Homemade corn flakes

I really don't like buying food that I can make in my own kitchen. I like the feeling of security when I know what is in my breakfast...so I was thinking, why shouldn't i make my own cornflakes?

Really, why not.

I'm buying corn flour from an old man on our market place, and sometimes I use corn flour and sometimes yellow polenta. Process is same, only corn flakes with flour is more crunchy. Sometimes i mix flours, creativity is always welcome in the kitchen :)

But the basic recipe is same:

2 cups of polenta (or corn flour, or mix whatever flour you like)
1.5 cup of boiling water
salt

Mix all ingredients together in a bowl until completely moistened. Drop by teaspoonfuls onto baking sheet. Using your spatula, pat out the dough very thin. Bake at 200 degrees Celsius and spray with water 2-3 times. I don't know why, but it works :) Bake for about ten minutes or until golden (and when all water is evaporated). Allow to cool completely. They may not be crispy when removed from the oven. They will get crispier as they cool. Using your fingers, break into smaller pieces.

Domaći corn flakes

Ne volim baš jest hranu u kojoj ne znam što je. A nažalost, većinom je takva situacija sa svom kupovnom hranom. Pa sam tako odlučila isprobat napravit domaći corn flakes. Na tržnici kupujem iz provjerenog izvora brašno, ono kukuruzno, palentu, ječmeno itd. Probala sam kornflejks miksati od svakakvih kombinacija. No recept je uvijek isti, a sastojci se mogu kombinirati…

Dakle:

2 šalice palente

1.5 šalica vrele vode

Soli

Sve se smiksa u multipraktiku. Treba biti rjeđe. Rasporedimo smjesu na pleh na koji smo prethodno stavili papir za pečenje. Sa spatulom (strugalicom, lizalicom, kako se već zove) tanko rasporedimo smjesu i stavimo peći na 200 stupnjeva. Pečemo. Ja ne znam zašto, ali tijekom pečenja poprskam 2-3 puta smjesu s vodom, da se valjda bolje skuha :D Uglavnom kad voda ispari, kad se smjesa ispeče, postane zlaćana, onda vadimo van. Čim se malo prohladi zgnječimo u flejkse, tj pahuljice J

Saving money with soap

Save your money with this simple recipe. Attention folks, this recipe is NOT for eating :)

You have grater, you have 1 bar of soap (200 grams), water from a pipe (2 L), few drops of essential oils, food colour and 2 tbs of glycerin.
Well you have cheap liquid hand soap!

Only thing you need is ti grate bar of soap, add it to saucepan with water and 2 tablespoons of glycerin, place it on a stove and cook it until the soap is melted. Leave it to cool over night. Mix it with hand mixer adding essential oils and food colouring.

If the soap is harder than it should be you can take some beaters and blend it while adding just a little bit of water until the consistency is more like liquid soap.

Kako uštedjeti na tekućem sapunu

Izribajte 200 grama krutog sapuna iz trgovine,
2 litre vode s 2 žlice glicerina zagrijte na vatri i dodajte izribani sapun - kuhati dok se sapun ne otopi.
Ostaviti preko noći da se ohladi i stvrdne.

Sutradan dodati boje za hranu i esencijalnog ulja (nekoliko kapi) i izmiksat. Ako je pregusto, dodati još malo vode.

Uliti sapun u posude.

Koristiti.

2 kn krutog sapuna - 2 litre tekućeg :)

I candied ginger my way

I don't need to tell you about benefits of ginger. So why wouldn't we make something sweet and healthy?

Candied ginger is simple to make, and you really don't need a lots of money for these sweets. I wanted to make my candied ginger, so you can use only first 3 ingredients, or if you want to take my way, you can add the rest of ingredients.

You'll need:

250 g fresh ginger, peeled
400g sugar, plus additional sugar for coating the ginger slices, if desired
1/2 l water
1 tbs of rum
pinch of turmeric for lovely yellow colour ( crazy healthy, also)
1 tbs of cinnamon
1/2 lemon juice

First things first: Slice the ginger as thinly as possible.

Place a medium saucepan with all ingrediens over medium heat. Cook until about 30 minutes or until ginger is tender. Also, be careful, syrup will eventually get very sticky, or even evaporate, so if needed, add some more water...
If there is some syrup left - it's time for draining!

