										<content:encoded><![CDATA[<p>En lækker ret bestående af lam og bønner med mynte blev lavet til de flittige cykelryttere fra Saxo bank sungard på Vuelta españa.</p>
<p>Til 4 pers<br />
1 lammekølle<br />
5 dl fond<br />
2 stilke rosmarin<br />
Skal af 2 citroner<br />
3 spsk honning<br />
2 stjerne anis<br />
1 spsk korianderfrø<br />
1 løg, halveret og karamelliseret<br />
3 dl rødvin<br />
Salt<br />
Peber<br />
Sherry vineddike</p>
<p>500g fava bønner udvandet natten over<br />
1 tsk nellikker hel<br />
1 tsk allehånde hel<br />
1 tsk kardemomme hel<br />
1 kanel stang<br />
frisk mynte</p>
<p>Fremgang </p>
<p>Lammet afpareres, brunes af på en varm pande eller grill og Lægges i et dybt ovnfast fad.<br />
Fond, vin, urter, honning og løg tilsættes &#8211; lammet skal være ca 2/3 dækket af væske.<br />
Fadet dækkes med folie, prik et lille hul på størrelse med et blåbær.<br />
Sættes i ovnen ved 200 grader i 1,5 time &#8211; til lammet er lækkert og pink.<br />
Bønnerne koges i rent vand med krydderier og en tsk salt( pak dem i et klæde så de er nemme at få op igen )<br />
Bring bønnerne til et opkog &#8211; skum af og skrug ned så de simrer. Ca 30 min &#8211; check løbende &#8211; for at sikre en optimal konsisten.</p>
<p>Reducer lagen fra lammet ned til det halve og smag til med sherry vineddike, Salt og peber.</p>
<p>Sigt bønnerne og tilsæt lagen, skær lammet og anret på toppen med frisk plukket mynte.</p>

<p>Røget andebryst på en salat af Rødkål, fennikel og grønne asparges. 4 pers.</p>
<p>ingredienser:</p>
<ul>
<li>1/2 hoved frisk rødkål</li>
<li>2 fennikel</li>
<li>1 bdt grønne asparges</li>
<li>2 røgede andebryster</li>
</ul>
<p>Til dressing:</p>
<ul>
<li>1 dl hasselnøddeolie</li>
<li>1 dl kold presset oliven olie</li>
<li>1 spsk dijonsennep</li>
<li>2 spsk sherryvineddike</li>
<li>2 spsk flydende honning</li>
</ul>
<p>Sådan gør du:</p>
<ol>
<li>Grøntsagerne vaskes godt, og rødkålens yderste blade pilles af</li>
<li>Snit rødkål og fennikel på en mandolin i ca 1.5mm tykkelse</li>
<li>snit asparges i mundrette stykker af ca 3 cm længde</li>
<li>i en skål blandes sennep, eddike og honning.</li>
<li>olien tilsættes i en tynd stråle og piskes ind til en emultion, smag til med honning, eddike og salt og peber efter smag.</li>
<li>skær andebrysterne i tynde skiver</li>
<li>bland rødkål, fennikel og asparges med dressingen og anret på fad med andebryst skiverne på toppen</li>

<p>Gelati di vini har med deres enorme is-ekspertise lavet is igennem de sidste 25 år med lokale frugter, blomster og vine. Med en liste på over 30 forskellige varianter kan nævnes nogle af mine personlige favoritter af de 16 forskellige typer jeg fik lov at spise og smage på. Deres viol is er helt eminent, aldrig før har jeg smagt en is så perfekt, ikke for overparfumeret og ikke for kedelig, Gelati di vini kan virkelig smage deres is til. En anden helt uimodståelig variant var deres moscato di asti, en vin sorbet lavet uden at varme vinen op den mindste smule eller tilsætte en overdøvende sød sukkerlage for tekstur, denne sorbet var som at drikke en tår af den lækreste kølige vin. Den tredje variant der absolut fortjener at blive nævnt er deres koldpressede oliven olie is på mælke-base, dette er den første gang jeg sætter tænderne i en olivenolie is, som ikke var tung og overdøvende. Denne udgave af en olivenolie is gjorde det til en frisk let lækker oplevelse at spise en så speciel smag, som normalt kræver at være i en meget lille mængde eller i sammenspil med en frisk syrlig komponent.</p>

