<p>Meursault is an Appellation d&#8217;origine contrôlée (AOC) that is located a mere 7 km from the beautiful town of Beaune.  This quaint old village is home to the famous Hotel Dieu, once the spot of a hospital back in the 15<sup>th</sup> century, and still remarkably well-preserved.  There is a lot of fascinating history in Beaune, from the ancient walls surrounding the area to the medieval buildings found scattered throughout, including a 12<sup>th</sup> century clock tower.  It’s a fantastic place to cycle through or enjoy a leisurely stroll.  There are also plenty of shops and restaurants to visit and get a true feel of the Burgundy region.</p>
<p>Perhaps what Meursault is best known for, as are many Burgundy towns and villages, is the exquisite fine wine that is produced there.  While there are a handful of red varieties, the vast majority (nearly 98%) of the wine that comes out of Meursault is white.  To put it into perspective, of the 2.5 million bottles produced in Meursault annually, less than 50,000 bottles are red wine.</p>
<p>There are several classifications, or climats, of wine in Meursault which are generally divided into Northern and Southern.  Many of these are highly regarded Premier Cru, which is the second-highest classification level of wine, rated below that of <em>Grand cru</em> but above the basic village AOCs.  There are five climats in the north which make up Santenots, and four climats in the south of the commune.  The resulting wines typically exhibit an oak influence and are often described as “buttery”.</p>

<p>Of all the beautiful destinations in Normandy, Honfleur is perhaps the most picturesque.  That may have something to do with the historic city’s location, on the left bank of the mouth of the charming River Seine.  Not surprisingly, images of sailboats and seascapes abound making the area a favorite among artists.  In fact, Honfleur has been nicknamed the “city of painters” because it provides such a rich source of artistic material.  There is much to see in this sleepy town, with its peaceful atmosphere and old-time feel.  It is undoubtedly one of the must-see destinations in France.</p>
<p><a href="http://www.discoverfrance.com/blog/wp-content/uploads/2012/01/Honfleur©SL-Convergencephotos.com_.jpg"><img title="Honfleur©SL-Convergencephotos.com" src="http://www.discoverfrance.com/blog/wp-content/uploads/2012/01/Honfleur©SL-Convergencephotos.com_-300x199.jpg" alt="" width="217" height="143" align="left" /></a>One of the most appealing locations in Honfleur is the Old Dock, which features breathtaking old sailing ships traveling in and out as they moor.  Just as beautiful is the Old Dock’s background, which boasts rows of houses with brilliantly colored terraces.  Some buildings reach as high as six stories, yet incredibly are only wide enough for one room.  Visitors are often amazed at the appearance that these houses have – it’s almost as if they’re all attached and holding one another up!  The contrast of bright colors, crisp white sails and dark blue water is simply amazing.</p>
<p>&nbsp;</p>
<p>Another popular site in Honfleur is Saint Catherine’s Church, an exquisitely designed structure made entirely out of wood.  A carved tribute to Saint Catherine, grasping a wheel and a sword, is located above the porch of the bell tower.  The oldest part of the church dates back to the 15<sup>th</sup> century, having been built right after the Hundred Years War.  This historical structure is incredibly unique in that its constructors built it without the use of saws, and some of the beams are uneven because there were no more oak trees available to finish the job.  Along the lateral walls of the chapel visitors can also admire statues of some more recent saints, including two that were local to Honfleur.</p>
<p><a href="http://www.discoverfrance.com/blog/wp-content/uploads/2012/01/honfleur-1.jpg"><img title="honfleur-1" src="http://www.discoverfrance.com/blog/wp-content/uploads/2012/01/honfleur-1.jpg" alt="" width="360" height="240" align="right" /></a>Back in the day, Honfleur was recognized as a particularly influential town in terms of the impressionist movement.  Artists were inspired and moved by the scenic views – the perfect setting for countless masterpieces.  The shoreline was the ideal location to prop up an easel and capture the surrounding beauty.  Today visitors can walk the same paths and stand in the very spots that many brilliant artists once stood, from Eugène Boudin to Claude Monet to Courbet, Corot, Sisley, Pissarro and Renoir.  The most incredible part about it is that the scenery is still just as breathtaking now as it was then.</p>
<p>Whether it’s the peaceful moorings in Old Dock, the ancient structures that dot the landscape, or the spectacular scenery that once inspired infamous artists from around the world, Honfleur is truly a gem among gems in France.  A visit here is akin to a walk back in time, or perhaps even a step into a vividly colored Monet painting.  There is more beauty in this little city than meets the eye and, despite the countless artists who have attempted to capture it, it’s something that simply must be seen firsthand to truly appreciate.  If a visit to Normandy is in your future, be sure it includes a stop in Honfleur.</p>

