Coconut-Curry Chickpea Quinoa Pineapple Burgers

Yield: 4 burgers

Prep Time: 20 minutes

Cook Time: 10 minutes

Total Time: 30 minutes

Ingredients:

1 can chickpeas, drained
1/2 cup coconut milk
1/2 teaspoon curry
1/2 teaspoon garam masala
1/2 teaspoon garlic powder
1 teaspoon Goya Adobo Seasoning (or onion salt)
1/4 cup fresh chives or scallions, chopped
1/2 cup quinoa, cooked
2/3 cup panko breadcrumbs
4 slices fresh pineapple
3 tablespoons olive oil
2 tablespoons toasted sesame seed oil
1/4 cup Vegenaise
lime zest
pepper
4 whole wheat hamburger buns
4 teaspoons Earth Balance butter
lettuce

directions:

Preheat oven to 400 degrees.

Place the chickpeas, coconut milk, curry, garam masala, adobo seasoning, and garlic powder in a Vitamix or food processor. Pulse until pureed. Stir in the chives, Quinoa, and panko crumbs. Form into 4 patties.

Heat a grill pan over medium-high heat. Drizzle the pan with olive oil and a bit of sesame oil. Pan fry patties until golden brown on each side. Then set aside the patties and grill the pineapple until golden brown grill lines appear on each side of the fruit.

Butter the inside halves of the hamburger buns with Earth Balance butter. Bake, buttered sides up, in an oven preheated to 400 degrees until the butter is melted and the buns are toasty.

In a small bowl, stir together the lime zest, pepper, and Vegenaise.

Serve the Chickpea burgers topped with grilled pineapple, your flavored Vegenaise, and a bit of lettuce on top of of your burger buns.

Cabin Boy has to be one of my favorite shops in Ontario. (I also adore Artifacts in Port Carling.) This hip shop is located in little ol' Midland within a stone's throw of the lakeside docks. Such a pretty main street with an interesting variety of shopping.

Cabin Boy opened it's doors in Midland on July 10th, 2004 at 257 King Street and now resides at 251 King Street three doors away. For the last nine years we have been attending to the needs of the passengers on our "ship" here in beautiful Georgian Bay.

Some people might say we're in " the middle of nowhere", but we believe we're in "the middle of everywhere."

Our goal is to impress the most savvy of shoppers that visit our store. As we are now a global village, we believe the best of things should be available to everyone including those in small towns like ours North of Toronto.

In addition to our retail store, our design business is best described as "design facilitation", with services ranging from a one hour colour consultation, to floor plans, elevations and general contracting of residential renovations. I'm not sure if it's because of late I have had a hunger for going to the cinema or whether it's because Sofia Coppola is known for creating the most visually tasty films (like Marie Antoinette), but The Bling Ring is calling me. It seems provocative, edgy and docu-fun based on true events. Wouldn't you agree? It's criminal and sexy.

Wiki Says: The Bling Ring, sometimes called the "Hollywood Hills Burglar Bunch", "The Burglar Bunch", or the "Hollywood Hills Burglars", were a group, mostly of teenagers based in and around Calabasas, California, who burgled the homes of several celebrities over a period believed to have been from around October 2008 through August 2009. In total, their activities resulted in the theft of about $3 million in cash and belongings, most of it from Paris Hilton, whose house was burgled several times. However, over 50 homes were reportedly targeted for potential burglary. Nancy Jo Sales, who covered the story for Vanity Fair, called the events "completely unprecedented in the history of Hollywood".

As a child of German heritage you can imagine the squeals of drooling excitement from my parents and their boozy friends when a schnitzel laden restaurant opened up in our neighborhood. By God! We can walk home after we consume those platters of meat and complimentary shots of liqueur. Is it any wonder that I would belly laugh out loud while reading a chapter about her time working as a dishwasher in a similar type dining establishment? Oh ya. I snorted. The owner was identical to the restaurateur I remember.

I am partially through Kelly Oxford's new book and I am loving it so much. Disclosure: I am not lying.

Shavuot Flowers

According to the Midrash, Mount Sinai suddenly blossomed with flowers in anticipation of the giving of the Torah on its summit. Greenery also figures in the story of the baby Moses being found among the bulrushes in a watertight cradle when he was three months old (Moses was born on 7 Adar and placed in the Nile River on 6 Sivan, the same day he later brought the Jewish nation to Mount Sinai to receive the Torah).

For these reasons, many Jewish families traditionally decorate their homes and synagogues with plants, flowers and leafy branches in honor of Shavuot. Some synagogues decorate the bimah with a canopy of flowers and plants so that it resembles a chuppah, as Shavuot is mystically referred to as the day the matchmaker (Moses) brought the bride (the nation of Israel) to the chuppah (Mount Sinai) to marry the bridegroom (God); the ketubbah (marriage contract) was the Torah. Some Eastern Sephardi communities actually read out a ketubbah between God and Israel as part of the service.