Grundlæggeren af forretningen stod for alt produktion af is lige fra indkøb af frugter og blomster på det lokale marked, forarbejdet og produktionen af ismassen med tilsmagninger af alle varianter samt nedfrysnings processen. Alt i alt en arbejdsdag på 13-14 timer hver dag for at kunne opretholde den perfekte standart.</p>
<p>Så skal du til Sicilien, så er det absolut et MUST at besøge Gelati divini i Ragusa Ibla.</p>
<h1>OPSKRIFT &#8211; Mælkeis med vanilje</h1>
<p>Ingredienser:<br />
7,5 dl sødmælk<br />
100g skummetmælkspulver<br />
125g strøsukker<br />
1 vaniljestang (delt på midten)</p>
<ul>
<li>Bland alle  ingredienserne, med undtagelse af vanilje, i en gryde og varm  forsigtigt under omrøring. Bring  langsomt massen op til kogepunktet, hvorefter massen hældes over i en ren skål for at køle ned.</li>
<li>Skrab frøene ud fra vaniljestangen direkte ned i blandingen, rør og lad det køle af.</li>
<li>Når blandingen er  kold ( skal helst trække natten over for at blive mest aromatisk), hældes ismassen i en ismaskine og køres til passende konsistens.</li>
</ul>
<h2>Denne opskrift kan bruges som base til mange dejlige is-varianter, hvis man undlader vaniljen.</h2>
<p>F.eks.:</p>

<li>Hvis kaffe is, massen hældes over hele kaffebønner og trækker natten over.</li>
<li>hyldeblomst is, massen hældes over de friske hyldeblomster og trækker natten over.</li>

<p>I Juli måned var det tid at at forsøge sig med kokken Thomas Hermans kreationer på restaurant Herman i Nimb, Tivoli.</p>
<p>Thomas Herman er 35 år og har siden han blev udlært i 1996 været vidt omkring, men nok er han mest kendt for sit samarbejde med Thomas Rode fra Kong Hans Kælder, hvor han huserede som køkkenchef i en årerække. Thomas Herman vandt årets kok i år 2000.</p>
<p>Herman er af en meget klassisk skole og kombineret med den nye nordiske mad tankegang, kreerer han smukke og velsmagende retter uden for meget hokus pokus. Er man til moderne innovativ kogekunst er Herman nok ikke lige noget der fænger, men tvært i mod, hvis man er vild med Kong Hans, skal man bare se at komme af sted. Mad stilen er jo uundgåelig tæt op ad Kong Hans stilen, som man kan se blandt andet på smør krukkerne med monogram.</p>
<p>Aftenen var hyggelig men stemningen var en lille smule anspændt, dette var nok resultatet af en lille svipser fra tjenersiden med nogle ombyttede retter og borde. Ingen er perfekte, men med en michelin stjerne er man tæt på.</p>

										<content:encoded><![CDATA[<p>Den uimodståelige lille salte grønne sag er for mange mennesker et no-go, hvilket er en skam. Kapers er en helt fantastisk måde at tilføje sin mad et salt element uden at det rent faktisk er rent salt.</p>
<p>Kapers familien capparidaceae består af ikke mindre en 350 forskellige arter, som alle sammen kan producere helt fantastiske små uåbnede blomster klar til forsigtig håndplukning. Efter håndplukningen, skal blomsterknopperne modnes, dette sker ved at pakke dem tæt i groft havsalt fra 30 og op til 45 dage afhængig af størrelsen. Derefter bevares kapersene enten i saltet eller de udvandes og overhældes en eddikelage og fyldes på glas.</p>
<p>Italien er kendt for at producere nogle af verdens bedste kapers og skal man være helt præcis skal man til de Aeoliske øer nord-øst for Sicilien, hvor øen Lipari er kendt for deres produktion af kapers. Den hårde stærke varme udgør det bedste element for Kapers planeten at gro i.</p>

<p>Kapers er ikke kun en lækker lille sag man kan pifte en ret mad op med, i hvert fald ikke hvis man går op i natur medicin.</p>
<p>Den lille grønne kugle siges at kurere luft i maven og så er den propfyldt med antioxidanten bioflavinoid rutin, som nedsætter de frie radikaler og kort sagt sørger for at huden ældes langsommere.</p>