<p>Named for Prince Guilhem of the ninth century, this small town has somehow managed to maintain its ancient personality, making it a truly unique and fascinating place to visit.  From old homes constructed of stone to antiquated towers that still dominate the landscape.  But don’t let the village’s quaint appearance fool you – there is plenty to do and see in Saint Guilhem le Desert.  For instance, the Clamouse Cave beckons visitors to come and explore and the Abbey of Gellone remains true to its ancient sacred roots.</p>
<p>Not only is Saint Guilhem le Desert rich in historical finds, but it also happens to be an incredibly beautiful place to see.  In fact, it’s been named one of the Plus Beaux Villages de France (Most Beautiful Villages in France).  There’s a peaceful shady square featuring a tranquil fountain of water.  The flowing Verdus stream stretches throughout and the landscape is teeming with life from ancient oak and pine trees to fragrant thatches of thyme in ample abundance around the town.</p>
<p>On the side of one of the surrounding cliffs sits a medieval castle of Visigoth origin which overlooks the village below.  Its modest appearance is belied by the many extravagant stories that have been told over the years of the fortress’ history – stories involving everything from Visigoths to Saracens and troubadours.   Legend has it that this castle was once called home by a Saracen giant named Don Juan, who was singlehandedly defeated by Prince Guilhem.  The truth about what actually happened within the walls of the ancient structure, however, will forever remain a tantalizing mystery.</p>
<p>Another incredible find, the Abbey of Saint Guilhem le Desert, is so awe-inspiring that it has been named by UNESCO as a World Heritage Site as part of the &#8220;Paths of Saint James&#8221; &#8211; the pilgrimage routes of St-Jacques de Compostela.  The Abbey was founded by Sain Guilhem sometime in the early 800’s and, although it’s seen its share of destructive events over the centuries, to this day remains a solid piece of living history.  And you don’t have to travel far to witness this historical site &#8211; fragments of the abbey can be found all over the region.</p>
<p>People come to the Languedoc region for many reasons, whether it’s the breathtaking natural beauty, the quaint French atmosphere or the amazing historical art and artifacts that can be found throughout.  The one place within Languedoc that embodies all of these features and more is the village of Saint Guilhem le Desert.  Come and see what this delightful medieval town has to offer – it’s certain to be an experience you won’t soon forget.</p>

			<content:encoded><![CDATA[<p><a href="http://www.discoverfrance.com/blog/wp-content/uploads/2012/01/Swiegers_Loire_1.jpg"><img title="Swiegers_Loire_1" src="http://www.discoverfrance.com/blog/wp-content/uploads/2012/01/Swiegers_Loire_1-300x225.jpg" alt="" width="251" height="188" align="left" /></a>Of all the beautiful destinations in France, perhaps none embody the country’s charm as much as Villandry, a commune located in the Indre-et-France department.  Covering an area of just under 7 square miles and home to a mere 2,000 residents, Villandry’s quaintness is delightfully inviting.  But don’t let its small size fool you – the area happens to boast some of the richest history around and is famous worldwide for its most popular attraction, the Chateau de Villandry.  It is a lovely place to visit with an intriguing history and some incredible landscapes that must be experienced first-hand to truly be appreciated.</p>
<p>&nbsp;</p>
<p>The famous castle located in Villandry has a long, rich and somewhat tragic history.  It was first built by Jean le Breton in the early 16<sup>th</sup> Century and was constructed upon the foundation of a medieval fortress, at the foot of which an ill-fated meeting took place between the king of France, Philippe II August and the king of England, Henri II Plantagenet in 1189.  In the year 1754 the castle was acquired by Marquis de Castellane but was shortly thereafter confiscated during the French Revolution.</p>
<p>&nbsp;</p>
<p>One of the most noteworthy aspects of this massive structure is the exquisite architecture that was used in its design.  Crafted in the style of Renaissance, the chateau boasts some unique features which set it apart from other castles in the area.  For instance, it features a courtyard that is open, as opposed to the traditional closed-off style.  This was a somewhat risky design move as it rendered that part of the castle defenseless; however today it provides a lovely, welcoming feel to visitors.</p>