Instead of draining over the sink, place a large container underneath. This allows you to capture the ginger-infused syrup and refrigerate it for later use.

Place baking paper on kitchen board, cover it with sugar, than place cooked drained ginger and sprinkle on top it with sugar. Toss it. Leave it to dry. In winter time I put it on my radiator, and in summer on sun.

And don’t throw that syrup away. I put mine in a jar and keep it in the refrigerator. Don’t throw the sugar away either. It’s perfect for baking, ice cream, stirring into tea...

And don't forget, ginger is great help for stomach upset and effective for the treatment of cataracts, amenorrhea, heart disease, migraines, stroke, , angina, athlete's foot, colds, bursitis, chronic fatigue, tendinitis, flu, coughs, depression, dizziness, fever, erectile difficulties, infertility, kidney stones, Raynaud's disease, sciatica, and viral infections.

Kandirani đumbir

Ne trebam vam govoriti o tome kako je đumbir zdrav. Pa zašto ne bi smo spojili ugodno i korisno i napravili nešto slatko i zdravo?

Kandirano đumbir je jednostavna za napraviti i zaista ne treba ni puno novaca ni puno truda za ovu zdravu slasticu. Ipak, ja sam morala nadodati nešto svoga u recept, pa ukoliko želite onaj osnovni, držite se samo prve tri namirnice, ako želite mojim putem, idite do kraja recepta.

Potrebno vam je:

250 g svježeg đumbira, oguljenog
400g šećera, plus dodatni šećer za posip
1/2 l vode

1 žlica ruma
prstohvat kurkuma za lijepu žutu boju (također jedan zdravi začin)
1 žlica cimeta
sok od pola limuna

Prvo narežite đumbir, što tanje. Postavite posudu sa svim sastojcima na vatru i kuhajte dok đumbir ne omekani, odnosno dok voda ne ukuha u sirup.

Procijedite đumbir, ali sačuvajte sirup u staklenki!

Stavite na kuhinjsku plohu papir za pečenje, posut s kristal šećerom. Istresite đumbir, pri tom ga raspoređujući da ne bude na hrpama i slojevima. Pospite ga šećerom i odozgor i ako treba malo „umuljajte“. Ostavite da se osuši. U zimskom periodu ostavim papir za pečenje na radijatoru, a ljeti na sunce.

Sirup ostavite u staklenki i stavite u hladnjak te ga možete dodavati u čaj ili razrijediti s vodom kao sokić. Ne bacajte ni šećer koji je preostao od osušena kandirana đumbira, super dođe za kolače, posip na sladoled, u čaj ...

I ne zaboravite, đumbir je prva pomoć za bolesni želudac, učinkovit za liječenje amenoreja, bolesti srca, migrene, moždanog udara, angine, atletskog stopala, prehlade, kroničnog umora, upala tetive, gripe, kašalj, depresija , vrtoglavica, groznica, neplodnost, bubrežnih kamenaca, išijas, i virusne infekcije….

Bananas in Pyjamas

Quick and easy recipe with only three ingredients:

Banana
Chocolate (70 %)
chopped (roasted) hazelnuts

I also add a little rum, coconut oil and cinnamon.

Procedure?

Chop bananas. In microwave heat chocolate with cinnamon, few drops of rum and just a little coconut oil. When the chocolate is melted, coat bananas in it and roll it in chopped hazelnut. Place it in refrigerator for about 20 minutes.

Banane u pidžami

Potrebno:

Banane
čokolade (70%)
kokos maslaca (vrlo malo)
sjeckanih prženih lješnjaka

Isiječemo banane.
U mikrovalnoj otopimo čokoladu s malo kokosova maslaca ili može mlijeka, ja sam dodala mrvu ruma i cimeta.
Utopimo banane u čokoladu, pa ih umočimo u sjeckane lješnjake.

Stavimo u hladnjak na bar 20 min.

I'm in love with salty dishes, and this salt is very tasty and also has so much healthy benefits:

Creamy Almond butter

If you’ve got a food processor, you can make homemade almond butter in a few minutes. Healthy, with no preservatives, sugar, or salt. Of course, you can add some honey or maybe even some cinnamon or ginger (didn't try yet) but I bet it can be wrong.

