<p>Yes, nachos can be healthy! For this delicious and satisfying comfort-food dinner, I layer baked corn chips with a made-from-scratch (dairy-free!) nacho cheese sauce, spiced black beans, and plenty of piquant salsa and creamy avocado. Not into nachos? No problem—I provide variations below that’ll allow you to turn this into burritos, bowls, or salads. It’s like four recipes in one! No matter how you make it, each serving is packed with fiber, healthy fats, plant-based protein, whole grains, and fabulous flavor.</p>

</li><li id="zlrecipe-ingredient-2" class="ingredient" itemprop="ingredients">½ cup raw cashews, soaked (see Chef’s Tips) and drained
</li><li id="zlrecipe-ingredient-3" class="ingredient" itemprop="ingredients">2 tablespoons nutritional yeast (optional)
</li><li id="zlrecipe-ingredient-4" class="ingredient" itemprop="ingredients">1 teaspoon chili powder
</li><li id="zlrecipe-ingredient-5" class="ingredient" itemprop="ingredients">½ teaspoon ground cumin
</li><li id="zlrecipe-ingredient-6" class="ingredient" itemprop="ingredients">½ teaspoon salt, or to taste
</li><div id="zlrecipe-ingredient-7" class="ingredient-label" >For the beans:
</div><li id="zlrecipe-ingredient-8" class="ingredient" itemprop="ingredients">1 (15-oz.) can black beans, rinsed and drained
</li><li id="zlrecipe-ingredient-9" class="ingredient" itemprop="ingredients">1 teaspoon ground cumin
</li><li id="zlrecipe-ingredient-10" class="ingredient" itemprop="ingredients">½ teaspoon chili powder
</li><li id="zlrecipe-ingredient-11" class="ingredient" itemprop="ingredients">¼ teaspoon salt

