Lady Dawnya:
Hi, everyone. Today I am so pleased to interview
Anthony Priley of AffiniTea Brewing Technology. He is
going to be telling us all about the new and exciting trends
in tea and the things that are happening with the AffiniTea
Brewer. I’m not sure if everybody is familiar with the
company AffiniTea and its products. That’s why I wanted
to bring Anthony on because he has some fabulous
information that can really revolutionize your tea shop and
modernize it. Welcome Anthony, it’s great to have you
with us.

Anthony Priley:
Hi, thanks for having me.

D: So tell me, we always like to know how people got
involved with tea because a lot of people don’t realize
what a large industry and quickly growing industry it is.
You’ve been around for a long time, as far as tea is
concerned. What was your tea journey like? How did
you get started?

AP: In the early 90’s, I think it was 1992 or 1993, my
sister, my brother-in-law and I opened a retail café
with a theme of being a beverage café. What that
was, was the incorporation of four beverages under
one roof. We saw several different trends emerging.
One being the coffee trend, of course, at that time
was in full swing. The Microbrew beer trend was
another one.

Then the emergence of California wines was the third.
Then the fourth being tea. Our journey was started
by trying to discover what the equivalent in the tea
industry was to those other three products. We
were very familiar with the higher quality products in
those other areas but we didn’t understand or know
what it was in tea. That precipitated a journey to see
Mike Spillane at the G.S. Haley Company and during a
formal Tea Tasting, being exposed to loose leaf tea,
which as I am sure everyone knows is a
transformational experience.

D: Absolutely. So you guys were really in the Fusion
drink market really early.

AP: Yes, very early, ahead of the curve in many
respects. Coffee was really the only trend at that
point that was in full swing. We rode the expansion
of California wines and then the Microbrew market up
through early 2003/2004 when we sold the business
and focused on the inventions that we had made in
the tea area of the business.

D: Is that how you came up with the AffiniTea, it was
something that you were doing?

AP: No, what it was the day we went down and we
bought $3000 worth of tea. Passionately bought a
chest of every tea that we liked that day, not
realizing how many cups of tea ten chests of tea was.
That day we bought several hundred thousand cups
of tea and went back excited, as most people do.

We then went out and bought the jars at the local Pier
1 and put the jars up, got the infusers, everybody was
excited. Then the sales just didn’t happen. I started
to ask the employees ‘Why are you reluctant to sell
this product?’

Finally they would come clean and say
because I can’t make the same product twice, even if
I do it right, if I convert a customer. If they like what
I have done, the next time they come in, maybe they
brought a friend the second time and say make it just
like you did before, almost no one could make the
same tea twice.

That was disturbing because
sometimes it would even be better than the time
before but the customer, the most important thing to
the customer was that they got what they got last
time because that is what they were expecting......

Winter Fantasy

During the long stretch between New Year’s and
Valentine’s Day, it can seem like winter will never end.
Brighten a cold afternoon with a Winter Fantasy tea
party, reminding guests of the beauty of the winter
landscape, while you warm them with your hospitality.

Choose invitations with wintry scenes, and ask guests
to wear a favorite woolen scarf to the party. Each guest
can also contribute a candle to a “fireplace” you’ll build
on a tray lined with aluminum foil. Set the tray where
you can admire the flames ( at a safe distance from
drafts and loose hanging drapery.)

Think snow and ice as you plan your decorations: lots
of white linen, lace, and china, and all your best silver.
Place votive candles on small mirrors down the center
of a long table, alternating with cut glass dishes of
jewel-toned jellies and jams.

Set places for a sit-down formal afternoon tea,
giving each guest a napkin tied with an elegant strip of
lace. Prepare a place card for individual guests, decorated
with snowflake designs or real white feathers. Make cards
with the names of each dish and type of tea you are serving.

Spray-paint winter branches white, and stand them
around the room in clear glass jars tied with white satin
ribbons. Drape white gauze around pictures and
windows. Blanket windowsills with more white gauze,
nestling pine cones into the folds. Line metal baskets
with paper doilies, and fill them with candies wrapped
in silver paper.

If you’re lucky enough to have a snowfall after you
send out invitations, collect fresh, clean snow and store
it in your freezer in plastic bags. You’ll be able to serve
authentic snow cones in champagne or wine glasses,
drizzling them with berry preserves thinned with ice
water. (your guests will love this!)

If snow is not a possibility consider creating “snow balls”
out of round scoops of vanilla ice cream rolled in coconut
and served on a brilliant silver dish.

Soft classical music will round out the mood. Mozart,
Bach, and Handel are always in season. Choir music and
English madrigals bring the warm of the human voice
into your party.

To break the ice, ask guests to each share a story about
a time when they were unusually cold. Make sure the
room is warm and cozy, and that everyone’s cup is
filled with steaming tea as they remember colder times.
Then go around the tables once more, asking each
person one thing they like about spring.

Management Suggestions:

1. Activities will play an important roll in this winter
themed teatime. Consider reading poems about snow
or history on winter related customs in a variety of
other countries.

2. Place winter related poems on each tea cup and ask
your guests to share read their quote out loud to their
table mates.

3. Bring in an interesting story teller who can weave
a tale of intrigue and suspense.

4. Be sure to give your guests at least 1 block of 20
minutes to chat amongst their table.

5. An “ice-breaker” is a necessity if you seat unacquainted
guests at the same table. Consider a simple game which
each table can participate in.

Menu Suggestions:

* Vanilla-scented black tea, ginger tea, smoky
Formosa oolong

* Small bacon quiches

* Pear and Stilton cheese sandwiches

* Cream cheese and spiced currants on date-nut
bread

* Cinnamon rolls

* Toasted English muffins with assorted jellies and
jams

* Hot fruit tarts with vanilla ice cream

* Chocolate torte sprinkled with confectioner's
sugar

* Snow cones, if real snow is available

Winston’s Wartime Tea

landing grounds. We shall fight in the fields, and in the
streets, we shall fight in the hills. We shall never
surrender!"