My top way to eat it is on tart apple slice. But you can use it in ice cream (frozen banana, almond butter, some raisins...whatever you like) or for breakfast with oats, in cookies and probably you can make some almond Nutella (hazelnut nutella).

So what's the procedure?

The first step is roasting the almonds.

The second thing is that you need to let the almonds blend in the food processor for longer than you expect to get a creamy almond butter. The first step is sandy,

then the sand starts to clump and you may need to rub down the sides a few times.

Then the almond butter begins to get more creamy.

Done.

Maslac od badema

Zašto davati novce za skupe namaze od badema, kad možemo napraviti svoj: vrlo jednostavno - bez dodataka šećera, stabilizatora, kemija i inog. Potrebno nam je samo badema i multipraktik.

Maslac od badema možemo jesti samostalno ili mu možemo dodati meda (nakon miksanja, jer inače se ulijepi med), možemo dodati čokolade, cimeta, đumbira. Možemo ga namazati na jabuku (moj omiljeni) ili od njega napraviti sladoled, dodati ga u zobene pahuljice, praviti kolače s njim ili napraviti badem nutellu (nutella od lješnjaka)

Dakle:
Prvo trebamo bademe malo peći. Kada poprime lijepu boju (oko 10-20 min na 180) stavimo u multipraktik i miksamo. Dugo. Jako dugo. U početku će se činiti da nikad nećemo dobiti maslac, ali nakon 10 minuta kremasta smjesa je tu!
Jednostavno :)

Maslac spremimo u posudu i držimo u hladnjaku i do dva tjedna :)

Drunken Rolls

You don't have to be drunk to make this "kifli". But you will need some liquor in kitchen for this lovely sweet treat!

Rolls are very delicate, they are melting in your mouth, and they have specific aroma.

You will need:

500 g of flour
200 ml of beer
300 ml of sunflower oil
1 table spoon of baking soda (12 g)

100 ml water
200 g of sugar

minced walnuts (or coconut, or hazelnut)

In a medium bowl, cream together flour, beer, oil and baking powder until smooth. If mixture seems too loosy, you can add more flour, but not too much because the dough should be a little bit soft. Cover, and chill dough in refrigerator until firm, about 1 hour.

Divide dough in half. Roll the dough flat, not too thin (about 5 mm). Using a knife, cut the 11 x 8 mm squares, put the 1 tsp of jam (or other filling) on the top of square, fold one and half time and close the edges tightly.

Carefuli place it on baking sheets and put it in preheated oven (200 C degrees).

Bake it for about 15-20 minutes (They should be pale, but baked).
For sugar syrup, in a high-sided saucepan over medium-high heat, bring cold water and sugar to a boil.

Bring rolls from oven, and still hot, put rolls in hot sugar syrup, and roll it in minced or walnuts. Place it on plate.

And be careful, use spoon or something else, so you don't burn your fingers with rolls, or sugar syrup.

Raw pleasure

Easy, healthy, lucky.
I was feeling just like that. And they say you're what you're eating. So I thought it should be other way around, also :) So I made this dessert, all raw, and healthy, and yes it is an energy bomb, but it's healthy energy bomb, so try it =)

You will need only few ingredients, food processor and a little bit of time.

100 g pitted prunes
200 g dried figs
300 g almonds
50 g sesame seeds
50 g pitted dates
2 tbs of honey
rum
1 tea spoon powdered cocoa
pinch of cinnamon

First, in one bowl soak prunes, figs and dates in rum and water. In other bowl soak only almond in water. After 15-20 minutes, drain all of them and place almonds (you can peel it, if you like) in food processor. Grind almonds into a coarse meal, but be careful not to grind them too long or you'll end up with almond butter. Than add prunes, figs, dates, honey, cocoa, sesame seeds and cinnamon. Grind it again. Process until smooth. A ball should form. Take it out and make balls from mixture. Place it on plate and put it in refrigerator (optional).