</div><li id="zlrecipe-ingredient-13" class="ingredient" itemprop="ingredients">1 (7-oz.) bag baked tortilla chips
</li><li id="zlrecipe-ingredient-14" class="ingredient" itemprop="ingredients">½ cup chunky salsa or pico de gallo
</li><li id="zlrecipe-ingredient-15" class="ingredient" itemprop="ingredients">1 medium ripe avocado, peeled, seeded, and diced
</li><li id="zlrecipe-ingredient-16" class="ingredient" itemprop="ingredients">3 green onions, white and light green parts diced</li></ul><p id="zlrecipe-instructions" class="h-4 strong">Instructions</p><ol id="zlrecipe-instructions-list" class="instructions"><li id="zlrecipe-instruction-0" class="instruction" itemprop="recipeInstructions">To make the nacho cheese, combine the chopped pepper, drained cashews, nutritional yeast, chili powder, cumin, and salt in a food processor or high-speed blender and blend until smooth and combined.  Taste for seasoning and add an additional 1/8 teaspoon salt if desired.  Transfer the cheese sauce to a small bowl and set aside.
</li><li id="zlrecipe-instruction-1" class="instruction" itemprop="recipeInstructions">To season the beans, place the drained beans in a medium bowl.  Add the cumin, chili powder, and salt and stir to combine; set aside.
</li><li id="zlrecipe-instruction-2" class="instruction" itemprop="recipeInstructions">Preheat the oven to 350°F and lightly grease a 2-quart casserole dish or 7x11-inch baking pan with cooking spray.  Arrange a layer of tortilla chips (about one-third of the bag) on the bottom of the pan, slightly overlapping, so that the surface is completely covered.  Spoon about one-third of the beans onto the tortilla chips, distributing them evenly as best you can.  Drizzle about one-third of the nacho cheese sauce across the chips and beans, distributing it evenly as well.
</li><li id="zlrecipe-instruction-3" class="instruction" itemprop="recipeInstructions">Repeat this layering (chips + beans + nacho cheese) two more times, until all chips, beans, and cheese have been used.
</li><li id="zlrecipe-instruction-4" class="instruction" itemprop="recipeInstructions">Once the oven is preheated, place the pan in the oven and bake for 10 minutes.  Meanwhile, dice the avocado and green onion while the nachos bake.
</li><li id="zlrecipe-instruction-5" class="instruction" itemprop="recipeInstructions">When the nachos are done baking, remove them from the oven, spoon the salsa or pico de gallo evenly across the top, and sprinkle the diced avocado and green onions over the top.  Serve immediately.</li></ol><p id="zlrecipe-notes" class="h-4 strong">Notes</p><div id="zlrecipe-notes-list"><p class="notes"><span class="bold">Chef's Tips:</span><br>
•	To soak and soften the cashews, you can place them in a bowl and either cover with cold water and set aside for 2-4 hours or cover with boiling water and set aside for 15 minutes.<br>
•	If you are allergic or sensitive to nuts, you can use sunflower seeds in place of the cashews.<br>
•	You can also omit the nacho cheese sauce entirely and use about 1 cup of shredded colby jack or Mexican cheese instead.  However, I urge you to try the cashew nacho cheese at least once.  It’s healthier than shredded dairy or nondairy cheese, and you will be shocked at how delectable it is!<br>
•	You can use 1¾ cups home-cooked black beans in place of the canned beans, if you want.<br>
•	I’m a fan of Guiltless Gourmet baked whole grain tortilla chips, but you can use any brand you like—just make sure they’re baked, not fried.<br>
•	Feel free to use homemade or storebought guacamole in place of the avocado; just dollop it on top of the nachos after they’ve been baked.<br>
•	If you’re a big fan of onions, you can double the amount of green onion, or replace it with about 1/3 cup diced red onion.</p></p><p class="notes"><span class="bold">Variations:</span><br>
•	Loaded Black Bean Burritos:  Distribute the cheese sauce, beans, salsa, avocado, and onion among four whole-grain tortillas; roll up and serve.<br>
•	Loaded Black Bean Bowls:  Divide two cups of cooked brown rice or quinoa among four serving bowls (½ cup per bowl).  Distribute the cheese sauce, beans, salsa, avocado, and onion among the bowls, and serve.<br>
•	Loaded Black Bean Taco Salads:  Place 3 cups chopped romaine lettuce in each of four large bowls. <p>When I shared a <a href="http://chefambershea.com/2013/03/28/practically-raw-desserts-photo-packed-mega-preview/" target="_blank">photo-packed mega-preview of <em>Practically Raw Desserts</em></a> just before it came out, this carrot cake received the greatest number of lip-licking comments and dazzled professions of anticipation for the recipe. So for those of you that don&#8217;t have the book yet (you can grab a copy <a href="http://bit.ly/PRDesserts" target="_blank">on Amazon</a> or from any number of other outlets), I&#8217;ve decided to share the recipe here, so you don&#8217;t have to wait a second longer to make it!</p>
<p>In <em><a href="http://bit.ly/PRDesserts" target="_blank">Practically Raw Desserts</a></em>, this <strong>Enlightened Carrot Cake</strong> is frosted with a delightful Tangy Cream Cheese Icing. However, to simplify this post, I&#8217;m sharing the cake with my Quick Cream Cheese Icing variation instead. This version of the icing doesn&#8217;t require any probiotic powder, and you don&#8217;t have to be fancy and culture the icing. However, for those of you that yearn for &#8220;true&#8221; cream cheese frosting flavor, I can&#8217;t recommend the Tangy Cream Cheese Icing in <a href="http://bit.ly/PRDesserts" target="_blank">the book</a> enough!</p>

<p>One more thing: a note about coconut flour&#8230;<strong>no, you cannot substitute any other flour in its place</strong>. I know, I&#8217;m the queen of ingredient substitutions (and every recipe in <em><a href="http://bit.ly/PRDesserts" target="_blank">Practically Raw Desserts</a></em>, just as in <em><a href="http://bit.ly/PracticallyRaw" target="_blank">Practically Raw</a></em>, comes with a list of ingredient substitution options), but coconut flour is the one staple ingredient that can never be substituted—it is indispensable in the recipes that call for it. Coconut flour absorbs many times its weight in liquid, FAR more than any other flour can, so it is irreplaceable. However, I promise you that if you go out and invest in a bag today, you will easily be able to put all of it to great use! I utilize coconut flour in a number of the recipes in <em><a href="http://bit.ly/PRDesserts" target="_blank">Practically Raw Desserts</a></em> (particularly the cake recipes, for the fluffy moisture it lends them), so you&#8217;ll definitely use it up. Bob&#8217;s Red Mill brand coconut flour is sold at most stores (even non-natural-food stores), though in my opinion, it&#8217;s priced a little too high. Personally, I get my <a href="http://www.nuts.com/cookingbaking/flours/coconut-gluten-free.html" target="_blank">organic coconut flour</a> very affordably from <a href="http://www.nuts.com/" target="_blank">Nuts.com</a> (which is actually where I do a great deal of my bulk shopping—for nuts, seeds, dried fruit, etc.). Another option is to <a href="http://www.amazon.com/s/?_encoding=UTF8&amp;camp=1789&amp;creative=390957&amp;field-keywords=coconut%20flour&amp;linkCode=ur2&amp;tag=chefambershea-20&amp;url=search-alias%3Daps" target="_blank">grab a bag on Amazon</a>—and if you order a copy of <em><a href="http://bit.ly/PRDesserts" target="_blank">Practically Raw Desserts</a></em> at the same time, you could even get the free super saver shipping deal.</p>

