Now iced tea have become a leading beverage in North America. Half the tea consumed in United States is in iced form.

It is popular in hot climates. Refrigerated tea tend to cloud which does not affect taste but is less attractive.

Iced tea serve chilled over ice cubes.

Iced tea can be served straight up, sweetened or mixed with milk, cream, lemon or other fruits or spices as accompaniments. Fruit juices such as red or white cranberry, grape, orange, grapefruit and passion fruit can be added in amount ranging from 10% to 25%.

The story of iced tea that the vendor selling hot tea on a blistering, humid day at the 1904 World’s Fair in St. Louis was not having much luck until he dropped a couple of ice cubes into brew.

Bottled, ready to drink iced tea are increasingly popular, but homemade ice tea is indefinitely better and quite easy to make.
More specifically, perry is preferentially made from special pear varieties known as perry pears.

It is similar to cider, in that it is made using a similar process and often has a similar alcoholic content, around 8% alcohol by volume.

These pears are high in tannins and acids, providing the complex flavors associated with perry in addition to serving as a preservative. Pears for making perry should be fully ripe before they are ground.

The liquor made from this fruit is pale, sweet, yet remarkable fine, and of a strong body.

It is wholesome and pleasant liquor, and has sometimes been made so excellent as to pass for Champagne.

Perry is more often made sparkling which may come from secondary fermentation in sealed tanks or by carbonation.

Perry had been common for centuries, in Britain, particularly the West Country and Wales; and France especially Normandy and Anjou.
Tequila is an alcoholic beverage and a distillate of the blue agave, a succulent plant that grows will all over Mexico.

The agave looks like it would be a cactus, but it is actually related to the lily. Its leaves grow to an average of ten feet tall.

The best quality tequilas proclaim their status as 100% blue agave on the label, signifying that they have superior flavor, were bottled in Mexico and are guaranteed by law to be produced with sugars that came strictly from the blue Tequilana weber agave plant.

Tequila is named after the city in the state of Jalisco in Mexico where it is produced. The city of Tequila’s origin can be traced back to the Aztecas.

The most popular tequila technique is still to drink it straight from one of three glass sizes: canita, caballito and medida.

The time honored tradition of using salt and lime remains but more frequently tequila served in restaurants come accompanied by an equal portion of sangrita.
A cohort study of idle-aged men in Finland, the Netherlands and Italy revealed a protective association between alcohol intake and risk of death from chronic obstructive pulmonary disease.

Chronic obstructive pulmonary disease or COPD is the name given to conditions in which there is a progress inability to get adequate air into lungs.

This conditions include emphysema, where there is some loss of alveolar walls and an associated decrease in the elastic recoil of lung tissue, and chronic bronchitis with hyperplasia of pulmonary mucous glands.

The lower risk was seen at an intake of up to approximately three drinks per day. The anti-inflammatory effect of alcohol was suggested to explain these observations.

Alcohol intake has also been observed to manifest a protective association with emphysema in smokers.

COPD is the fourth leading cause of death in the United States and is the only one of the top 10 causes that is continuing to rise.
It can be made from a number of ingredients including barley, rice and sweet potato.

Sweet potato sochu is very popular, especially in southern Japan. The process involves the inoculation of steamed sweet-potato slurry with a starter ‘Koji’ containing Aspergillus niger or A. kawachii as an enzyme source for starch conversion to sugars followed by fermentation to alcohol by yeast Saccharomyces cerevisiae.

The final alcohol concentration of the product is 13-15%. It is then pumped to the still and the alcohol is distilled off.

Sochu should not be confused with sake. Sochu taste usually far less fruity and depends strongly on the nature of the starch used in the brewing process. Its flavor is often describe as ‘nutty’ or ‘earthy’.

Sochu is consumed more by the poor than by the rich. On the other hand, special grade sake is by far a rich person beverage.
It is especially useful in cases of impure blood, pimples, worms, constipation, obesity , asthma. catarrh, diarrhea and gallstone.

Iron in apple juice also has a property that helps the body absorb the iron in other foods, such as eggs and liver.

Iron is needed for the formation of hemoglobin and a deficiency of his mineral produces anemia.

Apple juice also rich with silicon, magnesium, chlorine, copper, manganese, phosphorus, potassium, sodium and sulphur.

An optimal proportion of potassium and calcium in apple juice helps strengthen the cardiovascular system.

It does contain a generous amount of calcium, and this calcium aids the system in absorbing the calcium in other foods.
Minerals in Apple Juice

Sake – alcoholic beverage of Japanese

Sake is a Japanese word meaning ‘alcoholic beverage’, which in English has come to refer to a specific alcoholic beverage brewed mainly from rice.

Sake is a rice wine, clear and pale yellow in color and brewed to an alcohol content that may vary between 14 and 20%.