Bub. You Can't Be All Things To All People

But I really wanted to be. I wanted to connect and inspire all demographics, but heck, it seems so radical and greedy to think this way. I am 53 going on 54. I have 4 grown children. (Well 3 with families of their own. One is still partly in the nest - of his Father's) I have 5 grandchildren. A few of them tell me that 'Bubby' isn't so cool any more. Actually, they haven't really told me this, but I know without spoken sentences full of reasons why because now they call me 'Bub'. Just 'Bub'.

I am a woman sandwiched and child-like or at the very least teenage-like or late twenty or early thirty-something-like in my thinking. I love that baby ants are called blueberries and that I get to dance crazy dance while I watch Disney classics. I worry about my parent's health and how many more years I'll experience the splendour of magnolia trees blooming in Spring. I think about my next adventure. I don't want to be too far away and yet I feel like I could truly live in that shack on the beach in Belize.

I want to do too much and see too much and get a bunch of creative work finished. Did I tell you that I got some great news today? I got a real pro Book Editor for my novella and now I can kick that book's ass and get it completed. Feeling great about that.

It just occurred to me that I have used the word 'want' far too many greedy times in this post. I want to change that. Right after I see if the grasshoppers kill all the bugs.

Damn Blogging

This damn blogging habit began because I wanted to work for or own my own magazine. The magazine addiction clearly blamed on my Aunt Beulah who kept me quiet with basket fulls of women's publications in the early 1960's. I inhaled the scent of the ink, shivered in my loins at the feel of the glossy paper and fell inside the world of each photograph.

It would seem that by writing this post I could end up slitting my own throat; never to ever, ever, ever be offered a writing-photog assignment with any magazine. Mainly because of what I am about to say. Magazines are expensive. Particularly if you want to buy them all and then you realize that you can basically grab all the content and stellar pictures online from pretty much anywhere.

Ladies, take my advice. Buy your mags and hide them. Stuff them inside your handbag. Own an ample handbag for this purpose. Just sneak them into the house. You won't want your partner to know you are spending $360 a month on printed matter only to recycle it at the curb a month later. Even if it does matter to your emotional and creative well-being.

Perhaps like me, you don't have room in your snug budget for small indulgences like magazines. Maybe you can't justify buying them anymore when your inspiration boards on social media give you all you lust after. Even when you can buy 3 for $10 at local big box stores. You know these massive places. The ones where uninspired and exhausted humans trudge the aisles because ultimately it is the cheapest place to buy food, diapers (for all ages) and toilet paper.

If you are poor, broke or nearly there, I suggest you get an adorable library card and begin loving the shushing sounds of these exceptional buildings. Yes. They still exist. Without a single penny you may leisurely flip through many issues of all your favorites. Take your moleskin notebook and best silver slim pen and take notes. Jot down ideas, names and websites. This is my strategy and now my secret is out.

Damn blogging. Oh how I love thee. Damn magazines. Oh how I love thee more. I know I've laid it all open here. My chance for editorial fame sinking, drifting away. But who knows. Perhaps I'll work for a magazine some day or own my own. It could happen.

NEW Painting: War of 1812 and The Story of Nancy

This is the story of the Nancy, a schooner which sailed the Upper Great Lakes as a private cargo vessel in the fur trade. During the War of 1812, the HMS Nancy was pressed into service as a British supply ship. While in this service, the schooner was destroyed in the Nottawasaga River by American Forces.

The sunken hull of the Nancy formed an obstruction in the river and an island was established by the resultant deposition of silt and sand. The remains of the hull now rest in a museum on the island to mark the site of the Nancy's demise and to commemorate her gallant defense.

Durga River

A river runs through it. My photo illustration of Durga features the waters of Huntsville, Ontario. (which sadly is flooding right now) Durga calms me. I carry a tiny laminated copy of her image in my pocket and another one in my handbag. It is crumpled and creased with the word 'Fearless' written on the back. Durga accompanies me in life. It's part of my 'as I go' - 'on the go' meditation. Perhaps I'm in a car or walking or painting. I think of Durga and whisper the bliss mantra 'Om anandamayi chaitaynamayi satyamayi parame'. I might repeat it once or a few times. It depends. I learned this chant from Kelly Cutrone via The Mother via Sri Aurobindo via India. It means 'Oh thou full of bliss, full of consciousness, full of truth, Supreme.' (enjoy the sound of this mantra - see the video below)

I finished a piece of art today. 'Durga River'. It is sweet petite, small and medium sized. Unframed, framed or sent to you on canvas. I hope you find the 'bliss' with her. She is in my shop now.

Fountain. Museum Quality Fine Art Prints

I have thousands of wonderful antique pieces of art in my digital collection. I would normally 'work' them a bit and add my own artistic flare and mood, but these 3 fountain prints tugged my heart so hard that I just couldn't bring myself to alter them. Modern and old at once, the colour palette is perfect for today's interiors.

Spring is slowly moving into Ontario. We are being extremely patient. I'm thinking of one of my favorite towns, Huntsville in Muskoka that is flooding and I'm also thinking of Las Vegas and the fountains of the Bellagio. In particular, the fountains inside the poolside courtyard.

Fountains are water magic and soothing and bursts of joy. You may find my 3 fountain prints in my shop now!
