   Take your freckled bananas, put them in a plastic
   container or ziploc bag and freeze them...yep just
   freeze them.  When you schedule allows you the
   time to bake, the bananas haven't gone bad.

Here's an old fashioned flavored cookie, hope you enjoy them.
They are tender and moist, and pack a lot of flavor in every bite.
But ya...just can't eat one.

Molasses Drop Cookies
1 3/4 cup almond flour
3 tablespoons potato starch
1/4 brown sugar
1/4 sugar
1 teaspoon ginger
1/2 teaspoon baking powder

3 tablespoons molasses
2 eggs
1 tablespoon canola oil

2/3 cup raisins

Pumpkin Tea Cakes and Donut Holes
 2 treats with one batter
recipe makes 6 pumpkin teacakes and 16 donut holes

1 1/2 cups almond flour
1/2 cup potato starch
2/3 cup sugar

My donut holes and quick and easy to make. If your hanging and around watching tv and ya just want something to eat, these just might fill that hunger. Tropical Zucchini Snack Cake

This ain't your grandmothers zucchini bread.  This recipe has the great texture and has the moister of a carrot cake,

My Gluten Free Spice Pound Cake, is an old fashion favorite, I tried to recreate.
Spice cake was one of my favorite flavors as a kid.  It usually was frosted, with like a cream cheese
frosting.  But I'm not looking to pack on the pounds with frosting.  But I did think you could make this pound cake and make a cream cheese spread and make little tea cakes, for showers or special occasions. Like

Gluten Free Banana Flax Muffins

This is what I had for breakfast this morning, I'm trying to add more flax to my diet.
I don't like fish much,  this might be the best way for me to get  my  Omega 3 fatty acid in, along
with a bunch of fiber...got to be honest.  I didn't eat the pear or the apple, but I did eat the orange.

Do you have a birthday party, bridal shower or special occasion coming up?
You know if you don't offer to bring something, chances are they won't have much you
can eat,  that is gluten free.
My gluten free lace cookies started 1 1/2 cups of raspberry pound cake mix,
but I think the lime would be another great choice, then sprinkle with confections sugar,
for a great summer cookie.

Plan ahead and cut down on holiday stress

Getting ready for a holiday, is a lot of work for anyone. Add a gluten free life style to the mix,
 and it  sure does make it even more difficult.

  My plan to cut down on stress, is to make as much of my holiday menu in advance, as possible.

Gluten Free Corn Muffins


I have made a double batch of these muffins for Thanksgiving.  Some will be for picking before the dinners starts, and some I have chopped into cubes to add to my  *stuffing.


I just love creating recipes that are gluten free...so we can replace the old ones...
but none of the tradition is lost.
