In a large nonstick skillet over medium heat, melt butter and heat until it stops foaming. Dip both sides of 3 sandwiches in the batter to coat thoroughly, then dip in cornflakes, patting them over the entire surface to form an even coating.

Place them in the skillet, and cook until deep golden brown on both sides, about 4 minutes on the first side and 3 ½ minutes on the second side, serve at once, garnishing as desired. (We served these with maple syrup and bananas but they would be great with fresh whipped cream and/or powdered sugar.

Instructions

Mix together the beef, pork, and lamb.

In a small food processor or chopper, blend the onions, garlic, salt, pepper, paprika and rosemary until it’s a fine paste.

Knead thoroughly into the meat, then stir in the eggs and flour. At this point the meat mixture can be refrigerated for up to 24 hours.

Scoop the meat with a tablespoon or melon baller, and roll the meat into 1-inch balls.

Place on two large baking sheets. (You’ll have about 60-70 meatballs.)

Heat oven to broil. Cook the meatballs on baking sheets for 20 minutes or until brown on top and just slightly pink in the middle. Turn once while broiling.

Meanwhile, heat a large deep skillet or Dutch oven over medium high heat. Add the olive oil and minced garlic. Cook the garlic until golden and fragrant — about 5 minutes.

Stir in the tomatoes, crushing them with a spoon or your hands as you add them. Add the bay leaf and balsamic vinegar and bring the sauce to a simmer.

Cook until slightly reduced and then taste and add sugar, salt, and pepper to taste.

Add the cooked meatballs and simmer on low until ready to serve. Serve on top of cooked pasta.

I only added about 12 meatballs and placed the rest in a ziplock bag and froze.

This month I decided to change things up a bit when it comes to meal planning. I’ve been having trouble staying on top of things and figured maybe if I plan my meal plan for the full month it will help with my latest lack of motivation! So my new plan is to re-post this meal plan every Monday and add any changes that happened the previous week. We’ll see how this works out!

In an attempt to get Hunnie interested in my meal plans he picked up The Heavy Metal Cookbook I had him go through it and mark anything he would like to try, next thing I knew the book was covered in little yellow flags! So I added a couple of those recipes into the plan.

Tuesday and Thursdays are our usual Leftover days and on the weekends I like to cook one breakfast, dessert and bread. So here’s the plan, as always this is pretty much a rough draft we change things up ALOT!

Instructions

In large bowl, combine crushed Reese’s Puffs Cereal, Peanut Butter and butter. Mix well.

Add powdered sugar, a cup at a time, until you have a firm dough.

Roll into 1 inch balls and place on wax paper.

Place in fridge for about 5 minutes to harden. (Tip: put your wax paper on a cookie sheet, then it’s easy to transfer your treats to/from the fridge!)

Dip each ball into melted White candy melts and set on wax paper to harden (about 5 minutes) I used two toothpicks to do this.

When set, dip one side into melted red candy melts. Using a toothpick, drizzle some extra red around the edges to look like the eyes are “bloodshot”. I’ve been having issues the last few times I’ve melted chocolate, I end up overheating it and it turns into a chunky mess. I made these last minute and ended up making my usual mistake, with no chocolate left in the house to try a second time I made due. It worked out perfect, the lumpyness made it look so much cooler!

Press one chocolate chip (or candy eye), pointed side down, into the center and let set completely.

It all started around Halloween when I came a crossed these adorable cupcakes. Hunnie has a weird fascination with Eyeball’s so I immediately knew I needed to make these. But why and when was another story, I couldn’t just come home one day and make them and Halloween had already came and went. I needed a big day… Christmas? Too weird… New years? Still just as odd… Birthday? Perfect!! So what started with a cupcake soon became a whole event, the after Halloween sales were everywhere so I went to searching and planning.

Here is a list of the decorations I found:
