<p>This week we learned all about working with different types of structures. We also made a different kind of bow than last week and we made draperies.</p>
<p>It was really fun to do, but for some reason, my draperies weren&#8217;t working, my fondant kept breaking. My curtains were probably a bit heavy, &#8217;cause the last drapery I made I rolled out really thinly and that gave a much better result.</p>

<p>Working with all the different kinds of structures really was a lot of fun as well. In a relatively easy way you can give your cake a completely different look!</p>

<p>I also really learned that patience is a virtue. Something that looks so simple can easily take you a couple of hours to create!</p>

<p>I know, I know, I&#8217;m a week late with my update. I&#8217;ve been super busy last week and just didn&#8217;t get around to writing a new post.</p>
<p>Last week we received a lot of instructions on making sugarpaste roses, bows, working with crimpers and frilling.</p>
<p>This resulted in having only al little bit of time left to cover a dummy cake with fondant and try out some of the techniques.</p>
<p>I worked quite fast, which resulted in having a not so neat end result. I did get a grip of the techniques though, so all I need to do next time is fine-tune and perfect it!</p>

<p>This week we started with the fifth module instead of the fourth. This is because we have two groups on the same day and only one group at a time can do the fourth module. So our group has gone ahead and started with the fifth module. Once that&#8217;s finished the groups will switch modules.</p>
<p>The fifth module is all about decorating cakes again. This time, we learned about bas relief. A sort of embossing technique, that gives a little 3d effect to your decoration. The technique makes your decoration stand out slightly from the background.</p>
<p>We created a bas relief sugar piece. We were given a copy of an image and had to recreate that in basrelief. It was really fun to do. You really have to sort of dissect the image, what should be in the background and what should be in the front and work your way up from the back.<br />
It takes a bit of time, but the result is quite nice, if I say so myself <img src='http://www.cakieshq.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>

<p>Af the end of the day we also prepared for the next lesson, we made a few rosebuds again. Next lesson, we&#8217;ll be learning how to make roses out of sugar paste. I have already attempted making sugar paste roses in the past, which didn&#8217;t really work out, so I&#8217;m quite curious to find out what will happen this time!</p>

<p>This week it was final assignment week. The final assignment of the third module was filling and decorating a two tiered cake. I had decided to bake my own cakes which I filled and decorated. I, ofcourse, wasn&#8217;t very lucky again this week, by the time I got around filling my cake with buttercream we were all out so we had to make some from scratch. By the time I got around decorating my cake most of the group was well underway. Because I had less time to decorate I had to adjust my plans slightly.</p>
<p>First we had to ice the filled cakes and cover them with fondant. Meanwhile we were also making the royal icing for decorating. I covered both of my cakes with white fondant and added a little green top to my top cake. I kept the decorations quite simple, a few santa&#8217;s and christmas trees with some decorative piping to bring it all together. I&#8217;m really happy with the cake. I would&#8217;ve loved to have tried out more techniques on the cake, but I&#8217;m still really happy with the end result.</p>

<p>I can&#8217;t wait to find out what the next module will be, but the next two weeks there won&#8217;t be any new lessons, will continue with the next module next year.</p>

<p>I&#8217;ve been extremely busy these last few days, thus the short &#8216;silence&#8217; on my blog, but this week I&#8217;ll be picking up where I&#8217;ve left inbetween all the busy days ahead!<br />
First things first, let&#8217;s do a quick recap on the adventures I had last week on my pastry course.</p>
<p>Last week it was the week before the final assignment of our third module. During that day we learned all about piping figurines and we had to decorate a real cake.<br />
First of all we started piping all different types of figurines with the pressure piping technique. I decided to pipe a little piggy, an owl, reindeer and santa. The funny thing about piping these characters is, when you&#8217;re piping you&#8217;re thinking, this isn&#8217;t going to work at all, but when you keep on going all of a sudden you see the little character appear! It&#8217;s really fun! I actually also wanted to pipe a little lion, but I didn&#8217;t get around to that, I&#8217;ll definitely be trying that out at home!</p>

