There are many different variations… This one is a clear vegetarian version with mushrooms and tomato.&lt;/p&gt;&lt;p&gt;Ingredients&lt;/p&gt;&lt;p&gt;&lt;img src="http://i223.photobucket.com/albums/dd109/nanainlove98/Thai_Food/tom_yum_mushroom_soup.jpg" width="308" height="183" border="0" alt="Tom Yum Vegetarian Mushroom Lemongrass Soup"&gt;&lt;/p&gt;&lt;ul&gt;&lt;li&gt;3 cups water&lt;/li&gt;&lt;li&gt;1 lemongrass stalk, cut into 4&amp;quot; pieces and smashed&lt;br&gt;&lt;/li&gt;&lt;li&gt;4-6 whole (double) torn lime leaves&lt;br&gt;&lt;/li&gt;&lt;li&gt;3 slices galangal (about 1/2 teaspoon)&lt;br&gt;&lt;/li&gt;&lt;li&gt;1/2 cube shittake flavor knorr buillon cubes&lt;br&gt;&lt;/li&gt;&lt;li&gt;3-20 small thai chilies, to taste&lt;br&gt;&lt;/li&gt;&lt;li&gt;2 cups mixed mushrooms (straw mushrooms, enoki mushrooms, black mushrooms, oyster mushrooms, wood ear mushrooms, etc.)&lt;br&gt;&lt;/li&gt;&lt;li&gt;1 tomato, cut into 8 pieces lengthwise&lt;br&gt;&lt;/li&gt;&lt;li&gt;2 tablespoons white soy sauce1 teaspoon white sugar&lt;br&gt;&lt;/li&gt;&lt;li&gt;3 tablespoons lime juice&lt;br&gt;&lt;/li&gt;&lt;li&gt;1-2 stems coriander&lt;/li&gt;&lt;/ul&gt;&lt;p&gt;Directions &lt;b&gt;Vegetarian Mushroom Lemongrass Soup&lt;/b&gt;&lt;/p&gt;&lt;ul&gt;&lt;li&gt;Add the water to a sauce pan. Crush the lemongrass and cilantro root in a stone mortar &amp;amp; pestle or with the butt of a knife, then add them to the water. Tear the lime leaves to release flavor, and throw them in too along with the galangal. &lt;/li&gt;&lt;li&gt;Turn on your heat to medium high, and bring to a boil. Boil your herbs for about 5 minutes or so, to release the flavors. The color of the water should be a light green when you’re finished. &lt;/li&gt;&lt;li&gt;Add the mushrooms, chilies and knorr cube. Boil for 2-3 more minutes, until mushrooms are soft. &lt;/li&gt;&lt;li&gt;Add the sliced tomato, and cook until soft, probably less than a minute. &lt;/li&gt;&lt;li&gt;Turn off the heat. Add your soy sauce, sugar, and at the very end the lime juice.&lt;b&gt; Taste&lt;/b&gt; to make sure the flavor is right… It should be very sour &amp;amp; spicy. &lt;ul&gt;&lt;li&gt;Clean and wash the fresh squids, removing all inner matters and skin. &lt;/li&gt;&lt;li&gt;Cut through the side so that the meat is in a single “sheet”.&lt;/li&gt;&lt;li&gt;Cut the meat into strips about 3/4″ to 1″wide and 2″ long. If desired, slash one side in a close criss-cross patterns, and the strip will curl into a roll upon &lt;b&gt;cooking&lt;/b&gt;. &lt;/li&gt;&lt;li&gt;Place the squid pieces into a wire strainer with long handle.&lt;/li&gt;&lt;li&gt;Boil a pot of water, and immerse the strainer with the squid meat into the boiling water to cook. &lt;/li&gt;&lt;li&gt;For very fresh squid, cook until the meat had turned opaque and heated through.&lt;/li&gt;&lt;li&gt;For frozen, or “not so fresh” &lt;i&gt;squid&lt;/i&gt;, it is advisable to cook a little longer.&lt;/li&gt;&lt;li&gt;Lift the squid out of the boiling water and let drain in the strainer.&lt;/li&gt;&lt;li&gt;Place the well drained &lt;b&gt;squid&lt;/b&gt; meat into a bowl and add &lt;a href="http://en.wikipedia.org/wiki/Fish_Sauce" target="_blank" title="Thai Food Ingredients"&gt;Fish Sauce&lt;/a&gt; and lime or lemon juice.&lt;/li&gt;&lt;li&gt;Adjust tastes by adding more of either &lt;b&gt;ingredients&lt;/b&gt;.&lt;/li&gt;&lt;li&gt;The tastes should be tangy sour with sufficient salty tastes.&lt;/li&gt;&lt;li&gt;Add lemongrass,&lt;a href="http://en.wikipedia.org/wiki/Ginger" target="_blank" title="Thai Food Ingredients"&gt;Ginger&lt;/a&gt; roots (very finely julienne), and chopped onions, and mix well.(Optionally, you may add dry ground hot chilli pepper to taste).&lt;/li&gt;&lt;li&gt;Place on a serving platter (lined with lettuce leaves) and topped with chopped scallions, cilantro, mint leaves, and crushed hot chilli peppers.&lt;/li&gt;&lt;/ul&gt;&lt;p&gt;Translated by Padej Gajajiva from a Thai cookbook, “Thai Cuisine” by Chantr Tasanont, Manee Suwanpong, and Srisamon Kongpun. from : &lt;a href="http://www.recipesource.com/ethnic/asia/thai/00/rec0099.html" target="_blank" title="Food Recipes"&gt;recipesource&lt;/a&gt;&lt;/p&gt;

