Peanut Butter & Chocolate Chip Cream Cheese Cookies

Ingredients:

1 can seamless crescent rolls (or pinch together seams on a regular can, or make your own with the recipe I posted before)
8 oz cream cheese, room temperature
1/3cup sugar
2 tsp vanilla
¾ C mixed peanut butter and chocolate chips

Directions:

Beat sugar, cream cheese and vanilla together until smooth and creamy.
Unroll the crescent roll sheet onto lightly floured surface. . Stretch the dough out, I use a rolling pin to do this, then trim the edges to give it a good rectangular shape. A pizza cutter is great for trimming edges of dough.
Spread the cream cheese mixture over the top of the crescent sheet, leaving a gap at the edge about 1/2 inch.
Sprinkle your chips on top of cream cheese – press them in lightly to aid in rolling.
Roll the crescent sheet up tightly and wrap in cling wrap.
Place in freezer for at least 2 hours it won’t get really solid as the cream cheese mix won’t freeze hard.
When chilled preheat oven to 350°.
Line a cookie sheet with parchment paper (prevents sticking and helps in cleanup).
Slice the crescent roll into 1/4" slices. They won’t keep the precise round shape, but that is fine!
Bake on prepared cookie sheet for 12 -14 minutes until crescent roll appears golden brown.
Cool on the parchment paper or wire rack.
Enjoy! They are soft and oh so yummy!!

Ingredients:

2 1/4 t. fast acting yeast or 1 pkg Fleischmann;s Bread Machine Yeast
1/4 c. warm water (105-110F)
2 t. sugar
1 c. milk (just to scalding - do not simmer or boil)
1/3 c. sugar
1/4 c. butter
1 t. salt
1 egg, lightly beaten
3 1/2 c. bread flour
1 c. whole wheat flour
1 c. wheat gluten (optional)
2 T. butter, melted for brushing

Directions:

Dissolve yeast in 1/4 c. warm water. Stir in the 2 t. of sugar. Let it sit for about 5 minutes until mixture foams up.
Heat milk in microwave or in small saucepan on stove top.
Add sugar, butter, and salt to hot milk and stir until butter is melted. Cool to 105-110 F
Pour milk mixture into bowl or stand mixer
Add the yeast mixture, egg and mix together
Mix in all-purpose flour, whole wheat flour, vital wheat gluten beating to form a soft dough. Knead with mixer for 5 minutes, adding extra flour, if needed.
Place dough in warm oiled or buttered bowl, turning greased side up. Cover with a clean towel and let rise in a warm place until doubled in size (about 60 minutes)
Punch dough down and hand knead fr 5 minutes on lightly floured surface.
Divide dough into 12 pieces and shape into round balls. Place them, not touching, in a greased 13x9x2 baking pan.
Cover with a clean towel, let rise in a warm place until doubled - about 30-45 minutes.
Bake at 375 for 18-20 minutes or until tops are golden brown.
Brush tops of rolls with melted butter.

Pan-Roasted Chicken with Lemon-Garlic Green Beans

Pan-Roasted Chicken with Lemon-Garlic Green Beans (from Rue)

6 TBL olive oil
2 lemons, 1 thinly sliced, 1 juiced
4 cloves garlic, minced
1 tsp. salt
1 tsp. freshly ground black pepper
1 lb. trimmed green beans
8 small red potatoes quartered
4 chicken breasts (bones left in, with skin)

Prep:

Preheat oven to 450* F.
Coat a large baking dish or cast-iron skillet with 1 tbl. of the olive oil.
Arrange the lemon slices in a single layer in the bottom of the dish or skillet.
In a large bowl, combine the remaining oil, lemon juice, garlic, salt and pepper, add the green beans and toss to coat.
Using a slotted spoon or tongs, remove the green beans and arrange them on top of the lemon slices.
Add the potatoes to the same olive-oil mixture and toss to coat.
Using a slotted spoon or tongs, arrange the potatoes along the inside edge of the dish or skillet on top of the green beans.
Place the chicken in the same bowl with the olive-oil mixture and coat thoroughly.
Place the chicken, skin-side up, in the dish or skillet.
Pour any of the remaining olive-oil mixture over the chicken.
Roast for 50 minutes.
Remove the chicken from the dish or skillet.
Place the beans and potatoes back in the oven for 10 minutes more or until potatoes are tender.
Place a chicken breast on each of 4 serving plates, divide the green beans and potatoes equally.

