Pode parecer surpreendente, mas é isso mesmo.&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;

&lt;span style="background-color: white; line-height: 19px; text-align: start;"&gt;&lt;span style="font-family: Verdana, sans-serif;"&gt;Um dos exemplos relaciona-se às atualíssimas discussões sobre a preocupação em preservar as diversidades culturais e identitárias, que levou a Unesco a aprovar, em 20 de outubro de 2005, com ampla maioria, a Convenção sobre proteção e promoção da diversidade de expressões culturais.&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;

&lt;span style="font-family: Verdana, sans-serif;"&gt;&lt;span style="background-color: white; line-height: 19px; text-align: start;"&gt;Na mesma semana ocorreu, em Nova Iorque, uma reunião internacional organizada pela International&amp;nbsp;&lt;/span&gt;&lt;em style="background-color: white; line-height: 19px; text-align: start;"&gt;Cultural Property Society&amp;nbsp;&lt;/em&gt;&lt;span style="background-color: white; line-height: 19px; text-align: start;"&gt;(Sociedade Internacional sobre Propriedade Cultural) para discutir quais são os interesses envolvidos, quem se beneficiaria com a nova regulamentação e como isso afetaria o patrimônio cultural em todo o mundo. Em uma atmosfera interdisciplinar de discussão aberta, foram reunidos vinte especialistas de diversas partes do mundo. Participaram, entre outros, renomados atuantes na Unesco, como os juristas australianos Patrick&amp;nbsp;&lt;/span&gt;&lt;em style="background-color: white; line-height: 19px; text-align: start;"&gt;OKeefe e Lyndel&amp;nbsp;&lt;/em&gt;&lt;span style="background-color: white; line-height: 19px; text-align: start;"&gt;Prott, estudiosos do direito da propriedade cultural, como o canadense Robert Paterson, o veterano patrimonialista britânico David Lowenthal, e, como representante da América Latina, o estudioso brasileiro Pedro Paulo A. Funari.&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;

O terroir, considerado o principal fator pelo qual uma casta possa, em locais distintos, dar vinhos tão diferentes, é tradicionalmente definido como o conjunto de fatores ambientais que caracterizam um vinhedo. Em outras palavras: o solo, sua estrutura, sua exposição ao sol, vento e chuva, sua orientação geográfica, sua topografia, o clima, e o micro-clima que lhe está associado.&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;

&lt;span style="background-color: white; line-height: 19px; text-align: start;"&gt;&lt;span style="font-family: Verdana, sans-serif;"&gt;Em um primeiro momento, nos parece estranho pensar uma discussão sobre terroir no contexto de uma reunião sobre a diversidade cultural. Mas, pensando bem, o sentido terroir, proposto na ocasião, amplia o conceito tradicional, englobando o conjunto de relações humanas e identitárias que estariam vinculadas àqueles pequenos pedaços de terra.&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;

&lt;span style="background-color: white; line-height: 19px; text-align: start;"&gt;&lt;span style="font-family: Verdana, sans-serif;"&gt;Características de produção, desde a forma de plantio da uva, o tratamento, a colheita e a elaboração de vinhos - geralmente com produções bem pequenas - foram fatores relevantes na elaboração deste conceito. Todavia, a própria organização da vida cotidiana das pessoas que vivem ao redor destes diferentes terroirs, as relações culturais e simbólicas que têm com o vinho, também foram levados em conta.&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;

&lt;span style="background-color: white; line-height: 19px; text-align: start;"&gt;&lt;span style="font-family: Verdana, sans-serif;"&gt;O terroir, como um conceito cultural e identitário, considera que, nestas regiões, a maior parte das pessoas vive para a produção dos vinhos, que para elas não é uma simples mercadoria, mas uma obra de arte, da qual participam e se orgulham. Terroir, vinho e identidade: uma equação que tem tudo a ver com a diversidade cultural da humanidade. A produção destes vinhos é parte da cultura local e está relacionado com a identificação que estas pessoas possuem com sua região e seu país.&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;