Drain and allow the chicken to cool down, then add in the lemon juice, green and red onions, and mint leaves. At this point, you may add in more lemon juice if it suits your taste. I recommend adding in about 2 tablespoons of dried red chili, but you may use more or less than the recommended amount. The last step is to add in the roasted rice. This dish is typically garnished with a 1/4 head of lettuce and cilantro and green beans (these items are all optional)&lt;/li&gt;&lt;li&gt;Stir the chicken in the hot pan until it is almost done. Then mix the chicken with fish sauce and then add lemon juice; add green onion, red onion, pepper, and mint leaves; add &lt;a href="http://en.wikipedia.org/wiki/Fish_sauce" target="_blank"&gt;fish sauce&lt;/a&gt; &amp;nbsp;or lemon&lt;/li&gt;&lt;li&gt;juice to taste. Add the roasted rice powder. However, if you can only find whole green papaya, the papaya can be peeled and shreded using a regular cheese grater with medium to large sized holes. When you get closer to the center, you will see the white immature seeds inside. Stop and move onto another part of the papaya. Discard any seeds that got into your bowl.&lt;/li&gt;&lt;/ul&gt;&lt;p&gt;&amp;nbsp;&lt;/p&gt;&lt;ul&gt;&lt;li&gt;In Thailand, green &lt;b&gt;&lt;font color="#FF3399"&gt;papaya salad&lt;/font&gt;&lt;/b&gt; is made using a clay mortar, wooden pestle and a spatula. An enormous range of pastries, cakes and biscuits are enjoyed during the &lt;b&gt;Easter celebrations&lt;/b&gt;.&lt;/p&gt;&lt;p&gt;&amp;nbsp;&lt;/p&gt;&lt;ul&gt;&lt;li&gt;&lt;b&gt;&lt;font color="#6633FF"&gt;Easter Saturday&lt;/font&gt;&lt;/b&gt; - a basket of &lt;b&gt;&lt;font color="#FF3399"&gt;food&lt;/font&gt;&lt;/b&gt;, known as the blessing basket, may be taken to the priest to be blessed. Only at that stage will people believe that Lent truly is over. This beautifully decorated basket is crammed full with symbolic foods such as a figurine of a lamb made from sugar (as a symbol of Christ, the Lamb of God), decorated coloured &lt;b&gt;&lt;font color="#FF3399"&gt;eggs&lt;/font&gt;&lt;/b&gt; (to represent resurrection), bread and salt (for prosperity and health - the bread represents hard work, the salt protects from rotting), meats and sausages (for bounty and fertility), and horseradish (which stands for the bitterness of Christ’s suffering).&lt;/li&gt;&lt;/ul&gt;&lt;p&gt;&amp;nbsp;&lt;/p&gt;&lt;ul&gt;&lt;li&gt;&lt;b&gt;&lt;font color="#6633FF"&gt;Easter Sunday &lt;/font&gt;&lt;/b&gt;- families break their Lenten fast by sharing a blessed egg, which is cut into small pieces and eaten in complete silence, after which everybody tucks into an elaborate feast. This may include roast ham, roast veal, &lt;font color="#FF3399"&gt;&lt;i&gt;suckling pi&lt;/i&gt;&lt;/font&gt;g, boiled pork, &lt;i&gt;&lt;font color="#FF3399"&gt;roast turke&lt;/font&gt;&lt;/i&gt;y or goose, kielbasa (sausages), pancakes, stuffed cabbage, cwikla (beetroot and horseradish relish), hrudka (&lt;b&gt;&lt;font color="#FF3399"&gt;sweet Easter&lt;/font&gt;&lt;/b&gt; 'cheese' made from eggs), decorated coloured eggs, and krupnik (honey vodka). A lamb sculpted from butter, white sugar or pastry forms an important centrepiece. In Poland, people enjoy a special&lt;b&gt; &lt;font color="#FF3399"&gt;Easter soup&lt;/font&gt; &lt;/b&gt;made with smoked sausages, horseradish and hard-boiled eggs, using a stock traditionally made from soaking together oatmeal and rye bread in water (although modern recipes use vinegar).&lt;/li&gt;&lt;/ul&gt;&lt;p&gt;&amp;nbsp;&lt;/p&gt;&lt;ul&gt;&lt;li&gt;&lt;b&gt;&lt;font color="#6633FF"&gt;Easter Monday&lt;/font&gt;&lt;/b&gt;&lt;font color="#6633FF"&gt; &lt;/font&gt;- in Poland any leftovers are turned into bigos, or hunters' stew. In Hungary, a meatloaf made from &lt;i&gt;&lt;font color="#FF3399"&gt;pork&lt;/font&gt;&lt;/i&gt;, ham, spices and bread is the preferred dish.&lt;/li&gt;&lt;/ul&gt;