Of course, you can make mixture of whatever dried fruits and nuts you want. Or you can add vanilla instead of cinnamon, or you can fill the balls with dried cherries. You can also dipp balls in chocolate or roll it in shredded coconu.

Gibanica, Gužvara

There is no adequate name in English language, but it's traditional dish in Croatia and Balkan. It can be made with cottage cheese, cottage cheese and spinach, it can be sweet and salty, but today we're making my favorite and most simple Gibanica with cottage cheese.

Actually name Gibanica is generate from verb gibati - to move around, and Gužvara means crumpled.

For recipe you will need:

1 pack of filo dough (500 g)
500 -700 g of cottage cheese
200 ml of sour cream (or yogurt for lighter variation)
200-300 ml of mineral water
2-3 eggs
salt
optional: feta cheese

In a large bowl, beat eggs until light and fluffy. Add salt, sour cream, mineral water and cheese (if you're yousing feta cheese also, put it in mixture) and combine.

Place one sheet of filo dough in a lightly buttered 33 x 23 x 5 cm pan.

Than take one by one sheet of filo pastry and dunk it into the cheese mixture.

Gently crumple it and place it into the prepared pan.

Repeat until all the filling and sheets are used (leaving only 3-4 spoons for the end, and one lid sheet for the top of gibanica).
Place the filo lid on top, and brush it with 3-4 spoons of cheese mixture.

Place it in a preheated oven (200°C) and bake it until golden, and cruncy on the top. If you're not sure is it baked, you can shakea a pan and if gibanica is separating from pan, than it's baked.
If you think it's still not baked, but the top of gibanica is already brown, you shouls cover it with aluminum foil.

Remove from oven and let cool on a wire rack about 15 minutes.
Serve it with yogurt or sour cream, or just enjoy it plain.

Gibanica is also great when chilled.

Bazlamača

Meni omiljeni kolač. Jednostavan, brz i fin. Iako su mnogi komentirali da znaju što je bazlamača, kad bi probali "našu" verziju, ostali su zapanjeni jer je to skroz nešto drugo neg su oni mislili. e pa sad :)

Sastojci

Za tijesto
1 l mlijeka
2 jaja
2 žlice šećera
350 g brašna
1 vanili šećer

Nadjev
360 g kiselog vrhnja
šećera
cimeta

Priprema

U posudi umiješamo mlijeko, brašno, jaje, šećer i vanili šećer - kao za palačinke. Izlijemo u veću, malo pobrašnjenu tepsiju (onu od pećnice) i stavimo peći. dok se peče, bazlamača “zatrudni”, tj. raste joj stomak (tako me mama uvijek zezala kad sam bila mala, sjedila bi ispred pećnice i virila unutra kroz staklo da vidim kako raste stomak :D ) i onda pukne.

Nemojte se ništa brinuti, to je normalno. Pečeno izvaditi i namazati obilno kiselim vrhnjem, posuti šećerom, pa cimetom, pa opet šećerom i onda vratiti u pećnicu par minuta da se svi ti sastojci stope.
Izvući van i pokušati se strpiti da se bar malo ohladi, ja uvijek ispečem nepce jer nemrem dočekat jest ju :D

Bazlamacha

Ingredients

For the dough
1 l milk
2 eggs
350 g flour
2 tablespoons sugar
1 vanilla sugar

Topping
360 g sour cream
sugar
cinnamon

Preparation

In a medium bowl mix the milk, flour, eggs, vanilla sugar and sugar - as for crepes. Sprinkle the pan (larg pan, from the oven, about 30x25 cm) with a little flour, pour mixture into the pan and place into the oven. Bazlamacha will rise while baking, don't worry, it's normal :D :) When it's baked and lightly brown, take out Bazlamacha and spread with sour cream, then sprinkle with sugar and cinnamon, then a little sugar again. Put it back in the oven for just 1-2 minutes till all ingredients are mixed.
Take out and enjoy, it's really delicious! :)

Greek Potato

Very special. Full of flavor. silky crunchy texture. Try it, won't regret it :)

Potato, peeled and cut in squares
salt
oregano
lemon juice
olive oil
water

In bakin tray put peeld and cut potato. Salt it. Add oregano, olive oil and lemon juice. Cover potato with water so that all potato is coverd. Put in an oven on 250 C. Bake for about 45 minutes, or when all water is evaporated and potato is browny.
Enjoy :)

Served it with cottage cheese and sour cream, sprinkled with paprika.

