<p style="text-align: left;">In my attempt to make my existing <a href="http://dessertswithbenefits.com/key-lime-pie-revisited/" target="_blank">Key Lime Pie recipe</a> a little bit more &#8220;authentic&#8221; (aka, omitting the protein powder, gelatin and time-consuming homemade key lime &#8220;syrup,&#8221;), I made this <em>beyond freaking amazingly delicious</em> Key Lime Cheesecake  (I hope that description made sense?)</p>
<p style="text-align: left;"><strong>My point</strong>:  this cheesecake is the bomb and you need to make it.  NOW.</p>
<p style="text-align: left;">This Key Lime Cheesecake is thick, creamy and perfectly tangy.  It is a unique upgrade to the typical key lime pies you would find at a bakery, which contain a ton of sugar from the sweetened condensed milk.  This cheesecake also happens to be a jaw-dropping crowd pleaser, which I know from personal experience  :)</p>

<p style="text-align: left;">Everyone who tried this cheesecake thought it was unhealthy and high calorie but it is the total opposite.  This healthy Key Lime Cheesecake is made with Greek yogurt instead of fattening and high-cholesterol cream cheese, which my taste-testers loved and appreciated, and they raved about homemade graham cracker crust.</p>
<p style="text-align: left;">I was curious as to how my cheesecake would stack up to other Key Lime Cheesecakes, so here is a nutrition label comparison between the <a href="http://allrecipes.com/recipe/key-lime-cheesecake-i/" target="_blank">AllRecipes recipe</a> and the DWB recipe.  The AllRecipes label is on <em>the left</em>, the DWB label is on <em>the right</em>:</p>

<p style="text-align: left;">Wow, what a difference right?!  You can have TWO slices of my healthified Key Lime Cheesecake for LESS calories than the AllRecipes version!  Plus, you save yourself 25g of fat, 15g of saturated fat and 27g of sugar.  Oh, and with my version you also avoid the dangerous and unhealthy trans fats.  I think we all know which cheesecake we would go for  ;)</p>

Scoop into the molds and microwave for about 4 minutes and 30 seconds, or until surface springs back when tapped.  Remove cupcakes from molds and lay them on their sides, let cool slightly.

<p style="text-align: left;">After (finally) perfecting my <a href="http://dessertswithbenefits.com/red-velvet-cake-with-vanilla-frosting/" target="_blank">Healthy Red Velvet Cake recipe</a> I thought about making an eggless version for those who are allergic to eggs or those who choose not to eat eggs, like vegans.  Before taking on that mission though, I never would have known what a difficult task making a cake <em>eggless</em> was going to be!</p>

<p style="text-align: left;">In the first two failed recipes, I used Ener-G egg replacer to omit to the eggs.  <em>Toootally</em> didn&#8217;t work.  The cake was like a dense and gooey red brick.  The only way I could avoid salvage the cake was by blending it into a chocolate smoothie (and it was pretty darn good that way, surprisingly!)</p>
<p style="text-align: left;">In the next trial, I used blended tofu.  This helped add bulk to the cake so that it didn&#8217;t collapse and condense, however it was heavy and still pretty dense.</p>
<p style="text-align: left;">In my final trial, I continued with the tofu puree, decreased the liquid ratio and increased the baking powder.</p>

<p>The result?  A moist and lovely, dense red velvet cake with a mousse-like chocolatey frosting.  You would never guess that this is vegan.  I wish I could have made the cake super light and fluffy somehow but I am perfectly happy with what I got here.  The contrast between the dense cake and light-as-air frosting is <em>divine</em>.  I always wished red velvet cakes had more chocolate in them so my prayers were answered with this oh-so-delicious chocolate mousse frosting  :)</p>

</div><li id="zlrecipe-instruction-1" class="instruction" itemprop="recipeInstructions">Preheat the oven to 350 degrees Fahrenheit and spray two 6" cake pans with cooking spray.
</li><li id="zlrecipe-instruction-2" class="instruction" itemprop="recipeInstructions">In a stand mixer bowl with whisk attachment, add the beet puree, vanilla sugar, food coloring and extracts and mix on low.
</li><li id="zlrecipe-instruction-3" class="instruction" itemprop="recipeInstructions">*Drain a package of firm tofu and press lightly to remove excess water.  Cube the tofu and put into a food processor, blend until smooth, scraping down the sides when necessary.  Measure 3/4 cup and add to the mixing stand mixer.
</li><li id="zlrecipe-instruction-4" class="instruction" itemprop="recipeInstructions">In a small microwave-safe bowl, add the almond milk and coconut oil.  Microwave at 25-second intervals, stirring between each one until oil is melted.  Pour into the mixing stand mixer.
</li><li id="zlrecipe-instruction-5" class="instruction" itemprop="recipeInstructions">In a medium-sized bowl, whisk together the sorghum flour, rice flour, cocoa powder, baking powder and salt.
</li><li id="zlrecipe-instruction-6" class="instruction" itemprop="recipeInstructions">Add the vinegar to the mixing stand mixer, then slowly add the dry ingredients.  Increase mixer speed to medium-high and mix until batter is even and everything is well incorporated (~20 seconds)
</li><li id="zlrecipe-instruction-7" class="instruction" itemprop="recipeInstructions">Scoop/pour batter into the prepared pans and spread/flatten the surface.  Bake for ~40 minutes, or until the surface springs back when tapped.
</li><li id="zlrecipe-instruction-8" class="instruction" itemprop="recipeInstructions">Cool cakes in the pan for 15 minutes then flip over onto a wire cooling rack and let cool completely.