-Winston Churchill, June 5th 1940

Dear Readers,

60 years ago our nation joined hearts and hands with that
of the British people. In a daring attempt to bring
freedom to the western world, Sir Winston Churchill and
President Franklin D. Roosevelt joined forces. Their
vision; freedom and an end to tyranny. This did not
come quickly or easily.

1940 saw Great Britain becoming a land of rules,
regulations and rations. In the early throws of war, the
English tightened their belt, thrust up their chin and
declared “as long as there was tea there will be hope.”

Today to celebrate this tiny islands triumph over tyranny,
I offer an ode to England, “Winston’s Wartime Tea.”

Theme:

A Winston tea offers a direct time portal back to WW2
England, 60 years ago. Gathering ideas for a wartime
event is as close as your local library or antique store.
Information can be collected from old Life magazines
along with an assortment of wartime periodicals,
cookbooks and even websites.

Invitations:

A hand written invitation exudes sincerity and elegance.
Choose an ivory linen card stock and a favorite black pen.
Wording can be simple in typical 1940’s fashion:

Music:

Check your local library for music indicative of the
1940’s. Be sure to consider big band, Frank Sinatra, Bing
Crosby and Benny Goodwin. If complete authenticity is
your cup of tea, you may purchase original radio
broadcasts from the BBC. Search for broadcasts aired
during the war years. Additional information is available
at: http://www.bl.uk/collections/sound-archive/bbc.html

Food:

In times of rations cooks get creative, so offer your guests
an assortment of ration based foodstuffs. Interested in
recreating recipes from the war? Take time to explore the
internet website www.british-forces.com for ideas.

Some personal suggestions include:

Welsh Rarebit
Cucumber and Butter Tea Sandwiches
Vegetable Pie
Gingerbread

In case of war related delays, British authorities
recommended all citizens’ travel with a bit of food in
their pocket. “Pocket Scones” can be offered to your
guests as they leave your home, wrap a small scone in
wax paper and tie it with a bit of string. A “Pocket
Scone” makes an appropriate parting gift.

Tea:

In 1940, Britain drank teas grown in the Indian tea
gardens owned by English companies. Plan to serve a
traditional English Breakfast Blend or a hearty Assam at
your table. In the customary British fashion, tea should be
served with sugar and milk. Earl Grey (while a very
British tea) was an unlikely choice in wartime England;
flavorings such as Bergamot were nearly unattainable.

Activities:

Experience the reality of wartime rations by creating a
“Shopping Basket.” In the basket be sure to include the
following:

1 ounce of cheese
4 ounces of bacon or ham
2 ounces of tea
8-12 ounces of sugar
8 ounces of butter or fat
8 ounces of Jam, Syrup or Marmalade
Milk was rationed later in the war
2 ounces of sweets per week

At the bottom of your basket add a note stating that
bread, fruit and vegetables were not on ration but were in
short supply. Families were encouraged to “Dig for
Victory” by growing their own produce garden.

Your guests may also be interested in British Civilian
life, fashion, wartime employment. This information is
readily available at www.british-forces.com (Look under
WW2.)

Lastly, A Winston Tea is not complete without a few
choice words from Mr. Churchill himself. Here are a few
of his best:

“A fanatic is one who can’t change his mind and
won’t change the subject.”

“Although prepared for martyrdom, I preferred that it
be postponed.”

“He has all the virtues I despise and non of the vices I
admire.”

“History will be kind to me for I intend to write it.”

“Success is the ability to go from one failure to another
with no loss of enthusiasm”

Lady Astor to Churchill "Winston, if you were my
husband I would flavor your tea with poison"

Churchill: "Madam, if I were your husband, I should
drink it"

Table setting:

Set your table with all things Winston, choosing dark,
somber colors appropriate for a difficult era. Table props
may include: a small British flag, a few Winston Churchill
books, a tea set, a cigar, a pair of reading glasses and a
paint palette.

On May 8th, 1945 Victory was won in Europe yet
wartime rationing continued in Britain until 9 years later
in 1954. May we never forget the sacrifice and the true
cost of freedom.

Bubble Tea – For Those Who Like an
Unusual Twist to Their Tea!

No, it’s not bubble gum! Rather, it is bubble tea. If this

term sounds strange to you, let’s take a look at the

origins of bubble tea and the place it holds in society

today.

Are you wondering how bubble tea got its “bubbly”

name? Well, this is because when it is shaken it

produces a frothy, bubbly texture. Bubble tea is a

combination of iced or hot black or green sweetened

tea with either milk or fruit flavors added to it.

Therefore, there are two types of bubble tea – fruit-

flavored bubble tea and milk bubble tea.

The milky bubble teas can be enjoyed with dairy or

non-dairy creamers. On the other hand, fruit bubble

tea has a wide variety of flavoring that can be added

to it – including the tastes of chocolate, coconut, passion

fruit, and strawberry. These flavors can be added to

the bubble tea as a powder-like substance, juice,

syrup or pulp. After all of the extras are added to it,

the tea is then shaken in a cocktail shaker or put in a

blender.

Gum-like balls made of cooked tapioca (often referred

to as yam starch in Asia) can be added to the bubble

tea drink. These balls are sometimes also referred to

as “pearls” or “Boba”. They sink to the bottom of the

teacup, and are sipped through a wide straw along

with the drink.

They have a diameter of about six millimeters or less,

and are meant to give the drinker something to chew

on between sips of tea. The tapioca pearls have little

taste to them, but are typically soaked in sugar or

honey after being boiled for a half of an hour. They

are typically good to use for up to seven hours after they

are prepared.

