I invited out neighbor for dinner couple of weeks ago. I made a humus but forgot to buy flat bread. I was looking for a quick flat bread recipe to make the bread before they arrive. I found this naan recipe without yeast. Here is the link, Naan bread without yeast
I was very happy with the result and my guest was very impressed. Unfortunately, forgot to take a picture but I'm sure I will cook it again. I will update my post with the picture:)

I didn't make the garnish. If anyone interested making it please go to the link for full recipe.

Ingredients for the dough

All purpose flour 2 cups

Baking soda 1/2 teaspoon

Sugar 3/4 teaspoon

Salt 1/2 teaspoon

Oil 3 tablespoons

Yogurt 1/2 cup + 1 tablespoon

Milk 1/2 cup

Extra all purpose flour for dusting and few teaspoon oil for covering the dough

In a bowl put all the ingredients. Combine and knead to make a soft dough. It will be very sticky, try to dust with some flour and make a soft dough ball. Pour some oil over the dough ball, smooth it all over.Cover with a clean kitchen towel or plate. Now keep this undisturbed in a
warm place. May be next to the stove while you cook other dishes or
microwave / oven would be safe place. Let it sit for 5-6 hours. (I didn't have time so I let it sit 30 minutes. )

Take one dough ball and roll out little elongated. You may dust with
some flour to roll out and it will shrink as you roll. We are going to
make a elongated triangle shape flat bread.

Heat a good tawa (I used non stick pan ) with handle and keep it at medium flame. Make sure the
tawa is hot enough before starting. Flip over when one side cooked to cook other side.

Enjoy it!

I'm so happy that I'm back to posting my daily cooking. I found this recipe from Minimalist Baker blog.
I love the soup picture she took. I'm still learning how to take good food picture. It is not easy but I will try until I get it right. Anyways, I love this soup and of course, I made a lot of changes. I added carrot, used fresh corn, tomato and made my own sauce. I used instant pot for cooking. It is very easy to use. It is a magic pot. I love it! If anyone want to try original recipe the link is above.
We enjoyed the soup since little chilly weather today.
Ingredients

1 1/4 cup sweetened flaked coconut and 1 cup toasted sweetened flaked coconut.( toasted flaked coconut is optional )

1 ripe, medium-sized banana

Whites of one large egg

1/4 tsp vanilla extract

Pinch of salt

3 tbsp mini chocolate chips

Instructions

Preheat oven to 325 degrees F. Line a baking sheet with parchment paper and set aside.

Add
flaked coconut and toasted coconut flakes to the bowl. Add banana, egg whites, vanilla

Using

together.

Bake for 21-24 minutes, or until the bottom edges and outsides of macaroons are golden-brown and macaroons are set.

about 15 to 20 minutes. Set aside to cool.

Place kale in a steamer
basket over 1 inch of boiling water in a saucepan. Cover saucepan with a
lid and steam kale until hot, about 45 seconds; transfer to a large
plate. Top kale with quinoa, avocado, cucumber, bell pepper, red onion,
and feta cheese.

Whisk olive oil, lemon
juice, Dijon mustard, sea salt, and black pepper together in a bowl
until the oil emulsifies into the dressing; pour over the salad.

 Directions

Cover beans with 6 cups cold water in a large pot. Bring to a boil; remove from heat. Let stand, covered, 1 hour.

Drain beans; return to pot. Cover with 3 quarts cold
water. Add bay leaf and thyme; bring to boil. Reduce heat to medium;
simmer, partially covered, until beans are barely tender, about 2 hours.

Add leeks, carrots, potatoes, tomatoes, broth, and 2 cups
water. Simmer, partially covered, until the beans are tender, about 30
minutes to 1 hour.

Make pesto: Finely chop garlic in a food processor. Add basil; process. Add cheese and oil; process until combined.

Add green beans and zucchini to pot. Cook, uncovered, 20
minutes. Add peas; cook until soft, 5 to 10 minutes. Season with salt
and pepper. Divide among bowls; top each with 1 heaping teaspoon pesto.

I found this recipe from online as a meatless dish but we love our meat. I added ground chicken meatballs to this dish. Also, I used fresh tomatoes instead of can and cooked differently. Here is the my version of the recipe,

Ingredients:
12 ounces linguine pasta

15 meatballs ( I prepared meatballs ahead of time )
4 tomatoes chopped
1 medium onion, cut in 1/4 inch julienne strips
4 cloves garlic, very thinly sliced
1/4 teaspoon red pepper flakes
2 teaspoons dried oregano leaves
4 1/2 cups chicken broth
2 tablespoons extra virgin olive oil
1 bunch (about 10 to 12 leaves) basil, diced
Parmesan cheese for garnish

Preparation:
Put olive oil in the pan with onion and garlic cook 2 minutes and then add tomatoes cook 2 more minutes. Pour in chicken stock. Sprinkle on top the pepper flakes and oregano.Add pasta cover pot and bring to boil.
Reduce to a low simmer and keep
covered and cook for about 10 minutes, stirring every 2 minutes or so.
Cook until almost all liquid has evaporated – I left about an inch of
liquid in the bottom of the pot – but you can reduce as desired .
Season to taste with salt and pepper. Add basil leaves and stir pasta
several times to distribute the liquid in the bottom of the pot evenly
throughout the pasta as you are serving. Serve garnished with Parmesan
cheese.
Remove from
heat and cool slightly. Puree with an immersion blender, or in batches
with a regular blender. If you prefer a chunkier texture, only puree
half the soup.

Stir in Parmesan, reserving some for garnish. Add
salt and pepper to taste. Transfer to the soup tureen. Top individual
portions with extra Parmesan and leeks, and a dash of olive oil.
I wasn't posting my cooking for a while but I decided to post this salad recipe. I loved it so much. I found it online when I was searching chickpea recipes. The link is;
http://www.inspiredtaste.net/19298/fresh-chickpea-salad-recipe-with-lemon-and-dill/
I only made one change for this recipe. I didn't use can chickpea. I always get dry chickpea and soak at night and boil until it cook the next day.
Ingredients,

1 1/2 cups (227 grams) diced cucumber

2 cups (170 grams) chopped small tomatoes

Two 15-ounce (425 grams) cans chickpeas, drained and rinsed

1/4 cup (59 ml) lemon juice

1/4 cup (59 ml) olive oil

1/2 teaspoon honey

1 teaspoon Dijon mustard

3 tablespoons chopped fresh dill

1/3 cup (28 grams) crumbled feta cheese

Salt and freshly ground black pepper

Directions

Combine cucumber, tomatoes and the rinsed chickpeas in a large bowl.

In
a small bowl, whisk together the lemon juice, olive oil, honey and the
mustard. Season with salt and pepper then stir in the chopped dill.

Add dressing and feta cheese to salad and toss until well mixed. Cover
then refrigerate at least 15 minutes before serving giving time for all
the flavors to come together

I followed the recipe but one ingredient was strong flour. I don't know what is it so I used bread flour instead.

Ingredients:
1 tablespoon active dried yeast
1 teaspoon honey
8 fl oz (250ml) lukewarm milk
2 oz (55g) butter melted
15oz (420g) bread flour