</div><li id="zlrecipe-instruction-10" class="instruction" itemprop="recipeInstructions">In a large bowl, whisk together the yogurt, tofu puree, almond milk and extracts.
</li><li id="zlrecipe-instruction-11" class="instruction" itemprop="recipeInstructions">Whisk in the cocoa powder, then whisk in the protein powder.
</li><li id="zlrecipe-instruction-12" class="instruction" itemprop="recipeInstructions">Frost the cake, then refrigerate for ~40 minutes.

<div style="text-align: center;">I have been making a ton of <a href="http://dessertswithbenefits.com/homemade-marshmallows/" target="_blank">marshmallows</a> lately, I guess I&#8217;m still in shock that we can make these puffy white clouds of sugariness at home.  So I tried making <a href="http://dessertswithbenefits.com/category/krispy-treats/" target="_blank">krispy treats</a> with them.  It&#8217;s <a href="http://www.ehow.com/how_2314472_celebrate-national-strawberry-month.html" target="_blank">May, national strawberry month</a>, so I thought I would add some strawberries to the mix!</div>

</li><li id="zlrecipe-instruction-2" class="instruction" itemprop="recipeInstructions">In a large pot, melt the coconut oil over medium heat.  Remove from the heat and stir in the protein powder.  Once incorporated, add the marshmallows and stir until all has melted.
</li><li id="zlrecipe-instruction-3" class="instruction" itemprop="recipeInstructions">Remove pot from heat and dump in the dry cereal mix.  Fold together with a rubber spatula.  Once incorporated, fold in the dried strawberries.

<p style="text-align: left;"><em>Would my brownies feel just as fudgy?</em></p>

<p>I made this cake <em>three</em> times in order to perfect the cake&#8217;s flavor and texture.  Each time I made a different chocolate fudge frosting but only liked two of them.  Chocolate Frosting #1 was made with yogurt, dark cocoa powder and powdered erythritol.  Chocolate Frosting #2 was made with <a href="http://astore.amazon.com/chockohlawtay-20/detail/B003ATUDKU" target="_blank">chocolate protein powder</a>, almond milk and <a href="http://www.naturesflavors.com/sweetnol-vanilla-flavor-syrup-14343.html" target="_blank">vanilla sweetnol syrup</a>.  Both frostings were delicious but it depends on your taste for which one to use.  Frosting #1 was dark, light and fluffy,  Frosting #2 was milk-chocolatey, dense and fudgy.</p>

<p style="text-align: left;">I am so glad I finally healthified Yellow Cakes &#8212; who needs 8 egg yolks, bleached flour and refined sugar?  No one!  You will be so surprised to know that this cake is healthy (I would even call it <em>guilt free</em>), moist, buttery and rich, just without the butter, cholesterol and sugar (check out the nutrition label comparison below)!</p>

</li><li id="zlrecipe-instruction-2" class="instruction" itemprop="recipeInstructions">In a stand mixer bowl with whisk attachment, add the applesauce, warm almond milk, melted coconut oil, egg whites, extracts and food coloring/turmeric.  Mix on low while you gather the dry ingredients.
</li><li id="zlrecipe-instruction-3" class="instruction" itemprop="recipeInstructions">In a small bowl, whisk together the sorghum flour, brown rice flour, vanilla sugar, starch, baking powder, baking soda and salt.

</li><li id="zlrecipe-instruction-5" class="instruction" itemprop="recipeInstructions">Slowly add the dry ingredients to the stand mixer.  Increase mixer speed to medium and beat mixture for about 30 seconds.
</li><li id="zlrecipe-instruction-6" class="instruction" itemprop="recipeInstructions">Pour batter evenly into the prepared pans and bake for ~42 minutes, or until the surface is firm and springs back when tapped.

</div><li id="zlrecipe-instruction-8" class="instruction" itemprop="recipeInstructions">In a microwave-safe bowl, add the yogurt and coconut oil.  Microwave at 15 second intervals, stirring between each one, until coconut oil is melted (do not let mixture get too hot).

</li><li id="zlrecipe-instruction-10" class="instruction" itemprop="recipeInstructions">Whisk in the erythritol, then whisk in the cocoa powder.  Refrigerate the frosting for ~15 minutes, or until firmer.
</li><li id="zlrecipe-instruction-11" class="instruction" itemprop="recipeInstructions">Frost the cake (I frosted the bottom cake layer first, refrigerated for ~20 minutes, topped the bottom layer with the top layer, frosted and then refrigerated for ~20 minutes).  Slice and serve!

Whisk the batter until everything is incorporated and batter is even (batter should be thick, kind of like muffin batter)

</li><li id="zlrecipe-instruction-1" class="instruction" itemprop="recipeInstructions">In a large bowl, stir together the almond butter, almond milk, salt, coconut sugar and vanilla extract.
</li><li id="zlrecipe-instruction-2" class="instruction" itemprop="recipeInstructions">In a small bowl, whisk together the oat flour and baking soda.  Dump into the wet ingredients and fold together (dough should be thick and able to form into a ball)
</li><li id="zlrecipe-instruction-3" class="instruction" itemprop="recipeInstructions">Break off chunks of the dough and roll into 1" balls.  Flatten them between your palms and place on a baking sheet.
</li><li id="zlrecipe-instruction-4" class="instruction" itemprop="recipeInstructions">Use a teaspoon measure to make "thumbprints" in the cookies, and fix any large cracks that form on the edges of the cookie.
</li><li id="zlrecipe-instruction-5" class="instruction" itemprop="recipeInstructions">Fill each "well" with some fruit spread, then bake for ~12 minutes, or until the edges of the cookies look dry and fruit spread bubbles slightly.