<p>Next, we had to take all of our piping skills and let it loose on a real cake. Obviously we had to fill the cake with some good stuff and ice it before covering it with fondant. After that the cake was ready to be decorated. I decide to create a christmas and ice type cake with cute pinguins on top which I made out of fondant.<br />
I was really pleased with the end result!</p>

<p>A couple of months ago I came across a picture of a plum pie. I&#8217;ve no idea where I saw the picture nor did it have a recipe (probably the reason why I didn&#8217;t save it to my favourites). All I remember was that it looked delicious and that I wanted to make a plum pie myself! I remembered that in the Dutch Caribbean cuisine there also is a plum pie, so I asked my mom if she might have a recipe somewhere. She found a printed piece of paper that had a recipe on how to make the plum mixture which I decided to use as a base for my pie (ofcourse slightly adjusted to my taste <img src='http://www.cakieshq.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> ). I figured almonds and plums would make a nice combination so I decided to create a shortbread using part almond flour to accompany my plum mixture.</p>
<p>Instead of making one big pie I decided to create a bunch of mini pies. After even just one try, the pies tasted a-ma-zing! One of my grandmothers (yes, I&#8217;m lucky enough to still have two grannies!) liked the pies so much she wanted me to make some for her birthday!</p>
<p>I love being inspired by others and then create a recipe of my own, that&#8217;s one of the reasons I started Cakies! To document all my ideas or share other amazing recipes.</p>

<p>Add butter to the flour and using two knives start cutting the flour into the butter.</p>

It&#8217;s easier to add it at the same time as the sugar though&#8230; I&#8217;ve made sure that in the printed recipe the order is correct so you (hopefully) won&#8217;t make the same mistake&#8230; Anyway, let&#8217;s move on to the next step&#8230;</p>

<p>Quickly kneed the dough into a ball. Don&#8217;t overwork the mixture, it can still be a little crumbly. Put the dough in the fridge and leave to rest for at least half an hour.</p>

<p>While the dough is resting, let&#8217;s get started with the plum filling. For the filling you&#8217;ll need som cherry brandy, plums, water and the peel of a lemon.</p>

Put on a low heat and let it simmer very slowly. This can take about 20-30 minutes. Make sure to check every now and than to make sure the water hasn&#8217;t evaporated too quickly in which case you will need to add a little more water to make sure the mixture doesn&#8217;t dry out.</p>

<p>When the mixture has been simmering for a while you can see the plums breaking up more and more. Make sure the water hasn&#8217;t evaporated yet.</p>

Leave to simmer for a couple more minutes and mix well to combine. Take the pan off the heat and leave to cool before use. The mixture should be nice and slushy by now. If the mixture doesn&#8217;t look slushy enough just add some more water and leave a bit longer to simmer.</p>

While the plum mixture is cooling it&#8217;s time to prepare your muffin tin. You don&#8217;t actually have to do this, but I can assure you, it makes the taking out of the tin much easier.</p>
<p>Cut some strips of baking paper of 0.4inch by 1.6inch.</p>

Roll out 2/3 of the dough about 0.16inch thick and cut out circles slightly bigger than the circles of your muffin tin. You can use a small bowl or a baking ring it doesn&#8217;t really matter as long as it&#8217;s roughly the size you nee.</p>

Using a palette knife, lift off the circle from your worksurface. Don&#8217;t panic if the shape starts to shift or if the circle starts to break a little, you can fix that in the muffin tin.<br />

<li class="ingredient">PLUM MIXTURE</li>
<li class="ingredient">8.8oz/250 gr dried seedless plums (soaked)</li>
<li class="ingredient">2 lemon peels</li>
<li class="ingredient">3 tbsp cherry brandy</li>
<li class="ingredient">4.2fl. oz/125 ml water</li>
<li class="ingredient">1 tsp maizena</li>
<li class="ingredient">1/2 tbsp water</li>
<li class="ingredient">EXTRA</li>
<li class="ingredient">2-3 tbsp custard powder</li>
<li class="ingredient">1 egg (lightly beaten)</li>

