Tom Zap Pork Hocks ต้มแซบขาหมู

Ingredients;
1 kg or 1 pork hocks
3 Fresh chilly
3-4 fried dried chilly (Just an option,if you don't have omit it)
3 Red Onions
2 sliced lemon glasses
9 cups water
4-5 pickled galanga
4-5 kaffir lime leaf
3 tomatoes
1 coriander
3-4 thai coriander (Just an option,if you don't have omit it)
1 1/2 tbs fish sauce
1 tsp salt
1/2 tbs palm sugar or sugar (doesn't matter)
1 tbs tamarine sauce
2 tbs lime

Directions;
1. Roasted red onion, lemon grass sliced and pickled galanga, until the aroma smell come out or red onion have clear colour on the skin.

2. Boiled water until hot, add pork hocks and 1 tsp of salt. Cooked it for 30 mins on medium high heat.

3. After the pork hocks become soft/well cook, add all the roasted herb and tomatoes in to the pot. Cooked it for about 2 mins.

4.Slow the heat to low heat, Then add fish sauce, palm sugar, tamarine sauce fresh chopped chilly kaffir lime leaf and lime.
5.Stop heat, then add chopped coriander, thai coriander and fried died chilly on top.

Young Coconut Chiffon

Firstly, I need to give a good credit to Khun Deer

who is created this great recipe.

This Young Coconut Chiffon is very nice texture,

not too much sweet and fluffy.

And I guarantee you will love this recipe.

Young Coconut Chiffon

Ingredients;

For the flour ingredients

70 g. Cake flour

1/2 tsp Baking Powder

For the eggs yolk ingredients

3 egg yolks

25 g. Caster sugar

1/2 tsp salt

60 g. Coconut water

50 g. Vegetable oils

For the eggs white ingredients

3 egg white

50 g caster sugar

1/4 tsp cream of tartar

Topping

Young coconut slice 10-20 g.

Direction;

1. Preheat oven to 170 C'

2. Sift cake flour with baking powder.

3. In the other bowl, whist the egg yolks with caster sugar, salt, coconut water and vegetable oils. Whist until combine well (Whist quick and fast, then stop. Do not whist too long)

4. Using hand mixer or stand mixer to whist the egg white. Whist the egg white and cream of tartar, with medium speed until soft foam ,then slowly add caster sugar and change to high speed. Whist until peak foam.

5.Add 1/3 of the beaten egg white into the flour. (In this process using hand whisk or spatula).

6.Add 2/3 of the beaten egg white and mix gently and quick.

7.Add the rest of the beaten egg white until the mixture is mix well.

8.Pour the cake into chiffon cake pan,then put young coconut slice on top of the cake.

Bake it for 30 minutes or until the toothpick come out clean.

INGREDIENTS ส่วนประกอบ

200g Dark Chocolate ช็อคโกแลค 75%

200g Unsalted butter เนยจืด

300g Brown Sugar น้ำตาลทรายแดง

1cup Plain flour แป้งสาลี

1/4cup Cocoa powder ผงโกโก้

1/4tsp Salt เกลือ

3 eggs ไข่

2tbs Coffee powder กาแฟผงทั่วไป

150g Alomond flak อัลม่อนสไลด์

แม่คิมใช้เนย ผงโกโก้ และช็อคโคแลคยี่ห้อนี้ค่ะ รสชาติเข้มข้นดีค่ะ

DIRECTIONS วิธีทำ

STEP 1

นำช็อคโคแลค, น้ำตาล, เนย, มาละลายด้วยไฟอ่อน หรือละลายในไมโครเวฟก็ได้ Place butter, sugar and dark chocolate in a saucepan over very low heat and stir until mixture is just smooth. (Or you and melted everything in microwave)

STEP 2

นำแป้งสาลี ผงโกโก้ เกลือ มาร่อนรวมกัน ใช้ตะแกรงเล็กๆร่อน ร่อนเสร็จแล้วให้ผสมให้เข้ากันดี

Sifted plain flour, cocoa powder and salt and stir until mixture.

STEP 3

ตีไข่+เนสกาแฟ ให้เข้ากัน Beat eggs and coffee powder until combined.