If you do not happen to be a fan of tapioca, you can

use coconut jelly, coffee jelly, lychee jelly, rainbow

jelly, or konjac jelly instead. These types of jellies can

be made into small cubes for you to enjoy. Some tea

enthusiasts actually order “half and half” bubble teas,

with one half tapioca pearls and one half jelly cubes.

New types of bubble teas are constantly coming about.

For example, a “Snow Bubble” is the slushy-like

version of the bubble tea. It is made with shaved ice

and fruit flavoring.

Bubble teas originated in Taiwan, and are highly

popular in Asia, including places like China, Hong

Kong, Macau, South Korea, the Philippines, Malaysia

and Singapore. It is also gaining popularity in the

United States, as well as Europe, Australia and

Canada. Bubble tea is available in a variety of

small cafes and restaurants around the globe.

These types of places typically serve coffee drinks as

well as fruit smoothies and juice drinks. Cafes that sell

bubble tea in these countries use plastic dome-shaped

lids on their cups to keep the frothiness inside the cup.

So don’t be shy… try some bubble tea today and see

what the rage is all about!

The History of the Tea Ceremony

Did you ever watch a tea ceremony in person or on
television and wonder just how it came about?

Or perhaps you wish to know about the ceremony
to better explain tea to your customers. After
all, it is very important to understand the past
in order to fully grasp the present and the future.

The traditional tea ceremony actually came from China,
not Japan, as many people mistakenly believe. The tea
ceremony was a practice in China for thousands of years
before a Chinese Buddhist monk introduced it to Japan in
the ninth century. After its initial introduction, the tea
ceremony became hugely popular in Japan.

The traditional tea ceremony first started in China for
medicinal purposes. It later was used for recreational
reasons. In the early ninth century, a Chinese author by
the name of Lu Yu wrote about the tea ceremony and the
cultivation and preparation of tea. This book was known as
“Ch'a Ching”. Because Yu was very influenced by Zen
Buddhism, Buddhist ideas had a great influence upon his
outlook on the tea ceremony. Many people who partook of
the ceremony later adapted these same ideas.

In the twelfth century, a new type of tea came about. This
tea was called matcha, and was a powdered green tea. In
the thirteenth century, samurai warriors came up with a
way to prepare and drink matcha. These ways were
incorporated into the tea ceremony as well. The traditional
tea ceremony thus transformed into its own artistic and
visual ritual.

By the time the sixteenth century came around, all of
Japan was practicing tea ceremonies – across all social
classes. A man known as Sen no Rikyu came about during
this time. Today, he is one of the most historical figures in
the tea ceremony. He introduced the concept of “ichi-go
ichi-e” to the ceremony. This means “one time, one
meeting”. He believed that every meeting between people
should be something that is sacred because it can never
happen again. His teachings of harmony, purity, respect
and tranquility are the foundations of the modern tea
ceremony today.

Today, the Japanese tea ceremony (known in Japan
as Cha-no-yu or sado) is a ritual that is influenced by Zen
Buddhism and includes the drinking of matcha. Cha-no-yu
is a single tea ceremony, while sado is the study of the
ceremony itself. During the ceremony, the tea is prepared
by a skilled practitioner and then served to people as they
sit in a tranquil setting.

The tea practitioner must know all about the types of teas,
as well as kimonos, calligraphy, flower arrangements,
incense, ceramics, and other arts. He or she must study
this at a school, and it often takes years to do so. Even
guests of tea ceremonies must know about sado and the
gestures and phrases that are part of the ceremony. They
must also know how to drink the tea and eat the
accompanying foods.

Hosting a Fabulous Children’s Tea Party

Gone are the days where a child’s tea party only involves
a solitary child and a table full of stuffed animals and empty
plastic tea cups!

The options for creating a children’s tea party are
boundless, which this article will briefly demonstrate.

Themes

A children’s tea party does not need to be limited to fancy
dresses, gloves, and quiet chit-chat around the table-
although this type of tea party can be great fun! If you are
interested in hosting multiple tea parties or creating one
special event, having a variety of themes to choose from
may help get the creative juices flowing. Tea parties can
focus around any of the following themes:

• Birthdays
• Seasons
• Holidays
• Special events (graduations, celebrations, etc.)
• Favorite things (dolls, stuffed animals)
• Special people (such as grandparents, friends)
• Much, much more!

Choose decorations that compliment your theme, and if
possible, find invitations that are either theme-or tea-
related, such as cups and saucers or teapots.

Supplies

Depending on your needs, you will need to have a certain
amount of supplies for the designated party, or, if you are
interested in hosting children’s tea parties as a business
venture, a variety of supplies. Some ideas include:

Dress-up clothes

Girls especially like to dress up, and if you are able to
locate a variety of fun clothes (check local discount or pre-
owned clothing stores), children can pick and choose.
Faux jewelry and lots of fun hats are also good to have on
hand. If the party will be a one-time event, invite children
to come dressed-up on arrival.

China

While tea parties of old often made use of plastic tea sets,
consider looking into inexpensive china from second-hand
stores, friends or relatives. Adding this special touch
along with some carefully chosen table ornaments, such as
flowers and doilies, will help give the tea party that extra
special aura.

Activities

Many tea parties will need additional activities to
compliment the time sitting at the table. Use your theme
for ideas, as well as these ideas:

• Songs (I’m a Little Teapot)
• Pin the Tail on the Donkey (or cup on the table, handle
on the cup)
• Pinatas (cup or teapot shaped)
• Fashion show (let the children show off their outfits)
• Crafts (color paper tea pots, decorate a cup, etc.)
• Relay races (incorporate the theme or use tea trays
with plastic cups)
• Games (filling teapots with water one cup at a time,
three legged races, etc.)

