasised. Plant based diets are rich in micronutrients, antioxidants and phytochemicals. All of these helps in improving a person’s immune system. Your heart would be healthier with plant-based diets, because by having such you would eliminate all manners of saturated fat and excessive sugar intake from other food products. Plant based diet gives you a reduced risk of type-2 diabetes. All of these are scientifically proven.

Basing the higher percentage of your diet on junks and highly (industrially) processed foods isn’t a healthy way of living. Junks and Industrially processed foods have their place, but they shouldn’t constitute the major part of your diet. Eat healthy, this will influence the kind of life you would live.

Thanks for reading!

Article By:

Oluwadurotimi Okediji

Food, Nutrients and Health

For other related articles, visit our blog

www.thefoodlegends.blogspot.com

References

https://www.forksoverknives.com/how-tos/plant-based-primer-beginners-guide-starting-plant-based-diet/

https://www.bbcgoodfood.com/howto/guide/what-plant-based-diet

https://www.health.harvard.edu/blog/what-is-a-plant-based-diet-and-why-should-you-try-it-2018092614760

https://en.wikipedia.org/wiki/Tuber

THE FOOD LEGENDS

Ginger

Ginger is a flowering plaints whose rhizome ginger root or ginger is widely used as a spice and a folk medicine.

Although used in traditional medicine and as a dietary supplement, there is no good evidence that consuming ginger or its extract has any effect on human health.

Raw ginger is 79% water, 18% carbohydrate 2% protein and 1% fat.

Adverse effects

Allergic reactions to ginger generally result in a rash. Although generally recognized as safe, ginger can cause heartburn and other side effects, particularly if taken in powdered form. It may adversely affect individuals with gallstone and may interfere with the effects of anticoagulants, such as warfin or aspirin.

Health Benefits

A unique fragrance and flavor of ginger comes from its natural oils, the most important of which is gingerol. Gingerol is the main bioactive compound in ginger. It is responsible for most of ginger’s medicinal properties. Ginger is high in gingerol, a substance with powerful anti-flammatory and antioxidant properties

Ginger helps relieve nausea and vomiting for people undergoing certain types of surgery. It is also effective when it comes to pregnancy – related nauseas such as morning sickness. But it recommended that pregnant women who are close to labour or who had miscarriage avoid ginger. Ginger is contraindicated with a history of vaginal bleeding and clothing disorder as well.

Ginger could also help reduce body mass index (BMI) and blood insulin levels. High blood insulin level are associated with obesity.

Ginger help with osteoarthritis. Osteoarthritis is a common health problem.

It involves degeneration of the joints in the body leading to symptoms such as joint pain and stuffiness.

Ginger contains the substance gingerol, which appears to have protective effects against cancer.

Ginger can protect against age-related damage to the brain.

When it comes to taking balanced diet, it always emphasized that vitamins and minerals are important in human diet.

They are both categorised as Micronutrients, but are actually different in a number of ways. It would be necessary to keep ourselves reminded that micronutrients are needed in small quantities but are highly necessary to our bodily growth, processes and maintenance. Micronutrients however shouldn’t be consumed in excess, as they might cause more harm than good when taken in excess.

So let’s begin by relating what Vitamins are;

Vitamins are organic substances needed in minute quantities for growth and for maintaining good health. They are obtained from plants and animals. They are broadly classified into two categories:

• Fat Soluble Vitamins (Vitamin A, D, E and K)

• Water Soluble Vitamins (Vitamins B1, B2, B3, B5, B6, B7, B9, B12 and C)

Vitamins generally can be easily destroyed by heat, light and chemical agents. This makes them require less exposure to cooking or harsh food processing techniques. Vitamins play a significant role in immune and nervous system functioning, repairing and healing wounds, developing red blood cells, and growth and development by releasing energy from food. They also keep our eyes, lungs, skin, hair, bones, tissues and gastrointestinal tract functioning well.

Now to Minerals;

Minerals on the other hand are inorganic substances needed for bodily maintenance. They originate in the earth. Because they are inorganic in nature, they are generally more stable than vitamins and can withstand a greater measure of exposure to heat and light compared to vitamins.

