This ice cream is utterly amazing, I can eat it in one sitting and know it's all good for me, although I try not to, because of the calories.

3x Cups Ice
1x Cup Raw Cashews
1/4 Cup Raw Cacao Powder
1 Tbs Coconut Oil
1/4 Cup Agave Syrup (add more to taste, if you like)
1 Tbs 100% Maple Syrup

Blend all in high speed blender until smooth, if you don't have a blender a food processor does the job, just not as smooth. Sprinkle with raw shredded coconut and enjoy.

If your not a coconut lover or just want choccy ice cream omit the coconut oil and shredded coconut, and it's still awesome.

With left over ice cream (if any) place in the a freezer proof container and freeze until you need your chocolate fix, take out of freezer and let rest for about half an hour before you eat. Will keep up to four weeks.
I would eventually like them to follow in my footsteps, when they are old enough to make decisions for them selves, and they see how fantastic a raw lifestyle is, I hope you enjoy this smoothie as much as we do, you can even make it into a Superhero Green Pudding by not adding the water, enjoy guys and any feed back is much appreciated.
NOT ME

Hi Everyone, so as you all know I'm now eating mainly raw foods well about 98% just can't give up the odd bit of wasabi on my raw sushi and a few other bits, but mainly raw, so eating organic fruit and veg would be so expensive for me as I go through huge amounts, not to say I haven't tried, I did an online order last week and to be honest I spent $160 on a very little box of produce, I would love love love to be able to afford all organic produce but as I said it's just not going to happen.
So here's what I do I buy everything from my local market and wash everything in a special wash by safegard called Fruit and Veggie Wash, it's very quick and easy to use, all organic ingredients, environmentally save and biodegradable. How it works - the ingredients help stick to the harmful bacteria, dirt, waxes and chemicals to remove them. This is is a local family based company, well local to me anyways, you can find out more at www.safeguardproducts.com.au I hope you find this helpful, at least I feel some peace of mind when feeding my family non-organic foods.

<link rel='alternate' type='text/html' href='http://chowdownskinnycow.blogspot.com/2011/10/who-can-afford-organic-not-me.html' title='Who can afford organic ? ............

1 cup almond pulp
1 medium frozen banana
5 medjoul dates
2 tbs coconut oil
1/2 cup raisins
1/2 cup shredded coconut
1/4 cup rolled oats
1/4 cup sunflower seeds
1/4 pepita's (pumpkin seeds)
1 tbs dark or clear agave nectar (I use dark as it has more minerals)

If like me you are using the pulp from yesterdays almond milk and the pulp has dried abit just add a couple of tbs of almond milk to get that batter, well like batter.

I also find and maybe its just me, that when I freeze banana's it really brings out there flavour, it does work the same if not frozen but the flavour isn't as bananary.

So mix pulp, frozen banana, dates and coconut oil in a food processor until well combined and like a batter.

Pour batter in a mixing bowl with the rest of the ingredients and mix well.

Roll into small balls and dehydrate for around 10-12 hours depending on how dry you like them.
So I'm ready for finding, inventing and best of all eating. I'm also proud to say I haven't relapsed for 2 years and 3mths so all this healthy eating is definitely working, but I will say since being a bit slack on 100% Raw foods I have had colds, asthma, pimples, thrush, skin irritations not to mention the 4 kilos of weight I've put on, so if you have been a little lazy like me lets get stuck into it together and this time it's for life.

Raw Blueberry Cheese Cake

OMG this is such a yummy fake cheese cake, Definitely the best cheese cake I've ever had I have to stop myself from eating so much. It is actually still high in ssaturated fats because of the use of coconut oil, maybe next time I'll try using a little less oil or maybe even olive instead because I know Dr Jelenik disagrees with the use of coconut but hey I figure I eat Raw now so very very little saturated fats pass my lips I still keep well under the 15g recommendations. This is going to be my Christmas dessert but I will go for raspberries to fit in with the Christmas colour theme (I like things to match hehehehe).