Used by permission.</span></p></p><p class="summary italic">Who in their right mind would attempt to create a raw, vegan, gluten-free, grain-free, nut-free, low-calorie, low-fat, no-added-sugar, and no-bake – but still tasty – carrot cake?!  Well, me.  It took some tinkering, but I think you’ll love what I came up with.  I recommend using a sweet variety of red apple and the softest, moistest dates you can find.  Keep in mind, of course, that this is no longer nut-free when you add the cream cheese icing, but miraculously, it IS still low-cal and low-fat!</p></div></div><p id="zlrecipe-ingredients" class="h-4 strong">Ingredients</p><ul id="zlrecipe-ingredients-list"><div id="zlrecipe-ingredient-0" class="ingredient-label" >For the cake:
</div><li id="zlrecipe-ingredient-1" class="ingredient" itemprop="ingredients">1 cup pitted dates, soaked in warm water for 15 minutes and drained
</li><li id="zlrecipe-ingredient-2" class="ingredient" itemprop="ingredients">1 large or 2 small red apples, peeled if desired, cored, and chopped
</li><li id="zlrecipe-ingredient-3" class="ingredient" itemprop="ingredients">1/4 cup water
</li><li id="zlrecipe-ingredient-4" class="ingredient" itemprop="ingredients">1 tablespoon lemon juice
</li><li id="zlrecipe-ingredient-5" class="ingredient" itemprop="ingredients">1 teaspoon vanilla extract
</li><li id="zlrecipe-ingredient-6" class="ingredient" itemprop="ingredients">1 teaspoon ground cinnamon
</li><li id="zlrecipe-ingredient-7" class="ingredient" itemprop="ingredients">1/2 teaspoon ground nutmeg (optional)
</li><li id="zlrecipe-ingredient-8" class="ingredient" itemprop="ingredients">1/4 teaspoon sea salt
</li><li id="zlrecipe-ingredient-9" class="ingredient" itemprop="ingredients">1 pound carrots, peeled if desired, shredded
</li><li id="zlrecipe-ingredient-10" class="ingredient" itemprop="ingredients">3/4 cup <a href="http://www.nuts.com/cookingbaking/flours/coconut-gluten-free.html" class="ingredient-link" target="_blank">coconut flour</a>
</li><li id="zlrecipe-ingredient-11" class="ingredient" itemprop="ingredients">Stevia to taste (optional)
</li><li id="zlrecipe-ingredient-12" class="ingredient" itemprop="ingredients">
</li><div id="zlrecipe-ingredient-13" class="ingredient-label" >For the Quick Cream Cheese Icing:
</div><li id="zlrecipe-ingredient-14" class="ingredient" itemprop="ingredients">3/4 cup cashews or macadamia nuts, soaked for 2 to 4 hours and drained
</li><li id="zlrecipe-ingredient-15" class="ingredient" itemprop="ingredients">1/2 cup nondairy milk of choice
</li><li id="zlrecipe-ingredient-16" class="ingredient" itemprop="ingredients">1 1/2 teaspoons lemon juice
</li><li id="zlrecipe-ingredient-17" class="ingredient" itemprop="ingredients">15 drops liquid stevia, or to taste
</li><li id="zlrecipe-ingredient-18" class="ingredient" itemprop="ingredients">Pinch of sea salt</li></ul><p id="zlrecipe-instructions" class="h-4 strong">Instructions</p><ol id="zlrecipe-instructions-list" class="instructions"><li id="zlrecipe-instruction-0" class="instruction" itemprop="recipeInstructions">Combine the drained dates, apple, water, lemon juice, and vanilla in a food processor and blend until fairly smooth (it may remain just slightly chunky).
</li><li id="zlrecipe-instruction-1" class="instruction" itemprop="recipeInstructions">Add the cinnamon, nutmeg, and salt and blend again until combined.
</li><li id="zlrecipe-instruction-2" class="instruction" itemprop="recipeInstructions">Place the shredded carrots in a large bowl.  Add the mixture from the food processor and stir well with a wooden spoon to combine.
</li><li id="zlrecipe-instruction-3" class="instruction" itemprop="recipeInstructions">Add the coconut flour (if it’s clumpy, sift it in) and stir until the batter is combined and uniform.  Taste the batter, and if you think it needs a little more sweetness, add stevia to taste.  Set the batter aside for 5 to 10 minutes to allow the coconut flour to absorb the liquid mixture.
</li><li id="zlrecipe-instruction-4" class="instruction" itemprop="recipeInstructions">Divide the batter between two 5- or <a href="http://bit.ly/6inchSpringformPan" class="instruction-link" target="_blank">6-inch round springform pan</a>s, pressing it in firmly and evenly, and freeze for 4 hours or refrigerate overnight.  (If you only have one pan, you can press half the batter into the pan and freeze it for 2 to 4 hours, placing the bowl with the rest of the batter in the fridge.  When the half in the pan has firmed up, remove it to a plate and place it in the fridge.  Press the remaining half of the batter into the same pan and freeze for 4 hours or refrigerate overnight.)
</li><li id="zlrecipe-instruction-5" class="instruction" itemprop="recipeInstructions">Meanwhile, make the cream cheese icing.  Combine the drained cashews or macnuts, nondairy milk, lemon juice, stevia, and salt in a high-speed blender and blend until completely smooth.  Taste for sweetness and add additional stevia if desired.  Transfer the mixture to a bowl, cover, and refrigerate until the cake is chilled and ready to frost.
</li><li id="zlrecipe-instruction-6" class="instruction" itemprop="recipeInstructions">When both halves of the cake have firmed up, place one half on a plate or cake stand and frost the top only with the cream cheese icing.  Carefully place the other cake half on top, and use the rest of the icing to frost the top and sides of the cake.
</li><li id="zlrecipe-instruction-7" class="instruction" itemprop="recipeInstructions">Refrigerate overnight, or until ready to serve.  Snugly wrap leftover cake in plastic wrap and store in the refrigerator for up to 4 days.</li></ol><p id="zlrecipe-notes" class="h-4 strong">Notes</p><div id="zlrecipe-notes-list"><p class="notes"><span class="bold">Substitution Options</span><br>