STEP 4

นำส่วนผสมที่ 1 กับส่วนผสมที่ 3 มาผสมให้เข้ากันดี

Add melted chocolate (1) and egg mixed (3), stir until combined

STEP 5

นำส่วนผสมแป้งที่ 2 กับส่วนผสมที่ 4 ผสมให้เข้ากันดี

(ขั้นตอนนี้ไม่ต้องใช้เครื่องตีก็ได้ค่ะ ใช้ทัพพีคนเอาก็ได้)

Add mixed flour and stir until combined.

STEP 6

ผสมอัลม่อนสไลด์สัก 100 กรัม ที่เหลือจะเก็บไว้โรยหน้าค่ะ

Add 100g almond flak. (the rest we will put on top of the brownies before bake later)

STEP 7

เตรียมถาดสี่เหลี่ยม รองด้วยกระดาษไข เสร็จแล้วเทลงในถาด เกลี่ยหน้าให้เรียบ แล้วโรยด้วยอัลม่อนสไลด์ที่เหลือ

อบด้วยเตา 180 องศา นาน 30 นาที หรือจนกว่าบราวน์นี่จะสุก

Pour mixture into a greased 20cm (8inch) square cake tin.

(Don't forget to put baking paper in square cake tin before pour mixture)

Bake in a preheated 180C (350F) oven for 30 minutes or until brownies are set.

Allow brownies to cool and cut them into squares.

Make 12-15 squares, depend on how you cut.

Raisin Scones

Ingredients; Makes 10-12 scones

350g Self raising flour (50% more fiber)
30g Caster sugar
250ml milk
50g salted butter
15-20g raisin

Directions;
Step 1
Combine the milk and butter together, put in the microwave about 15sec to warm the milk. (Don't wave to hot, just warm the milk or the butter become softened)

Step 2
Combine flour and sugar in a mixing bowl, combined well.

Step 3
Add warm milk and mixed flour,then add raisin and mix until it is well combined and a dough is formed (for approximately 2-3 minutes)

Step 4
Turn the dough out onto a well floured bench.

Step 5
Roll the dough and cut out scones shapes.
Allow the dough to rest for 10 minutes.

Step 6
Bake for approximately 12-15 minutes on 200C or until golden brown.

Sweet Heart Cupcake

Sweet Heart Cupcake

Ingredients;

3/4 cups or 200 g butter softened

1 cups caster sugar

3 eggs

1/2 tbsp vanilla paste or regular vanilla extract

1/2 tsp baking soda

2 tsp Baking powder

1/4 tsp salt (omit if using salted butter)

2 1/2 cups Self-Raising flour

1 1/3 cups milk

Directions;

STEP 1 Cream sugar and butter together in a large bowl.
Beat eggs in one at a time.

STEP 2 Add vanilla, soda, baking powder and salt and beat together.

STEP 3 Add flour and milk alternately a little at a time until well combined. Batter should be nice and fluffy.

STEP 4 Remove about a 1/3 of the batter (about 1 1/2 cups) and place in small bowl Add red food colour to the batter to get a nice shade of pink. Cover plain batter and set aside (refrigerate if desired)

STEP 5 Put pink batter in an 8x8" baking pan and bake at 350F for about 20 minutes until a toothpick inserted in the center comes out clean. Remove from pan and allow to cool completely.

STEP 6 Cut out heart shapes from the pink cooled cake with a cookie cutter.

STEP 7 Place 2 tbsp of the plain batter in the bottom of a cupcake liner in a cupcake pan. Place one pink cake heart pointy side down in the center of the batter making sure to push it all the way down to the bottom. Cover the top of the heart with about 1 tbsp of additional plain batter.

You also can add some raspberry, If you like.

STEP 8 Bake the cupcakes at 350 F for about 20 minutes until a

tooth pick inserted in the plain batter comes out clean.

The hearts inside won't burn or overcook.

Make sure you note which way the hearts are facing as cutting them

the wrong way will result in a pink blob instead of a heart.