CRUST
1 Cups Raw Macadamia Nuts
1 Cup Raw Almonds
1 Cup Pitted Fresh Dates
1/4 Cup Desiccated Coconut

FILLING
3 Cups Raw Cashews (soaked for 2 hrs)
3/4 Cup Freshly Squeezed Lemon Juice
1/2 -3/4 Cup Agave Syrup
1/2 Teaspoon Sea Salt
1 Teaspoon Natural Vanilla Essence
3/4 Cup Coconut Oil

TOPPING
250g Frozen Blueberries
1/2 Cup Fresh Pitted Dates

BASE METHOD
Blend nuts and dates in food processor. Spread dried coconut over the bottom of base. Press nut mixture onto the coconut, this not only tastes great but stops the mixture sticking.

FILLING METHOD
Blend cashews, lemon juice, agave, coconut oil, and 1/2 cup water until all ingredients come together into a smooth cheese like consistency. With the help of a spatula pour cheese mixture onto base. After the filling has been added be sure to give the dish a few gentle taps to remove any air bubbles.

TOPPING METHOD
Process thawed berries and dates until well blended, pour on top of cake. Place cake in Freezer until frozen, thaw 15-20 mins before serving.

ENJOYthis seriously is one fantastic cheesecake
These cupcakes are great to freeze and just take one out when you have a sweet craving.

1 1/2 Cups Walnuts
1 Cup Dates
3 Tablespoons Coco
1 Teaspoon Natural Vanilla Extract
1/2 Teaspoon Almond Essence
1/2 Tablespoon EVOO
Stevia to taste (optional) I didn't use any as the icing is sweet enough

Place everything into your food processor and blend until smooth.

Roll into small balls and place into mini cupcake patty pans shape into muffin shapes.

Icing

this icing really varies to how big the avocado is and how strong you like your chocolate so it's all about taste
I used

1 Avocado
1 1/2 Tablespoons Coco
1 Teaspoon EVOO
Natural Maple Syrup to taste

Again blend all in food processor and then ice each little cupcake, they would look lovely decorated with a raspberry or halved strawberries.

1 Cup Organic Tahini
2 Tablespoons EVOO
2 Tablespoons Rice Wine Vinegar
Salt and Pepper to Taste
Keep in the fridge, and just remember that although this is really healthy it does still contain saturated fats so go easy.

Mums Truly Amazing Rice Salad

I can honestly say, with hand on heart that this is my absolute favorite salad I could eat it for Breakfast, Lunch, Dinner and still go back for seconds it's a definite must try and I promise you will not be disappointed.

Rice Mixture

2 Cups Brown Rice
1 Red Pepper (capsicum)
1 Green Pepper (capsicum)
1 Tin Sweet Corn
4 Stalks Spring Onions
1 Cup Cashews
1/2 Cup Sunflower Seeds
1 Cup Currants

Dressing

1/2 Cup EVOO
2 Tablespoons Soy Sauce
2 - 3 Cloves Garlic Crushed
1 Juice of Lemon

Cook rice following directions on packet

Dice peppers and spring onions in to small cashew slice bits

Mix all the rice mixture together, except cashews these go soggy so mix in just before serving

In a separate bowl mix the dressing together and then pour over over rice mixture, mixing well so all ingredients are well coated.

If your on the MS Recovery diet or Best Bet Diet you could substitute the soy sauce for balsamic vinegar and the corn for a yellow pepper to give the salad that lovely bright yellow colour, also sometimes I have a problem finding natural currants so I use natural sultana's to give that little sweetness.
I read up on her disease and symptoms as my mum was going to be her carer, I knew as soon as I saw her profile that this is exactly what I had, but as my son was only 5 weeks old all the docs kept saying it was post natal depession. One whole year it took me to confince my doctor to let me go for a MRI that was in the Jan 08, we were moving to Perth, Australia in
March so all was very stressful.

Blow me down the MRI came back and yes I had MS, a bit of a shock but, I was so grateful that I finally new what was wrong with me, as I have read a million times with MS sufferers.
I was so embarrassed and ashamed to have this horrible disease, for so long I kept it a secret. I dwelled in my own pity for so long thinking my life is over, whats the point of life I'm only going to end up in a wheelchair or having someone have to help me when I go to the toilet, I thought my life was ended.

My life is far from over and I'm not going to let this horribly labeled disease let anyone or anything stop me from having the life I wanted, If anything having MS has made me a better mum, wife, daughter and sister then I could only wish for, there is such a stigma on MS, I'm young healthy, active and have no plans of changing that. I really think people need to be educated on the fact that MS isn't always bad, I have been on the Jelinek diet for four weeks and my right leg is normally numb at least every other day and I have not felt it once, all I have to do now is recover my feet and right hand, bring it on.