Food and beverages!

The food you choose to serve will depend largely on the
theme. If a traditional English or New England theme is
chosen, consider serving small sandwiches or delicate
cookies. A birthday theme may incorporate scones or
small cakes. Whatever is chosen, think about ease of
serving, utensils required (if any), and the overall
messiness of food.

Finally, don’t forget the tea!

There is an abundance of tea options to choose from.
Fruity or herbal teas are probably best (as opposed to real
teas which are stronger tasting and contain caffeine).
Have a few choices on hand so the children can
experiment. Also, even though it is a tea party, have some
non-tea beverages available just in case.

Last-minute tips

Always remember to be flexible and have back-up plans if
needed. For example, outside games may need indoor
counterparts in the event of bad weather. Have fun and
enjoy!

Put Up Your Christmas Tree for a Christmas Tea!

It’s that time of the year again! The snow is gently falling
outside your window. Christmas trees are being decorated
and stockings are being hung. Shoppers are bustling and
presents are being wrapped. Holiday cheer fills the air.
And so does the rich scent of tea!

If you are a tea business owner who would like to celebrate
the season of giving, why not have a holiday tea party at
your store? Sound like a festive idea? Then let’s get
planning today.

First of all, you can start putting your Christmas tea party
together with holiday decorations. For example, you can
set up tables in your store that are adorned with pine
wreaths and holly.

Perhaps you could put a poinsettia
centerpiece in the middle of each table. Next to all of the
tables, you can set up a fabulous Christmas tree.

You can even hang tea-inspired ornaments from it, such as
little glass teacups or teapots. What a lovely conversational
piece your tree will make. If you want your party to be
extra special, why not have all of the guests buy or make
their own tea ornaments.

You will be surprised to see how creative people
can be with tealeaves and tea products.
After everyone’s ornament is hung on the tree, the food and
drinks can begin!

At your store’s Christmas tea party, you can serve bite-
sized snacks. Try some pumpkin bread topped with honey
nut cream cheese. Serve mini roast beef sandwiches. For
the sweet tooth, you can serve fudge squares or delicious
little sugar cookies. Your guests will be licking their lips in
delight.

So you have your decorations, your tree, and your food…
but let’s not forget about the most important thing of all –
the tea!

For a Christmas tea party, you should certainly
serve hot-spiced teas. Try a Ceylon black tea that is
flavored with spicy cinnamon, strong cloves, and flavorful
orange peels.

You can even make a variety of twelve teas and serve

Are You Ready to Publicly Promote Your Tea?

Do you have a fear of public speaking, but want to promote
your new tea company? Well, before you break into a cold
sweat and begin hyperventilating, take a deep breath and
relax.

Here are some great tips for helping you to get your ideas
across to others, as well as idea for promoting your own
brand!

Before you go out to publicly speak about your tea, you
must be totally ready and confident. Perhaps you have
tried public speaking in the past, and experienced a variety
of nervous symptoms such as dry mouth, sweaty, shaky, or
cold hands, nausea, rapid heartbeat, or shakiness.

Although you may not ever be completely comfortable
speaking in front of large crowds, you can get your nervous
feelings under control.

In order to perform your best public speaking in a calm
manner, there are several things you can do.

● First of all, tell yourself that you are a wonderful public
speaker (even if you are not!). Concentrating on this fact
will actually enable you to believe it.

● Envision yourself merely chatting comfortably with a group
of friends. This method will allow you to relax and feel at
home.

● Think about your strong desire to teach this particular
group about your tea topic.

● And if worst comes to worst – you can always just picture
your audience in their underwear! (Although that may just
make you laugh!)

When you are preparing to publicly endorse your tea, you
should make sure you are well prepared with all of the
information you want to share with your audience.

Be able to answer questions concerning your tea – both
easy and hard questions. After all, the last thing you want
to do is sound like you don’t know about your own
company!

Organize any speaking notes that you have and memorize
your opening statements. Don’t forget to practice, practice
again, and practice some more.

you to meet potential customers or distributors coming in
to see you speak.

You can shake hands with these people and greet them as
they come in. Extra time can also allow you to have the
opportunity to glance again at any notes that you have.
And, not only will getting to the place early help you
organize, but it will also help you be more relaxed.

The Elegance and Excitement of Blooming Teas

to captivate your guests with display teas. If you are a very serious
tea drinker, you will know what display teas are.

These specialty types of teas are also known as artesian or
flowering teas. Meant to enhance the experience of the wonderful
drink of tea, display teas provide entertainment at tea parties all
around the world.

The art of display teas has been around for thousands of centuries.
The very first time that a display tea was used was during the Song
Dynasty. Tea leaves were tied up with flowers for the Emperor’s
entertainment. He never drank the tea, however. It was merely a
visual enjoyment.

Display teas have only been made for consumption purposes during
the last few decades. Artists who have a great amount of talent
pick out lovely flowers and long tealeaves. These tealeaves are
then withered, rolled up, oxidized, and fired. Artists then take great

blooms that are enclosed in the flower, and during steeping they are
released. Imagine the soft, flowery taste of this enchanting tea

type of tea from China. Very light green in color, it has a delicate
Jasmine flavoring to it. These tea balls are hand rolled and hand-

China. It hails from the province of Anhui. Black Sea Anemone is
crafted into tiny wheels, with each wheel containing about two
hundred hand-tied buds. When these buds are infused with water,
the leaves blossom out into the shape of sea anemones.

Black Sea Anemone happens to be a black tea; however, it is
nearly impossible to over-steep. It can be steeped for over five
minutes without becoming bitter! Furthermore, it can be infused
over and over again. It is sure to be an exciting drink for your
guests to taste!

