Numa tigela grande, misturar a farinha, o amido, o ovo, o sal e 1/2 colher de chá de pimenta até formar uma pasta grossa. Adicionar as asas e misturar muito bem com as mãos.&lt;br /&gt;Colocar as asas numa panela e regar com o óleo. Fechar a tampa e deixar cozinhar por 35 minutos, até que estejam douradas e crocantes. Escorrer bem.&lt;br /&gt;Numa panela grande, levar a ferver a água, o gengibre, o molho de soja, o açúcar mascavo, o vinagre e o xarope de milho. Deixar cozinhar até que a mistura se torne viscosa e grossa. Misturar a farinha, a água e o sal até ficarem bem unidos.&lt;br /&gt;Picar as partes verdes do cebolinho. Reservar as partes brancas.&lt;br /&gt;Aquecer uma camada fina de óleo vegetal numa frigideira, de preferência não aderente, até ficar quente. Fritar o cebolinho até que esteja completamente cozido e macio. Adicionar um toque de molho de soja quando estiver quase pronto.&lt;br /&gt;Neste ponto, pode-se adicionar também camarão e outros vegetais, a gosto.&lt;br /&gt;Despejar a massa de panquecas sobre o cebolinho, espalhando a massa, Deixar cozinhar alguns minutos.&lt;br /&gt;Verter o ovo batido na panela, em redemoinho. Distribuir os fios secos de pimenta sobre o ovo e cozinhar.&lt;br /&gt;Com uma espátula larga, virar a panqueca e cozinhar por mais um minuto ou dois até que o ovo esteja definido e, de preferência crocante nas bordas.&lt;br /&gt;Deslizar a panqueca sobre uma tábua, e depois arrefecer à temperatura ambiente. Preparação:&lt;/h3&gt;
Pré-aquecer o forno a 162º C.&lt;br /&gt;Forrar o fundo de uma forma de 22-23cm com papel manteiga. Pulverizar com spray antiaderente e polvilhar com cacau em pó.&lt;br /&gt;Numa tigela grande, misturar o cacau em pó, as nozes, a farinha, a fruta cítricas cristalizada, a canela, o gengibre, a pimenta, a noz-moscada e o pó chile vermelho.&lt;br /&gt;Derreter o chocolate numa tigela pequena sobre uma panela com água a ferver. Retirar do fogo e mexer bem.&lt;br /&gt;Numa panela equipada com um termómetro, aquecer o açúcar e o mel até que a temperatura atinja os 115º C.&lt;br /&gt;Despejar a calda de mel quente sobre a mistura de nozes e mexer bem. Verter a massa na forma já preparada e alisar a superfície.&lt;br /&gt;Asse por 35 - 40 minutos. O centro fica suave, como creme e ao tocar o dedo sai limpo. Deixar arrefecer sobre uma gradinha por 15 minutos. De seguida, passar uma faca ao redor da borda para soltá-lo da panela. Retirar cuidadosamente, depois de deixar arrefecer completamente.&lt;br /&gt;Descascar o papel manteiga. Polvilhar com açúcar em pó.&lt;br /&gt;

Preparação:&lt;/h3&gt;
Derreter a manteiga com o azeite numa panela grande e pesada, em fogo médio. Adicionar as cebolas e cozinhar até ficar macio, mexendo sempre, cerca de 5 minutos. Adicionar o alho e mexer 1 minuto. Juntar os tomates e cozinhar até começar a amolecer, mexendo sempre, cerca de 2 minutos. Adicionar o vinho branco e 1 chávena de água. Deixar ferver. Reduzir o fogo, tapar e cozinhar por 20 minutos para misturar os sabores.&lt;br /&gt;O caldo pode ser feito um dia antes. Deixar esfriar um pouco, cobrir e levar à geladeira.&lt;br /&gt;Levar o caldo a ferver. Adicionar as amêijoas, tapar e cozinhar até as amêijoas abrirem, de 3 a 5 minutos (descartar qualquer mariscos que não abra). Transferir as amêijoas para uma tigela grande; cobrir com papel de alumínio para manter quente.&lt;br /&gt;Adicionar manjericão, salsa, orégãos e pimenta vermelha esmagada ao caldo. Adicionar a linguiça. Adicionar água se estiver muito seco. Juntar as amêijoas com todo o molho acumulado para a panela. Tapar e cozinhar até as amêijoas estarem quentes e a massa macio, mas ainda firme, cerca de 3 minutos. Temperar a gosto com sal e pimenta.&lt;br /&gt;Juntar a linguiça e misturar os mariscos para um prato raso grande, de servir.&lt;br /&gt;