Lady fingers

Lady fingers for all beautiful ladies (and gentlemen) :)

You will need:
4 eggs, separated
90 g ( 2/3 cup)plain flour
pinch of salt
115 g (1/2 cup)granulated sugar
2.5 ml (1/2 tsp) vanilla essence
icing sugar for sprinkling

1. Preheat the oven to 150 C/ 300 F.
2. Sift the flour and salt together twice
3. With an electric mixer, beat the egg yolks with half of the sugar until thick enough to leave a ribbon trail when beaters are lifted.
4. In another bowl, beat the egg whites until stiff. Beat in the remaining sugar until glossy.
5. Sift the flour over the yolks and spoon a large dollop of egg whites over the flour. Carefully fold in with a large metal spoon, adding the vanilla essence. Gently fold in the remaining whites.

6. Spoon the mixture into a piping bag fitted with a large plain nozzle. Pipe lines on the baking sheets. sift over a layer of icing sugar.

7. Bake for about 15-20 minutes until crusty on the outside but soft in the centre. Cool slightly on the baking sheets before transferring to a wire rack.

Piškote

4 jaja
90 g brašna
Prstohvat soli
115 g šećera
2.5 ml esencije vanilije
Šećer u prahu za posipanje

1. Prethodno ugrijte pećnicu na 150 C
2. Prosijte brašno i sol
3. S mikserom posebno izmiksajte žumanjke s pola šećera dok nije dovoljno čvrsta smjesa da se može oblikovati
4. U drugoj posudi izmiksajte bjelanjke da se odvajaju od posude, te dodajte drugu polovicu šećera. Miksajte dok se šećer ne izradi
5. Umiješajte brašno u žumanjke i lagano, žlicu po žlicu dodavajte bjelanjke i esenciju vanilije, lagano miješajući.
6. Smjesom napunite špricu za kolače sa širokim nastavkom i na masnom papiru onlikujte piškote. Pospite kolačiće prije pečenja sa šećerom u prahu.
7. Pecite oko 15-20 minuta dok se na površini ne stvori krhka korica, ali moraju ostati meki iznutra. Ohladite.

homemade nutella

Nutella is queen of all chocolate spreads. The only thing better than nutella is chocolate - nut spread that you do in your own the kitchen, with healthy ingredients. Trust me, you won't be disappointed :)

First you will need:

100 g hazelnuts
150 ml of condensed milk
2 tablespoons of honey
2 tablespoons brown sugar (if you like a sweeter, increase sugar or honey)
100 g cooking chocolate (at least 50% cocoa)
1 tablespoon of cocoa
100 g milk chocolate (I used one with a filling of hazelnut praline)

Now, first spread the nuts on a baking sheet and toast the nuts in a 350ºF (180ºC) oven, stirring a few times, for 10 to 15 minutes, until the hazelnuts are browned.

Then warm the milk in a small saucepan with the honey and sugar just until it starts to boil. Remove from heat.

Next, set bowl over a pan of barely simmering water, or in a microwave oven, melt the chocolates together until smooth.

When hazelnuts are well-toasted, remove them from the oven and use a spatula to place them in a clean tea towel, then fold them inside the towel and rub them vigorously to remove any loose skins.In a food processor, grind the warm hazelnuts until they’re as fine as possible.

Add the melted chocolate and continue to process the mixture

Once the mixture is smooth, add the warm milk mixture and process until everything is well-combined.

Transfer the mixture into two jars and refrigerate until ready to use.

Domaća nutella

Sastojci

100 g lješnjaka

150 ml kondenziranog mlijeka

2 žlice meda

2 žlice smeđeg šećera (ako volite slađe, ili povećajte med))

100 g čokolade za kuhanje (nek bude bar 50 % kakaa)

1 žlica kakaa

100 g mliječne čokolade (ja uzela iz lidla onu s punjenjem od lješnjaka, 3 kn dođe :))

Priprema

1. Lješnjake stavimo u pećnicu, kako bi se ispekli (paziti da ne potamne) i kako bi lakše skinuli kožicu s njih.

2. Kad su pečeni, protrljamo rukama ili krpom ili puhnemo i na taj način skinemo kožicu. Stavimo ih u multipraktik. i miksamo dok se od njih ne napravi pasta. budite uporni!