Display teas, in general, can be brewed longer and do not become
bitter when they have an extended steeping. Longer brewing time
will also allow you to enjoy the flowers and other shapes opening up

is a healthy alternative to any party option and with
the wide range of teas available, you can incorporate
any theme or celebrate any occasion.

From birthdays to anniversaries or other events, tea is
a fun, unique and easy way to create a party.

Use the event (is it a birthday or anniversary?) to
determine the best types of tea to serve or, consider
hosting a themed party. A theme can be based on
anything from a book character to the time of year.

Your party can be as simple or elaborate as you like.
Just use your imagination, because you are sure to find
a tea that is perfect for the occasion!

Activities

Depending on the celebration, activities may range
from traditional to unusual or even none at all! In the
fast-paced world we live in, many adults will welcome
the chance to sit and enjoy a hot cup of tea and good

Lessons I Learned In The Tea Room

Take two parts training and three parts hard knocks. Shake them together and you get a lifetime of lessons learned on the front line in the tea business. 9 years of ups and downs have taught me a few simple steps that can save you hours of heartache if applied now.

Here are the top 3 lessons that I have learned in the tea business:

Lesson #1 A Consistent Atmosphere Creates Loyalty

What does the public library and Starbucks have in common? I would venture to guess it is a consistent atmosphere. Before you enter the doors of these establishments you know what atmosphere to expect. Inwardly you are relieved that is just as you left it last.

Expectations met can be soothing especially in an era of constant change. Be it the old fashion "silence" of the library or the wafting smells of grinding beans, knowing what's coming cannot be beat.

So, ask yourself...What type of atmosphere am I creating for my customers and how will I keep it consistent?

Consider your types of tea, food and services which all contribute to the overall impression and ultimate experience your guest will look forward to . The key comes in presenting that same experience again and again and again like clockwork.

achieve that and your customers will look to you as a refuge from life's storms and keep coming back for more.

Lesson #2 The "Show" Must Go On

A tea business is a "show" and the "show must always go on. Just at a consistent atmosphere will keep your customer returning, a sense that someone else is in charge will extend a comforting blanket to a ragged and weary public.

If you plan to run a tea business think of it as a play. The audience need not be aware of the chaos behind the stage. They do not need to know that the lead actress has the flu or that the set has a hole in the wall. (which you carefully covered with a large mirror.)

The audience wants is to be entertained and kept blissfully unaware of the dangers that lurk in the night. They long to enjoy themselves and get away from their day to day drudgery.

A successful tea business owner is like a great stage manager. He or she will make sure that customers are not aware of fires in the kitchen or the staff that didn't show up. The smart owner recognizes that customers want the "show" to go on.

Think about this: Have you ever been to a small business where the owner told you all about their cares and woes? Did you feel relaxed? Not likely. Customers have their own set of problems. Give them a break and don't share what goes on behind the magic curtain.

Lesson #3 A Dash of Mystery Keeps Them Coming Back For More

In the 1930- 1940's serial mysteries played daily on radio and in movie theaters. These short episodes left audiences hanging in suspense compelled to return for next week's installment.

So too, a tea business owner must project a sense of mystery and intrigue to keep clients enthralled. In today's society, competition for one's time is fierce. A creative entrepreneur knows how to keep their customers involved in their tea business.

Consider daily menu's,themed events, costumes,festive holiday decor or even contests as part of the mystery your customers crave. A mix of consistency with the great unknown makes for phenomenal stage productions and unimaginable customer loyalty.

In summary, your mission, should you choose to accept it is simple. Provide a consistent, care free environment that sparks creativity and delight. Your clients will thank you with their money time and time again.

Classic Films and Tea Time Fun

Does the idea of spending time with friends and watching old movies sound enticing? Turn this activity into a tea party and invite your favorite guests to watch your favorite old movies.

A few refreshments and some relaxing teas can make an old movie night one to remember. Base your party on a particular movie or around the classic movie theme in general.

Depending on the time of year, you can choose a movie based on upcoming holidays or the seasons. Old-time romances are great for spring and summer (or any time of year, really!), epics go well in winter, and many old thrillers offer a scare using good old-fashioned suspense in the fall.

Activities

The definition of old movies may vary depending on whom you are talking to, but generally, any of the classics will do. Many of the old movies are much longer than today's films, so be prepared to settle in with an abundance of tea and refreshments.

Keep your party to a reasonable size so everyone can enjoy a comfortable seat and a good view. For something different, rent a movie projector and show the film on a wall or screen. A local university media department, rental shop, or camera store may offer this option.

If you want to do more than watch the movie, invite guests to dress as characters from the movie, play trivia games about the film, have a "movie search" for famous quotes, or host an informal discussion afterward.

Decorations

Decorations for this type of party can be minimal, since you will be sitting in a dim or dark room for most of the party. However, you can dress up the party by hanging posters from old movies or cutouts of movie stars.

Include movie-inspired decorations throughout the room such as a director's chair, megaphone, a "Hollywood" sign, or strip of red carpet for your guests to arrive on. Use your imagination!

Music

While guests arrive or while you serve refreshments prior to starting the movie, play some background music. There are wide ranges of music compilations available that are movie related, such as great movie love songs, famous themes, and so forth.

Visit your local retailer for options. You may also be able to find the soundtrack from your movie of choice, although this may depend on how much of a "hit" the movie was and is.

Invitation Ideas

You can create your own or purchase pre-made invitations that are movie themed. Invitations designed like a movie ticket are fun, or you can include a picture of your favorite classic movie star or stars. Using an invitation that pictures the "Hollywood" sign can also be fun.

For alternatives, look for invitations that show a collage of movie-inspired themes, such as lights, cameras, clapboards, award figurines, or "walk of fame" stars.