<p>Bagt torsk med kapers og bacon</p>
<p>indgredienser:</p>
<p>2 stk frisk torsk af 150g.</p>
<p>1 pk Bacon i tykke skiver</p>
<p>2 citroner</p>
<p>1 glas kapers i eddike/salt ( hvis de er i salt skal de udvandes før brug ellers er de ALT for salte at spise)</p>
<p>0,5 pk saltet smør ( ikke kærgården, bakkedal og hvad de ellers hedder)</p>
<p>300g asparges kartofler</p>
<p>1 bdt dild.</p>
<p>* Kartoflerne skrubbes rene og koges med salt og dildstængler</p>
<p>* Fisken krydres med salt og peber og bages ved 175* i ca.8 min på let smurt bagepapir. fisken skal være gennembagt sådan at når man trykker på den deler lamellerne sig let. Det er meget vigtigt at fisken stadig er saftig og at den ikke er blevet bagt for længe så æggehvidestofferne trænger ud &#8211; en fisk der har fået for meget er ikke sjov, så gør dig selv en tjeneste og hold et vakst øje med ovnen.</p>
<p>*Bacon steges sprødt ved mellemhøj varme og lægges til afdrypning på køkkenrulle.</p>
<p>* Lige inden fisken er færdig, varmes en stegepande op og smøres tilsættes, det skal smelte og så begynde at bruse op, man må godt røre i det. Når der dufter dejligt af nødder, tilsættes de drænede kapers og citronsaften. Blandingen emulgerer helt af sig selv til en lækker sauce, der smages til med lidt salt og peber hvis nødvendigt.</p>

										<content:encoded><![CDATA[<p>Den højt elskede klassiker creme brulee har en historie der går flere hundrede år tilbage. De første referencer til en creme brulee stammer helt til bage til 1691 fra en kogebog af Francois Massialot. Navnet i bogen var Creme brulee. Senere hen i 1731 blev en engelsk oversættelse lavet af kogebogen, hvor selv samme opskrift blev omdøbt til creme anglaise og senere hen til burnt cream. Navnet Trinity cream, siges af mange ( specielt englændere) at være original navnet for creme brulee, Da desserten blev introduceret for første gang i England på Trinity college, hvor en af de studerende med nød og næppe fik overtalt kokken til at servere denne dessert, som efter sigende skulle være en engelsk opfindelse.</p>
<p>At franskmænd og englændere er uenige om hvem der har opfundet hvad er jo ikke noget nyt, men uanset hvad er desserten helt sublim.</p>

<p>2 vanille stænger, gerne dejlig Tonga vanille (vanille blog kommer snart)</p>
<p>rørsukker til at brænde.</p>
<p><strong>Fremgangsmåde</strong>:</p>
<p>* Æggeblommerne hældes i en glasskål</p>
<p>* sukker, fløde og vanilje bringes i kog i en tykbundet gryde, så det ikke brænder på.</p>
<p>* Legeringen: den varme masse hældes stille og roligt ned i æggeblommerne imens der røres med en dejskraber. Massen skal tykne op, så det må ikke gå for langsomt med at få den varme masse ned i æggeblommerne. Man kan lave træske tricket for at se om den er tyk nok, dyp en træske ned i massen og træk en finger over, hvis træskeen forbliver ren der hvor du har trukket er den tyk nok. ellers må man legere videre på lav varme uden at ægget koagulerer. Dette er en langvarig process, så hav tålmodighed og lad være med at skrue op for varmen fordi det ikke går hurtigt nok. Lav træske tricket igen ind til den er tyk nok.</p>
<p>Hældes i cocotter og sættes i vandbad i en 98* varm ovn.</p>
<p>Bages indtil texturen når man banker let på cocotten virker som gele.</p>
<p>Creme bruleerne sættes på køl indtil de er gennem kolde og har sat sig helt.</p>
<p>Ved servering drysses de med rørsukker som bankes rundt og overflydende sukker hældes fra. Kanterne tørres rene og derefter brændes creme brulee&#8217;en jævnt stille og roligt i en cirkulær bevægelse fra yderst til inderst.</p>

