Deer Jerky Recipe

1 pound boneless venison ( deer ) roast
4 tablespoons soy sauce
4 tablespoons Worcestershire sauce
2 tablespoons liquid smoke flavoring
1 tablespoon ketchup
1/4 teaspoon pepper
1/4 teaspoon garlic powder
1/4 teaspoon onion salt
1/2 teaspoon salt

Slice meat into long strips, 1 inch wide and 1/8 inch thick. In a large releasable plastic bag, combine soy sauce, Worcestershire sauce, liquid smoke, ketchup, pepper, garlic powder, onion salt and salt. Place meat in, and close bag. Refrigerate overnight. Knead occasionally, to evenly distribute marinade.
Preheat oven to 160 degrees F (70 degrees C). Place a pan on the bottom of oven to catch drips, or line with aluminum foil.
Place meat strips on a rack so that they do not touch each other, and dehydrate for 6 to 8 hours in the oven, or until desired consistency is achieved.

I went into this school with an open mind..because if i didn't then i have no idea what i would have thought. For me seeing all these dead animals i was shocked. After i thought about it, i realized that it makes sense that this is a forestry AND culinary school. The forestry kids kill the animals, while the culinary kids can show them how to cook it...
It all made sense now.
At one point while i was here, one of my friends asked me if i knew how to cook deer.. i said no but i did tell them i knew how to make deer jerky because we had cooked that in a previous class. They were ecstatic.
I will post a recipe up on just how i did it.

My name is Gabrielle, and i am going into my third year at college. It all began when i started school three years ago on September, 1st. The first sight of the college is beautiful, it's off the water and has a wonderful dock looking off the water. As i continued my journey through the campus i started seeing really odd things.. dead beaver hanging out someone's window, a coyote hanging from a tree while someone was skinning it, and so much more. Where did i end up?? From the looks of it, it looked like ~~hunting grounds~~, but in reality this was a college! Someone like myself living in Long Island most of my life, then coming to a school like this caught me off guard. It's also safe to say this is a Culinary Arts School.... i think..