Foods

Popcorn is of course the movie staple food, but there are many other options as well. You may want to stay with finger foods, however, as these are easy to eat while sitting and go with the overall movie them.

Nachos and candies are popular movie foods, or offer other easy options such as mini-quiches, baked goods, or finger sandwiches. Whatever you choose, keep the food simple so that you'll be able to watch the movie, too, rather than worrying about the food!

Hosting a 1950s Inspired Tea Party

Flash back to the golden age of T.V. and Radio by offering guests of any age a 1950's tea party. A 1950's theme will easily lend itself to creativity, but needn’t cost a lot or take a great deal of preparation.

To help set the tone, encourage guests to dress accordingly.If you plan to host a variety of themed tea parties, you may want to visit the local thrift shop or antique store for clothing.

This way, guests who are so inclined can throw on a sweater or change into some bowling shoes. If you're able to provide some costuming, your guests will have no reason not to attend.

Activities

Depending on the amount of room available and where the party is held, there are a number of 1950s inspired activities to choose from.

With minimal space, you can let guests play with hula-hoops or lip sync to 1950s music classics. You can watch classic “I Love Lucy” episodes or listen to classic radio comedies available from www.Radiospirits.com

Alternatively, set the tone of a drive-in movie using cardboard cutouts of movie stars and have speakers set at each table. Activate your imagination and the sky is the limit. Tea tasting will be, of course, a primary activity. Black teas were most common during the 1950s, so consider offering a variety of these teas.

Offer unique blends of black teas that your guests may not be familiar with. But be sure to serve an herbal option those wishing to avoid caffeine.

You can have a lot of fun with the origins of teas. Until the Korean War, the U.S. imported most of its black tea from India.

During and after the war, Argentina became as primary source. Offer your guests a wide range of black teas from around the world. They may be surprised at the selection!

Decorations

Decorations can be done quite easily as well. For example, you can create a "sock hop" theme with a few lights and a "jukebox."

Add some posters of 1950s icons and you're good to go! With a few low-cost decorations, you can create a theme for any inspiration from the period, such as bowling balls and bins decorating the sides of the room, toy cars from the time, or even a "homey" feel giving the room a "Leave it to Beaver" flair.

Many party stores have cutout figures of jukeboxes and 1950s icons, which can be fun to place around the party and are affordable.

You can also use any of the 1950s inspired clothing and shoes as decoration. Simple "home" decorations can also be included, as the 1950s Americana focused on family values. Depending on your budget, you may be able to pick-up some great 1950s furniture at thrift stores or flea markets.

Music

There is a lot of wonderful music to choose from! A 1950s compilation may be the simplest, but other suggestions include Elvis Presley, Connie Francis, Mary Wells, Patsy Cline, the Supremes, Debbie Reynolds, Bill Haley and the Comets, Ray Charles, Chuck Berry...the list goes on! The activities of your party will influence music selections.

If you're hosting dance hop, then some of the popular "pop" songs of the day are good choices. If you're using music for background, then anything from the 1950s will work.

Invitation

Ideas with "retro" a hot theme these days, it is possible to find invitations that have some type of 1950s reference, whether it is a sock-hop theme, jukebox, or poodle skirt. These can be a fun way to get people's attention and are affordable.

Foods

Think Betty Crocker and soda fountains! Many of the primary foods served in the 1950s were traditional meat and potato style meals. Barbecue was also big. These foods may be a bit heavy for a tea party, so consider using scaled-down appetizers.

If you don't want to make a big fuss, consider the sweet route; many candies that were popular in the 1950s can be found today, such as wax lips, Necco wafers, licorice snaps, and bubble gum.

Also, think about ways to get creative when serving teas, such as using tall sundae dishes or mugs. While Chai teas were not the custom of the time, they can make a great presentation in a sundae dish.

Books and Tea ~ Creating a Literary Tea Party

Is there anything quite as comforting as curling up with a good book and a cup of tea? Doing it with a group of clients! Hosting a book tea party can be a great way to experiment with some cozy teas and share some great books. (not to mention sell a few!)

You can have a quiet party where guests can read, or combine a reading and sharing party, exchanging tea and book ideas, or conducting readings. There are a number of options to choose from.

A book party can be a very special event, offering clients a unique opportunity that cannot be found elsewhere. Because it is a private by reservation event, your guests can enjoy the feel of a teahouse without all the distractions.

Activities

In addition to tasting teas, you can allow your guests to quietly read (sometimes people need a good "excuse" to take some quiet time!), or you can offer a range of activities.

Consider having a group discussion on a particular book or conducting a book swap where guests bring a book by a favorite author to trade.

You can listen to stories, having guests read or listen to an author read his or her works on tape. If there is a local author in your area, invite him or her to do a private reading for your party. Or have a party based on a literary character or specific book, such as Sherlock Holmes or Scarlet O'Hara.

Decorations

The atmosphere for this type of party should be warm, comfortable, and inviting. Set the mood through lighting and furniture rather than through decorations.

Scatter some books throughout the room as well to help set the tone. Use low lighting, and if guests will be spending quiet time reading, try to have some type of light available at each setting.

You can also hang posters of or references to famous authors or literary characters. If you're able to host the party in a personal library or room with a lot of bookshelves, this will also help create a reading atmosphere.

If hosting the event in your tea bar or tea room be sure to create cozy nooks for delving into the great American novel.

Music

Light classical is a perfect choice for this type of party. If you're doing a themed party based on a character or book, look for music that fits the theme, such as something more mysterious or mystical.

Stringed instruments are a nice choice, as they create soft music that makes for a pleasant background. Vivaldi's "Four Seasons" is one such example, as is Pachelbel's Canon.

Invitation Ideas

Invitations shaped like a book are a good choice, or if you are using a character or specific book, incorporate pictures into the invitations.