<li class="instruction">Preparation.</li>
<li class="instruction">Sift flour and cut butter into small piece and add to the flour. Start cutting the butter into the flour using two knives.</li>
<li class="instruction">Add sugar and lemon rind and quickly rub the butter with the tips of your fingers into the flour until it starts to look a bit crumbly.</li>
<li class="instruction">Lightly beat the egg with some salt and add it to the crumbly mixture.</li>
<li class="instruction">Quickly kneed the dough into a ball. Don&#8217;t overwork the mixture, it should still be a little crumbly.</li>
<li class="instruction">Rest the dough in the fridge for half an hour.</li>
<li class="instruction">In a saucepan, add plums, lemon peels, cherry brandy and water on a low heat and let it simmer very slowly. This can take about 20-30 minutes. Make sure to check every now and then to make sure the water hasn&#8217;t evaporated too quickly in which case you will need to add a little more water to make sure the mixture doesn&#8217;t dry out.</li>
<li class="instruction">When the plums have softened and the water hasn&#8217;t evaporated completely mix the cornstarch with a little bit of water and add to the plum mixture.</li>
<li class="instruction">Leave to simmer for a couple more minutes and mix well to combine. Take the pan off the heat and leave to cool before use. The mixture should be nice and slushy by now.</li>
<li class="instruction">Cut strips of baking paper of 0.4inch by 1.6inch. Place them in a cross in a lightly buttered muffin tin.</li>
<li class="instruction">Take the dough out of the fridge and roll out 2/3 of the dough till about 0.16inch thick.</li>
<li class="instruction">Cut out circles slightly bigger than the circles of your muffin tin and place them in the muffin tin on top of the crossed strips of baking paper. Make sure the top of the strips stick out on top.</li>
<li class="instruction">Lightly sprinkle some custard powder onto the dough in the muffin tin and fill with the plum mixture.</li>
<li class="instruction">Roll out the left over piece of dough and cut into strips. Place the strips on top of the plum mixture.</li>
<li class="instruction">Brush the pies with a little bit of a lightly beaten egg and place into a preheated oven.</li>
<li class="instruction">Bake the pies 20-25 minutes or until golden brown.</li>
<li class="instruction">Take the pies out of the muffin tin using the strips of baking paper and leave to cool on a wire rack. When the pies have cooled down remove the baking strips.</li>

<p>The water for the plums is an estimation. The mixture should eventually result in a soft slushy consistency. Just add more water if needed.</p>
<p>When the circles of dough start to break, don&#8217;t panic. You can easily patch it back together again in the muffin tin. The circle is only a guide to make sure you have roughly the same amount of dough for each of your pies.</p>

<p>The highlight of this week&#8217;s lesson was decorating a dummy cake. However, we started our lesson by learning how to cover a cake with royal icing and how to pipe several types of flowers.</p>
<p>You can cover a cake with royal icing, ganache or buttercream, in our case we used royal icing. I had never learned how to properly ice a cake so that it still looks good. My way of covering a cake is adding a thin layer of buttercream to the cake so the fondant will stay nicely on the cake. But this was a little bit different. Unfortunately I forgot to take a picture of my iced dummy cake, but I have to say, it looked pretty good, all nice and smooth. Then again, I can tell you anything, without a photo I can&#8217;t proof it anyway <img src='http://www.cakieshq.com/wp-includes/images/smilies/icon_wink.gif' alt=';-)' class='wp-smiley' /> </p>
<p>Piping flowers was also nice to see. When it was explained it all looked so easy, but once I started piping the flowers myself it turned out to be a bit more difficult than I thought. I did make some nice flowers though. I eventually started making &#8216;fantasy&#8217; flowers and not even trying to make them look like a &#8216;real&#8217; flower. And I have to say, that tactic works for me <img src='http://www.cakieshq.com/wp-includes/images/smilies/icon_smile.gif' alt=':-)' class='wp-smiley' /> . The flowers looked really cute!</p>