<p>Familiært er fuglegræs i nellike familien og siges at være god for fordøjelsen. I Tollundmandens mavesæk er der også fundet fuglegræsfrø, hvilket tyder på at dette var en helt almindelig spise tilbage i den ældre jernalder.</p>

Det er op til en selv hvad man synes den spænder godt med, kun fantasien sætter grænser.</p>

<p>Det skal du bruge til 2 personer:</p>
<p>4 friske jomfruhummere</p>
<p>1 agurk</p>
<p>2 bdt dild</p>
<p>1 dl raps olie til dild-olie + 4 dl raps olie til stegning af chips.</p>
<p>1 dl tapioka perler</p>
<p>4 asparges kartofler</p>
<p>fuglegræs fra haven.</p>
<p>Sådan gør du:</p>
<p><strong>Dill olie</strong>: bring en gryde i kog og blancher det plukkede dild og smid derefter hurtigt i isvand. Pres alt vandet ud af dilden og hvis muligt lad det tørre  en anelse. Olien varmes op til 70 grader c. og blendes på kraftfuld blender i 10 min til en helt fin pure. Pureen hældes over i kaffefilter og stilles tilside så den grønne olie kan løbe igennem.</p>
<p><strong>Kartoffel chips</strong>: skrub kartoflerne rene og snit dem på en mandolin ca. 0,5 mm lægges i koldt vand og på køl en halv times tid. olien varmes op i en tykbundet gryde til 160*c og de afdryppede kartoffelskiver steges gyldne og afdryppes og saltes.</p>
<p><strong>Tapioka perler:</strong> 2 liter vand bringes i kog med salt, perlerne smides i og koges for fuld blus indtil de er klare hele vejen igennem. De sigtes fra og skylles med kold vand for at de ikke skal klistre sammen.</p>
<p><strong>Agurk</strong>: Agurken skrælles og stikkes ud med parisienne-jern, eller skæres i tern, hvis man ikke lige har udstyret. undlad at skære agurkekernen i tern, da den godt kan være bitter og syrlig og spise. Agurken vendes i lidt sherryvineddike og koldpresset rapsolie og stilles på køl indtil brug.</p>
<p><strong>Jomfruhummer</strong>: Jomfruhummerne skal være helt friske og IKKE lugte af havn på en varm sommerdag. Halerne tages af forsigtigt helt oppe ved hovedet. derefter trykkes begge sider af halen let sammen så rygskjoldet knækker let. Derefter presses siderne fra hinanden og halen kan forsigtigt tages ud. En meget varm pande tilsættes en smule olie og en lille smule flagesalt (maldon) derefter lægges rygsiden af halerne ned på panden i 20 sek. En spsk smør tilsættes og bruser op imens halerne vendes hurtigt og så tages af panden til afdrypning på køkkenrulle.</p>
<p>Agurkekugler, tapioka og dild-olie blandes og smages til med salt og syre.</p>
<p>Anrettes med kærlig hånd lige når halerne er færdige.</p>
<p><strong>God tur i haven og god appetit.<br />

										<content:encoded><![CDATA[<p style="text-align:left;padding-left:30px;">August blev måneden, hvor Relæ blev klar til at slå dørene op.</p>
<p style="text-align:left;">Den tidligere Noma kok, Christian Pugliesi har ikke bare åbnet en helt ny restaurant, men en helt ny måde at gå ud på. Konceptet er helt enkelt og ikke til at misforstå, fire retter til 325 kr. med mulighed for tilvalg af ost. Aldrig mere skal man bryde sit hoved med hvad man skal vælge fra kortet, det hele er bestemt for en. Hvis man ikke hører til den kødædende del af befolkningen er der søren dæleme også tænkt på det, så kan man jo bare springe på vegetar-menuen.</p>
<p style="text-align:left;">Maden er ærlig og veltilberedt uden dikkedarer af de bedste råvarer fra små gårde i Danmark og Sverige. Interiøret henleder tankerne til en kombination af et 80&#8217;er lærerværelse og restaurant Momofuko i New york, alt i alt en lækker pakke midt på Nørrebro.</p>
<p style="text-align:left;">Første retten på Menuen var syltet makrel,blomkålscreme, blomkålscrudité, på en lemoncurd.</p>