3. Otopimo čokolade i kakao na pari, a u drugoj posudi pomiješamo mlijeko, med i šećer, te stavimo da malo zakuha na vatri.

4. dodamo prvo otopljenu čokoladu u multipraktik. Smiksamo.

5. zatim dodamo prohlađeno mlijeko. I miksamo dok ne postane homogena i relativno gusta smjesa.

6. sipamo u teglice i pokušamo ne pojesti sve od jednom :)

Voćna bola (Fruit and wine)

Bola is drink made from fruits, sugar and wine, served cold. Etymology of the name is derived from the clay pot in which the drink was originally made.
Interesting thing is that BOL in Croatian language means pain, but believe me, the only pain you can feel is when there is hot outside and you've drank the last drop of this nectar :)

This dessert is perfect for hot summer days, because you don't need to use stove or bake anything. For this fruit dessert you'll need:

Fruit (I used peaches)
Wine (white) (1 glass)
vanilla sugar (5 teaspoons)
sugar (didn't use it this time)
water (less than 1/2 glass)
cinnamon (1/2 teaspoon)

I've put in bracket amount of ingredient I have used, but you have to do your own way, because someone prefer more spicy, or more sweet dessert.

Next you need to remove the stones and discard any rotten fruit. Wash fruits and then finely chop it in a bowl. Add wine, water cinnamon and sugar in same bowl. Along the way try some of liquid so you can add water or wine or sugar, as you prefer. Stir with a spoon, and leave overnight in a refrigerator. Voila!

Voćna bola

Za ovaj desert koji je dušu dao za ljetne vrućine, treba vam:

voće (ja sam koristila vinogradske breskve)
Vino (bijelo) (1 čaša)
vanilija šećer (5 čajnih žlica)
šećer (ja ga nisam koristila)
voda (manje od 1/2 čaše)
cimet (1/2 čajne žlice)

Sve je to odokativno, oovisno o broju ljudi, o ljubavi prema slatkom, ili o tome volite li jače piće ili manje alkoholno. Očistite voće, operete, nasjeckate. U posebnu posudu pomiješate vino i vodu s šećerom i cimetom, dodate voće, ostavite u hladnjaku preko noći i to je sva mudrost :)

Quick and crispy :)

You will need:
1 wafer ( app 28×37cm)
140 g sugar
4 egg yolks
140 g ground walnuts
140 g raisins
4 egg whites
15 grams of sugar

some ground walnuts for sprinkling

Like always, I made some twists and addition. i added chocolate and rum, so if you want to do my way, you will need
rum
and powdered chocolate.

With hand mixer mix yolks and sugar until smooth. Add walnuts, powdered chocolate, raisins soaked in rum and spread cream on wafer. Put wafer into a pan and place it in preheated oven. BE CAREFUL, you need to bake it only for few minutes, about 10 or some..Check occasionally, you will see when it's baked :)
While first part of cookie is in oven, mix egg whites with sugar. When sugar is dissolved, and the first part of cookie baked, spread egg whites mixture on baked wafer, sprinkle with walnuts and place it in the oven. Before that, switch off the oven, so that egg whites are slowly baked while oven is cooling down. When the egg whites are crispy and yellowish, your cookie is finished.

Cut it in whatever form you want, and don't hesitate to make more than one wafer, because you can get easily addicted to this cookie :)

Tomato - basil soup

For warm spring/summer days nothing as refreshing as a tomato soup. When it is hot, no one likes to stand by the stove a long time, so that's why I'm posting this quick recipe!

You only need:
about 400 g tomato juice
1 small onion
basil
1 clove of garlic
salt / pepper
1 chopped carrot
pinch of sugar

if necessary: semolina

In saucepan put the tomatoes, onion, and chopped carrots. Let it cook, when the soup thickens, add a little water. If it gets too thin - add a teaspoon of semolina. Towards the end remove vegetables, add salt/pepper/basil, sugar and dumplings.
To make dumplings in a little water add flour and form a small beads.
Boiled seasoned with sour cream.