The enzymes that breakdown the starch molecules into fermentable sugars in sake making must come from outside the rice grains, which already have been milled or remove the outer portions and therefore cannot be malted.

The enzymes provided by Aspergillus oryzae will perform the required saccharification.

It has higher alcohol content than the traditional wines. This is because sake brewing combines the two steps of converting the rice to sugar and the sugar to alcohol simultaneously.

The beverage gives ample evidence of its alcohol content with no astringency, little acidity and slight sweetness.

Among other benefits of drinking sake is to prevent ill health, cleans poison from the body and extends the life span.

Japanese believe that ‘Sake is the king of 100 medicines’.

Today, the quality of sake is at the highest it has ever been and sake has become a world beverage with a few breweries springing up in China, Southeast Asia, South America, North America and Australia.
Other people describe that cocktails as America’s first culinary tradition.

The very first known mention of the word cocktail was found in an early American newspaper, the Farmer’s Cabinet, in April 28, 1803. It read, “Drink a glass of cocktail – excellent for the head. Call’d at the Doct’s.”

In May 6, 1806, New York newspaper, The Balance and Columbia Repository use of the term as a political stab against Democrats.

The editor received many questions about the new term, present in a concession speech from a losing political candidate, and here was his response:

“Cock tail, then is a stimulating liquor, composed of spirits of any kind, sugar, water and butters – it is vulgarly called a bittered sling, and is supposed to be an excellent electioneering potion inasmuch as it renders the heart stout and bold at the same time that it fuddles the head.”

A popular history suggested that the drink originated at the Manhattan Club in New York City in the early 1870s, where it was invented for a banquet hosted by Jennie Jerome (Winston mother) in honor of presidential candidate Samuel J. Tilden.

The success of the banquet made the drink fashionable, later prompting several people to request the drink by referring the name of the club where it originated – the Manhattan cocktail.

The origin of the word cocktail will probably never be known because there are many stories of where it came from. Rumor also has it that early in American history, bartenders used to pour remnants of drinks and almost empty barrels into single container, selling swigs from this mixture to patrons at a reduced price. ‘Cock’ was another name for spigot and ‘tailing’ is the last bit of alcohol, so his drink was called ‘cock tailing,’ quickly shortened to ‘cocktail’.

After the first cocktails sprang up in the American Northeast and have been evolving ever since. The cocktail moved west and then abroad. But regardless of where the cocktail was served, in bars, saloon or lounges, it became the icon of neighborhood gathering places and instant brotherhood.

Until Prohibition, the American saloon keeper was a prominent member of society and bartending was an honorable profession.

In 1862, Jerry Thomas, the first celebrity bartender, published the first drink recipe book to contain cocktails, How to Mix Drinks.

Initially, cocktails were drinks that men imbibed in the morning, at breakfast, to get their circulation going.

Later in the nineteenth century. Cocktails became more festive and were served as a aperitif, before-dinner drinks.
Cocktail in history

Mead – honey fermented drink
Mead is said to have been the principle of the Britons before the use of malt liquor among them; and long after the introduction of the latter beverage, mead was a favorite drink.

It is an alcoholic beverage made from honey and water via fermentation with yeast.

It is alcoholic content may range from that of a mild ale to that of a strong wine.

It may be carbonated or sparkling; it dry ,semi sweet or sweet.

Meadhing is the practice of brewing honey, therefore mead also known as ‘honey wine’.

A mead that contains spices such as cloves and cinnamon or herbs such oregano and lavender is called metheglin.

It was said that by drinking mead, the drink were thought to confer good health, longevity and fertility.
Those leaves meant for black and green teas are rolled and fermented before drying, whole those destined for white teas, which actually brew up pale yellow red – are not. White teas is the least processed of all teas.

There is a suggestion that white tea to be defined as a tea made from either the first flush bud and one leaf, either air dried or directly warm fired.

White tea is thought to be healthiest of all three types of tea.

The tea is harvested while the leaves are immature. The white tea is processed immediately without fermentation.

Fresh tea leaves are rich in flavonoids called catechins. Catechins appear to protect human body from a variety of cancers. They also keep the blood vessels healthy.

Because white tea leaves are neither rolled nor fermented, fewer of their catechins marry into polyphenols. According to researchers the plain catechins content of white tea is three times higher that of green tea.

Therefore they are the best dietary source of this compound.

A new research showed that white tea prevented the breakdown of elastin and collagen, by stopping the offending enzymes from doing the damage.

Catechins have an antioxidative and antiaging effects. The catechins found in tea are twenty-five to one hundred times as potent as vitamins C and E.
What is white tea?

History of Café Latte

Café latte often served for breakfast, this white coffee consists of coffee and hot milk served with a little milk foam.

The Swiss affectionately call it schale, which literally translates to ‘bowl’.

In English-speaking countries, the so-called latte is shorthand for caffé latte or caffé ilatte. The long Italian form literally means ‘coffee and milk’, similar to the French of ‘café au lait’ and the Spanish ‘café con leche’.