Nut-Free Carrot Cake: Top the cake with your favorite vanilla nondairy yogurt or a thin layer of coconut butter (a recipe for homemade coconut butter is provided in <a href="http://bit.ly/PRDesserts" class="notes-link" target="_blank">Practically Raw Desserts</a>!) in place of the cream cheese icing.<br>
Nutty Carrot Cake:  Mix 1/2 cup chopped dry walnuts into the batter.<br>
Polka-Dot Carrot Cake:  Mix 1/2 cup soaked raisins into the batter.<br>
Tropical Carrot Cake:  Mix 1/2 cup unsweetened shredded or flaked coconut into the batter.</p></p><p class="notes"><span class="bold">Chef’s Tips:</span>  To make easy work of all those carrots, shred them in a food processor fitted with the grating disc.  To make a larger cake in an 8- to 9-inch springform pan, simply double the recipe. <p>Is it too late for stew? Considering we&#8217;ve had some 40-odd-degree days in the past week, I&#8217;m gonna say no, it isn&#8217;t. Besides, I&#8217;ll go for a good curry any time of year!</p>

<p>I&#8217;m calling this curry a &#8220;stew&#8221; because it&#8217;s just barely on the liquidy side, as far as curries go, but you are more than welcome to serve it over cooked brown rice or quinoa like a traditional curry.</p>
<p>It makes use of some of my favorite ingredients, such as legumes (the underutilized split pea), cauliflower (<a href="http://chefambershea.com/2012/01/09/easy-curry-roasted-cauliflower/" target="_blank">curry-roasted</a>, but of course!), and curry powder (yeah I know, it&#8217;s an inauthentic &#8220;cheat&#8221; ingredient for a &#8220;real&#8221; curry, but I love it to death). It makes a nice big batch that can feed you all week or can even be frozen for later. In short, it&#8217;s nutritious, filling, and flavorful—what more could you ask for?</p>

