<p>I was sent the <a href="http://www.gleegum.com/make-your-own-chocolate-kit.htm" target="_self">Make Your Own Chocolate Kit</a> to try out and review here on the blog.  It's a fun little kit that makes a good amount of chocolate and comes with everything you need, including written instructions that include some interesting information about chocolate.</p>
<p>Basically you heat up some cocoa butter, add your cocoa and sugar and wait until it comes down to the correct temperature (tempering!) before adding the seed chocolate.  They even include a little stick on thermometer to attach to the bowl, so you don't even need to worry about that.</p>

<p>We added some goodies to the bottom of each of the provided candy cups, poured in the chocolate and thew it in the fridge for a few minutes to set up.</p>
<p>This was a fun project which I did with my 12 year old.  We both had fun, learned a little something and enjoyed the chocolate.  I'd recommend this to anyone with kids who are looking to explore a little food science.</p><xhtml:img xmlns:xhtml="http://www.w3.org/1999/xhtml" src="http://feeds.feedburner.com/~r/boogaj/Rxdz/~4/9DvHeesJMpk" height="1" width="1" /></div></content>

Today I'm talking about <a href="http://www.fearlesschocolate.com/" target="_blank">Fearless Chocolate</a>'s 70% Green Tea Mint with Japanese matcha green tea and crisp peppermint.  </p>
<p>Before I talk about taste, I want to discuss ingredients. The ingredients here are simple and wholesome -- organic cacao, organic matcha green tea, organic peppermint, and organic rapadura (unrefined whole cane sugar).  The bar is certified organic and direct trade.  This makes me especially happy because it is also gluten free.  </p>

<p>Next I want to talk a little about packaging. The box that envelopes the bar is nicely designed and easy to reseal, with wrap around flaps and an in terlockin g tab. This is very important because this isn't a bar you'll sit down and eat in one go -- at least I didn't. The bar is wrapped in an attractive foil/plastic wrapper for freshness. </p>
<p>The taste is clean and herbal with a freshness from the mint.  The bitterness of the chocolate is well balanced with sweetness and the whole thing puts me in mind of a breath mint (in a good way).  I would eat a single square each day after lunch, so the bar lasted a long time.  This is definitely a bar I would eat again, and one I would keep on hand for a tiny post meal treat.  </p>

<p>First up is the Salted Chowilla Almond bar.  I'm a huge fan of the Vosges Barcelona bar, which is similar in flavor, so this was the first Wild Ophelia bar I grabbed.  Perhaps a little bit less intense than its Vosges counterpart, the Wild Ophelia bar was, nonetheless, delicious.  </p>

<p>I was recently sent some Milk Chocolate Almond toffee from<a href="http://www.enstrom.com/" target="_blank"> Enstrom's</a> for review here at the Chocolate Blog.  Enstrom's has been around for about 50 years, and they make things the old fashioned way.  The ingredients here are just what you would expect -- Almonds, butter, sugar, milk chocolate, and salt.</p>

<p>The toffee arrives in two large slabs and you can break it apart as desired, which is kind of fun.  Plus it means the box is completely filled with toffee -- a full 16 oz in the box I received.</p>
<p>The toffee is generously dotted with almonds, and as you can see from the photo, the milk chocolate is completely covered in finely ground almonds too.  The toffee has a wonderful shatter and satisfying crunch.  The flavor is nutty, salty, sweet and ridiculously addictive.</p>