Peanut Butter Balls

Ingredients:

2 lbs Peanut Butter
2 Sticks Oleo (Butter)
3 C. Rice Krispies
1 1/2 lbs Powdered Sugar
Paraffin Wax
6 oz Chocolate Chips
8 oz Hershey Bar

Directions:

Mix 2 lbs Peanut Butter, 2 Sticks Oleo(Butter) with 3 Cups Rice Krispies.
Add 1 1/2 lbs Powdered Sugar - mix well.
Roll into small balls - approximately 1" in size and place on wax paper.
Melt 1 bar of paraffin wax and add 1 (6 oz.) package of Chocolate Chips and 1 (8 oz) Hershey Bar.
Make sure it's hot and dip balls into chocolate.
Put back on wax paper and let them set up.

TIPS:

~*~*~Best when refrigerated - can also be frozen. ~*~*~
~*~*~For an extra touch wrap in small pieces of aluminum foil. ~*~*~

My New Coupon Binder... err Book!

Remember my last post where I told you that my husband and I made a "binder" ourselves? I guess you can call it a binder or a book, but I call it AMAZING!

We took zip ties and placed them through my coupon pages and locked them together. With mine I needed 2 ties instead of one because my book is so big! As I said in my last post I cannot find a durable binder ANYWHERE!! I am so tired of shelling out money for binders that break, tear, etc. With this the pages will give out way before the zip ties! Not to mention the ties only cost $5.99!! If you have been buying binders like I have then you know what I am talking about.. I would love a HUGE 6" Heavy Duty Zipper Binder, but alas there isn't one!! In the mean time here's a picture of my NEW Coupon Book/Binder!!

Coupon Binders

I started couponing with envelopes in a shoe box, but I had every category imaginable. This didn't work for me once I filled up the envelopes. I knew I needed something bigger so I bought a Mead Five Star binder, but it was only 2" so it wasn't long before I needed a larger one. I then purchased a 4" Case-It binder from Amazon, but I was very upset when the fabric tore after only 2 weeks; the company did replace the binder, but I don't trust the brand is durable enough to coupon with anymore. I cannot coupon efficiently if I can't get to all of my coupons at once; so last night my husband and I bore a brand new idea for a coupon "binder/book!"

Don't Hoard the Papers, Please!

I normally only buy 6 Sunday papers, but today I bought 10 since Walgreens had some coupon inserts missing from some of theirs! I purchased 5 there after looking through the papers to ensure that I was getting the inserts (I scored 15 P&G's in ONE paper)!!

I left Walgreens and drove over to Food Lion where I picked up 5 additional papers where I knew they kept the papers behind the counter intact; although I did pay 70¢ MORE per paper I had the reassurance that all the inserts were in place!

Remember my trip to Walgreens? Well, while I was there trying to get my Sunday Paper there was a lady going through the newspapers in a cart off to the side who tipped me off to the missing inserts. Anyway, she was hoarding the papers and even got mad at her husband for offering one of the papers that she said was missing ads and told him not to give anymore away!

No wonder couponers have such a bad reputation! I am not a shelf clearer, newspaper hoarder, nor am I a rude customer while shopping! I try to be as pleasant as I can! Yes, I want a deal also, but I'm not going to be rude or disruptive to get it.

Okay, I have been working on a virtual coupon class for the last few hours over at www.weusecoupons.com! It is definitely worth the read! Did you know Walmart is MORE expensive than Kroger, Harris Teeter, Lowes Foods, Food Lion, etc? Why? They don't offer sales since they don't have to worry about customer loyalty. Other stores have Mega Events, Double Coupon days, Triple Coupons, etc to get customers to come shop their store(s)!

