Potato Salad

Each family has those recipes that are at every gathering and you wouldn't think of gathering with out it being on the table. This is one of those recipes in our family. Both my side of the family and my husbands uses the same recipe for potato salad. Growing up in the same county in rural upstate New York recipes and the way you do things are pretty similar.

This is one of the best potato salad recipes that you will ever taste. I never liked potato salad until I had this kind, once you try it you will agree that it is pretty tasty. We are coming to the time of year that potato salad is great with just about any meal.

BBQ Chicken

One of the great things about warmer weather is the joy of grilling. BBQ anything has always been one of my favorites. The stickier and messier they are the better they are. If it isn't finger lickin good then it's not BBQ chicken.

Hope you all enjoy, this is one of my favorites. And I usually double the recipe so that I have enough BBQ sauce to dip the chicken in too. You can never have enough BBQ sauce on your chicken. The recipe that follows is already doubled for you!

Grilled Provoleta

The first time I had grilled provoleta was when a missionary from Uruguay introduced it to us while staying at our house. What is grilled provoleta you may ask? It is a wedge of provolone cheese cut about 2 cm thick and grilled until melted through and a touch crispy on the outside. This is not one of those tasty treats that you leave on the grill...but it takes a watchful eye to flip it at the precise time. A touch messy on the grill but oh so worth it! A great appetizer for any meal and with the grilling season knocking at our door, I am sure you will find it unique and very tasty.

It's that time of year when everyone paints or dyes easter eggs. My family did the same. Even though none of us are kids anymore we all enjoyed painting easter eggs this easter. We used a combination of things to decorate. We painted some of them and dyed others and then we used a combination of dying and painting too. You can be very creative with them and it is a great activity for the kids too! A great way to create those lasting memories.

My mom makes the very best apple pie. Not only does she make the very best but she always makes them in large quantities and freezes them for future use. So if you like homemade pie without the work make a bunch at a time and freeze them. Use a foil pie dish and wrap tightly in plastic wrap first and then in some foil. When you are ready to use them pull it out of the freezer, and without defrosting it stick it in the oven to bake. Great for last minute guests who happen to drop by or for a night when you want a home baked pie with none of the work!

Guacamole is a perfect dish for many occasions. Great as an appetizer or just a snack. Can also accompany some tacos, burritos or any other Mexican dish you are serving up. Summer time is the best time to eat this fresh and tasty dip, but I can't wait for just summer time to delve into guacamole. I just couldn't resist making some for my super bowl party!!

There are many ways to make guacamole but the following recipe is how I make mine. This is a great snack that can be a little more on the healthy side. Even though avocados are high in calories they are rich in many other nutrients that make them worth the calories.

Corn Bread Stuffing

I have always been a huge fan of stuffing. Especially when it comes time for a traditional meal such as Christmas or Thanksgiving. Usually we make the traditional stuffing and we don't really deviate from that tradition. This year we tried something a little different which I have to be honest I had my reservations about. We switched it up with some cornbread stuffing. Now this recipe comes from the heart of the south. One of my mom's co-workers gave her this recipe and told her it would be one of the best she had ever tasted. So we gave it a whirl and indeed it was. Now that we have tried something new; we are never going back. It was one of the best stuffings that I had ever tasted!! Sure to be a winner. So if you are looking for something new....just give it a try!

It was a tasty feast! The recipe we used to make these mushrooms was one of our own. There are so many out there and we just added some of this and that and the result was very tasty!! So if you are looking for some new ideas to serve to some dinner guests you may want to give this one a try. It was a crowd pleaser.

Spinach Tortellini Soup

My husband and I recently visited family in upstate New York. While we were there my brother and sister-in-law, shared this wonderful recipe with me. Not only was it very tasty, but it had so much wonderful color as well!

This is one of those soups that can serve as the whole meal. It is very hardy and has lots of tasty veggies in it.

Edie's Chicken and Rice Casserole

Growing up this was a meal that my aunt made for most of our family gatherings. We always called it Edie's Chicken. Now when you serve rice as one of the main courses most of the men in the Clum household turn up their noses but for me and my mom it was sure to be a winning recipe. It is a great way to use up some of those holiday leftovers too. You can definitely substitute chicken for some turkey.