Chocolate Co.</a> recently sent me a couple of their artisan candy bars to sample, and I'm glad they did!  Since starting the Chocolate Blog and sampling all these gourmet chocolates, I find that your run of the mill candy bar just doesn't cut it anymore.  I've been craving a fancy candy bar that recalls my favorites from my youth, but kicks up the quality a couple notches.  That is exactly what these bars do.</p>
<p><a href="http://www.boogaj.com/.a/6a00d83451ce9f69e20162fd40835d970d-pi" style="display: inline;"><img alt="IMG_2595" class="asset  asset-image at-xid-6a00d83451ce9f69e20162fd40835d970d" src="http://www.boogaj.com/.a/6a00d83451ce9f69e20162fd40835d970d-320wi" style="display: block; margin-left: auto; margin-right: auto;" title="IMG_2595" /></a><br />Peanut Butter Trance -- Caramel, Peanut Butter Nougat and Dark Chocolate -- This bar was amazing!  The peanut butter nougat was fresh and nutty with a solid, almost flaky, consistency.  The caramel was chewy and satisfying and it's sweetness was tempered by the rich dark chocolate covering.  There was also a nice salty note that really elevated the whole thing.  As soon as I finished this bar, I wanted another.</p>
<p><a href="http://www.boogaj.com/.a/6a00d83451ce9f69e20162fd40a3a3970d-pi" style="display: inline;"><img alt="IMG_2597" class="asset  asset-image at-xid-6a00d83451ce9f69e20162fd40a3a3970d" src="http://www.boogaj.com/.a/6a00d83451ce9f69e20162fd40a3a3970d-320wi" style="display: block; margin-left: auto; margin-right: auto;" title="IMG_2597" /></a><br />Troop 652 -- Sea Salt Caramel, Marshmallowy Coconut Nougat and Dark Chocolate -- Another winner.  Here again the ingredients tasted fresh and decadent.  The coconut layer had a chewy, marshmallow feel and the caramel had a great salt hit.  A wonderful candy bar for the coconut lover.</p>
<p>H.S. <p><a href="http://www.boogaj.com/.a/6a00d83451ce9f69e201539318603d970b-pi" style="display: inline;"><img alt="IMG_2540" class="asset  asset-image at-xid-6a00d83451ce9f69e201539318603d970b" src="http://www.boogaj.com/.a/6a00d83451ce9f69e201539318603d970b-320wi" style="display: block; margin-left: auto; margin-right: auto;" title="IMG_2540" /></a><br />First of all, these truffles are pretty -- from the beautifully tempered chocolate and decorations on the top of each truffle, to the box tied up with a purple bow. The box contains four different truffles:</p>
<p>Eggnog and Jamaican Rum -- This was my absolute favorite, sweet with a spicy warmth.  The white chocolate pairs beautifully with the nutmeg and ginger, and hint of rum in the background.  The filling is smooth and creamy and the Dominican Republic white chocolate melts beautifully.</p>
<p>Peppermint Candy Cane -- A wonderful holiday flavor uniting dark, chocolate with peppermint.  Slightly floral with a deep chocolate flavor.</p>
<p>Marrone Pistacchio -- Italian chestnuts &amp; Sicilian pistachios with deep milk chocolate.  Rich, smooth and nutty.  The flavors of fresh cream and chocolate shine through.</p>
<p>Holiday Plum Pudding -- A fruity confection which combines plum, Armagnac, marzipan and dark chocolate.  The dark chocolate here enhances the fruit and tempers it's sweetness.  A hint of booze elevates this truffle without being overwhelming.</p>

<p><a href="http://www.boogaj.com/.a/6a00d83451ce9f69e2015436736dc3970c-pi" style="display: inline;"><img alt="IMG_2022" class="asset  asset-image at-xid-6a00d83451ce9f69e2015436736dc3970c" src="http://www.boogaj.com/.a/6a00d83451ce9f69e2015436736dc3970c-320wi" style="display: block; margin-left: auto; margin-right: auto;" title="IMG_2022" /></a><br />The Toffee Interlude bar is dark chocolate with toffee bits and caramelized almonds.  As you can see, the bar is well tempered and nicely molded with the Ghirardelli logo on each square.  The thin, square sections include a generous ammount of small bits of almond and toffee.  The chocolate is bold, with a lot of fruit and a bit of tabacco at the finish.  The melt is smooth and satisfying.  I like the inclusion of the toffee and almonds which give it some nice texture and a hint of burnt sugar.</p>
<p>Through the end of the year, Ghirardelli has a promotion where they will donate to the National Breast Cancer Foundation when you enter a code found in specially marked boxes. </p>

<p>The bar here is rather small at 3 oz. but the price was right ($2 if I remember correctly) and small is good in this case because the caramel filling is very fluid -- completely leaking out when the first square is broken off.  It's a bar best eaten in one sitting.</p>
<p>The chocolate is a good quality -- creamy and well tempered without any strong flavors.  The caramel tastes of cream and lightly caramelized sugar with a salty edge.  A little less flavorful than I usually like -- more dulce de leche than burnt sugar.  A sprinkling of sea salt on the back of the bar gives a hint of crunch and enhances the flavor of the chocolate.</p>

<p>Romanicos Chocolate recently sent me some of their bars and confections to sample, which I was happy to do since they are very allergen aware and clearly label which of their products are gluten free.  They also included a personal note reiterating that the products they sent me were all gluten free, which I found very reassuring.</p>
<p>Everything I have tasted so far has been fresh, tasty and high quality.  I'll focus on the three large bars here since those are what I've enjoyed the most.</p>

<p>Salted Almonds -- This bar was a clear winner, as it was the first that I completely finished.  (This is rare for me, as I get quite a bit of chocolate and often don't finish an entire bar.)  The bar is composed of Venezuelan Chocolate (65% Cacao), Honey and Roasted Almonds.  I found the chocolate here to be smooth, flavorful and slightly sweet.  The bar was well tempered and each section was perfectly bite sized.  The almonds were fresh and crunchy and well complemented by the sweetness from the honey.</p>
<p>Salted Pistachio and Nutmeg -- A great combination of salty, sweet and spicy.  The nutmeg gave a warming bite to the bar, but was subtle enough to let the chocolate and pistachio flavors shine through. </p>
<p>Walnuts &amp; Honey --An interesting bar in which the honey appears to be swirled into the chocolate, but left in pockets here and there.  I loved the combination of nuts and honey here and felt that the overall creaminess was offset nicely by the crunchy nuts.</p>
