Finalmente l’ho provata! Mi sono tolta la curiosità! Ingredienti per uno stampo:&lt;br /&gt;
&lt;b&gt;Base:&lt;/b&gt;&lt;br /&gt;
1 tazza scarsa di datteri snocciolati (e lasciati in ammollo in acqua almeno due orette)&lt;br /&gt;
1 tazza abbondante di mandorle&lt;br /&gt;
Tritare bene con un robot, la consistenza va in base al vostro gusto. A me piace sentire i pezzi di mandorla quindi trito grossolanamente poi magari rimescolo con le mani o con un cucchiaio. &amp;nbsp;Stendere sullo stampo.&lt;br /&gt;
&lt;b&gt;Parte bianca:&lt;/b&gt;&lt;br /&gt;
Due tazze scarse di anacardi, in ammollo in acqua tiepida (appena da coprirli) per almeno 2/3 ore, non sgocciolare&lt;br /&gt;
Tre cucchiai -o anche di più se piace- di zenzero candito in ammollo (insieme agli anacardi)&lt;br /&gt;
Malto di riso q b&lt;br /&gt;
Frullare tutto insieme con l’acqua e aggiungere il malto poco per volta secondo il vostro gusto (assaggiate). &amp;nbsp;Continuate a frullare fino a quando non otterrete una crema liscia e cremosa. &amp;nbsp;Per addensare questa crema bisogna usare la polvere di &lt;b&gt;agar agar&lt;/b&gt;, un’alga dal potere addensante. &amp;nbsp;Io ne ho sciolto un cucchiaino in 3/4 di bicchiere, fatto bollire x 30 secondi e poi versato sulla crema di anacardi e mescolato. &amp;nbsp;Risulterà liquida ma non temete, una volta raffreddata farà il suo dovere! :-)&lt;br /&gt;
Versare nello stampo sopra il primo strato mmmmmm.....&lt;br /&gt;
&lt;b&gt;Ultimo strato a piacere:&amp;nbsp;&lt;/b&gt;&lt;br /&gt;
Frutta semplice: lamponi, mirtilli, more, fragole oppure marmellate o composte di frutta oppure crema di nocciola e cioccolato fondente. Ricordate che una volta tolto il cerchio removibile questo strato tenderà a scendere quindi, a meno che non sia ciò che volete (con la cioccolata che cola potrebbe essere di effetto) dovete aggiungere sempre il cucchiaino scarso di &lt;b&gt;agar agar &lt;/b&gt;con mezzo bicchiere d’acqua e mescolare bene, io ho fatto cosí. &amp;nbsp;Nel video si vede bene :-)&lt;br /&gt;
Questo strato andrebbe piuttosto dolce e deciso, proprio perchè il resto della torta (primi due strati) è molto delicato....&lt;br /&gt;

La salsina che vedete verde è la salsina che ho proposto come antipasto alla cena vegan di ieri sera. &amp;nbsp;È una salsa semplicissima a base di Silene, Eruca Sativa, Tarassaco, capperi e mais. (L’altra salsina è invece alle noci e merita un post a parte). &amp;nbsp;Occorre munirsi di un buon manuale, fare una bella passeggiata in campagna ed iniziare ad osservare le piante. &amp;nbsp;Pian piano, non aspettatevi di uscire una volta e tornare con la borsa piena, non tutte le erbe sono ovunque. &amp;nbsp;Bisogna tenere gli occhi ben aperti, ma una volta imparate non si scordano più. E se riescono i miei figli, può riuscirci chiunque! :-)&lt;br /&gt;

3 manciate di erbe di campo commestibili (se non ne avete potete rimediare acquistando rucola o valeriana ma perderete la poesia)&lt;br /&gt;
2 cucchiai di capperi&lt;br /&gt;
4 cucchiai di mais&lt;br /&gt;
Olio evo quanto basta&lt;br /&gt;
3 cucchiai di aceto&lt;br /&gt;
1 cucchiaio di malto di riso&lt;br /&gt;
Shoyu&lt;br /&gt;
Frullate i primi 4 ingredienti ed aggiungete l’olio sufficiente x far girare le lame senza difficoltà.&lt;br /&gt;
Aggiungete man mano l’aceto, il malto e lo shoyu poco per volta secondo i vostri gusti.&lt;br /&gt;
Spalmate su pane o usatelo come dip per intingere carote ed altre verdure croccanti come un pinzimonio! Slurp! :-)&lt;br /&gt;

La rucola selvatica a differenza di quella compera ha un gusto molto deciso, quasi piccante, ricchissima di vitamina C risulta benefica per il fegato e combatte la presenza di gas intestinale (non si sa mai...) E poi è buona :-)&lt;/div&gt;

Della rucola staccate esclusivamente le foglioline e i fiori gialli se ci sono, tritate e condite.  Io di solito faccio un condimento di olio-acetodimele-malto-shoyu-semi a piacere, nella foto semi di chia che ho rovesciato per sbaglio.. ooops :-) e ravanelli e zucchine grattugiate.&lt;br /&gt;