<p><a href="http://www.discoverfrance.com/blog/wp-content/uploads/2012/01/PI5398-hr.jpg"><img title="PI5398-hr" src="http://www.discoverfrance.com/blog/wp-content/uploads/2012/01/PI5398-hr-300x225.jpg" alt="" width="280" height="211" align="right" /></a>The Chateau de Villandry is also host to some of the most beautiful gardens in the world.  All of the gardens were expertly designed to be perfectly symmetrical, with paths intersecting at right angles.  There are a variety of different types of gardens to stroll through, including ornamental flower gardens, a water garden and vegetable gardens where 40 different types of veggies are grown.  Visitors are consistently amazed by the spectacular colors, from the red tomatoes, purple eggplants and yellow peppers of the vegetable garden to the vivid blooms of the multitude of oriental flowers that grow throughout.  There’s even a love garden which features color-coded sections of flowers each representing a different feeling or emotion.</p>

<p>In 1906 the Chateau de Villandry was purchased by Joachim Carvallo and has remained in his family ever since.  It continues to be a point of interest for travelers from around the world.  No trip to France would be complete without a visit to Villandry and this spectacular castle.  Take a stroll around the grounds, admire the incredible architecture and take in a view of the magnificent gardens from the towers above.  It’s an experience you won’t soon forget.</p>

<p>“We’ve had such enthusiasm from our ‘camp followers’ that in 2012 we’re providing even more access to VIP sites,” announced Loren Siekman, owner. “There are so many die-hard cycling fans who can’t get enough of the excitement we’ve tweaked our non-cycling trips to include more VIP access and more route highlights than ever before. Just because you can’t follow the tour on bike doesn’t mean you should miss these special opportunities.” Siekman noted that Discover France is one of the few officially licensed operators that run these tours, so they are granted the best access and the best viewing.</p>

<p>New for 2012 will be passage (on a first-come, first-serve basis) on select stages in an official Tour car. More non cycling tours have been introduced, including a <a href="http://tour-de-france-tours.com/tours/Champagne.php" target="_blank">Champagne Tasting &amp; Tour VIP experience</a> that will be a two-night trip in the Champagne region as well as VIP access. Helicopter flights combined with a VIP Tour car behind the peloton can be arranged for VIP clients, available for groups of three to six and starting at 9 a.m. and concluding at 6 p.m. on the same day.</p>

