      <description><![CDATA[This is the second part of a two-part podcast on creating the buttercream for Warren's Favorite Cake: New German Chocolate. In this second part, Warren talks about looking for "lava bubbles" when making pastry cream and curds. They appear when the mixture of eggs, sugar, and starch (corn starch or flour) thickens when heated on the stove. As it comes to a boil, large, steam-venting, thick, bubbles begin to form, and these “lava bubbles” indicate that the mixture can be removed from heat. While completing the buttercream, Warren shows the final assembly of this layered cake. See the "Chocolate Layered Cake" for instructions on making the cake for the New German Chocolate.]]></description>
