RECIPE IDEAS

Jazz up your cake kit with these simple and fun variations!

Batter: Add sprinkles to your batter for a festive confetti cake!
Fillings: Slice each baked cake layer in half horizontally and spread on a filling of your choice, like jelly/fruit preserves, Nutella, whipped cream, fresh fruit, etc. (Note that some fillings will require refrigeration.)
Frosting: For a chocolate frosting (my personal favorite!), beat in 1/4 cup unsweetened cocoa powder and an extra tablespoon of milk, if needed, to your vanilla buttercream frosting. For a cream cheese frosting, substitute the milk in your vanilla buttercream frosting for 4oz. (1/2 block) of room temperature cream cheese.
Substitution: Substitute a non-dairy milk, like almond milk or soy milk, for the milk called for in the recipes if desired. Use half & half or cream in place of the milk for an ultra rich cake and extra fluffy frosting.

Easy Homemade Cake Batter Ice Cream: 4 ingredients, No-cook, No-egg, No-machine!

Summer is here and it is almost my birthday!!! You know what that means... HOMEMADE CAKE BATTER ICE CREAM! You know those specialty ice cream shops with all the crazy flavors, that charge way too much, for way too little? Have you ever tried their cake batter ice cream? Well it is one of my absolute favorite ice creams ever! Sooo when I discovered you can just mix some store bought cake mix into (homemade or store bought) vanilla ice cream and re-create the dreamy, creamy cake batter flavored ice cream I was more excited than a kid in an... ice cream shop? ;)

I can't believe I didn't try this earlier... if you love licking the bowl clean after baking a batch of cupcakes like me, you have to check it out... best part is, there is no raw egg in this "batter" ;P

Imagine eating sweet vanilla cake batter, but frozen into a creamy, smooth, silky ice cream base. Well this simple 4 ingredient recipe (3 ingredients if you use store bought ice cream... and 2 ingredients if you use funfetti cake mix!) couldn't be easier and more delish.

Most chocolate chip cookie recipes make at least a few dozen cookies, so it took me a while to come up with a small batch of 8 cookies that fit perfectly on one cookie sheet. They have a rich, buttery, caramel flavor, with crisp edges and a melt in your mouth chewy center.

National Donut Day

Today is National Donut day! National Doughnut Day is celebrated on the first Friday of June each year. It started as a fund raiser for The Salvation Army in 1938 as a way to honor the women who served doughnuts to soldiers during World War I and help the needy during the Great Depression.

Today, many donut retailers like Krispy Kreme and Dunkin' Donuts are giving away free donuts to celebrate the day. To celebrate in your own home here are some of my quick, easy and delicious Donut themed treats you can whip up for a fun festive treat!

Homemade Chocolate Syrup (Less than 5 ingredients in less than 10 minutes)

This might be one of my favorite recipes. With no preservative, no high fructose corn syrup and no artificial flavors added, like in the store bought alternative, homemade chocolate syrup is not only better for you, but sooo simple to make right from home in under 10 minutes! It is so rich, chocolatey and inexpensive to make I will never go back to the Hershey's bottle again.

You can even create fun custom flavor combinations by adding fun additions like peanut butter, espresso powder, peanut butter, orange juice or flavor extracts like mint and coconut. Get creative and let me know your favorites!

This stuff makes a phenomenal ice cream topping. I don't think I can sit down with a bowl of ice cream without it.

You can also add some to sweeten a fruit smoothie, in a hot cup of coffee for a homemade mocha or stir a couple tablespoons into a tall glass of fat free milk for a healthier chocolate milk/hot cocoa alternative.

Even drizzle it over breakfast crepes, a plated dessert or spread it on cookies for a fancy presentation.

Homemade Flavored Ice Cream Cones: Confetti Cones, Chocolate Cones & Red Velvet Cones

After making my classic sugar cones and bowls last year, I wanted to put a fun twist on them and create some flavored versions, like Confetti Cones, Chocolate Cones & Red Velvet Cones! They are are so much fun and are sure to be a big hit!