Se omettete il lievito avrete un castagnaccio, altrettanto buono. Rimane umido e compatto e non lieviterá (in questo caso mettete più acqua). &amp;nbsp;Entrambi buonissimi!&lt;/p&gt;

&lt;p&gt;&lt;br&gt;
Ingredienti:&lt;br&gt;&lt;br&gt;
300 gr. di ceci&lt;br&gt;&lt;br&gt;
olio di oliva&lt;br&gt;&lt;br&gt;
sale&lt;br&gt;&lt;br&gt;
100 gr, di sesamo tostato&lt;br&gt;&lt;br&gt;
(o 4 cucchiai di tahini)&lt;br&gt;&lt;br&gt;
mezzo spicchio di aglio crudo (facoltativo)&lt;br&gt;&lt;br&gt;
una rapa rossa cotta&lt;/p&gt;
&lt;p&gt;Ammollo in acqua dei ceci la sera prima. Cottura in pentola a pressione per due ore a fuoco minimo con acqua due dita sopra i ceci, sale. &amp;nbsp;Raffreddare. &amp;nbsp;Se c&#39;è ancora molta acqua toglierla con un mestolo e conservarla in un recipiente (potremmo doverne aggiungere mentre frulliamo).&lt;/p&gt;&lt;p&gt;Se a ricetta ultimata ve ne avanza non buttatelo, è ottimo come brodo per zuppe, anche solo con un’aggiunta di miso. &amp;nbsp;Si chiama aquafaba e quando fa la gelatina è ottimo al posto delle uova nei dolci!&lt;br&gt;&lt;br&gt;
Frullare i ceci in modo che diventino un patè e non una zuppa. Questo passaggio è molto importante, per questo ho scritto di togliere l&#39;acqua, perché possiate aggiungerne se ce n&#39;è bisogno ma senza esagerare. Dobbiamo raggiungere la consistenza di un purè fermo non di una zuppa liquida :-)&lt;br&gt;&lt;br&gt;
Se fatica a frullare aggiungiamo prima un po&#39; di olio di oliva e poi man mano il sesamo macinato e il pezzettino di aglio (se ci piace). &amp;nbsp;Volendo si può frullare l&#39;hummus frullando con solo un goccio del brodo senza usare olio e aggiungendo poi l&#39;olio solo alla fine mescolandolo con un cucchiaio in modo che rimanga in superficie. Buono anche così. &amp;nbsp;Provate. Assaggiate e aggiustate di sale se necessario.&lt;br&gt;&lt;br&gt;

190 gr. di tahini&lt;br /&gt;
100 gr. di succo di agave o altro dolcificante liquido&lt;br /&gt;
110 gr. zucchero di canna&lt;br /&gt;
125 gr. di farina bianca (volendo anche semi integrale)&lt;br /&gt;
3 cucchiai di semi di sesamo&lt;br /&gt;
mezza bustina di lievito per dolci&lt;br /&gt;
un po&#39; di vaniglia&lt;br /&gt;
un pizzico di sale&lt;br /&gt;
&lt;br /&gt;
Accendete il forno a 170° e preparate la teglia infarinata o con carta forno.&lt;br /&gt;
In una grande ciotola mescolate Tahini, succo di agave, lo zucchero e la vaniglia.&lt;br /&gt;
Aggiungete farina, semi di sesamo, lievito e il sale. &amp;nbsp;Dovreste essere in grado di lavorare l&#39;impasto con le mani e fare delle paline che schiaccerete con le mani. Se troppo secco aggiungete un goccio di latte o acqua.&lt;br /&gt;
Trasferite nella teglia e cuocete per 12 minuti.&lt;br /&gt;

Allo stesso modo si possono utilizzare le maniche.  Così si ottengono dei gomitoli a costo 0 e Km 0.  Poi lavoro il gomitolo a punto basso con un uncinetto da 10 o meno a seconda dello spessore del &quot;filo&quot; partendo dalla catenella e proseguo sempre a spirale, quando voglio curvare e iniziare ad alzarmi per formare il cestino diminuisco i punti e poi torno a fare due passaggi per buco (o aumento, che dir si voglia). E&#39; un lavoro a tempo pieno che richiede impegno totale, spostamenti durante i weekend per le fiere e lavorare occasionalmente di sera.  Ho due bambini piccoli e ho cercato di tenere in piedi tutto ma ora sono stanca!  Non pensate che non mi dispiaccia, ho avuto parecchi ripensamenti anche perchè le vendite sono sempre aumentate specialmente nell&#39;ultimo periodo.  Mollare proprio adesso è da stupidi, lo so, dopo tutto l&#39;impegno che ci ho messo... Ma ormai ho deciso.  Anche se le motivazioni etiche che mi hanno spinto ad iniziare una attività in sintonia con i miei pensieri sono ancora molto forti, non ce la faccio più!&lt;br /&gt;Sogno di lavorare all&#39;aria aperta con altre persone, un lavoro semplice che mi impegni più fisicamente che mentalmente.