</li><li id="zlrecipe-ingredient-3" class="ingredient" itemprop="ingredients">1 teaspoon mustard seeds
</li><li id="zlrecipe-ingredient-4" class="ingredient" itemprop="ingredients">1 teaspoon cumin seeds
</li><li id="zlrecipe-ingredient-5" class="ingredient" itemprop="ingredients">1 large yellow onion, peeled and roughly chopped
</li><li id="zlrecipe-ingredient-6" class="ingredient" itemprop="ingredients">1 large or 2 small carrots, peeled if desired, chopped
</li><li id="zlrecipe-ingredient-7" class="ingredient" itemprop="ingredients">1 (2-inch) knob fresh ginger, peeled and minced
</li><li id="zlrecipe-ingredient-8" class="ingredient" itemprop="ingredients">6 cloves garlic, peeled and minced
</li><li id="zlrecipe-ingredient-9" class="ingredient" itemprop="ingredients">2 tablespoons good-quality curry powder
</li><li id="zlrecipe-ingredient-10" class="ingredient" itemprop="ingredients">1 teaspoon ground turmeric
</li><li id="zlrecipe-ingredient-11" class="ingredient" itemprop="ingredients">2 cups (or one 15-oz. can) vegetable broth
</li><li id="zlrecipe-ingredient-12" class="ingredient" itemprop="ingredients">1 (15-oz.) can light coconut milk
</li><li id="zlrecipe-ingredient-13" class="ingredient" itemprop="ingredients">2 teaspoons apple cider vinegar
</li><li id="zlrecipe-ingredient-14" class="ingredient" itemprop="ingredients">1 teaspoon garam masala
</li><li id="zlrecipe-ingredient-15" class="ingredient" itemprop="ingredients">1 to 1½ teaspoons sea salt, or to taste
</li><li id="zlrecipe-ingredient-16" class="ingredient" itemprop="ingredients">Chopped cilantro and/or green onions, for serving (optional)</li></ul><p id="zlrecipe-instructions" class="h-4 strong">Instructions</p><ol id="zlrecipe-instructions-list" class="instructions"><li id="zlrecipe-instruction-0" class="instruction" itemprop="recipeInstructions">Parboil the split peas in advance by placing them in a saucepan, covering with cold water, and simmering over medium-low heat for 45 minutes to an hour, until softened.  (*If desired, you can replace the split peas with 2 cups cooked or canned chickpeas or lentils.)  When finished, drain and set aside.
</li><li id="zlrecipe-instruction-1" class="instruction" itemprop="recipeInstructions">Prepare the <a href="http://chefambershea.com/2012/01/09/easy-curry-roasted-cauliflower/" class="instruction-link" target="_blank">Curry-Roasted Cauliflower</a>; while it's in the oven, you can chop your onion and carrot and prep the rest of the stew.  When it's done roasting, simply remove it from the oven and set it aside.
</li><li id="zlrecipe-instruction-2" class="instruction" itemprop="recipeInstructions">In a large pot over medium heat, add the coconut oil.  When it's hot, add the mustard seeds and cumin seeds, stir to coat with the oil, and cover the pot with a lid.  Listen for the mustard seeds to begin popping; when the popping has subsided, remove the lid and add the chopped onion.  (You can omit the mustard seeds and skip this "popping" step if you prefer, simply adding the onion about 30 seconds after the cumin seeds.)
</li><li id="zlrecipe-instruction-3" class="instruction" itemprop="recipeInstructions">Sauté the onion for 4-5 minutes or until softened, stirring often.
</li><li id="zlrecipe-instruction-4" class="instruction" itemprop="recipeInstructions">Add the carrot and the minced ginger and garlic.  Cook and stir for 1 minute, until fragrant.
</li><li id="zlrecipe-instruction-5" class="instruction" itemprop="recipeInstructions">Add the curry powder and turmeric and stir to coat the veggies.  Cook for about 30 seconds, stirring constantly.
</li><li id="zlrecipe-instruction-6" class="instruction" itemprop="recipeInstructions">Add the vegetable broth, coconut milk, and pre-parboiled split peas; stir to combine.  Turn the heat down to medium-low and simmer for 15 minutes, stirring occasionally.
</li><li id="zlrecipe-instruction-7" class="instruction" itemprop="recipeInstructions">Stir in the roasted cauliflower, apple cider vinegar, garam masala, and 1 teaspoon sea salt.  Simmer for 10 more minutes.
</li><li id="zlrecipe-instruction-8" class="instruction" itemprop="recipeInstructions">Just before serving, taste for seasoning and add additional salt as desired. <p>Now, let&#8217;s get down to business.  The subject of today&#8217;s review is <strong><a href="http://bit.ly/RockinWellness" target="_blank">Rockin&#8217; Wellness</a></strong>, a relative newcomer to the world of &#8220;nutrition shakes.&#8221;  When I first heard of it awhile back, I figured it was just another protein powder, but I was quite wrong.  When I got a chance to sample some recently, I was not only set straight, but I was pleasantly surprised as well.</p>