&lt;span style="background-color: white; line-height: 19px; text-align: start;"&gt;&lt;span style="font-family: Verdana, sans-serif;"&gt;Este é o motivo pelo qual podemos compreender o tratamento dado pela resistência francesa aos vinhos durante a Segunda Guerra Mundial. As garrafas foram um tesouro bem protegido e escondido dos alemães. Obviamente o sentido de preservação não consistia apenas em conservar um bem material, mas o símbolo de uma identidade, de um orgulho nacional. Não entregá-lo era, em certa medida, poupar a própria alma dos franceses, ou ao menos daqueles grupos que se vinculavam culturalmente aos terroirs.&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;

&lt;span style="background-color: white; line-height: 19px; text-align: start;"&gt;&lt;span style="font-family: Verdana, sans-serif;"&gt;Talvez por este motivo, a idéia apresentada na reunião tenha sido a de que somente os países europeus possuíssem terroirs, pois, apenas no Velho Mundo, essa identidade cultural vinculada ao terroir é tão forte. Essa idéia criou polêmicas e não foi defendida pela maioria. Nos parece um certo exclusivismo europeu. Todavia, não podemos deixar de pensar que considerar o lado cultural e identitário do terroir seja algo muito interessante. Até mesmo porque inserir estas discussões em contextos históricos, intelectuais e políticos nos lembra que esta não é a primeira, nem a última vez, que o vinho, vinculado a identidades, se torna questão de Estado. Cabe lembrar que a bebida foi tema de um desentendimento de conseqüências políticas, em 1999, quando o presidente do Irã faria uma visita de Estado à França. O presidente, por causa da lei Islâmica, que proíbe o consumo de bebidas alcoólicas, afirmou que no jantar oficial não só não beberia vinho, como também não se sentaria à mesa se este fosse servido. As autoridades francesas disseram que um jantar daqueles sem vinho não seria possível. O jantar foi cancelado e como o protocolo exigia que uma visita de Estado incluisse um banquete de Estado, o encontro das autoridades foi rebaixado para visita oficial. Neste caso, vemos a mesma bebida, com simbolismos muito diversos: proibida ou cortejada de acordo com a identificação de cada povo.&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;

&lt;span style="background-color: white; line-height: 19px; text-align: start;"&gt;&lt;span style="font-family: Verdana, sans-serif;"&gt;Como pudemos perceber, as identidades, ainda que nos últimos tempos fluídas e plurais, são fatores de influências sobre decisões políticas e econômicas, que conduziram as relações no passado e condicionam as relações no presente, atuando, também, no mercado financeiro. Compreendê-las, significa, muitas vezes, compreender políticas públicas e relações culturais e históricas, que atingem a todos nós, de forma direta, como sujeitos de uma identidade, ou indireta, como consumidores de vinho.&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;

Estes polifenóis compreendem uma família muito grande de componentes, dentre os quais os mais conhecidos estão: os taninos, responsáveis pela estrutura e pelo sabor dos vinhos tintos; os antocianos, responsáveis pela intensidade de cor; ou ainda o famoso resveratrol, ao qual se atribuem muitos dos efeitos benéficos para saúde do consumo moderado de vinho.&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;

&lt;span style="background-color: white; line-height: 19px; text-align: start;"&gt;&lt;span style="font-family: Verdana, sans-serif;"&gt;O conteúdo de taninos interfere no paladar. Ele é responsável pela sensação de adstringência ou trava que encontramos em alguns vinhos, causada porque os taninos coagulam as proteínas da saliva. Trata-se de um parâmetro fundamental na formação do sabor e nas características cromáticas dos vinho. Os taninos estão localizados, sobretudo, na pele e nas sementes das uvas e acumulam-se no decorrer da maturação. Eles evoluem no curso da vida inteira de um vinho condicionado por fatores como o teor alcoólico, pH e anidrido sulfuroso e amadurecimento em barris de carvalho.&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;

Depende do potencial do terroir, da maturação da uva e do tipo de vinificação escolhida pelo enólogo.&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;