			<content:encoded><![CDATA[<p>Bûche de Noël, meaning Yule log, is a Christmas favorite in France. Generally prepared, presented, and garnished to look like a log, Bûche de Noël is baked in a large, shallow Swiss roll pan, frosted, rolled to form a cylinder, and frosted again on the outside. Bûche are often served with a portion of one end of the cake cut off and set on top of the cake or protruding from its side to resemble a chopped off branch. These cakes are also decorated with powdered sugar to resemble snow, tree branches, fresh berries, and mushrooms made of meringue. It wouldn’t be Christmas without a Bûche de Noël for dessert! Here is a simple pleasure so you can properly enjoy a festive holiday feast just like the French do.</p>
<p><span style="color: #000080;"><strong>Total Time to Make:</strong></span> 1 hour and 15 minutes</p>
<p><span style="color: #000080;"><strong>Ingredients:<a href="http://www.discoverfrance.com/blog/wp-content/uploads/2011/12/BuchedeNoel.gif"><img title="BuchedeNoel" src="http://www.discoverfrance.com/blog/wp-content/uploads/2011/12/BuchedeNoel-300x214.gif" alt="" width="300" height="214" align="right" /></a></strong></span></p>
<ul>
<li style="text-align: left;">Genoise cake batter:</li>
<li style="text-align: left;">4 eggs (room temperature)</li>
<li style="text-align: left;">2/3 cup sugar</li>
<li style="text-align: left;">1 tablespoon Grand Marnier (orange liqueur)</li>
<li style="text-align: left;">2 teaspoons orange zest</li>
<li style="text-align: left;">3/4 teaspoon vanilla extract</li>
<li style="text-align: left;">1/4 teaspoon salt</li>
<li style="text-align: left;">1 cup cake flour</li>
<li style="text-align: left;">Chocolate buttercream:</li>
<li style="text-align: left;">7 egg whites</li>
<li style="text-align: left;">1 1/3 cups granulated sugar</li>
<li style="text-align: left;">6 ounces unsweetened chocolate, melted and cooled</li>
<li style="text-align: left;">1 teaspoon instant espresso powder</li>
<li style="text-align: left;">1/2 teaspoon vanilla extract</li>
<li style="text-align: left;">3 cups plus 3 tablespoons butter, softened</li>
</ul>
<p><span style="color: #000080;"><strong>Preparation:</strong></span></p>
<p><span style="color: #000080;"><em>Bûche de Noël:</em></span></p>
<ol>
<li style="text-align: left;">Preheat the oven to 400 degrees. Butter a 10-inch by 15-inch baking pan with a 1-inch lip (jelly-roll pan) and line it with parchment paper. Butter the parchment or spray it with cooking spray. Set the pan aside.</li>
<li style="text-align: left;">Beat the eggs for 5 minutes, until they turn thick and foamy. Add the sugar, orange liqueur, orange zest, vanilla extract, and salt to the eggs and continue beating for 2 minutes. Fold the flour, a few tablespoons at a time, into the whipped egg mixture. Once the flour is incorporated into the batter, stop mixing. Do not overmix or the cake will bake up into a tough texture.</li>
<li style="text-align: left;">Gently spread the batter into the prepared pan. There will be peaks of batter; gently smooth over them, but do not press the batter down. Bake the cake for 10 minutes, until the cake is just set. Invert the baked cake onto a clean, dry kitchen towel and peel off the parchment paper. Wait 3 minutes and then gently roll the cake, still in the towel, starting at the 10-inch end. Allow it to cool completely.</li>
</ol>
<p><span style="color: #000080;"><em>Chocolate Buttercream:</em></span></p>
<ol>
<li style="text-align: left;">In a clean, completely dry bowl beat the egg whites on high until soft peaks form. Set them aside for a moment.</li>
<li style="text-align: left;">In a small saucepan, bring the sugar and 2/3 cup water to a boil. Allow it boil until it has reduced into slightly thickened syrup. Begin beating the egg whites on high speed again, and pour the hot sugar syrup into the eggs in a slow, steady stream. Pour the melted chocolate, espresso powder, and vanilla extract into the egg whites and continue beating them until the meringue has cooled completely, about 5 minutes.</li>
<li style="text-align: left;">Add the softened butter to the meringue, 2 tablespoons at a time, while beating on high speed, until all of the butter is incorporated into the frosting. If the buttercream becomes runny at any time in this process, refrigerate the meringue until it has chilled through and continue the process of beating the butter into the meringue.</li>
</ol>
<p><span style="color: #000080;"><em>Assembling the Buche de Noel:</em></span></p>
<ol>
<li style="text-align: left;">Unroll the cake and set aside the towel. Evenly spread 2 cups (or desired amount) of the chocolate buttercream on the inside of the cake and following its natural curve, gently form it into a cake roll. Cut off the ends of the cake roll on the diagonal and reattach them in the center of the cake with a bit of buttercream to fashion a “branch” coming off the main Yule log.</li>
<li style="text-align: left;">Spread the exterior of the Bûche de Noël with enough chocolate buttercream to cover it and gently pull a butter knife or small, offset spatula through the frosting to give the appearance of rough tree bark. Add a Pere Noel figure and meringue mushrooms to complete the festive look.</li>
<li style="text-align: left;">Chill the cake before serving it, and refrigerate any leftovers.</li>
</ol>
