Banana Cream Pie is my favorite no-bake dessert.  It’s perfect anytime but I seem to make it most during the summer.  It’s a simple dessert to make yet it tastes like you’ve spent hours over the stove.  My recipe lets you cheat a bit in the preparation because I use a pre-made store bought pie crust and Cool-Whip topping but I do draw the line on instant pudding.  I find the taste and consistancy of cooked pudding far superior to instant and so I do take the extra time for that.

Caprese Salad

Caprese Panini Recipe

It’s easy to take your favorite Caprese salad to the next level and turn it into a meal by following my Caprese  panini recipe.

Here’s what you’ll need:

Directions:

Place the cheese, tomato slices and basil on one slice of bread.  Drizzle with olive oil and vinegar.   Season with salt and pepper. Top it with the other slice of  bread.

Brush with Olive Oil.  (Just a touch, don’t saturate the bread.) 

Cook in a panini maker, grill, or skillet  until the bread is golden and the cheese is melted, approximately 3 minutes per side.

Fresh Ideas for Tomato Salad

Fresh tomatoes can’t be beat and I’ve found a couple of  fresh (as in new) tomato salad recipes that I think you might love!

The first one is a lovely Avocado and Tomato Salad which uses only four ingredients to create a taste sensation that your friends and family will adore.

The other is a delicious Tomato and Onion Salad that uses a Japanese style salad dressing to really punch up the flavor.

Either of these tomato recipes would go wonderful as a side dish for any type of meat or serve them on their own for a light meal.

Both of these salads were created by a “chef” who claims not to be a great cook but after you try these easy to make delicious tomato salads I think you’ll disagree.

Personal Recipe Binders

Until I got my own personalized recipe binder I had a huge stack of handwritten recipes.   It was always difficult to find the recipe that I was looking for and some of my recipes were so dog-eared that I was afraid I was going to lose them forever.

Creating a workable personal recipe binder takes a bit of work but if you do it the way I did, one recipe at a time, you’ll be more than happy with the results.

To start, you’ll need a binder.  You can use any binder to organize your recipes but I think it’s nicer to use a special personalized one.  I found some great, really affordable, recipe binders that you can customize with your family name, photos, or anything else that you desire and created a web page to share them with you.  You can find them by visiting Personalized Family Recipe Binders or click on the photos of the binders at the top, or bottom, of this page to search for your own favorites.

After you’ve chosen a binder, you’ll need to start copying your recipes.  I used my computer and did one or two a day so it wasn’t so overwhelming and eventually I had all of my handwritten recipes typed and printed out.

After you’ve done the hard work, you might want to laminate your new recipe pages, to protect them.  I haven’t gotten that far yet but I do plan to do that.  You’ll find complete directions for creating a family recipes cookbook, including ideas for the best ways to organize your recipes by visiting: Make a Family Recipes Cookbook.

I now keep the irreplaceable handwritten versions of my family recipes safely tucked away in a box and can always easily find the special recipe that I’m looking for in my personal recipe binder.