If you can't find a book invitation or don't want to make them, look for invitations that incorporate a reading or writing theme, such as pens or bookshelves.

Promote the event early and pass out invitations to your current customers. Mail private invitations to your most loyal clientele.

Foods

The food you serve can be almost anything you want. Baked goods lend themselves to the cozy atmosphere, such as biscotti or Danishes.

If you focus on a particular book, choose foods that are featured in the story. Chocolates are also a great choice, and some go very well with teas.

Teas

There is nothing like a good book and a hot cup of tea! For this event, try a traditional smoky tea like a Lapsang Souchong, or if you would rather go with a classic, nothing's better than a good cup of Earl Grey.

Big Fat Greek Wedding Tea Party

Hosting a Greek "Big Fat Wedding" themed tea party is a great way to experience wonderful cuisine and a bit of Greek culture.

Whether you are throwing the party for a bride-to-be or want to have a get-together to enjoy good food and teas, a Greek party is a fun way to spend time with friends and family.

Whatever the purpose, a Greek themed tea party is a time to appreciate the wonders of Greek culture and the country's rich history and traditions. This could be anything from mythological stories to modern-day weddings.

Use the movie, "My Big Fat Greek Wedding" as inspiration and let your imagination flow!

Activities

Hosting a dinner is a great way to sample Greek food and the perfect accompanying teas. It gives guests a chance to socialize and sample teas they may not normally try.

Watching the movie is a perfect activity as well! Also consider incorporating traditional wedding rituals. Hold the party of a Sunday, for example, as Greek weddings are almost always held on Sundays.

Then give your guests small bags of candy-coated almonds, wrapped in netting, another Greek wedding tradition--but be sure there are an odd number of candies in each bag!

Encourage guests to dress in traditional Greek folk costumes or in the colors of the flag.

Decorations

Use the Greek flag for inspiration. Hang flags, photos of traditional costumes, and posters of Greece throughout the room.

Use the colors of the Greek flag, blue and white, throughout your decorations, table linens, and serving dishes.

You can also incorporate gold throughout the table settings and decorations, including gold accent pieces and candles.

Music

There are many easy choices for music for your party, such as the soundtrack from the movie, "My Big Fat Greek Wedding."

You could also use a compilation CD, such as "Hot Summer Nights: Favorite Greek Music" or "The Dance of Heaven's Ghosts." If you would like to use something by famous Greek artists, consider "Nana Mouskouri - At Her Very Best" or "Theodorakis: Zorba's Ballet."

If you are looking for a relaxing evening or something perfect for after dinner, try "Yanni - Live at the Acropolis." With a selection or two from the above, you can easily set the mood for your party.

Invitation Ideas

You can buy a number of Greek inspired invitations, including everything from the Greek flag to the Olympics, famous ancient buildings, and mythological figures. If you're feeling creative, you may want to make your own incorporating the colors of blue, white, and gold.

Foods

Greek food is a wonderful mix of Mediterranean ingredients such as olives, olive oil, lemon, eggplants, lamb, honey, seafood and herbs.

Begin with some traditional appetizers and finger foods including olives, feta and other cheeses, and grilled eggplant. Mini pies are also an option, made with fish, eggs, or tomatoes. Follow this with a Greek salad featuring shrimp, and serve lamb for the main course.

End with a relaxing post-dinner tea and dessert such as baklava!

For recipes and lists of traditional Greek foods, browse through any Greek recipe book or do a quick search online for traditional Greek foods. There are so many wonderful options to choose from!

Or, if you'd like to take the easier route, consider having some or part of it catered from your local Greek restaurant for a bit of authenticity.

A Tea Party for Every Season

Celebrating the seasons with a tea party is a natural way to transition from one cycle to the next.

Teas were traditionally available as the seasons changed, and honoring the natural growth cycle of tea plants is a fun way to share seasonal teas with friends and family. It is also a great way to sample teas that you or your guests may not be familiar with.

It is now possible to grow all types of teas year-round, and as such, many people fall into a "tea rut." Using the seasons to mix up your teas may lead to your next favorite blend.

As the seasons change, there's no better reason to host a tea party! Teas are enjoyable year-round, and you'll find yourself with all sorts of reasons to host a tea party.

One such example is to share the wonders of the different types of teas that lend themselves to each season. Light, fruity teas are perfect for the summer, while heartier teas are a great comfort in winter.

Activities

Hosting a seasonal tea party can incorporate any of the season's traditional activities, or it can be anything else you want it to be!

Guests may enjoy brewing their own, experimenting with different preparation methods, or learning about teas from around the world for each season. Incorporate different tea traditions for the teas you are serving.

Alternatively, consider celebrating a seasonal element, such as a solstice or holiday.

Decorations

How you decorate for your party will depend on the season and if you are a focusing on a particular theme. Should you celebrate the change of seasons or a solstice party, focus on decorations that represent the upcoming season.

As spring moves into summer, for example, a wide array of wildflowers may be available. Choose bright, cheery colors and lightweight table settings and linens. If you are in the midst of winter, deeper colors are more appropriate, as well as heavier table settings, such as hearty mugs or heavy glasses.

Consider all aspects of your decor when planning your party.

Use decorations from nature. Pinecones are great in winter, flowers in spring and summer, and wheat or other harvest items in the fall. Incorporate colors of each season, using pastels in spring, bright colors in fall, browns and oranges in fall, and deep colors in winter.

Music

Music selections for your parties can vary greatly. Consider "The Four Seasons" for fun! There are also a number of other seasonal music compilations or selections based on a particular season, such as George Winston's CDs.

A trip to your local music store or a quick online search can lead you to a number of seasonal music selections.

Invitation Ideas

Choose invitations based on the time of year. Coordinate your colors and consider making your own invitations using specialty papers that represent your theme.