<p><a href="http://bit.ly/RockinWellness" target="_blank">Rockin&#8217; Wellness</a> is actually a <strong>total body nutrition shake</strong> made with the world&#8217;s top superfoods.  Its creators, Seth and Mike, wanted an energizing drink they could feel good about fueling their bodies with while on the go.  The result is a gluten-free, vegan, nutrient-rich powder that not only tastes great and provides a natural pick-me-up, but also offers a number of unique health benefits not found in your typical shake mix.</p>

<p><strong>Ingredients:</strong> raw organic cacao bean, non-GMO brown rice protein, raw organic goji berry, non-GMO lecithin (soy), raw organic evaporated cane juice, banana, raw organic hulled hemp seed, raw organic maca root, chia seed, organic green tea, organic yerba maté, guar gum, organic flaxseed, lactobacillus acidophilus (vegan probiotics; 4 billion cultures per serving), pure stevia extract.</p></blockquote>
<p>At first glance, <a href="http://bit.ly/RockinWellness" target="_blank">Rockin&#8217; Wellness</a>&#8216; ingredients list may appear to be a mixed bag.  Those of us who are quite picky about our diets tend to immediately home in on ingredients we&#8217;re not huge fans of.  Some people may wrinkle their nose at the organic cane sugar (while others might not like the stevia), or some may dislike the inclusion of soy lecithin (even though it&#8217;s non-GMO) or guar gum.</p>
<p>However, when you stand back and look at the list as a whole, I think it&#8217;s rather impressive.  In addition to the cacao (mmm, chocolate), brown rice protein, and superberry (goji!) powders, it contains tons of raw, organic, and non-GMO ingredients; a bevy of omega-3-rich seeds (hemp, chia, and flax); nondairy probiotics (!); and even natural energy enhancers like green tea and yerba maté.  No matter how you shake it (har har), this is a high-quality product, and it&#8217;s clear that a lot of thought was put into its development.  I&#8217;m ok with the small amounts of natural sweeteners, emulsifier, and stabilizer it contains, because I know that&#8217;s part of what helps it taste so great—which helps encourage <em>me</em> to consume it regularly and reap the benefits.</p>

<p>Speaking of consuming it regularly, <a href="http://bit.ly/RockinWellness" target="_blank">Rockin&#8217; Wellness</a> developed something they call the 45-Day Challenge.  They suggest you consume 2 scoops (mixed with 10 ounces of nondairy milk) every morning for 45 days before or instead of breakfast or lunch.  Three bags of <a href="http://bit.ly/RockinWellness" target="_blank">Rockin&#8217; Wellness</a> will last you 45 days, so that means the total cost of the 45-Day Challenge is less than $3.00 per day.</p>
<p>This &#8220;45-Day Challenge&#8221; was clearly created in the spirit of the &#8220;90-Day Challenge&#8221; and &#8220;24-Day Challenge&#8221; that certain other, lesser-quality, MLM-style, to-remain-unnamed supplement companies have made big.  Nothing against those other companies or anyone who works for them, but I say hey, more power to <a href="http://bit.ly/RockinWellness" target="_blank">Rockin&#8217; Wellness</a> for creating a healthful alternative to those less-than-good-for-you marketing schemes.</p>