The most famous is the Russian/Slovenian paskha (often spelled '&lt;font color="#FF3399"&gt;&lt;i&gt;pashka&lt;/i&gt;&lt;/font&gt;') - a rich pyramid-shaped &lt;b&gt;cheesecake&lt;/b&gt; with raisins, inscribed with the letters XB, which stand for the saying meaning 'Christ has risen', and the Polish sernik,a cheesecake made with mild lubelski cheese.&lt;/p&gt;&lt;p&gt;&amp;nbsp;&lt;/p&gt;&lt;p&gt;Also popular is kulich, a tall saffron loaf, and babka, a sweet yeasted cake. A huge variety of &lt;b&gt;Easter biscuits&lt;/b&gt;, flavoured with oranges, lemons, almonds, walnuts, figs, dates, raisins, poppy seeds and candied fruit are also eaten. &lt;p&gt;Date Sep 29- Oct 7, 2008&lt;/p&gt;&lt;p&gt;This &lt;b&gt;festival&lt;/b&gt; is an annual event held during the ninth lunar month of the Chinese calendar, which normally falls in late September or early October. Though the origins of the festival are unclear, it celebrates the Chinese community's belief that a strict diet of 'vegetables only' will purify mind and body and constitute merit-making.&lt;/p&gt;&lt;p&gt;Sacred rituals are performed at all &lt;i&gt;&lt;font color="#FF0099"&gt;Chinese temples in Phuket&lt;/font&gt;&lt;/i&gt;. The processions from each temple show spectacles of strict &lt;b&gt;&lt;font color="#FF0099"&gt;vegetarians&lt;/font&gt;&lt;/b&gt;, known as devotees, ostensibly possessed by gods, piercing their tongues, cheeks and other parts of the anatomy with sharp implements. &lt;li&gt;Heat the oven to 190C/375F/Gas 5.&lt;/li&gt;&lt;li&gt;Take 2 large sheets of foil and place on top of each other in a roasting tin. Spread the oil on the foil and place the &lt;b&gt;&lt;font color="#FF3366"&gt;salmon&lt;/font&gt;&lt;/b&gt; on top.&lt;/li&gt;&lt;li&gt;Put the &lt;a href="http://en.wikipedia.org/wiki/Parsley" target="_blank" title="Whole salmon ingredient"&gt;parsley&lt;/a&gt;, lemon slices and bay leaves into the body cavity. Fold the edges of the foil together but just before sealing, pour in the &lt;b&gt;wine&lt;/b&gt;.&lt;/li&gt;&lt;li&gt;Bake the fish for 50-60 minutes.&lt;/li&gt;&lt;li&gt;Serve hot or cold. Spread extra-wide aluminum foil a little longer than the length of the &lt;b&gt;fish&lt;/b&gt; and top with an equally long layer of plastic wrap. Sprinkle 1/3 of the rub onto the plastic. Lay 1 side of the fish skin down onto the rub. Sprinkle 1/3 of the rub onto the flesh of the salmon. Place second side of&lt;b&gt; &lt;a href="http://en.wikipedia.org/wiki/Salmon" target="_blank" title="Smoked Salmon Food"&gt;salmon&lt;/a&gt;&lt;/b&gt;, flesh down onto the first side. Use the remaining rub to cover the skin on the top piece. Fold plastic over to cover then close edges of foil together and crimp tightly around the &lt;b&gt;fish&lt;/b&gt;.&lt;/li&gt;

&lt;li&gt;Place wrapped fish onto a plank or sheet pan and top with another plank or pan. Weigh with a heavy phone book or a brick or two and refrigerate for 12 hours. Flip the fish over and refrigerate another 12 hours. Some juice will leak out during the process so make sure there's a place for the runoff to gather. &lt;/li&gt;&lt;li&gt;Unwrap fish and rinse off the cure with cold water. Pat &lt;b&gt;&lt;a href="http://en.wikipedia.org/wiki/Salmon" target="_blank" title="Salmon Menu"&gt;salmon&lt;/a&gt;&lt;/b&gt; with paper towels then place in a cool, dry place (not the refrigerator) until the surface of the fish is dry and matte-like, 1 to 3 hours depending on humidity. A fan may be used to speed the process.&lt;/li&gt;&lt;li&gt;&lt;b&gt;Smoke fish&lt;/b&gt; (see Note) over smoldering hardwood chips or sawdust, keeping the temperature inside the smoker between 150 degrees F and 160 degrees F until the thickest part of the fish registers 150 degrees.
