			<content:encoded><![CDATA[<p>Burgundy truffles (Tuber unicinatum) have a delicate but distinctive hazelnut flavour and an intense aroma.  They are more flavourful and aromatic than summer truffles, but not as robust in flavour as Perigord black truffles.  These delicacies from France and Italy are similar in appearance to black winter truffles, except that they are somewhat lighter in colour, with a veined, coffee-coloured interior.  Burgundy truffles are best used fresh, grated over pasta, eggs, mashed potatoes and salads, or to finish butter sauces for meats.</p>
<p>Store in the refrigerator, wrapped in a paper towel (changed daily or as needed) and in an airtight container.</p>

			<content:encoded><![CDATA[<p>These elegant, artistic, and modern dishes are hand made in Murano, Italy.  &#8220;Salviati&#8221; was founded in the 19th century by lawyer Antonio Salviati who set out to revitalize the Venetian glass industry which at the time was overshadowed by both English and Bohemian glass.  To say he succeeded in his endeavors would be an understatement.  Made by Salviati were the mosaic tesserae used for decorating the St. Paul Cathedral dome and the Hall of the House of Parlament in London, the Opera Theatre in Paris and many others.</p>
<p>The Salviati caviar server come in three stunning colours; amethyst, aquamarine, and clear.  Each dish measures 3.3&#8243;h x 6.3&#8243; diameter and includes a caviar spoon.</p>

			<content:encoded><![CDATA[<p>Beluga is the largest and rarest of the Sturgeons and the only specie that is exclusively carnivorous.  It can measure up to 6 meters or 20 feet in length and live for more than one hundred years.  It is so rare that only about 100 fish are caught every year in the Caspian Sea.</p>
<p>The Beluga Sturgeon can take up to 25 years to reach maturity.  The fish harvested for caviar are often nearly 2,000 pounds (900 kg).  The eggs themselves are the largest among the Sturgeon family, and range in colour from dark gray (almost black) to light gray. This particular caviar has a very distinctive rich, creamy flavour with a delicate texture.</p>

			<content:encoded><![CDATA[<p>The White Sturgeon is a Sturgeon that lives along the west coast of North America from the Aleutian Islands to central California.  It is the largest freshwater fish in North America and is the third largest species of Sturgeon, after the Beluga and the Kaluga.  The White Sturgeon is known to reach a maximum size of 816 kg (1,798 lb) and 6.1 m (20.1 ft). Farm-raised White Sturgeon, native to California, produces this elegant caviar that evokes the taste of the finest Osetra, that’s smooth and robust.  It has a slightly firm, but delicate texture, with fine distinguishable eggs.  The flavour of farmed caviar has been described as ranging from buttery to nutty, not too salty, and can be compared to the taste of the Caspian Sea Russian Osetra Caviar.</p>

Paddlefish have a very long lifespan of up to 50 years and can weigh up to a massive 100 pounds.  Harvested from the Missouri, Mississippi and Tennessee rivers, this roe can range in colour from dark gray to black.  The flavour is earthier, yet still buttery and mild, with a softer texture in the eggs.  Paddlefish Caviar offers the consumer genuine caviar at an affordable price &#8211; less than half the price of the equivalent imported grade.</p>
