Tenho recebido muitos recadinhos no blog e no facebook, assim como por e-mails, de pessoas que não acertam fazer os pães com fermento biológico. A principal reclamação é que os pães não crescem.
Sinceramente não sei como resolver o problema dessas pessoas, só acompanhando todo o processo para entender o que pode estar acontecendo.

Amo aquela costelinha do restaurante Outback, que desmancha na boca, mas detesto o molho barbecue. Esse negócio de misturar doce com salgado, pra mim não dá!
Então eu faço o molho sem o açúcar e sem o shoyu que é soja.
Complemento com esse salpicão refrescante e pra mim, fica uma combinação divina!

Reza
 a lenda que quem deseja dinheiro e fartura no ano novo deve incluir  um
 prato de lentilhas na ceia de Réveillon. A tradição secular de 
comer os  saborosos grãos na refeição de 31 de dezembro foi trazida para

Já passamos o Natal e a expectativa agora é para a ceia do Reveillon!

Bolinho de bacalhau combina com o Natal, é ou não é?
Desde que me entendo por gente, ele é presença garantida nas ceias da minha família.
Quando olhamos na internet, há dezenas de receitas diferentes para esta iguaria deliciosa. Para fazer essa postagem, dei uma pesquisada nas imagens de bolinhos e para cada imagem que abria, lá estava uma receita diferente.

Eu achei muito interessante a forma como ela usou a linhaça e como meu filho não pode com ovo, deu logo vontade de testar.

Tive que fazer algumas adaptações por causa dele também, como: trocar o chocolate por alfarroba e substituir o polvilho por amido de milho, pois ele também não pode com estes

Há muito tempo eu estou devendo um pão para sanduiche sem ovos para as mamães desesperadas que me pedem.
Estou com um projeto de escrever outro livro continuando com minhas descobertas e também com receitas, só que desta vez, hipoalergênicas. Tenho reservado receitas então para este livro, mas também entendo a agonia de quem quer comer algo que simplesmente não acha em lugar algum!

É outono no hemisfério norte e nesta época as receitas com abóbora invadem as cozinhas.
Eu recebo feeds de alguns blogs americanos e é abóbora de todo jeito!

Esta receita é tão fácil que assim que a vi neste blog que gosto bastante e acompanho, resolvi tentar!
Meu filho não pode com maionese por causa do ovo.
Não pode com ketchup por causa do tomate.
E todas as receitas de maionese veganas que vejo, levam soja, outro ítem também que ele é intolerante.
Oh céus!!!

O primeiro médico que falou sobre alergia alimentar e sensibilidade química como causa de doenças crônicas ou reações adaptativas metabólicas causadas por interação maladaptativa a produtos ambientais, é da década de 30.


Em 2007 eu incluí uma forma de tratar o autismo de meu filho junto as terapias: uma intervenção nutricional com exclusão de glúten, caseína e alguns aditivos químicos.

Esta semana um amigo celíaco, Jorge Rezende, postou no Facebook um pão francês moldado na mão tão bonitinho, que não resisti e fui logo pra cozinha tentar reproduzí-lo.
Depois que comecei a cozinhar sem glúten, sempre achei que pão sem glúten moldado ou manipulado com as mãos, é uma combinação que não dá certo. Os pães dele ficaram tão atraentes e eu tinha tudo em casa, então resolvi tentar,

Muitas pessoas tem extrema dificuldade em fazer um pão sem glúten como manda o figurino: pão com fermento biológico e cara de pão normal, embora eu tenha me adaptado super bem e até preferir fazer pão sem glúten.
Quando existe esta dificuldade, temos que partir para os pães rápidos, feitos com fermento químico.
Muitas crianças no espectro autista também apresentam intolerância ao fermento

O Corn bread é típico nos EUA. Tenho dezenas de livros de receitas e tem uma versão em todas, não importa se o livro é de receitas tradicionais, sem glúten ou veganas. Na internet também tem várias opções.
Eles usam este pão para comer com chili e sopas, influência da culinária mexicana.
Provei-o pela 1ª vez através desta receita, uma adaptação da que tem no livro Babycakes da Erin McKenna.

 Recebi a dica desta receita no Facebook. A original do blog Aqui na Cozinha é naturalmente sem glúten, mas tive que adaptar para ficar sem leite. O resultado foi ótimo! O The Spunky Coconut é um blog que eu gosto de visitar, mas não tem muita coisa que eu possa fazer porque meu filho também é intolerante a ovos. Para fazer alguma receita agora e que eu não corra riscos, só se for algo que ele não goste.

Esta semana passeando pelo Rio de Janeiro, achei caixinhas de cramberries secas no Hortifruti da Prado Júnior em Copacabana. Meus olhos brilharam e pensei logo na possibilidade de fazer algumas das dezenas de receitas que tenho com esta frutinha.