Ingredients;

Fried Chicken Wing

1/2kg Chicken Wing

1/3cup Tempura flour

1/2cup Plain flour

1/2tsp Salt

1tsp Pepper

2tbs Cold water/water with iced

4 cup Vegetable oil

Sweet & Sour Sauce

1+1/2 tbs Tamarrine sauce

4tbs Tomato Sauce

1+1/2 tbs** Korean Hot pepper paste

1tsp Salt
2 tbs Sugar

2tsp Sesame seed

2tsp Corn flour

2tbs Water

Korean Hot Pepper paste,
You can buy from any Korean Grocery Shop

Directions;
Step 1
Flavor your chicken wings with salt and pepper. Marinated chicken wing for 15 minutes.

Step 2
Combine tempura flour, plain flour and cold water.
Cover chicken wing with mixed flour.

Step 3
Heat oil in deep pan-fryer to 175C.
Deep fried chicken wings until turn to golden brown on the outside,
and the chicken wings are no pink at the bone. Drain on a paper towel-lined plate.

Step 4; To make a sweet and sour sauce
Combine tamarine sauce, tomatoes sauce, salt, sugar, hot Korean paste, water and corn flour in a mixing bowl, stir until mix well.

Add the mixture sauce into a wok with medium heat, bring it to boil. Add sesame seed, stir well.

Step 5
Add fried chicken wings, do a few quick stir. Put sesame on top and serve it with rice. Yummm ^_^

Ingredients ;

2 eggs
2 sliced bread
10 g shredded mozzarella cheese

Directions ;

Step 1
Preheat the oven to 200 C, and lightly spray cooking oil to the muffin tin.

Step 2
Trim the bread skin and flatten slightly into the muffin tin to form a cup.

Step 3
Crack an egg into a bread cup, add shredded mozzarella cheese on top of the egg.

Step 4
Bake it for 10-15 mins. Serve with sliced of avocado.

เนื้อเค็กชุ่มๆเหมือนเค้าทำขายกันเลยหล่ะ

Ingredients;ส่วนผสม

For dry ingredients;ส่วนผสมแห้ง

180g self-raising flour แป้งสาลีเอนกประสงค์
1/2 tsp baking powder ผงฟู
3/4 baking soda เบ็กกิ้งโซดา
180g caster sugar น้ำตาลทราย
1/2 tsp salt เกลือ

For wet ingredients;ส่วนผสมเปียก

120g light olive oil ใช้น้ำมันพืชหรือน้ำมันมะกอกก็ได้ค่ะ
50g melted butter เนยจืดละลาย ถ้าใช้เนยเค็กไม่ต้องใส่เกลือน่ะค่ะ
2 eggs ไข่
100g milk นมสดทั่วไปหรือนมพาสเจอร์ไรท์ทั่วไป
3 bananas (recommended use old banana) กล้วยหอม (แนะนำใช้กล้วยหอมงอมๆที่เปลือกดำหน่อยจะอร่อยมาก)
20g almond flak (If you like) อัลม่อนสไลด์ ใส่ไม่ใส่ก็ได้ค่ะ

Step 1
วอร์มเตา 200 องศา (ไม่เปิดพัดลม)ใช้เนยละลายทารอบๆ ถาดคัพเค็กให้ทั่ว หรือจัดเรียงกระดาษห่อคัพเค็กใส่ในถาดคัพเค็กรอไว้
Preheat oven to 200C (upper&lower heat, No fan).
Brush a round cake pan with melted butter to grease. Line the base and side of the pan with non-stick baking paper

Step 2;Prepare dry ingredient (การเตรียมส่วนผสมแห้ง)

ร่อนแป้งกับผงฟู และเบ็กกิ้งโซดา (ควรร่อนแป้ง 2 ครั้ง)
จากนั้นผสมเกลือและน้ำตาลรวมกับแป้งที่ร่อนแล้ว คนให้เข้ากัน
Sift the flour with baking powder and baking soda (recommended sift 2 times). Add salt and caster sugar until combined.

Step 3;Prepare wet ingredients (การเตรียมส่วนผสมเปียก)

บดกล้วยให้ละเอียด (ใช้กล้วยเก่าๆงอมๆจะดีมากค่ะ)
ผสมกล้วยบดกับเนยที่ละลายแล้ว เติมน้ำมันพืช ไข่และนม คนผสมให้เข้ากัน จากนั้นค่อยๆผสมแป้งลงไป (ส่วนผสมแห้ง2) คนให้เข้ากันดี

Mash banana on a plate, add your mashed banana mixture with melted butter, light-olive oil, eggs, and milk, and mix until combined. Alternately slowly add your mixed flour with your wet ingredients, and mix until just combined.

