1 lb fresh squid bodies
2 cloves garlic, chopped
1/2 teaspoon lime juice
1/2 teaspoon salt
Freshly ground black pepper to taste
Beer Batter

2 cups all-purpose flour
1 tablespoon olive oil
1 1/2 teaspoons salt
1/4 teaspoon ground red pepper (cayenne)
Freshly ground black pepper to taste
1 cup cold regular or nonalcoholic beer

Vegetable oil for deep frying

To prepare Garlic-Lemon Mayonnaise

1 cup mayonnaise
1 clove garlic, peeled
Juice of 1/2 lemon
Salt and black pepper to taste
2 tablespoons chopped fresh basil leaves.

Directions

Thoroughly rinse squid; pat dry. Cut into 1/4-inch rings; place in medium bowl. Add 2 chopped garlic cloves, the lime juice, 1/2 teaspoon salt and black pepper to taste; stir to coat. Cover; refrigerate at least 30 minutes to marinate. Meanwhile, in deep bowl, mix 1 cup of the flour, the olive oil, 1 1/2 teaspoons salt, the red pepper and black pepper to taste. Slowly add beer, stirring gently until batter is smooth. Cover; refrigerate 30 minutes. In food processor, place mayonnaise, 1 garlic clove and the lemon juice. Cover; process until garlic is chopped and mixture is blended. Transfer to small bowl; season with salt and black pepper. Stir in basil. Cover; refrigerate until serving time. In deep fryer or heavy saucepan, heat 2 inches vegetable oil to 375°F. In shallow bowl, place remaining 1 cup flour. Dip squid rings in flour, shaking off excess, then coat completely with beer batter. Fry squid in batches in hot oil until deep golden brown, about 2 minutes. Drain on paper towels. Serve calamari hot with Garlic-Lemon Mayonnaise.

Some Tips that will help

Keep calamari warm on a cookie sheet in a 250°F oven while you're frying the rest. Don't overcrowd the pan while frying. You can use this same beer batter and cooking method with any of your favorite seafood and vegetables.

Nutritional Vaue:

Guavas are often included among superfruits, being rich in dietary fiber, vitamins A and C, folic acid, and the dietary minerals, potassium, copper and manganese. Having a generally broad, low-calorie profile of essential nutrients, a single common guava (P. guajava) fruit contains about four times the amount of vitamin C as an orange. However, nutrient content varies across guava cultivars. Although the strawberry guava (P. littorale var. cattleianum), notably containing 90 mg of vitamin C per serving, has about 25% of the amount found in more common varieties, its total vitamin C content in one serving still provides 100% of the Dietary Reference Intake for adult males.

Guavas contain both carotenoids and polyphenols like gallocatechin, guaijaverin, leucocyanidin and amritoside – the major classes of antioxidant pigments giving them relatively high potential antioxidant value among plant foods. As these pigments produce the fruit skin and flesh color, guavas that are red-orange have more pigment content as polyphenol, carotenoid and pro-vitamin A, retinoid sources than yellow-green ones.

Method:Grease and line a cake tin. Sieve maida and baking powder at least 3 times. Soak dates in warm water with baking soda for 15 mins. Chop dates after removing seeds and chop walnuts the same size. From the sieved flour add some to the chopped dates and walnuts so that they are coated in flour. Take a bowl and add butter and margarine. Beat with a wooden spoon till soft and fluffy. Slowly add the sugar 1 spoon at a time.Beat till light and fluffy. Separate eggs. In the mixture add only egg yolks 1 at a time. Beat till creamy. Add vanilla essence and mix. Now take a metal tablespoon and fold in the date and walnut mixture.(Folding in means to use the spoon to cut into tbe mixture first at the centre from top to down and then turn clockwise.) Continue to add and fold in till the mixture is mixed well. Now do the same for the sieved flour, 1 spoon at a time. Do this till all the flour is used up. Prehaeat the oven at 180 degrees. Beat egg whites till stiff.(the whites should stand in peaks and should not fall when the bowl is turned upside down.) Fold in the stiffly beaten egg whites into the cake mixture 1 spoon at a time till all the egg white is used up. Pour the mixture into the greased and lined cake tin and bake for about 1 hr or till done. The cake will be done when a toothpick when inserted in the centre of the cake comes out clean.