<p>The best part of the day was decorating the dummy cake. All of the piping techniques we learned the last couple of weeks we were able to try out on the cake. I covered my cake with pastry pink fondant first and then started piping royal icing. I have to say, it went pretty well and I&#8217;m really happy with the end result!</p>

<p>Just one more night and for many many people in the Netherlands it&#8217;ll be time to celebrate Saint Nicholas! Some may have even celebrated it already. Sinterklaas or Saint Nicholas Day is a festival for children usually celebrated on either 5th or 6th of December. It celebrates the legend of Saint Nicholas, bringer of gifts. &#8220;Santa Claus&#8221; is actually derived from the Dutch Sinterklaas. <p>I&#8217;m always happy when this time of year comes around, mainly because it means it time for some tasty spice nuts! A typical Dutch cookie only available in shops at the end of the year. Once I start eating them I just can&#8217;t stop. Spice Nuts are also very fun and easy to make, you can involve kids if you want as well. I couldn&#8217;t let Sinterklaas pass without a recipe for spice nuts!</p>
<p>I&#8217;d say, let&#8217;s get all the ingredients and start making this homemade spice nuts for Saint Nicholas day!</p>

You can make your own Dutch cookie spice mix by combining 2 tbsp ground cinnamon, 2 tsp ground nutmeg, 2 tsp ground clove, 3/4 tsp ground white pepper, 1 tsp ground aniseed, 1 tsp ground ginger and 1 tsp ground coriander. Store the mix in an air-tight container. Pumpkin Pie spice mix can also be used instead of Dutch cookie spice mix.</p>

<p>This week we learned all about the colourflow technique and piping roses. We started the lesson with some instructions on how to do colour flow and then it was our turn to try it out.</p>
<p>In short, colour flow is a technique with which you use thinned down, runny icing to create shapes. First you use thick and stronger icing to outline your shape. Next, you fill in the shape with the thinned down icing and leave to dry.</p>
<p>I have done some colour flow at home, but I didn&#8217;t do it the &#8216;proper way&#8217; though. It was nice to learn what is the correct way of using the technique and where I can improve my skills.</p>
<p>I planned on creating some playing cards and domino stones out of colour flow. I had printed out several drawings and was all geared up to start. And than we were told that we weren&#8217;t allowed to use the colours black or red. Hmmn, I wasn&#8217;t really prepared for that&#8230; Luckily I had also brought a backup drawing of a monkey. So I ended up making a monkey out of colour flow instead. It looked really cute and I&#8217;m really happy with it!</p>

<p>Next to the monkey, we also practiced the colour flow technique on some cookies. They all looked so cute and super sweet at the same time with the whole layer of sugar on top of the cookie. We were told that these cookies are the perfect cookies for kids, they&#8217;ve got to love all that sweetness <img src='http://www.cakieshq.com/wp-includes/images/smilies/icon_wink.gif' alt=';-)' class='wp-smiley' /> </p>

<p>Another important part of the lesson was piping roses. I can tell you now that piping roses really isn&#8217;t my thing (yet). No matter what I did, it didn&#8217;t really go that well. I eventually managed to produce some rose type things, but I really need to practice this technique some more.</p>

<p>You know the <a title="Delicious Pumpkin Pecan Cupcakes" href="http://www.cakieshq.com/2011/11/delicious-pumpkin-pecan-cupcakes/">Delicious Pumpkin and Pecan Cupcakes</a> I made recently, this is the amazing buttercream that goes with it. I thought I&#8217;d share the recipe for this buttercream with you as well, just because I feel like it! The buttercream doesn&#8217;t only go well with a pumpkin cupcake, but it&#8217;s also a great filling for cakes. It&#8217;s hard to explain exactly what it tastes like, just that it tastes like cinnamon and ginger with a hint of lemon. You really have to try it to understand how good it really is.</p>