I no longer feel ashamed of this disease and no way is my life is over and I want to scream to the world "I'm Fine and I will live a life no different to yours " I was abit iffy about the whole diet thing but hello, our body is like a car we give our cars fuel to work so why can't people see we need the best food to keep our bodies healthy, I will tell anyone now,I'm not embarrassed I have a condition but that's it I'm fine and will always be.......................

Date and Walnut Coleslaw

This Salad was a through together with things I had in the fridge and cupboard, we had it dinner last night to accompany my fish and my husbands grilled pork chops but I must say we were pleasently surprised so I'll deffinately be making this one again. Great for the BBQ season thats just round the corner.

serves - 4 - 6 side dishes

1/4 Cabbage
3 Medium Carrots
3 Celery Stalks
1/2 Cup Chopped Pitted Dates
1/2 - 1/4 Cup Chopped Walnuts

2 TableSpoons EVOO
1/4 Cup Balsamic 100% FatFree Dressing (I used Praise)

Slice Cabbage into thin strips, Grate Carrots, Chop Celery. Mix together with Dates and Walnuts

Pour EVOO and Balsamic Dressing over and stir through salad.

This is a recipe for making rice milk I got it from my nutritionist, at least I know whats going in it no yukky preservatives or flavourings.

It's super easy

4 cups of Hot Water
1 cup cooked rice white or brown
1 teaspoon of natural vanilla extract

Blend all ingredients together until smooth. Place milk into the fridge to let cool and the milk will separate.Pour the milk through a strainer to catch any rice particles. Keep in the fridge until ready to use.

this isn't quite like the shop bought milk so you could add stevia or agave nector if you want somthing a little sweeter.

Done, how easy is that.

Gluten Free, Dairy Free, Egg Free and Legume Free Bread

I had my first appointment with a nutritionist / iradologist last Saturday and it was really interesting she said I was taking all the right supplements except one which is Lecithin she advised me to start taking that and I'm also low in magnesium so she gave me a horrible liquid to take morning and night and also a tablet called metagest which helps with the digestion of portein in my stomach.

She was really happy with the way I was eating but advised me to eat as raw as possible, not sure about that one yet I don't mind eating all my veg and fruit raw but when it comes to not having bread ,pasta, rice, please I need some sort of enjoyment in my live so I think I need to just get my head around this diet first.

Well as I'm well and truly following the MS Recovery Diet, No Dairy,No Gluten, No Legumes,No Sat Fat, No Eggs and minimal Yeast. I was desperate to come up with a bread I could enjoy so this was my first attempt and it actually was quite nice so give it a try.

Dry Ingredients

1 Cup Rice Flour
1 Cup Buckwheat Flour
1/2 Cup Millet Flour
1/2 Cup Tapioca Flour
2 1/2 Teaspoons Guar Gum
1 Tablespoon Probiotic Yeast (especially designed for people with yeast intolerance)

Wet Ingredients

2 Tablespoons Honey
2 Tablespoons EVOO
1 1/2 - 2 Cups Water
1 Teaspoon Cider Vinegar

I also Added 2 Tablespoons Chai Seeds and 1/4 Cup Mixed seeds but this is optional and you may need to add a tad more water.

First spray your bread maker bread tin with EVOO spray

Pour all the wet ingredients in

Mix all dry ingredients together even seeds if using in a separate bowl

Turn your bread maker on, basic loaf cycle and while it's mixing carefully spoon in dry ingredients, making sure to scrape the sides of the tin so all flour get wet.

Once the mixture is a toothpaste like consistency you can leave it to continue.

I love bread makers and would advise anyone with a gluten free diet to get one, they are well worth it, and it will save you loads have a look on ebay.
Wow winter for my children has been hell colds, Asthma, ear infections, gastro and my kids are normally pretty healthy but since starting my son at daycare twice a week we seem to catch everything going around aaaaarrrrrrrrrrrrrrrrrrrrrhhhhhhhhhhhhhhhhh Just wish people would leave there kids at home when they are sick and not send them to daycare, the latest notice up at daycare is Hand ,foot and mouth what is that ? never ever heard of it, it actually sounds like something a farmer would be worried about their cattle catching yuk touch wood this doesn't hit us too.

So anyway i'm planning on getting back in the kitchen this week so, keep an eye out.