Step 4

ตักใส่กระดาษห่อคัพเค็กสัก 2/3 ของขนาดคัพเค็ก, คัพเค็กจะฟูสวยพอดีเวลาอบแล้วค่ะ, โรยหน้าด้วยอัลม่อนสไลด์, อบในเตานาน 30 นาที หรือจนกว่าเค็กจะสุก

(เช็คว่าเค็กสุกหรือยัง ให้ใช้ไม้จิ้มฟัน จิ่มลงไปตรงกลางเค็กแล้วดึง

ออกมา ถ้าไม่มีเศษเค็กเหลวๆติดออกมาแสดงว่าเค็กสุกแล้วค่ะ)

Bake 190-200C, 30 minutes until cooked when tested with a skewer. Cool 5 minutes in pan; serve warm.

(tips; if you bake your banana cake in the cupcake,

should put the banana cake 2/3 of the cupcake cup)

Ingredients ;

Chicken Wing 4 wings

Dried Chilly 3-4 chillies

Lemon grass,thinly sliced 3 lemon grass

Kaffir Lime Leave 6-7 leaves

Garlic,choped 1 table spoon

Red chilly,choped 3-4 chillies

Red Onion 2 table spoon or 1/2 onion

Fish sauce 3 table spoons

Sugar 2 tea spoon

Oyster sauce 2 table spoons

Chinese cooking wine 1 tea spoon

Oil 1 table spoon

How to cook ;

1.Prepared all ingredients.

Choped Chiily

Choped Red Onion

Choped Garlic

Thinly Sliced Lemon Grass

And cut chicken wings.

2.Heat 1 table spoon oil in a frying pan on medium high heat.

Add choped chilly,choped garlic and choped red onion

; stiring until it soft or for 2 minutes.

3.Add choped chicken wings, thinly sliced lemon grass, 1/2 cup of water

and all the sauces (fish sauce,oyster sause,sugar and cooking wine)

Cook for 10-15 minutes or until all the sauce is dry.

4.After the chicken is cooked well ,add dried chiily and Kaffir Lime Leave.

Serve with steamed rice...Enjoy ^_^

Stir Fried Bitter Cucumber with Eggs

This is one of the healthy dish and so easy to cooked,you will need just a few minutes to prepare and cooked.

Ingredients ;

Bitter Cucumber                           1 pcs or 250 g
Salt                                                1 ts
Egg                                                 2 eggs
Vegetable oil                                   1 tbs
Garlic,chopped                                2 ts
Oyster sauce                                    1 tbs
Soy sauce                                        1  ts
Sugar                                              1/2 ts

How to cook ;

1.Thinly sliced bitter cucumber.

Add 1 tea spoon of salt with water to soak bitter cucumber for 5 mins.

Rinse the water out

2.Heat 1 tablespoon of the oil in wok on high heat. Stir chopped garlic until gold colour and add the eggs mixture for 2 minutes or until lightly cooked.

3.Add the bitter cucumber sliced, sugar, oyster sauce and soy sauce.

Stiring for 3-4 minutes or until the cucumber cooked well.

Serve with rice.

Black glutinous rice,also known as black sticky rice,

has long dark grains and a nutty taste reminiscent of wild rice. This black sticky rice with taro and young coconut has a distinct character and flavour all of its own,

as well as an intriguing appearance.

I used this black glutinous rice brand,the price about $3.50.

or you can buy any brand from Thailand,they all the same.

This is the young coconut meat in syrup,also from chinese grocery.

about $1.80 & product from Thailand.

I actually like this coconut milk brand to make dessert dish.

It more creamy and doesn't have any difference smell.

(compare from some brand the smell so badly)

Ingredients

Black glutinous rice   1 cup/175 g
Brown sugar     1/2 cup
Water      6 cups
Coconut milk   1 cup
salt     1 ts
Taro,steamed,chopped 120 g
Young coconut     20 g

How to cook

1.Put the black glutinous rice in bowl
and rinse with the water 1 time.

2.Bring to boil with 6 cup of water,reduce the heat to low and simmer,stirring occasionally,for 25-30 mins,or until the rice has absorbed most of the liquid.

