Katy's baked Mincemeat recipe that will make your home smell like Christmas

Baked Mincemeat recipe

What you need

1lb (454g) Raisins
12ozs (340g) Sultanas
8oz (225g) Candied peel (we used mixed peel)
8oz (225g) Butter
2lb (908g) Dark brown sugar
1lb (454g) Cooking Apple, peeled, cored and grated
4 dessert spoons of Mixed spice
1 dessert spoon of Cinnamon
1 dessert spoon of Ground nutmeg
zest and juice of 1 orange and 1 lemon

6 Tablespoons of Brandy for end of cooking

How to do it

Mix all the ingredients except the brandy in a bowl and stir well
Pour mixture in a larger than needed oven proof dish or baking tin to allow for expansion
Bake for 3 hours at 110C/225F/gas 1/2
Stir occasionally while baking
Allow to cool and splash with the 6 tablespoons of brandy
Use mixture with a nice sweet pastry recipe and watch them dissappear
Store any leftover mix in a sealed container for later use

Winter days are Here

Hello from Gougane Barra where we are very excited to be getting in touch with you in the run up to Christmas and to give you an update of life in the valley.The hotel is closed for the winter and Gougane Barra is very quiet. We went for a walk on one of the trails in the forest park this morning and we didn’t meet one person during our outing. The wildlife are enjoying the quiet and are more visible this time of year. The hares were hopping about and small birds were busy foraging and singing, even the white tailed eagle was going about his business in the blue sky and yet it was quiet enough to hear a sheep bleat from the mountains.After that it was coffee and a busy office with guests planning their next visit, buying Canvasses of Gougane and booking lunch for when we are open in April… There is never a dull moment in Gougane Barra!

This is the photo I took in April 2009. I then went to my room and started to read page 7 of my book Gracelin O'Malley by Ann Moore (took place in 1840's) and the 1st paragraph read, "They followed the winding path of the Lee through Inchigeelagh, past the rippling waters of Lough Allua, crossing the river at Ballingeary and heading toward the Shehy Mountains until they reached the small stone chapel that sat on the shores of Gougenebarra Lake, the source of the Lee.......
I was reading this while looking out my window at the chapel at that very moment.
I am from the USA and had never been to your hotel before. ???

Sometimes on holidays it is worth getting up really early and enjoying the tranquil dawn over the lake in Gougane Barra.

This perfect scene is widely available while most of us sleep and it is worth sampling every now and again. All the wildlife in Gougane Barra make quite a noise about the dawning of a new day and they are quite right to celebrate scenes like this...

There is of course the snobbish manic Basil; his domineering wife, Sybil; and their hopeless language-challenged waiter,Manuel.

Give yourself the chance to be one of the steady stream of bemused guests trying to make Manuel understand what it is you want. Asking for an ice bucket ends up with you being presented with a 'nice bucket'. A simple procedure like opening a bottle of wine can become a huge drama. And, maybe, just maybe, in the middle of all these events, you might get some service, Faulty style, of course.

Everything that can go wrong will……. In fact, this can best be described as organised chaos bundled into two hours of "fat-wobbling, gut-busting, face-aching laughter" whilst, AT THE SAME TIME, enjoying a fabulous three course meal.

Béal Athan Ghaorthaidh have done it again!!

Congratulations to the Ballingeary under-16s who narrowly defeated Aghinagh by 1 goal in a close encounter Mid Cork League final game in Inchigeelagh. The match was a classic, keeping everyone on the edge until the winning goal was scored by Ballingeary in the final minutes.

New route in place on Beara-Breifne route in Gougane Barra.

A section of 'Slí Gaeltacht Mhuscraí' has been redeveloped in Gougane
Barra because of erosion on this mountain route. 'Slí Gaeltacht
Mhuscraí' is the Gaeltacht section part of the Beara-Breifne greenway
which will follow the route taken by Donal Cam O Sullivan on his epic
march fron Beara to Leitrim in the winter of 1601. Slí Gaeltacht
Mhuscraí links the Beara way from Kealkill to Gougane Barra, Beal
Athan ghaorthaidh(Ballingeary), Cúil Aodh and Baile Bhuirne together
on this walkway.

The new redeveloped section is part of the mountain route from Gougane Barra to Kealkill which has suffered erosion in recent times. New markers are in place on the new section which offers brilliant views of Gougane Barra.

Scoil Fionnbarra lighting up evening.

We had a great evening recently in Scoil Fhionnbarra with a lighting up ceremony, cake sale and brilliant carol singing by the pupils from the school. This fundraising event was organised by the new 'Coiste na Tuismitheoirí'(parents association), Coillte supplied a 7 m Christmas Tree and we sponsored the lights which were switched on as as part of the evenings entertainment.
