Who doesn’t enjoy a warm cup of hot chocolate on a cold winter’s day? I’ll be the first in line for that. As a kid, I remember opening up a packet of Swiss Miss Cocoa and thinking it was pretty darn good. We always had the sugar-free version in the house, but looking back, I remember that lingering flavor of the artificial sweetener. You won’t experience that with this recipe. It’s just pure delight and extremely fast and easy to make. If you can get your hands on a milk pan with a built-in pour spout, it makes it so easy to pour into the mug without spilling a drop. I do add my secret ingredient to the mix… its instant coffee. Chocolate always tastes better with a touch of coffee flavor added in!

Ingredients

• 1 ½ cups of milk (Feel free to use your preferred type; I personally enjoy unpasteurized cow’s milk with the cream intact.)
• 1 tablespoon of cocoa powder
• 1 scoop of chocolate protein powder or collagen powder (If your powder is unsweetened, add 1T of your preferred sugar.)
• ¼ teaspoon of vanilla extract
• ¼ teaspoon of instant coffee (if making for kids use decaf coffee)

A FAMILY FAVORITE

Have you ever glanced at the long list of ingredients on a packet of taco seasoning, many of which you can’t pronounce or have never encountered? I certainly have, and I wasn’t pleased with what I found. As a result, I created my own recipe packed with healthy herbs and spices, completely free of the undesirable additives. Many of the herbs I use come from my own garden, which makes it easy to whip up a batch with fresh ingredients. Every time I use store-bought taco seasoning, I end up with a terrible headache. However, with my homemade recipe, I experience no headaches, and my family enjoys it even more than the store-bought version. It’s a fantastic addition to any pantry for a quick taco night!

Taco Seasoning Recipe

• 1 T chili powder
• 1½ tsp cumin
• 1 tsp pepper
• 1 tsp salt
• ½ tsp smoked paprika
• ½ tsp garlic powder
• ½ tsp onion powder
• ½ tsp dried oregano
• ¼ tsp red pepper flakes

Combine all ingredients in a container with a secure, airtight lid. For seasoning, use 1 teaspoon per pound of meat, or adjust to your preference for a spicier flavor.

MY FAVORITE ROOM TO DECORATE EACH SEASON

One of my favorite spaces to decorate every season is our front porch. When the temperature hovers around 50 degrees, you can often find me there, engrossed in a good book. My laundry line stretches across the porch, so it’s common to see laundry hanging out to dry, which, by the way, happens to be my favorite chore.

KEEPING IT SIMPLE YET ATTRACTIVE

I don’t go to great lengths to decorate this area; I prefer it to be both attractive and simple. I enjoy gathering items I already have around the house and making them work together. While I occasionally buy a few new pieces, storage is a concern for me. I have room for seasonal items, but I dislike the clutter they create.

AVOID THE CLUTTER

Clutter tends to stress me out, so I prefer to reuse or thrift items. This way, if I choose to donate things back to a charity shop, I haven’t invested too much money. One helpful tip I have is to buy or make throw pillow covers instead of purchasing new pillows. Covers are much easier to store than a variety of pillows, allowing me to keep a few pillow forms and use them repeatedly.

KEEPING IT COZY

Cozy throw blankets are also great for seasonal decorating. When my off-season blankets aren’t in use, I store them in a space bag and vacuum seal them flat. It’s incredible how much more space that creates in the linen closet.

ADD NATURAL ELEMENTS

This year, I picked up three real pumpkins for decoration on clearance at the grocery store. Once I’m ready to transition to my winter decor, my chickens will enjoy them. Pumpkins serve as a natural wormer and provide extra food for them as the ground freezes and becomes devoid of bugs. Chickens can get bored during the winter months, cooped up waiting out storms, so adding something like half a pumpkin can help alleviate their boredom.

While the space isn’t fancy by any means, it reflects my style and complements the rustic charm of our cabin!

Why Dessert for Dinner?

Okay, before you judge, let me explain. I don’t do this every night, or even every week. This is a very occasional thing, reserved for those moments when my dark chocolate cravings hit a fever pitch. I’m just not a salty craving person – I’m not tempted by chips, candy, cookies, or cakes. But dark chocolate? That’s my weakness. And sometimes, that weakness translates into a full-blown fudge brownie for dinner kind of night.

Adding cottage cheese into the mix is a way to boost the protein, which means that even though this is an indulgence for my palette, my body is still getting the fuel it needs.

Why Cottage Cheese?

I know, I know, cottage cheese isn’t exactly a traditional dessert ingredient. But hear me out! It’s packed with protein, relatively low in calories, and surprisingly versatile. It also helps to create a really creamy texture without adding a ton of fat. If you’re not a fan of the taste, don’t worry, the chocolate flavor completely masks it.

Final Thoughts

This might not be everyone’s cup of tea (or bowl of cottage cheese!), but it works for me. It’s a way to indulge my chocolate cravings without completely derailing my healthy eating habits. It’s important to listen to your body and find what works for you. And sometimes, that means having dessert for dinner… with a side of cottage cheese!

• Pour the batter into your dish, sprinkle chips on top.
• Step 3: Assemble the Brownie
• Microwave the brownie for 1.5 to 2 minutes. For a gooey center, microwave for 1.5 minutes. If you prefer a more cake-like texture, opt for 2 minutes.

NOTE

Use a larger microwave dish than you think you’ll need. The mixture will bubble up and drip over the sides making a mess if the dish is to small.

SECRET INGREDIENT

Instant Coffee…. this is my prefered way of making this recipe. Anything that has a rich chocolate flavor always tastes better with a hint of coffee to me. Add as much or as little as you like. I’d start with 1/2 tsp and adjust from there.

Our side porch is the heart of our daily comings and goings. The front door remains mostly unused unless we have unfamiliar visitors. This year, my decorating efforts were minimal but meaningful. I placed an old wicker chair, a garage sale treasure from years ago that only cost me $3. Originally intended as a cozy spot for our cat, it remains unused by our feline friend. However, it does serve as a charming decorative piece.

To add a touch of vintage flair, I adorned the chair with a velvet rust pillow, a delightful thrift find. The color is wonderfully nostalgic, reminiscent of the 1970s hues that filled my childhood home. Adding to the scene is a bittersweet vine, purchased since this year’s wild crop was elusive.

Although the rectangular rug under my round table feels unconventional, it was what I had, so I made it work.