( the heat it on medium heat and after past 20 mins low the heat to lower heat.

3. During boiling the black glutinous rice,

cut the taro to small size and steam it for 15-20 mins.

4.After the black glutinous is cooked,add 1/2 cup of coconut milk,

1/2 cup of brown sugar and 120 g of steamed tato;mix well & combine

and turn off the heat.

To make the topping.

Coconut Cream.

add 1 ts of salt with 1/2 cup of coconut cream.

put in the microwave fro 30 sec;mix well & combine

Young coconut

Cut the young coconut to the small size.

Serve with

topped coconut cream & young coconut meat

Pad Thai Prawns (ผัดไทยกุ้งสด)

PAD THAI is one of the national dishes of Thailand.

This is Kim 's signature dishe
and you also can cook like Kim.

Let Start !

Two difference type of tamarind sauce.

Padthai sauce

Tamarind sauce 6 tbs

( or dried tamarind 15 g with 1 cup of hot water )

Palm sugar 5 tbs

( or 10 palm sugar melted )

Fish sauce 4 tbs

Padthai Ingredients

Prawns 7-8 pcs

Rice Noodles 250 g

Egg 1 egg

Beansprouts 100 g

Peanut,roasted,coarsely 4 tbs

Dried shrimp 2 tbs

Garlic chives 10 g

Vegetable oil 2 tbs

To make Padthai Sauce

Add all ingredients on medium high heat.

Cook for 10 mins / combine & melted

To make Padthai

1. Place the rice noodles in a large bowl,
add water to soake with water for 15-20 mins,
then drain thoroughly and set aside.

2. Peel the prawns,leaving the tails intact.

Cut along the back of each prawn and

remove the dark vein.

3.Heat 2 tbs of oil in a wok,

stir-fry dried shrimp for 1 mins,

add the egg and prawns.

Stir and cook for 1-2 mins.

4.Add the noodles and 6-7 tbs of padthai sauce,

stir-fry for about 5 mins.

(during you stir-fry,if the noodles too dry,

add 2 tbs of water or more sauce)

5.Add the beansprouts,the garlic chives and peanut.

Mix well and cook until the noodles are heated through.

(you can also add more sauce,if you like)

Serve topped with remaining

beansprouts,lime wedges,

chilly powder,garlic chives and peanut.

How to make beansprouts keep fresh & white

add water and 1 tbs of vinegar to soake for 5-10 mins,

then drain thoroughly and set aside.

Simple Fried Rice Egg (ข้าวผัดไข่)

Ingredients;

Steam rice 2 cup

Egg 3 eggs

Pork,sliced 150 g

Tomato,choped 1/2 tomato

Mix vegetable 100 g

Sweet soy sauce 1 ts

Soy sauce 1/2 ts

Sugar 1/2 ts

Oyster sauce 1/2 ts

Maggy Soy sauce 1/2 ts

Oil (for fried rice) 1 +1/2 tbs

Oil (for fried egg) 2 tbs

How to cook

1.Heat the oil in medium pan fry.

Add 1+1/2 tbs of oil and 1 egg.

2.Add pork sliced. Stiring until pork cooked well.

3.Add steam rice 2 cup

Sweet soy sauce 1 ts

Soy sauce 1/2 ts

Sugar 1/2 ts

Oyster sauce 1/2 ts

and Maggy Soy sauce 1/2 ts

Stiring until mix well.

4.Add choped tomato and mixes vegetable.Mix well.

Now fried rice is done.

To make egg base.

Add the oil to a medium pan fry.

Beat the egg and pouring into a pan.

Try to moving the egg all over a pan.

cook for 2-3 mins or until it cook.

Serve with fried rice ontop with lime sliced.

Banana Walnut Cake (เค็กกล้วยหอมใส่ถัววอลล์นัท)

Ingredients;
Banana                                2 pcs
Lime juice                          1 ts
Walnut,crushed                    1/2 cup
Butter,melted                      1/3 cup
Milk                                     1/3 cup
Brawn sugar                          1/2 cup
Cake flour                             1 cup
Salt                                       1/4 ts
Baking powder                       1/2 ts
Baking soda                            1/4 ts

How to cook;

1.Process 3 bananas in the food processor or mash banana

and add 1 teaspoon of lime juice;mix well and leave for 10 mins.

