Bake on the bottom rack at 425 and then move to the top rack after 35 minutes and turn on the broiler until it is crispy. We'll be sharing it with my family &amp;amp; our best friends/family tomorrow. Didn't ice it yet but can report that a taste test of the frosting revealed it to be quite heavenly, not too overly sweet &amp;amp; a delicate strawberry flavor. In last nights batch I substituted lemon rind for essence in both the cheesecake and lemon cream for a more natural and tangy flavour, and left out the almond essence all together. I also left the crumbled biscuits a bit chunkier than my first attempt and must say that it was a big improvement! The slight crunchiness just added to the texture. &lt;br&gt;One question I have - my cheesecakes are really sunken in the middle. Of course this makes no difference on the taste side of things, but it does visually.