I have read numerous comments about the show Extreme Couponing and although I understand what people are trying to convey; it still doesn't make sense. Why wouldn't you want a stockpile in this economy? If a wage earner in your immediate household was to lose their job tomorrow could you make it? Most stockpilers try to have 3-6 months of food on hand in case something happens. One interesting thing I did learn tonight was there is a difference between hoarding and stockpiling - hoarding is when you have no intention of using nor discarding collected items, but stockpiling is saving items to be used in the future.

In the short months I have been meticulously trying to learn this I already have a small stockpile and have saved 50% what my grocery bill was before and I won't have to buy the items I have stocked until a) they go on sale again or b) my stock falls short since I'm not sure how much I need to stock yet in between sales! However, the extra money I am able to take and stock up on other items when I have coupons and the item(s) are on sale! That is the whole key to couponing, but it doesn't stop there! Just like clothing stores and big box stores, groceries have a "clearance" sale of their own; it's called rock bottom pricing! If you have coupons and wait, those items will most likely get even cheaper "right before" they expire to really score big on the savings at their "rock bottom prices!"

Did you know you can also eat healthy using coupons? You can find and print internet coupons for healthy alternatives online also; Whole Foods even has a printable coupon section on its site! You can also go straight to the manufacturer's websites and other sites like www.coupons.com!

It takes time to grasp the concept and learn a whole new way of grocery shopping!

Quick Tip for Busy Moms!

I woke up VERY SORE this morning, but with the weather change (63 degrees) it would be perfect to have a nice roast for dinner with potatoes and carrots. I normally cook my roast with Cream of Celery, salt, pepper, water and Lipton Onion Soup Mix, but today I don't have the soup mix, but I did find some Argo Corn Starch. :) I followed the directions (listed below), but it was too watery so I added 2 more Tablespoons to 1 Cup of cold water. I stirred it up and added it to my watered down gravy that I mentioned above. All I can is that made all the difference!! Once I added the extra cup of water I noticed it started to thicken up RIGHT AWAY!! Then I added a can of Cream of Celery which added the creamy texture I was looking for!! I seasoned to taste with salt, pepper, onion and garlic and added it to my roast and just enough water so it won't burn in the oven! Crossing my fingers that no one noticed the difference!!

~*~ Hope this helps other moms in a hurry and don't know what to do!~*~

Directions:

(from Argo Corn Starch label)

2 T Argo Corn Starch
2 T fat drippings
2 C Broth OR Water
1/4 C Cold Water
Salt & Pepper to taste

Stove Top:

Remove all but 2 T fat drippings from roasting pan.
Add 2 C broth OR water.
Cook over medium heat, stirring to loosed browned bits.
Mix corn starch and 1/4 C cold water; stir into pan. Stirring constantly, simmer over medium heat for 1 minute.
Season to taste.

**When this didn't work I looked at the label again and found this quick recipe and added it to the gravy mix above.**

To thicken hot liquids:

First mix Argo Corn Starch with a little cold water until smooth, gradually stir into hot liquid until blended. Stirring constantly bring to a boil; boil 1 minute.

This extra step made the gravy thicker immediately!!

Working Woman's Roast

~*~ Great to come home and dinner is done. ~*~

Ingredients:

1 rump roast (3 lb )
1/4 teaspoon garlic powder
1/4 teaspoon seasoned salt
1/8 teaspoon salt
1/8 teaspoon pepper
1 package Onion Soup Mix
2 tablespoons Worcestershire sauce
1 can cream of mushroom soup

Directions:

Put foil in a baking dish, going both ways.
Put roast on the foil.
Mix together garlic powder, seasoned salt, salt, pepper, onion soup mix, Worcestershire sauce and soup.
Pour over roast.
Seal foil and bake at 200° for 10 hours.