2. Use an electric beater to beat melted butter,2 eggs,brown sugar
,milk and salt at a time,beating constantly until mixture.

3. Combine the cake flour, baking soda and baking powder

until combined.

4.Add the crushed walnut and smashed banana

; mix well.

5.Used the round non-stick baking pan.

Transfer to the baking pan and add some crushed walnut on top of the cake.

Bake for 25-30 minutes on 170 C or until the cake it cooked well.

Tips ; How to check the banana cake is cooked well,

Use the tooth pick put into the middle,

If come out clear,no liquid or dry. It mean the cake is cooked well.

Stir Fried Soft Crab with Black Pepper (ปูผัดพริกไทยดำ)

For deep fried soft crab

(Buy the frozen soft crab from any seafood shop)
Tempura flour                           3 tbs
Plain flour                                 2 tbs
Vegetable oil                             3 cup

For stir fried
Shallot,finely choped                 1 shallot
White onion,finely choped         1/2 onion
Capsicum,red and green             1/2 red/green
Black pepper,cracked                 1 tbs
Garlic,choped                            1 tbs
Oil                                             1 tbs
Oyster sauce                               2 tbs
Soy sauce                                   1/2 tbs
Sugar                                          1 ts
Corn flour                                    1 ts

How to cook

To deep fried soft crab

1. Defrosting the soft crab by water or microwave.

Clean the soft crab and cut in haft.

2.Mixed with 3 tbs of tempura flour and 2 tbs of plain flour.

Deep fried in hot oil for 10 mins or until turn to golden brown.

Rinse the oil.

To stir fried soft crab

1.Preheat a medium pan fry on high heat.

Add 1 tbs of oil , 1 tbs of Black pepper,cracked

and 1 tbs of garlic,choped.

Stiring until the garlic turn to golden brawn or 2-3 mins.

2.Add Onion and capsicum.

3.Add 1 ts of corn flour,1 ts of sugar

,1/2 tbs of soy sauce,2 tbs of oyster sauce.

(You need to taste your oyster sauce first,

if you used difference brand with me.

Because the other brand,may too salty.

If there too salty just add 1 tbs.)

Stiring for 2 mins or until it soft.

Add deep fried soft crab and shallot at last.

;combine well.

And serve with steam rice.

How to cook;

1.Warm up the oven.

Rolling the breads each side.

Trimed the side of the bread.

2.Spread the butter on the breads and the cupcake pan.

3.Rolled the bread into the cupcake pan.

Add the eggs into the breads.

4.Cut the cheese and put ontop of each breads.

Baked it for 20 mins on 280 F.

Serve with mix salad and ontop with tomato sauce.

Garlic Chives Cake or in Thai langues,

we called Kanum-Kui-Chaiy.

Ingredients;

For Garlic Cake

Garlic Chives 300 g. or 1 bunch

Rice flour 1 cup + 1/2 cup

Tapioca Starch 3 tbs.

(buy from chinese grocery shop)

Vegetable Oil 5 tbs.

(used 2 tbs for stir fried garlic chives,used 3 tbs for fried garlic chives cake)

Baking Soda 1/2 ts.

Salt 1/4 ts

Choped Garlic 2 ts.

Water 1 cup + 1/4 cup

For The Sauce

Sweet soy sauce 4 tbs

Hot water 4 tbs

Sugar 3 tbs

Vinegar 3 tbs

Salt 1 ts

Sliced Fresh Chilly 1 chilly

How to cook ;

To make the sauce

1. Mixed all the ingredient together;combine well and add thiny sliced of chilly at last.

Sweet soy sauce 4 tbs

Hot water 4 tbs

Sugar 3 tbs

Vinegar 3 tbs

Salt 1 ts

Sliced Fresh Chilly 1 chilly

** If you dont eat spicy dont put chilly

the sauce for garlic chives cake.

To make the garlic chives cake

1.Clean the garlic chives by water.

Cut in small size about 1 cm.

Kim 's tip

Drain the water from the garlic chives for 3 mins.

2. Heat the a medium pan in high heat.

Add 2 tbs of vegetable oil and add 2 ts of choped garlic.