<p>I didn&#8217;t take the 45-Day Challenge myself, but I will admit that I have found myself consuming at least a scoop a day of this stuff since it landed in my hands.  I honestly didn&#8217;t expect to like it as much as I do.  Sure, I&#8217;ve done the obvious and put it into shakes and smoothies, but I&#8217;ve <i>really</i> gotten into employing it in some unusual ways.</p>
<p>For one thing, I&#8217;m addicted to <a href="http://instagram.com/p/Wr6F1Il4bb/" target="_blank">this &#8220;protein pudding&#8221;</a> I&#8217;ve been whipping up every afternoon using <a href="http://bit.ly/RockinWellness" target="_blank">Rockin&#8217; Wellness</a> and a handful of other powders:</p>

<p>Another fun way to use it is in recipes, especially raw recipes!  For example, since <a href="http://bit.ly/RockinWellness" target="_blank">Rockin&#8217; Wellness</a> is chocolatey, you can use it in place of cacao/cocoa powder in recipes in <em><a href="http://bit.ly/PRDesserts" target="_blank">Practically Raw Desserts</a></em>.  (Seriously, try the Ultimate Raw Brownies on page 67 with <a href="http://bit.ly/RockinWellness" target="_blank">Rockin&#8217; Wellness</a> in place of the cacao.  WOWOWOW.)  You can also use it in the handful of recipes calling for protein powder, if you want a chocolate-flavored treat.</p>
<p>One thing I&#8217;ve been especially enjoying is making&#8230;<strong><a href="http://bit.ly/RockinWellness" target="_blank">Rockin&#8217; Wellness</a> Cookies</strong>!  It&#8217;s so simple, I can&#8217;t even really call it a recipe.</p>

<p>In a small bowl, simply mix together <strong>1 scoop <a href="http://bit.ly/RockinWellness" target="_blank">Rockin&#8217; Wellness</a></strong> with <strong>2 teaspoons melted coconut oil</strong>.</p>
<p>Stir, stir, stir with a fork until it comes together (it&#8217;ll still be a little grainy; that&#8217;s ok).</p>

<p>Scoop it onto a small square of wax paper on a plate.</p>

<p>Place in the fridge for 20 minutes or the freezer for 5 minutes, until chilled and firm.</p>

<p>Last weekend’s juice cleanse (the last one I&#8217;ll be reviewing, for awhile at least!) came to me courtesy of <a href="http://vibrantearthjuices.com/" target="_blank">Vibrant Earth Juices</a>, based out of Santa Barbara, CA. Vibrant Earth cold-presses all their organic juices with minimal heat and friction, preserving the vitamins and enzymes within.</p>
<p>Developed by nutritionist Jill Latham, who holds a Masters of Science in Nutrition, Dietetics, and Food Science and is a Registered Dietitian, <a href="http://vibrantearthjuices.com/" target="_blank">Vibrant Earth Juices</a>’ goal is to energize, heal, and rejuvenate your body, all while being grounded in strong scientific and researched-based nutrition practices.  Love that!</p>
<p>One example of Jill&#8217;s nutrition know-how in action is the fact that she includes a small amount of ALA-rich flax oil in each juice.  As Jill says:</p>
<blockquote><p>&#8220;All of the fruit and veggie juices have flax oil added, as this helps with the transport and absorption of the fat-soluble vitamins (A, D, E, and K).  Your body needs a fatty acid carrier to absorb those nutrients, and the oil also helps to prevent huge spikes in blood glucose levels from the sugar in the juices.  You get a much more steady absorption rate with this addition.&#8221;</p></blockquote>

<p><strong>Arrival:</strong> The package was delivered bright and early at 9am on the first day of the cleanse. The contents of the box were snugly and securely packed.</p>

It contains a pre-selected set of six daily juices. Each bottle is labeled with a number to indicate the order in which you should drink them. Beyond that, you get to decide how quickly and at what times of day you drink each of them (though Jill offers recommendations on those two things).</p>
<p><strong>Variety:</strong> Other than the two green juices, every drink of the day is different (though the selection doesn&#8217;t vary day-by-day).</p>

<p><strong>The Juices&#8230;</strong></p>
<p><em>1. Energy:  Kale, Romaine, Dandelion, Parsley, Celery, Cucumber, Apple, Lemon, Flax Oil</em><br />
This drink appears twice each day, and it&#8217;s a solid green-juice blend featuring cucumber and sweet apple.  I like the variety of greens included, particularly the detoxifying dandelion and cleansing parsley.  A dash of lemon ties it all together.</p>

