I’ve been doing composting for quite some time, almost four year to be exactly. I must confess that I’m amazed with the amount of items I have been throwing inside for all that time and how the composting just makes it go away.

I have a big, fixed composting bin which I manually mix. If it was today I would try to get a spin bin compost tumbler which is much easier to handle.

With a spin bin you are able to mix the compost by just turning around the tumbler on its own support. This is great to keep the compost aerated, the items mixed and once it is not standing on the floor it keeps predators away.

For Christmas I did a Portuguese traditional recipe called “Rabanadas“.

Although it is fried bread and we all know that fried is not the best, this recipe is a must on the holidays. Here is the recipe:

• Slices of bread
• Eggs
• Milk
• Sugar
• Cinnamon

Pass the slices of bread through the milk, than the eggs and fry in a sauce pan full of vegetal oil. After turning gold, pass the bread through a mixture of sugar and cinnamon. They are ready!

Kids enjoy this recipe a lot.

Walnut Cranberry Coffee Cake

Ingredients

1 cup butter, softened
1 cup sugar
2 eggs
1 cup (8 ounces) sour cream
1 teaspoon Spice Islands® pure vanilla extract
2 cups all-purpose flour
1-1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup chopped walnuts
1/2 cup whole-berry cranberry sauce
1 teaspoon grated orange peel
1 teaspoon ground cinnamon
1 tablespoon confectioners’ sugar

Directions

• In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Stir in sour cream and vanilla. Combine the flour, baking powder, baking soda and salt. Gradually add to the creamed mixture.
• Pour half of the batter into a greased and floured 10-in. fluted tube pan. In a small bowl, combine the walnuts, cranberry sauce, orange peel and cinnamon; spoon over batter. Top with remaining batter. Bake at 350° for 40-45 minutes or until a toothpick inserted near the center comes out clean.
• Cool for 15 minutes before removing from pan to a wire rack to cool completely. Sprinkle with confectioners’ sugar. Yield: 12 servings.