Stiring until the garlic turn to golden brown colour and transfer to a bowl.

3.Add garlic chives, 1/2 ts baking soda and 1/4 salt.

Stiring for 3 mins or until the garlic chives turn soft.

3.Mixed

Rice flour 1 cup + 1/2 cup

Tapioca Starch 3 tbs.

And Water 1 cup + 1/4 cup ; combine well.

4.Add stri fried garlic chives into the mixed flour.

Transfer to a big round bowl and steam for 20 mins

5. Let it cold completely.

Cut in a square size.

Serve with sweet chilly sauce

or you can do "grilled garlic chives cake" too.

How to grilled garlic chives cake

Add 3 tbs of oil to a medium pan.

Put the garlic chives cake and grilled each size for 2-3 mins.

Now ready to eatttt YUM !!

This fascinating name for this dish comes from a story about a prospective bridegroom who very much wanted to impress his future MOTHER-IN-LAW and devised a new recipe based on the only dish he knew how to MAKE-BOILED EDDS.

Ingredients;
Hard boiled Egg                        4 eggs
Oil,for deep frying                     3-4 cups
Fried Red onion                          3    tbs
(you can buy a ready Fried Red onion from chinese grocery about $2.10)
Fresh Coriander leaves

For the sauce
Palm sugar                               5 tbs
(you also can use normal sugar instant but used palm it better)
Fish sauce                               2 tbs
Tamarind juice                        3+1/2 tbs
(you can buy a ready tamarind juice from chinese grocery about $1.80)

How to cook;

1.Heat the oil in deep frying to 190 C/350 F.

Deep fry the eggs in hot oil for 3-5 mins,until golden brown.

(cook 's tip ; do not deep frying too long because the egg skin will become hard to eat)

2.Make the sauce.Put the palm sugar,fish sauce and tamarind juice in a pan.

Bring to boil,stiring until the palm sugar dissolves,lower the heat and simmer for 2-3 mins.

Taste and add more sugar,fish sauce or tamarind juice,if needed.

3.Cut haft of each eggs and add fried red onion on top of each.

Drizzle with the sauce and spring over. on top wih coriander and serve.

Ingredients;

1.Pork Spare Ribs 400 g

2.Long Green Been 8 pieces

3.Red chilly 2 pieces

4.kaffir lime leaves 10 leaves

5.Vegetable Oil 1+1/2 tbs

6.Water 8 tbs

7.Red Curry paste 3 tbs

8.Sugar 1+1/2 ts

9.Fish sauce 1 ts

10.Garlic clove 2 pieces

How to cook;

1. Prepared all ingredients.

- Cut Pork Spare Ribs in small pieces

- Garlic cloves,crushed

-Kaffir lime leaves,thinly sliced

-Red Chilly,thinly sliced

-Long Geen Bean,trimmed and cut

2.Heat oil in large frying pan on high.

Cook garlic for 2-3 mins or until turn to golden brown.

Fish Sauce                             2 tbs
Kaffir lime leaves                   5 leaves

Pickled Galanga                       4 pcs
Chilly,sliced                            2 chilly

you can buy a pickled galanga from any asian grocery about $1.80

cut 1/2 kg of chicken wing in a small piece

How to cook;

1.Heat 6 cups of water in a medium pot on high heat,

Add

Tumeric,thinly sliced 5-6 pcs

Lemon grass 1 lemon grass or 25 g.

Red onion,pressed 2 onion or 10 g

Garlic clove,pressed 2 garlic

Pickled Galanga 4 pcs

for 1-2 mins

2.Add

Chicken Wing 1/2 kg

Tammarine,dried 15 g

Salt 1 ts

Sugar 2 ts

Fish Sauce 2 tbs

Tomato,cut in 4 pieces 1 tomato

; and cover with the lid for 5 mins or until chicken is cooked

3.Taste a soup is sour enough,take out a tamarine,otherwise it will too sour.

Add chilly and Kaffir lime leaves.

Serve with steamed rice.

Three Cup Chicken is the famous recipe of Taiwanese,

And please do not give me wrong,

If I cooked from my own version

but trust me the taste turn out,So great!!!

Why I say this is on my version because I actually add sweet soy sauce.

In original they not add this sauce in the recipe.

