Peanut Butter Finger Bar

1/2 cup white sugar
1/2 cup margarine
1/2 cup brown sugar
1 egg
1/2 cup peanut butter
1 cup flour
1/2 teaspoon soda
1 cup oatmeal
1/2 teaspoon vanilla

Mix together and bake on cookie sheet.
Bake at 375 degrees until light brown. Do not over bake. Remove from over. Cover with chocolate chips and spread as they melt. When cool, spread over the chips a mixture of 1/2 cup powdered sugar, 4 tablespoons evaporated milk and 1/2 cup peanut butter.

Notes:
* I always 3 or 4 times this recipes and spread it into 2 cookie sheets. It makes taller cookies. They are really moist and dietary, less frosting for your cookies. LOL :o)

** I always use canned frosting instead of chocolate chips, because it is easier and I love easier.

*** These freeze great so I always have a sheet for the freezer. I just cut them and put them into 2 freezer bags. Perfect for. . .whatever.

Oh, Soy! Burgers with Potatoes

2 pounds ground beef
3 tsp. chopped onion
1 tsp. pepper
Mix well and shape into burgers.
Place in a hot skillet and add 1/3 cup Soy Sauce, more can be added depending on your liking. Brown burgers up.

These potatoes are fresh from our garden. I boiled them with the skins on. Choose potatoes that are about the same sizes so they cook evenly. Drain. Let them cool a bit, I add cold water to the stock pot. Then slice them up on top of the burgers. I added a couple off shots of Soy Sauce after I turned them so they would brown up nice.

Salt and pepper to taste.

Guava ~ Strawberry Slush

12 oz. Hawaii's Own, Guava Strawberry, frozen
1/2 cup sugar
1 can water
2 cups ice
1 cup milk.

Blend together and enjoy!

Venison Meatballs with Pasta

2 lbs. ground venison
1 cup milk
1 cup rolled oats
1/2 tsp. pepper
1 Tbsp. minced onion
2 Tbsp. minced garlic.
Mix together well. Shape into meatballs. Add olive oil to a large skillet. Heat and cook meatballs.
Meanwhile, cook pasta.
I made two 1 cup packages of brown gravy.
Drain pasta and rinse.
Place on place, add meatballs and top with gravy.

My family hunts and we usually have venison in the freezer. Any of our venison recipes would work great with beef.

Creamy Hamburger Casserole

2 lbs hamburger
1 onion, diced
Cook together and drain.
Add 2 cans cream of mushroom soup.
1 1/2 cups sour cream.
Mix well.

Press a can of separated biscuits into a greased dish.

Pour mixture over the biscuits.

Bake at 350 for 30 minutes or until biscuits are browned.

Sugar Cookie Bars

1 cup butter, room temperature.

2 cup sugar
4 eggs
2 tsp. vanilla
5 Cups flour
1 tsp. salt

1/2 tsp. soda

Cream butter and sugar until fluffy. Add eggs, one at a time, mixing after each egg. Add vanilla and mix well. In a separate bowl combine flour, salt, and soda and stir with a whisk to combine. Add to we mixture and mix just until combined. Spread on a greased cookie sheet ( 13x18) bake at 375 degrees for 10-15 min until lightly golden or until toothpick comes out clean. Cool completely and frost.

Frosting:

1 cup butter, room temperature

1 tsp. vanilla

pinch salt

4 cups powdered sugar

5 Tbsp. milk

food coloring

For frosting add butter until smooth and creamy. Add vanilla and salt. Add powdered sugar in 1-2 cup increments until combined, then add milk and mix until smooth and spreading consistency. Spread over cooled cookie.

Nacho Plate Meatballs

2 pound ground venison (hamburger would work fine)
8 oz. grated Pepper Jack cheese
1 1/2 cups bread crumbs, I used Panko
24 oz. salsa, I used Pace

Mix all ingredients together well.
Spray baking pan and bake at 400 degrees for 40 minutes.

These are served on crushed corn chips, with green salad, sour cream and ranch dressing. My family really likes these. They would be great any way you make taco salad, and wouldn't you know they freeze great!