You can use this recipe to make either cones or bowls. Just create the batter, bake and form to enjoy fresh homemade ice cream cones or bowls at home any time! Get creative and dip your cones in melted chocolate and roll in chopped nuts or sprinkles for a sweet and festive touch! These are a little tricky, so start by making only 1-2 at a time and work your way up from there as you get faster.

This recipe is so quick and so simple. The semisweet fudge base has only 2 main ingredients, chocolate and a can of sweetened condensed milk. This recipe yields a sweet, smooth, impossibly easy, foolproof fudge. I like to add a little butter, salt and vanilla for extra flavor but it can also be made with out them if necessary.

I added a top layer of white chocolate fudge that I divided into 4 different flavors to create a flavored fudge variety pack out of just one easy batch.

What better way to start or end the school year than to surprise your teacher with something sweet, like a personalized, buttery, chewy, crispy GIANT chocolate chip cookie! This giant chocolate chip cookie is so simple to whip together, with no mixer required and is so much more fun to receive than a traditional batch of cookies. Or, go with a simple store-bought alternative and still stick with the "smart cookie" theme.

You may remember this giant cookie gift from my Giant Cookie For Santa or my Giant Cookie Valentine. This is the same idea, I just created a variation on my themed cookie pouch, perfect for giving to your favorite teacher (I can't wait to share my other variations with you, too, the possibilities are endless)!

This recipe is a scaled down and slightly altered version of my Perfect Chocolate Chip Cookie recipe (which you can use to yield 4 giant cookies!). This single serving cookie (or cookie for two, if you want to share) was one of my first "small batch sweets" recipe, years ago.

Yup, this baby, bakes up to a whopping 1/2 foot across! I created a fun DIY custom cookie pouch to make this giant cookie perfect for gift giving. This can be a great project for kids to be able to customize their own pouch for the giant cookie, too!

Chewy Banana Nut Chocolate Chip Granola Bars (egg free, dairy free, with low fat & gluten free options)

These granola bars are so good and so versatile! They taste like a super moist slice of banana nut bread mixed with a chocolate chip granola bar. If you prefer a lower sugar, healthier option, you can cut the sugar in half and use a fruit puree like extra mashed banana or some applesauce in place of the oil for a low-fat alternative with natural sweeteners from the fruit! The best part is there is no egg or dairy and if you use gluten free oats and flour the bars are gluten free!

Raspberry Cheesecake Stuffed French Toast

This twist on my classic "best french toast ever recipe", takes breakfast to a whole new level! Perfect for a romantic breakfast in bed, Mother's Day surprise or special occasion, this not-so-ordinary breakfast is the ultimate indulgence. The best part is you can switch up the fruit filling to create any flavor combination you like. Even skip the fruit for a classic cheesecake stuffed french toast!

This recipe can be made with any type of bread you choose, however, thick slices of Challah or a thick texas toast is my absolute favorite. Just make sure it is not a fresh, moist loaf. Day old bread works better for french toast because it can absorb more of the custard. I added a little flour and sugar to thicken the classic french toast egg/milk custard, ensuring a crisp, never soggy french toast and a rich, melt in your mouth flavor. The addition of spices, vanilla and creamy fruit filling give the french toast an amazing complexity of flavors that really take this breakfast to the next level.

If you are using a fresh bread, it is best to let it sit out overnight to let it get a little "stale" and dried out for optimal absorption of the custard. You can also heat the bread at 200 degrees F in the oven/toaster oven for about 15 minutes while you prepare the custard.

Slice a slit 3/4 the way down your slices of bread to create a pocket for the filling.

Spread on layers of filling and prepare custard ingredients in a casserole dish for dipping your filled bread.

Want a fun and creative way to enjoy Peeps this Easter? Well, what better way, than to incorporate them into a GIANT Peep Cereal Treat?!

You can really use ay type of cereal, from classic Rice Krispies to the Honey Nut Cheerios, I used, for a perfect crispy, marshmallowy, XXL Peep for one!