But after I cooked this recipe many time and add sweet soy sauce..

they turn out so great !

Ingredients;

Chicken wing ( you can other part of chicken ) 1/2 kg

Corn flour 1 tbs

Salt 1/2 ts

Vegetable oil or olive oil 1 tbs

Sesame oil 2 tbs

Soy sauce 3 tbs

Chinese Cooking Wine 3 tbs

Sugar 1/2 ts

Sweet soy sauce 3 tbs

Choped White onions 1 onions

Basil leaves 1 cup

Dried Chilly 4-5 chilly

Choped garlic 1 tbs

How to cook;

1.Cut the chicken wing in half,

marinated with 1 tbs of corn flour and 1/2 ts of salt;for 15 mins.

2.Preheat a medium pot on high heat,add 1 tbs of olive oil/vegetable oil

( You can use 1 tbs of saseme oil instant but I dont like too strong smell of saseme

,so i use olive oil instant.)

and add 1 tbs of choped garlic.

Stiring until garlice half cooked or 2 mins and add chicken wing.

3. After chicken wing are half cook (you can see blood),

Add

Sesame oil 2 tbs

Soy sauce 3 tbs

Chinese Cooking Wine 3 tbs

Sugar 1/2 ts

Sweet soy sauce 3 tbs

Dried chilly 4-5 chilly

Stiring until mix well and cover with a pot lid for 10-15 mins,

Every 5 mins have to open a lid and stiring,otherwise chicken will get burn.

4.Add choped onions and cooked for 3 mins.

At last add basil leave;turn off heat and ready to serve !!

Steam Fish with Spicy Lime Sauce (ปลานิลนึ่งมะนาว)

Steam Fish with Spicy Lime Sauce

(ปลานิลนึ่งมะนาว)

Ingredients;

Nile Tilapia Fish 500 g

Lime Juice 3 tbs

Fish Sauce 2 tbs

Sugar 1 tbs

Garlic 5-7

Chilly 4-6 chilly

Coriander 1-2

Salt 1/2 ts

Pepper 1/2 ts

How to cook;

1.Medium cut and marinated fish with 1/2 ts of salt and pepper,

marinated for 15 mins

**If you buy them from the fish market,

dont forget to ask them to clean stomach and scale

Marinated with salt and pepper

Wraped and marinated for 15 mins

2.Steam marinated fish for 20-30 mins or until it cooked,in high heat

3.Thinly sliced garlic and chiily.

Add 2 tbs of fish sauce,2 tbs of lime juice and 1 tbs of sugar;mixed well.

Add thinly sliced of garlic and chilly.

Pour on top of steam fish.

Mixed the sauce until combine

Add garlice and chilly

Sliced lime

Cooked steam fish

Pour the spicy lime sauce on top of a fish

Topping with sliced of lime and coriander...

Now is ready to serve ^_^

Ingredients;

Oreo cookies 16 pcs

Butter,melted 3 tbs or 25 g

Cream cheese 1+1/2 pack or 375 g

Sour Cream 1/2 cup

Selt Raising flour 2 tbs

Lime juice 1 tbs

Egg 2 eggs

Sugar 1/4 cup

Kiwifruit 3 fruits

Blueberries 100 g

Strawberries 3-4 fruits

How to cook;

1.Take cream out from each oreo.

2.Preheat the oven to 250 c.

Melted 25 g of butter by using microwave about 30 sec.

3.Crust oreo cookies or blended.

Mix oreo crust and melted butter;press onto bottom of pan or a cup cake foil

And baked for 10 mins.

4. Beat cream cheese,sugar,flour,lime juice with mixer on high speed until mix well.

Add sour cream ; mix well.

Add egg one at a time mixing on low speed after each just until mix well.

5.Pour over baked crust.

Bake 40 mins or until center is almost set.

**You can check by using toothpick,put in the middle of the cake

if nothing come out it mean cooked.

Cool completely.

Refrigerate 4 hours.

6. Making blueberries topping.

Preheat a sauce pan on medium hight heat,

Add 100 g of blueberries with 3 tbs of sugar;keep stiring until sugar melted.

Cool completely.

Top with blueberries and oreo... Enjoy !

Or you can top with kiwifruit,strawberries and bluberries