I didn't have fresh basil, because my little veggie is still growin' :)

Honey potato

No, there is no honey...and no it's not really a recipe :) But it's perfect, simple baked young potato...sweet and tasty, melt in your mouth

When I was on marketplace I couldn't resist to buy this small, young potato...You don't need to peel it or anything.

The best way is to wash them, maybe a little bit peel off with brush...
and than cook it for 10 minutes. After that drain the potato, salt it, sprinkle with olive oil and parsley ant put it in pan and in an oven.

After potato is baked, wrap it in aluminium foil and leave for 5 minutes.

Blue Bell ( or Bell Pepper stuffed with potato and blue cheese aka gorgonzola)

The way I making my lunch.
Enter the kitchen. Open the fridge. Looking. Deciding what will expire first. Than trying to thing of lunch that incorporate all that ingredients. Usually works very well :)

So I had potato, blue cheese, and peppers. Hmmm...Something (as usual) fast, simple, tasty and healthy.

You will need:
1 bell pepper
150 g potato
30 g blue cheese, aka gorgonzola
50 g onions
olive oil (optional)
fresh chives
salt

What would you do first?

Cut the tops off of the pepper, remove seeds and membrane. Lightly precook pepper in boiling salted water.

Do the same with potato. peel it, cut it in cubes and precook it in water.
After cleaning the onion of the dry skin and the root and stem tips, cut the onion in half, top to bottom. Then slice the onion, flat side down, to make thin strips of onion. Make sure to separate the layers. Place onions on preheated non stick pan and add water. Reduce the heat to low-medium low.

When water is vaporized and onion is cooked, remove pan from heat.. Mix cooked potato in blender. Add salt, pepper and little milk. Mix. Than add onions and chopped blue cheese.

When peppers are precooked, stuff the them with the potato mixture and place in the casserole.

Bake until the peppers are very tender.

tiquizza or barley in zucchini - mozzarella sauce

Once again I've got idea for recipe but combining two different recipes. It's easy and healthy :)

You will need

50 g barley
1 medium zucchini
20 g mozzarella
1 teaspoon of olive oil
1 chopped garlic clove
100 ml of milk
2 tablespoon of sour cream
salt, pepper, parsley

First you peel off zucchini, then grate it and add salt. leave to rest. Rinse out the barley with water and cook it in water. Put a sauce pan with an olive oil on the heat, add chopped garlic and stir until garlic is lightly brown. Then add milk and drained zucchini. Cook it for few minutes.
Drain cooked barley and add it to zucchini sauce.

Stir and cook for few more minutes, until milk is absorbed. In slightly cooled dish add sour cream and mozzarella.

Spolenta (spinach + polenta )

One more twist..when you love spinach, but you can't always eat the same ol' dish...so it is Sunday, you are working and thinking what would you prepare today for lunch..something warm, and healthy and fast...

OH YES!

Why wouldn't I combine spinach and instead of flour, add polenta. It IS healthier and it's totally different..
And after 10 minutes of preparing the dish, I finally can say: it is yummy! :)

You will need:

200 ml milk
120 g chopped spinach (frozen or fresh)
2 teaspoons polenta
1/2 teaspoon olive oil
1 clove of garlic
salt, pepper

Put a sauce pan with an olive oil on the heat, add chopped garlic and stir until garlic is lightly brown.Then add milk.

Immediately add spinach and stir for about 10 minutes. Add polenta, salt and pepper. Stir. Serve! With yogurt. Eaaaat :)

And I served it with tomato salad. Simple. Tomato, balsamico, salt and chopped garlic.

Fast and Furious Onions

This is fast and delicious.

You will need:
300 g yellow onions (it's better when you have spring onion, but yellow would be fine too)
1 egg
1/2 teaspoon olive oil

Chop onion s with knife and salt it. Leave it for 10 minutes. Put olive oil in pan and set it on medium heat. Add onions and stir frequently for a short time and add water.

After 10 minutes, when all water is boiled down and the onion is soft, add previously beaten egg.. Taaraa: Your meal is finished! :)