<p><em>2. Immunity:  Pineapple, Pear, Lemon, Mint, Flax Oil</em><br />
This fruity juice is super-sweet but also a little tart, and contains just a hint of mint.  I&#8217;d love to sip this beside a pool or the ocean; it totally deserves a little paper drink umbrella!</p>

<p><em>3. Refresh:  Sprouted Almonds, Filtered Water, Dates, Cinnamon, Vanilla Bean</em><br />
Now this was new—<a href="http://vibrantearthjuices.com/" target="_blank">Vibrant Earth Juices</a> puts their nut milk drink in the middle of the day!  I couldn&#8217;t shake the feeling that it was my &#8220;bedtime drink,&#8221; though, so I did save part of it to have later each day.  It&#8217;s an excellent almond milk; I love that it&#8217;s sweetened with dates and made with sprouted nuts.  It&#8217;s also not overly sweet; I actually added a few drops of stevia to mine.</p>

This drink took me by surprise—I had braced myself for a strong, beet-y red juice, but instead was greeted with a sweet, refreshing, &#8220;pink&#8221;-tasting juice (if that makes any sense!) with a clear mention of strawberry, which I&#8217;ve yet to see in any other cleanse&#8217;s juices.  Truly refreshing and delicious, this is officially my new favorite way to &#8220;eat&#8221; my beets.</p>

Since the nut milk was earlier in the day, this final drink is a change of pace from other cleanses:  a not-too-sweet cranberry juice drink with ground flaxseed mixed in.  As Jill explains, the flax is &#8220;intended to pull everything through the digestive tract&#8221; and help in both toxin elimination and bowel movement.</p>

<p><strong>Final Thoughts:</strong> <a href="http://vibrantearthjuices.com/" target="_blank">Vibrant Earth Juices</a>’ cleanse is a standout for me, and I&#8217;ll tell you why: it is a comfort and confidence-booster to know that the whole program was designed from the ground up by a Registered Dietitian with a Masters degree in nutrition!  That&#8217;s a level of expertise I&#8217;ve not found in any other program, and it shows up in a number of ways.  Interestingly, Jill&#8217;s inclusion of flax oil in each juice parallels something I have done on my own in <a href="http://chefambershea.com/category/reviews-2/juice-cleanses/" target="_blank">other cleanses</a>—namely, before drinking particularly sugary/fruit-based juices, I&#8217;ve taken to swallowing a teaspoon or so of coconut oil to offset the sugar rush.  I love how Jill points out that the flax oil in her juices boosts absorption of fat-soluble vitamins as well—it makes me wonder how much vitamin A and vitamin K I&#8217;ve missed out on in countless other green juices by not consuming them with a tiny bit of fat. When doing something as calorie-restrictive as a juice cleanse, this kind of nutrition know-how is invaluable, and casts a different light on the whole experience.</p>
<p>Other examples:  Jill puts her nut milk (which is thoughtfully made with sprouted almonds and whole dates, by the way) in the middle of the day, which offers a greater sensation of fullness throughout the afternoon, and means you don&#8217;t go to bed still digesting a great deal of nut-based fat and protein.  Instead, her last drink of the day is the detoxifying cranberry juice-flaxseed combo to promote movement of the bowels and general flushing of the digestive tract.</p>
<p>Jill&#8217;s frequent and ultra-helpful emails are another big plus, as well as the fact that she&#8217;s available to answer any questions you may have before, during, or after the cleanse.  This level of personal support is a boon to first-time cleansers especially. <p><strong>Chapter 1: How Sweet It Is</strong> is my informative introductory chapter, containing an explanation of the benefits of raw desserts, a <span style="text-decoration: underline;">very</span> detailed ingredient guide, a pantry checklist, an equipment guide, basic techniques and recipe guidelines, and more. I guarantee you&#8217;ll learn something new in this chapter!</p>
<p><strong>Chapter 2: Back To Basics</strong> contains &#8220;staple recipes&#8221;:  plant-based <strong>milks</strong>, butters, flours, and syrups that you can make in advance and utilize in the recipes throughout the book.  (But, psst—these are completely optional!  You can absolutely make the recipes in <em><a href="http://bit.ly/PRDesserts" target="_blank">Practically Raw Desserts</a></em> using storebought nondairy milks, nut and seed butters, etc.; I cover these options in Chapter 1.)</p>