They are broadly classified into two categories likewise:

• Essential Minerals

• Trace Minerals

Essential minerals are required in higher quantities than trace minerals. Trace minerals are required in very much minute amounts. Essential minerals include sodium, chloride, potassium, calcium, phosphorus, magnesium and sulphur.

Orange peel though often discarded has different uses and health benefits.

Uses of Orange peel;

In the Kitchen:

• The strips of orange peel can be boiled to make tea

• One use of orange peels is as a dried seasoning. Orange peels can be scraped across with a specialized kitchen grater called a zester. The zester removes only the thin upper layer of the orange peel, not the lighter colored pith. The grating action creates a pile of orange zest, which is usually left to dry overnight before being stored in an airtight herb bottle. Orange zest is often used to enhance other flavors in desserts, gravies, and even some meat dishes. Dried orange peels can also be sprinkled as a garnish.

• Orange peels can be used to make delicious homemade oils. Place some orange peel and cranberries in olive oil and close it with a cork. You can observe a wonderful flavor to the oil after some weeks.

• Placing a piece of orange peel in a container of brown sugar will help keep it from drying out.

• Orange peel can be chopped into smaller pieces, after the orange juice has been squeezed in a bowl. Both can be boiled together to make orange jam.

• Orange peel can be dried, grinded and made into powdery form which can be used for baking as orange peel powder.

• Yam flour normally known as (Elubo) can be fortified with orange peel.

Around the House:

• Another use for orange peels, is air freshening. Combing dried orange peels, cinnamon sticks, lemon peels and flower petals in a simmering pot of water. As the steam leaves the potpourri, the air should become much more scented. For safety purposes, keep an eye on the pot and do not leave it boiling unattended.

• Orange peels can be tastefully cut and added to dried flower arrangements for extra color, shape, and style.

• Dried orange peels can be stored in a cheesecloth bag and kept in closets, drawers or cupboards to help reduce musty odors.

Outside the House:

• Placing orange peels at the bottom of your garbage can before putting in a garbage bag is said to reduce odor and also help discourage insect infestation.

• Rubbing orange peels directly on the skin can be an effective mosquito repellent. Insects in generally find the odor of orange oil offensive.

• Some experts suggest that a mixture of dried orange peels and coffee grounds will discourage neighborhood cats from using a homeowner’s yard as a litter box. The overpowering smell of orange oil and coffee overrides their usual litter box signals.

• Taking a few orange peels in a cup of warm water and make a puree in a blender. Pour this solution into anthills to prevent ants or anywhere around the house that you do not want ants to be.

To be continued...

Thanks for reading!

Article by:

Iyiola Grace Omowumi

Food, Nutrients & Health

......................................................

For other related articles visit our blog

www.thefoodlegends.blogspot.com

Reference:

gomestic.com

wisegeek.com

THE FOOD LEGENDS

Amazing Reasons Why You Should Eat Snails

I remember those days my Dad would get plenty of snails (that had been processed) home from work. I always looked forward to Wednesdays meal (if your home is like mine that has a food timetable for each day) of Rice and Snail Stew, Yummy!😋

Talk about snails, most people, especially in our blessed country Nigeria, have several reservations towards it, most of what they say appears superstitious.

However, snail in itself has it amazing benefits in the body, some of which you will find out in this article.

Snails are small mollusks that wreck havoc in your garden or crawl around on the wall, sidewalks after rain. Snails are actually mouth watering delicacy especially when cooked in a well garnished sauce. To some people eating snails sounds unpleasant but if they can get past their thoughts, they will discover snails have a unique taste. When cooked, it takes on the flavour of whatever meal, behind this garlicky goodness, is there any nutritional substances?

Let’s take a look at some of the amazing reasons why you should eat snails.

1. Snail is a source of Protein

Snails do provide a low calorie source of protein which is essential for building and repairing muscle and is also better at filling you up than carbs and fat. Most people look to seafood as an easy source of protein, but actually snails have more.

2. Snail is a source of Selenium

We do not need much selenium in our bodies, but we do need some to keep a healthy immune system and to protect cells against damage. And, snails contain selenium.

3. Snail is a source of Iron

The iron nutrient found in snails is essential for building red blood cells and carrying energy around the body. One serving of snails contains 22% of recommended daily allowance of Iron. A lack of iron can lead to extreme fatigue and anemia.

4.