&lt;span style="background-color: white; line-height: 19px; text-align: start;"&gt;&lt;span style="font-family: Verdana, sans-serif;"&gt;Depois que esmagamos a uva e iniciada a fermentação alcoólica, as cascas sobem e formam um chapéu sobrenadante na parte superior do tanque enquanto o suco fermenta na parte de baixo. Por isso, temporariamente, temos de molhar e descompactar a parte sólida (cascas) – o que chamamos de remontagem.&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;

&lt;span style="background-color: white; line-height: 19px; text-align: start;"&gt;&lt;span style="font-family: Verdana, sans-serif;"&gt;Um fator importantíssimo que deve ser levado em consideração na hora de fazer a escolha do tipo de vinificação é que os taninos são alcoolsolúveis, enquanto os antocianos (cor) são hidrossolúveis. Por isso nos primeiros dias de fermentação não extraímos muitos taninos e, conforme o açúcar vai se transformando em álcool durante a fermentação, vamos extraindo cada vez mais taninos e o vinho fica cada vez mais adstringente. Outro fator a ser considerado é que os taninos são cedidos ao vinho por difusão das partes sólidas (cascas e sementes) na fase líquida e, por isso, quanto mais remontagens são realizadas, maior é a quantidade de taninos extraídos. Por esse motivo se preferem os tanques baixos e largos ao invés dos altos e estreitos para fazer os grandes vinhos tintos. Pois, dessa forma, o contato das cascas como vinho em fermentação se dá em uma área maior.&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;

&lt;span style="background-color: white; line-height: 19px; text-align: start;"&gt;&lt;span style="font-family: Verdana, sans-serif;"&gt;O enólogo não pode extrair taninos em excesso porque pode resultar um vinho duro e adstringente demais, que nem mesmo o amadurecimento em barris vai conseguir amaciar. Por isso, além do monitoramento através de análises de laboratório, a degustação diária dos vinhos durante a fermentação aliada a experiência do enólogo em anos anteriores é a melhor maneira para alcançar o equilíbrio entre todos os componentes do vinho.&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;

Porém, além da origem própria das uvas, podemos ter um incremento indireto através do amadurecimento do vinho em barris de carvalho, que cedem taninos da madeira para o vinho.&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;

&lt;span style="background-color: white; line-height: 19px; text-align: start;"&gt;&lt;span style="font-family: Verdana, sans-serif;"&gt;Outro fator importantíssimo em que atuam os taninos é na estabilização da cor dos vinhos. Eles se unem através de pontes com os antocianos, evitando que se oxidem e precipitem. Podem também formar complexos estáveis por meio da interação com proteínas e polissacarídeos do vinho. Por isso é comum ouvirmos os enólogos dizerem que os taninos são os suportes para a cor (antocianos).&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;

&lt;span style="background-color: white; line-height: 19px; text-align: start;"&gt;&lt;span style="font-family: Verdana, sans-serif;"&gt;Os vinhos tintos jovens e leves são, normalmente, guardados em tanques de aço inox, preservados do contato com o ar para chegarem frutados até o engarrafamento. Enquanto os vinhos tintos mais encorpados e carregados de taninos são guardados em barris de carvalho, onde acontece uma micro oxigenação por meio das aduelas de madeira produzindo reações de polimerização destes taninos que, por sua vez, tornam-se menos agressivos e o vinho mais macio.&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;

&lt;span style="background-color: white; line-height: 19px; text-align: start;"&gt;&lt;span style="font-family: Verdana, sans-serif;"&gt;Os vinhos tintos iniciam sua vida com cores intensas e tonalidades vivas. Com o passar do tempo, vão mudando em direção das tonalidades atijoladas. Por esse motivo, podemos estimar a idade do vinho pela sua cor. Outro fenômeno interessante que acontece com o vinho depois de engarrafado – quando guardado durante muitos anos – é uma precipitação no fundo da garrafa de cristais antocianos e taninos, que produzem um pequeno depósito. São eles que nos levam a aconselhar fazer a decantação (decanter) nos vinhos mais velhos algumas horas antes se servir, tanto para abrir seus aromas como para separar este depósito.&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;