Commercial invitations may work just as well, however, so there's no need to rule them out if you're not keen on the idea of creating your own. You may find that the perfect seasonal invitation already exists.

Foods

What should you serve at a seasonal tea party? Rely on natural foods that are available during the time of year and work those into your offerings as much as possible.

Obviously, this may be easier during some months than others, but it provides a good starting place. Use a variety of fresh fruits and vegetables, and create complimentary main dishes or appetizers.

There are a number of cookbooks available that focus on seasonal foods and these can be a good reference source if you're stuck for ideas. An online search may also be useful.

What I Learned About The Tea Business From Jerry Seinfeld

As a disciplined tea business owner, I find myself answering the phone day in and day out.

It is rarely a job I savor, so the phone rang a few month ago and my sister screamed into the earpiece "Jerry is coming to Portland!" "Aren't you excited?"

I probably had a less than enthusiastic reply.

You see, my sister has loved Jerry Seinfeld for years and years. Her daughter was even born on Mr. Seinfelds birthday.( which was taken as a very positive sign.) I, on the other hand had other things to spend my $100 on then tickets to see Jerry.

BUT- I love my sister so, my husband, and I bought tickets to Jerry Seinfeld's Portland Oregon show.

The moment Jerry slid onto the stage it hit me! I wasn't just at this show for a few good laughs. I was here to learn...and learn I did.

The first thing I noticed was Jerry's amazing command over the audience. He knew his audience. He knew what they liked and didn't like. Knew that they loved his routines about every day life (also known as comedy about nothing!) and that with the correct recipe ( a dash of polictics, a bit of personal stories and a bunch of everymans reality) "whala!" he would have a stage sensation.

So what does this have to do with the tea business?

To succeed in the tea business you have to know your audience and your audience has to know you. No longer can the independent business man or woman hide behind thier logo.

No, it is time to get out there and entertain your clients. What do they like? What don't they like? How can you relate to them? Great stand up comedians command their audience and so can you!

Now wait a minute...

I am not saying develop a stand up comedy routine. No! I am saying know your business audience and let them learn to relate to you.

Become the center of attention in your own arena. Pretty soon you will be amazed by all the people paying $100 a pop to be apart of your business.

I think that we, the general public, often forget that actors are small business people too. I was raised by musicians on the road. We were responsible to get our own gigs, develop new clients, (audience) new product lines (music) and keep the customers HAPPY!

So can you.

Take a quick second and make a decision.

Send a postcard?

Have an impromptu "open house"

Start a blog?

Mail a "thank you" coupon?

Make your audience stand up and beg for more. It works for Jerry and I know it will work for you!

5 Tips for Boosting Your Tea Business

Alright, let's look at our calendars. Yes, time is flying, the new year is passing faster than you can holler "loose leaf tea." But fear not!

All you need is 5 easy steps to get back on track with your tea business. Let's take a look:

Tip #1: Gain New Customers

Gaining new customers may seem like an obvious statement but often times it is easier to focus on our current customers then attracting potential ones.

How can we attract new customers without spending a lot of cash? Here are some suggestions.

-Send out monthly PSA's (Public Service Announcements) to the various media in your area. This includes radio stations, newspapers (small, large and niche), television and local or national magazines. Let the media know what you are doing and how they can participate. You have not because you ask not. You never know when a PSA will turn into a full fledged article.

-Network with established business people. Find a chamber or entreprenuer group and become active. Shake hands and listen. What do they need? Do they need food? Do they need a place to meet? Do they need event planning? Find a way to offer your business services. You will be surprised how far simple networking will get you if you give it time.

-MEDIA! MEDIA! MEDIA! How can you put your name in front of thousands of potential customers? All media sources need good human interest stories. Did you donate 10% of your profit to a local school or charity? Are you offering a Tea Tasting class where all proceeds go to a just cause? Find a way to peak local media's interest while supporting a good cause. This is a win/win situation.

Tip # 2: Encourage Old Customers

Loyal customers make or break a business. What have you been doing for yours? This month make a special effort to remind your customers of who you are and how much you appreciate them.

Do you remember Princess Diana? Princess Diana was known as the people's princess. She was personable and involved. Every evening Princess Di wrote personal thank you notes. She practiced giving back and so can you.

-Send a personally written thank you card to each of your regular customers. (yes, this may take a lot of time but break it up over the weeks and months.) Just seeing that you cared enough to write will make your clients more loyal than ever.

-Host a "Thank You" event. Do you want to say thanks in a memorable way? Host an event and offer FREE tickets to your core clientele. Your effort on their behalf will not go unnoticed.

Tip #3: Find a "New" Product

Every season is a new opportunity to re-aquaint the public with your business. Offer something special each quarter to keep the traffic flowing. If you have a shop offer new products and tea blends. If home tea parties is your business, create new seasonal themed parties.

The choice is yours just get creative!

Tip #4: Streamline Your System

It is time to take stock of your energy drains. Are there little things that slow you down? Here are a few questions to ask yourself and then act upon and change:

-What is holidng me back in my business?

-What 3 things do I need to change and why haven't I done it?

-How would the business I would like to be do the things I need to do?

-What is the number one task I am avoiding?

Tip #5: Set Specific Goals

Are you a Phoebe (let it happen as it comes) or a Monica (PLAN, PLAN, PLAN!)

Discover your true tendencies and overcome obstacles. If you are a Phoebe and you hate the word goals.. think of this instead as executing specific projects.

What do you need to get done and when? The best way to easily acheive a "project" is by setting a firm deadline. Think of it now in your head. Got it?

Now work backwards on your calendar. Think of all the specific steps it will take to acheive your goal. When would each of the steps need to be done in order to reach the deadline?

Working backward, step by step, can help you move forward quickly. Be daring, push yourself, reach for the stars.