White bread is one of the most popular staple foods worldwide. It is made from refined wheat flour. Refined wheat flour already has brans and germ layers eliminated. Although this process has a number of baking advantages, however the removal of bran and germ layers also leads to the loss of dietary fibre, minerals, vitamins and some other essential nutrients. However, fortification remains an avenue to replace a number of nutrients that might have already been lost.

White bread is a food rich in carbohydrates. However, having a glycaemic index of 75 makes it rank very high on the glycaemic index. Food that are high on the glycaemic index have the ability to greatly increase your blood sugar level immediately after consumption. This is because they are composed of sugar that can be easily broken down and speedily digested. Due to its level of contribution to the blood sugar level, over dependence on white bread may lead to weight gain and increased risk of diabetes.

Sugar plays an important role in the body, in fact a role that cannot be played by any other nutrient. However, the point is that, it can be dangerous to our health when it is ingested in excess.

White bread may not be all bad as the media sometimes project, however the point is you need to get conscious about eating a balanced diet. Basing a majority of your diet solely on white bread may not be so healthy as well. It is nutritional advisable to consume more of whole foods than refined foods.

Never forget that, eating well is your responsibility. Your body is the only home you have to live on this planet, take very good care of it.

Heart burn is a common symptom of acid reflux, a condition where some of the stomach contents travel back up into the oesophagus or food pipe. It creates a burning pain in the lower chest, just behind the breastbone.

The pain is often worse after eating, in the evening or when lying down or bending over. It is common for people to experience occasional heart burn and it is rarely a significant cause for concern.

Causes

Heart burn occurs when stomach acid returns back up into the tube that carries food from your mouth to your stomach (oesophagus).

Normally when you swallow, a band of muscle around the bottom of your oesophagus (lower oesophageal sphincter) relaxes to allow food and liquid to flow down into your stomach then the muscle tightens again.

If the lower oesophageal sphincter relaxes abnormally or weakens, stomach acid can flow back up into your oesophagus (acid reflux) and cause heart burn. The acid back up may be worse when you are bent over or lying down.

Symptoms

• A burning sensation in the middle of the chest

• A burning, indigestion like pain • Bitter or acidic taste in the mouth.

Risk Factors

Certain food and drinks can trigger heart burn in some people including;

• Pepper mint

• Spicy foods

• Onions

• Alcohol, carbonated beverages

• Large or fatty meals

Being overweight or pregnant also can increase your risk of experiencing heart burn.

Remedies

Using some lifestyle and behavioral tips can help prevent or reduce heartburn.

• Following a healthy diet, with a limited fat intake

• Avoid eating 2-3 hours before bedtime

• Avoid wearing tight-fitting clothes

• Exercising regularly

• Avoid food triggers such as spicy food and foods causing gas.

• Maintaining a moderate weight

It's of note however, that these lifestyle modifications may not work for everyone. If a person experiences acid refluxes symptoms often, they should consult a doctor, who may refer them to a gastroenterologist (a specialist in gut medicine).

Thanks for reading!

Your feedback will go a long way. Coffee and tea contain no food value. Caffeine in small amounts is a mild stimulant. That is, it speeds up bodily activities. It increases the amount of urine secreted by the kidneys and may increase peristalsis (Waves of muscle contraction that occur in the digestive tract). Some persons use caffeine without ill effect.

Coffee and tea, at times make other people nervous and dizzy, interfere with sleep or cause headaches and indigestion.

Large amount of coffee or tea can demage the kidneys or cause circulatory ailments.

Drinking too much coffee, if it includes cream and sugar, increases the calories consumption at the rate of about 100calories per cup. On an empty stomach, it may also contribute to irritability or it may cause insomnia.

Coffee is not recommended for certain gastrointestinal conditions, and an excess may produce palpitations (irregular heartbeat) in a normal heart.

Children are usually more susceptible than adults to stimulation by coffee and tea, they need milk which contains the calcium required for good growth of bones and teeth.

Thanks for reading!

Article by

Adisa Aanuoluwapo Ruth

Food, Nutrients & Health

...

For other related articles visit our blog

Return to Homepage.

THE FOOD LEGENDS

Carotenoids as an Essential Source of Vitamin A

Carotenoids are pigmented compound synthesize by plants and microorganisms. They are usually bright yellow, red, and orange colours in plants, vegetables, and fruits.

