Okay, I tweeted a couple days ago about discovering a new cookbook – The Best of Clean Eating. I LOVE this book! It fits my philosophy on food perfectly – that the best way to eat healthy is to not to eliminate or over-indulge on specific food groups, but to eat a wide variety of whole, fresh, organic foods. The Best of Clean Eating has recipes that are full of heart-healthy, colorful, nutrient-dense foods.

I’ve tried several recipes from this book and they’ve all been FABULOUS! My favorites so far have been the Baja Fish Tacos with greek yogurt instead of sour cream, Lemon Artichoke Chicken and the Chicken/Summer Vegetable Cacciatore. And the desserts – YUM! In spite of what the commercial says, all sugars are NOT created equal. The recipes in this book use less-processed sugars and smaller amounts of them, yet the flavors satisfy the sweet tooth completely.

Do yourself a favor and start using this book. If you’ve ever struggled with what it actually means to eat healthy, this would be a good place to start.

The ISBN is: 978-1-55210-085-1. List price is $22.95 but I found it on Amazon for much less. They also have a magazine and you can check out some of their recipes online at www.cleaneatingmag.com.

Bon Appetite!

Step 1:

Endeavor to live fearlessly. Take risks. Battle giants. You may get knocked down or worn out, but in the end, you will find you can make it through anything – if you want to. And by the way, it’s a lot more fun than playing it safe.

Step 2:

Vow to laugh everyday – even when everyone is breathing down your back. Days easily turn into weeks and weeks into years. If you don’t find a reason to enjoy your life every single day, you’ll quickly come to the end of it and find you didn’t enjoy any of it.

Step 3:

Rehearse gratitude. It’s impossible to be thankful and depressed at the same time.

Days 2 – 365: Repeat steps 1-3.

What is health? I have often posed this question when lecturing to various groups. Invariably, the most common answer that comes back is, “feeling good”, followed by “being free of disease” and being “pain-free”. The true definition of health actually has nothing to do with any of these answers.

Let me share a few ideas with you:

On the day you were conceived, one cell from daddy and one cell from mommy came together and began building a marvelous human machine. Two cells became four, then eight, then sixteen and eventually 3 trillion. Each cell was governed by DNA to distinguish itself into very unique cells, all with different structures and functions. Think for a minute about how incredibly marvelous that is! From just two cells, you developed into neurons, and skin cells, and acid producing stomach cells, and bacteria-eating blood cells, and detoxifying liver cells – each cell incredibly different, each with a very specific purpose. And this, in my opinion, is one of your most marvelous features – you are self-healing! If you get cut, your skin cells come back together. If you get invaded by a virus, your immune system kicks into high gear. You even kill cancer cells on a regular basis. So, if we’re designed to be self-healing, why do we get sick, or riddled with cancer or have thyroid problems? Aha! That, my friend, is the million dollar question. Keep reading!

Consider this — every cell in your body has a specific function – every single one of your 3 trillion cells was created with a very specific purpose. Even the appendix, which was long thought to have no function, was recently found to have a purpose. Now think about this: what would happen if 1% of your heart cells decided they didn’t want to work anymore? Would you notice? Would you have any pain? Most likely not. But let’s say that number increased to 20% or even 30%. Would you notice then? Maybe, maybe not. Most people don’t know they have heart trouble until they actually die of a heart attack. That’s right – the first symptom in the majority of heart attacks is death itself! That poor fellow probably felt great, right up to the point where he met his maker. The point is, feeling bad or experiencing pain usually indicates a problem, but the reverse is not true. The lack of feeling bad or experiencing pain does not indicate perfect health, so health is much greater than just the way you feel.

So then, what is health? The definition I give people is this: health is 100% of your cells performing at 100% of their potential. How we get our bodies to perform at 100% requires some effort on our part. Actually, it requires a lot of effort on our part. Our modern day world is filled with environmental toxins, farm fields depleted of their minerals resulting in low quality food, stress from multiple sources, financial pressure, time pressure, etc, etc, etc. I’m sure you’ve got the picture. All these things will impact your health. I’m writing this blog to help you make some simple adjustments to improve your health.

Our model of western medicine is backwards, but is beginning to shift. You’ll often see a quote by Thomas Edison in the offices of natural health practitioners,

“The doctor of the future will give no medicine, but will interest his patients in the care of the human frame, in diet, and in the cause and prevention of disease.”

I find it interesting how someone from his day and age could be so forward thinking. They didn’t have all the medicines and quick fixes that we have now, nor did they have all the pollutants and poor quality food issues to cause his generation to want to be more interested in their diets and in preventing disease. It’s almost as if he had been able to travel in time and see all the problems our generation is experiencing. (Maybe he really did invent a time machine!)

If you study medical history, you’ll notice that as a society, we are coming full circle. In ancient medicine, which has its roots in Chinese medicine, people paid their doctors to keep them well, and stopped paying their doctors when they got sick. Isn’t that what western medicine is now experiencing? People are finally starting to put emphasis on staying healthy. “Alternative medicine” is now becoming a large part of the healthcare industry. So much so, that the American Medical Association has made education on preventative medicine one of its top priorities. The current estimates for the healthcare industry are at a staggering $800 Billion annually. Allopathic physicians (MDs) are realizing they need a piece of that pie and many are incorporating natural medicine into their practices.

The pharmaceutical industry is vying for its share of the pie as well. According to their commercials, they would like us to pop a pill for everything from acid reflux to restless leg syndrome and anything else you can think of. I mean, come on, it’s easier to pop a pill for diabetes than it is to watch what you eat and exercise. Wouldn’t you agree? We know it’s absurd, but we’ve probably all been there at some point. We go into the doctor’s office feeling like death warmed over and determined that we are not coming out without a prescription antibiotic. Or you go to your pediatrician’s office with your child pulling his ear screaming bloody murder and you are not leaving without pills (for your comfort, if not for your child’s!) If we get headaches, we take aspirin or ibuprofen. It’s often easier to pop a pill than to deal with the root of the problem.

The problem for most of us is that we’re impatient. We live in a “get it in an instant” society. Why exercise when you can pop a pill to lose fat? Don’t get me wrong – I’m not totally against traditional medicine. All I’m saying is that it is more healthy and cost effective to treat the cause of the problem than to mask the symptom — it’s better and easier to maintain your health than it is to regain it once it’s lost. My hope with this blog is that you will be a patient patient and live the healthy life God intended for you to live.