Giant Peep Cereal Treat For One

Ingredients

2 tablespoons butter, plus extra for greasing the pan
2 (12-pack) packages bunny Peeps, any color
1 1/2 cups cereal, any type
food coloring (color of your Peeps)
3 mini chocolate chips

Directions

Line a small loaf pan (8"x4") with wax paper and thoroughly butter or spray with non-stick cooking spray. In a small saucepan, melt 1 tablespoon of butter over low heat. Add 10 peeps (reserve last 2 peeps for display).

Stir over low heat until completely melted.

Turn off heat and add cereal, stirring until well coated.

Pour into prepared pan.

Using buttered spatula or spoon press mixture flat and let cool slightly.

Once slightly cooled, but still warm and pliable, remove from pan and shape into a Peeps bunny, using your hands, about 8" tall (Large circle on bottom, slightly smaller circle in the middle and two ears on top).

Next, melt your second package of Peeps (12 Peeps) with 1 tablespoon of butter. Add a few drops of food coloring to match the color of your Peeps. Once melted completely, pour over your cereal treat bunny.

Use a buttered spatula or spoon to spread over the top and sides of your bunny.

Add your mini chocolate chips to make eyes and a nose.

Display on a plate with your 2 remaining Peeps and pipe some grass and a special note with green frosting or cookie icing, if desired. Enjoy!

As bathing suit season quickly approaches, I am forever trying to find healthier alternatives to satisfy my sweet tooth. Lately, I have been really getting into greek yogurt, but I always have to doctor it up with honey and banana, or some sprinkles and chocolate malt mix to tackle my after dinner cravings, so when I was introduced to the new Yopa! authentic Greek yogurt cups, I was beyond thrilled. By pairing nine whole grain granola, toasted Blue Diamond almonds or even dark chocolate, they created the perfect balance of yogurt, flavors and toppings for you to create fun flavor concoctions that will be a fantastic replacement to a bowl of ice cream. I like the strawberry and granola for tossing in my purse during the day, but my late night treat favorite is definitely the chocolate chunk! I love mint and chocolate together! It is one of those combos like milk chocolate and peanut butter or dark chocolate and orange that I could never turn down. For these cupcakes, I used my favorite moist fudgy chocolate cupcake recipe and simply added a little mint extract to my smooth, creamy chocolate buttercream frosting recipe.

After my miniature fruit pies took Pinterest by storm, I knew I just had to re create my festive mini pies in a summertime flavor. These individual portions of smooth lemony filling in a tender flaky crust are finished with a delicate cloud of meringue topping. They are so incredibly delicious and gourmet tasting yet actually pretty simple to make. The adorable mini size makes not only an impressive presentation but yet another way to indulge in moderation using my small batch recipe for this classic dessert. The best part is there's no messy cutting with filling oozing out because each pie is perfectly portioned for a single serving treat.

Savory or Sweet?

For me, I usually always choose sweet over savory... always. I also almost always choose fruit over vegetables, too. If I am going to indulge a little, I want to make sure it is something totally worth it. So when I had the opportunity to try a brand new snack chip sent right to my door, I was excited to be able to try a snack I wouldn't normally choose as my first pick. Then I heard about Green Giant's very big surprise via their Facebook page... these snack chips are made by the one and only, Green Giant! Meaning, they are chips made using real veggies had have 40% less fat than regular potato chips, so they are a lot healthier.

First I tried The Green Giant™ Multigrain Sweet Potato Chips with Sea Salt Flavor. They are made with real sweet potatoes and made with 14 grams of whole grain. I am not a huge potato chip fan but these were delish. I eventually started experimenting and ended up sprinkleing cinnamon and sugar on them because my sweet tooth couldn't help but sneak it's way in ;)

Then I tried the The Green Giant™ Roasted Veggie Tortilla Chips with Zesty Cheddar Flavor. Now these can give my sweet snack a run for their money because I am not lying when I tell you I ate half the bag in one sitting... and forced myself not to finish it right then and there. Now, I wouldn't go eating chips every day, but these are definitely a once in a while snack I would definitely indulge in.

I have been tweaking my french toast recipe ever since I was old enough to use the stove top on my own. So here it is, my perfect, restaurant style, melt in your mouth, crispy edged, french toast.