Fruits and vegetables constitute the major sources of carotenoid in human diet.

Carotenoids are beneficial to fruit and vegetables by preventing human diseases including cardio-vascular diseases, cancer and other chronic diseases. They are also an important dietary sources of vitamin A.

There are more than 600 different types of carotenoids. Some can be converted into vitamin A when released into the body.

A few of the carotenoids were identified such as alpha carotene, beta carotene, beta cryptoxanthin, lutein, zeaxanthin, lycopene.

Vitamin A is a fat-soluble vitamin. It can be found in many fruits, vegetables, eggs, whole milk, butter, fortified margarine, meat, and oily saltwater fish. Vitamin A helps to form and maintain healthy teeth, skeletal and soft tissue, mucus membranes, and skin.

It is also known as retinol because it produces the pigments in the retina of the eye.

Vitamin A promotes good eyesight, especially in low light

Carotenoids are bioavailable if they are consumed but best absorbed through eating of fat meal. Processing and cooking of food lead to mechanical breakdown of the tissues thereby releasing carotenoids and improves the absorption of food.

They are absorbed into the gastrointestinal mucosalcells and appear unchanged in the circulation and tissues.

In the intestine they are mostly available due to some processing in food such as boiling.

Carotenoids are classified into two main groups: xanthophylls and carotenes. Both types of carotenoids have antioxidant properties. In addition, some carotenoids can be converted into vitamin A, an essential component for human health and growth.

These provitamin A carotenoids include alpha carotene, beta carotene, and beta cryptoxanthin. Non-provitamin A carotenoids include lutein, zeaxanthin, and lycopene.

Xanthophylls

Xanthophylls contain oxygen and sometimes have more of a yellow pigment. Xanthophyll carotenoids can protect one from too much sunlight. They are most associated with eye health. Lutein and zeaxanthin fall under the xanthophyll category. Foods include; kale, spinach, summer squash, pumpkin, avocado, yellow-fleshed fruits, corn and egg yolks.

Carotenes

Carotenes which are purely hydrocarbons does not contain oxygen and are associated with more of an orange pigment. Carotene carotenoids play a significant role in helping plants grow. Beta carotene and lycopene fall under this category of carotenoids.

Foods in the carotene include carrots, cantaloupe, sweet potatoes, papaya, pumpkin, tangerines, tomatoes, winter squash

Alpha-carotene and βeta-carotene are primarily regarded as precursors of vitamin A. Common orange, yellow, and green-colored fruits and vegetables such as carrot, pumpkin, apricot, sweet potato, and beans are rich sources of these carotenoids. The conversion β-carotene to vitamin A (retinol) is theoretically higher than α-carotene and β-cryptoxanthin.

For instance, one mole of β-carotene yields two moles of retinol, while the other two provitamin A carotenoids are only half as active as β-carotene.

Beta carotene has said to have reduce vitamin deficiency in human.

Foods that are rich in beta-cryptoxanthin include tangerines, persimmons and oranges.

Beta-cryptoxanthin

Beta-cryptoxanthin is more of a vitamin A-forming because research shown that it has a higher bioavailability than alpha and beta-carotene.

Foods rich in lutein include egg yolks, broccoli, spinach, kale, corn, orange pepper, kiwi fruit, grapes, orange juice, zucchini, and squash.

Lutein is absorbed best when it is taken with a high-fat meal. lutein and zeaxanthin, they are also present in high concentrations in egg yolks. Lutein and zeaxanthin are carotenoid pigments that impart yellow or orange color to various common foods such as cantaloupe, pasta, corn, carrots, orange/yellow peppers, fish, salmon and eggs.

Health benefits of carotenoids include essential growth, immune system and eye health.

Eating carotenoid-rich foods can protect the eye and prevent the growth of cancerous cells.

One of the leading causes of blindness is macular degeneration, or the degeneration of the center of the retina. Long-term blue light exposure can cause this and negatively affect the delicate parts of the eye.

However, the carotenoids lutein and zeaxanthin found in the retina can help to absorb blue light.

Carotenoids have been associated with lowering cancer risk, specifically lung cancer. When you smoke cigarettes, you ingest harmful chemicals that destroy healthy cells. Lycopene has reported to have reduced postrate cancer. Similarly, carotenoids have been associated with reducing the risk of skin cancer.

Some carotenoids can break down into vitamin A, a nutrient that protects against premature skin damage from sun exposure. Both are risks for melanoma, premature wrinkles, and unhealthy skin.

A 2015 review found that foods high in carotenoids appear to be protective against head and neck cancers

Adding more carotenoid-rich foods to diet strengthen immune system and overall health. While carotenoids are available in vitamin A supplements, consuming them naturally enhances their antioxidant effects.

In addition, supplements can be dangerous if they contain high levels of vitamin A, which can be toxic if you take too much.

Carotenoids is an essential source of vitamin A, the alpha carotene, beta carotene and beta cryptoxantin are pro vitamins that can be converted to retinol. They are varied in their conversion and essential.

Thanks for reading!

Article By:

Faizah Jumoke Abdulhameed

Food, Nutrients & Health

......................................................

For other related articles visit our blog

Return to HomePage.

References

1. https://www.healthline.com/health/carotenoids

2.

Stomach ulcers, which are also known as gastric ulcers, are painful sores in the stomach lining which occurs when the thick layer of mucus that protects your stomach from digestive juices is reduced.

This allows the digestive acids to eat away at the tissues that line the stomach, causing an ulcer.

Causes

The two main causes of ulcers of the stomach and small intestine are:

Infection with bacterium Helicobacter pylori bacteria(H-pylori) and a class of painkillers called nonsteroidal anti-inflammatories, (NSAIDs).

Symptoms

Symptoms of stomach ulcers include:

1. A gnawing or burning pain in your stomach between meals or at night.

2. Bloating.

3. Avoid foods that irritate your stomach. If it upsets your stomach when you eat it, avoid it.

2. Stop smoking.

Heavy smokers are more likely to develop duodenal ulcers than nonsmokers.

3. Practice moderation.

Heavy consumption of alcohol and has been shown to contribute to the development of ulcers, so keep your intake to a minimum.

4.

In between schooling and working finding the right time to take your meals can be quite challenging but then planning your meals ahead and even preparing them ahead so they can be readily available when needed helps you to avoid starving yourself before eating which in turn prevents you from overeating or replacing breakfast with midday snacks high in salt, sugar or fats which increases the risk of you getting obese or overweight.

Eating at the right time helps in weight control and also prevents mood swings and dramatic hunger pangs.

When is the exact time to eat my meals?

The 3 main meals that you eat in a day are Breakfast, Lunch and Dinner.

Breakfast:

Breakfast means breaking the fast. It is the meal you take 8-10hrs after the previous meals i.e between 6-10a.m and it is usually referred to as "the most important meal of the day".

It is from breakfast you get to refuel your body and obtain the energy you need to get through the day to avoid feeling tired or fatigued throughout the day.

Lunch:

Lunch times are usually at work or school so your lunch should usually be lighter than dinner or breakfast as you need to be able to maintain your concentration during these hours. Eating a heavy lunch during work hours can cause you to feel tired or sluggish and be less productive. Instead of overeating after a late lunch you can eat snacks that contains carbohydrates and proteins to keep you filled and energized.

Dinner:

Eating heavier meals at dinner because you're trying to compensate for skipping breakfast and lunch or eating only midday snacks should be avoided because your body's digestive function begins to slow down around the last hour.

Dinner should be between 5-6pm but it is usually unrealistic for you to have dinner as early as 5-6pm which is 4-5hrs after lunch.

Some of the factors that stops you from eating your meals at the time you are supposed to includes;

1. Not feeling hungry;

This usually happens because you've trained your body not to send hunger signals at that time and because you've always being ignoring those signals. However, reintroducing breakfast will cause your natural hunger signals to return.

2. Not enough time to eat:

Rushing through meals is a very common act instead of rushing through your meals you should take time to sit and enjoy your meals this would help you digest your food better and also improve your overall wellbeing.

Preparing a meal schedule and being consistent with it would help you eat at the right time. Each meal should be 4-5hrs apart and this schedule would help you maintain your weight and also prevent overeating.

Thanks for reading!

Article by:

Olamide Oladejo

Food, Nutrients & Health

......................................................

For other related articles visit our blog

Return to Homepage.

THE FOOD LEGENDS