&lt;li&gt;Manteiga e Açúcar adicionais, para preparar os pratos de cozimento&lt;/li&gt;

Preparação:&lt;/h3&gt;
Barrar as formas com manteiga. Polvilhar com algumas colheres de açúcar, inclinando o prato para espalhar o açúcar e cobrir o fundo e os lados. Retirar qualquer excesso.&lt;br /&gt;Pré-aquecer o forno a 200º C.&lt;br /&gt;Usar um batedor para esmagar o creme de queijo, a gema dos ovos, o queijo de cabra e a raspa de limão até que a mistura fique completamente lisa.&lt;br /&gt;Bater as claras numa tigela, limpa e seca (não de plástico) até formar espuma, com o sal. Aumentar a velocidade, até formar claras em castelo. Adicionar o açúcar gradualmente, uma colher de sopa de cada vez. Depois de adicionar o açúcar, bater bem.&lt;br /&gt;Juntar um terço das claras em castelo à mistura de queijo de cabra e de seguida adicionar as claras restantes até as incorporar bem.&lt;br /&gt;Dividir a massa nas formas de cozimento já preparadas e polvilhar os suflês com uma camada uniforme de açúcar, aproximadamente 1/2 colher de chá em cada um.&lt;br /&gt;Assar os suflês na prateleira do meio do forno por 10 a 15 minutos, até que o topo esteja lourinho. Dependendo do forno, pode demorar mais algum tempo ou menos.&lt;br /&gt;

Ingredientes:&lt;/h3&gt;
&lt;ul&gt;
&lt;li&gt;110g de Farinha&lt;/li&gt;
&lt;li&gt;3/4 Colher de Chá de Fermento em Pó&lt;/li&gt;
&lt;li&gt;Uma Pitada de Sal&lt;/li&gt;
&lt;li&gt;4 Maçãs, grandes (uma mistura de variedades)&lt;/li&gt;
&lt;li&gt;2 Ovos, grandes&lt;/li&gt;
&lt;li&gt;150g de Açúcar&lt;/li&gt;
&lt;li&gt;3 Colheres de Sopa de Rum&lt;/li&gt;
&lt;li&gt;1/2 Colher de Chá de Essência de Baunilha&lt;/li&gt;
&lt;li&gt;115g de Manteiga, sem sal, derretida&lt;/li&gt;
&lt;/ul&gt;

Preparação:&lt;/h3&gt;
Pré-aquecer o forno a 180º C e ajustar a grelha para o centro do forno.&lt;br /&gt;Barrar uma forma com manteiga.&lt;br /&gt;Numa tigela pequena, misturar a farinha, o fermento e o sal.&lt;br /&gt;Descascar as maçãs, retirar o núcleo e pica-las em pedaços.&lt;br /&gt;Numa tigela grande, bater os ovos até fazer espuma. De seguida, misturar o açúcar, o rum e a baunilha. Misturar metade da mistura de farinha e, de seguida, misturar delicadamente metade da manteiga derretida.&lt;br /&gt;Juntar o resto das misturas e mexer bem.&lt;br /&gt;Juntar a maçã aos cubos até que estejam bem revestidos com a massa. Despejar na bandeja de bolo preparada anteriormente e alisar a superfície com uma espátula.&lt;br /&gt;Assar o bolo por 50 minutos a 1 hora, ou até que uma faca inserida no centro saia limpa. Deixar o bolo esfriar por 5 minutos e, de seguida, passar uma faca ao redor da borda para soltar o bolo da forma e retirar cuidadosamente os lados da bandeja de bolo, certificando-se de que as maçãs não estão presas a ele.&lt;br /&gt;Servir as fatias do bolo isoladas, com creme de leite ou gelado de baunilha.&lt;br /&gt;