William Dean Howells the American author and the writer of the novel The Rise of Silas Lapham, was the one first who used the term ‘latto’ in 1847. And then he used ‘latte’ in 1867 in his essay ‘Italian Journey’.
History of Café Latte

Honey drinks
Honey is packed full of antioxidants and it is the best way to start the day by drinking apple cider and honey.

For non-alcoholic beverages, honey drinks are most frequently mixed with lemon juice for a pleasant sweet and sour taste, but other fruit flavorings such as apple juice are often added.

Honey wine or mead, made from honey and yeast probably had a lower alcohol content than beer. Since early medieval documentation in Poland suggests that mead was the drink of the rich and noble, and typically the drink of weddings or feasts.

The mead remained a prized and expensive source of alcohol across the known world right up to the reformation.

Mead has survived as a specialist drink, and clings to its reputation as a n aphrodisiac.

Date wine was probably the most popular of fermented fruit juices. Date juice itself had a higher sugar content. It was used as a sweetening ingredient like honey and grape juice but often honey was added before fermentation and the resulting alcohol content must have high.
Mangosteen juice is becoming a popular drink to supply a generous amount of antioxidants and as a health tonic.

Mangosteen juice is said to reduce inflammation and fever. Naturally, the more people drink the more likely it is that you will experience some form of pain relief.

One of the most important mangosteen juice health benefits is its effect on the cardiovascular system.

It is believe to be effective in preventing diseases like arthritis, cataracts, osteoporosis, high blood pressure, atherosclerosis, kidney stones, glaucoma, Alzheimer’s, neuralgia, and more.

For centuries, people in Asia have been using the fruit and bark of the mangosteen to treat stomach and skin problems.

Mangosteen contains a group of compounds called xanthones. When the people drinks the mangosteen juice, the xanthones keep the bad cholesterol (LDL) from sticking to the blood vessel, which reduces the risk for atherosclerosis. Arthrosclerosis can lead to cardiovascular disease.

Drinking a mangosteen juice, can give a powerhouse of tannins, catechin and xanthones to help minimize the free radicals waging cellular combat inside human bodies.

Peppermint tea is considered the queen of digestive herbs,. The peppermint tea is fresh domestic peppermint.

It is a general stimulant. A string cup of peppermint tea will act more powerfully on the system than any liquor stimulant, quickly diffusing itself though the system and bringing back to the body its natural warmth and glow without the usual tendency to relapse.

Peppermint is available in tea bags or as a loose tea. The tea may be sweetened with sugar or honey, or in the cases of diabetics and obese patients with saccharine or cyclamates.

Peppermint tea is a good substitute for caffeine. It will help alleviate headaches during caffeine withdrawal. It is delicious and strengthens heart muscle.

Peppermint tea aids in digestion after meals, and sipped cold, it can help to relieve nausea, headache, heartburn or gas.

Pregnant women should ingest no more than one or two cups daily of peppermint tea. Nursing mothers should avoid large amounts of mint, which can dry breast milk, although small amounts help treat colic.
It has been part of North Americans diet and used for medicinal purpose in folk medicine.

As a functional food, cranberry juice is associated with protection from urinary tract infection. It also may be useful for promoting cardiovascular health and inhibiting cancer development.

The earlier hypothesis stated that cranberry juice acted by increasing urine acidity, however other studies have challenged this theory.

New England Journal of Medicine, October 8, 1998 wrote that Rutgers led scientists identify the active components in cranberries responsible for maintaining urinary tract health as proanthocyanidins or condensed tannins.

Cranberry juices contain proanthocyanidins that interfere with E. coli adherence to the urothelium.

One controlled clinical study showed that women who drank ten ounces of cranberry juice daily had fewer urinary tract infections than did women who had only a vitamin C drink.
Fresh grapefruit juice will produce a light sweat and relieve a sore throat. The pink and red varieties are more sweet and generally less acidic than white grapefruits.

Grapefruit juice is rich in vitamin C, and in the minerals calcium, phosphorus and potassium.

An 8 oz serving of grapefruit juice contains fewer than 100 cal and has the same amount of vitamin C as orange juice. (72 mg).

One serving also provides approx 300 mg of potassium.

Grapefruit juice give the people needed vitamin C the natural way – in combination with other vitamins and minerals, natural fruit sugars, healthy alkalinity and additional health benefits.

According to Agricultural and Food Chemistry, red grapefruit might help lower levels of LDL cholesterol.

For pregnant women, grapefruit juice have the bioflavonoids and vitamin C that give strength to capillary walls that are taxed by fluid retention and swelling which are common during pregnancy.
Wine in Greece predates written record. According to legend, the wine god Dionysus, son of the great god Zeus, was tramping the vintage even before the bronze age.

Greek wine did not contain alcohol as its sole intoxicant but was ordinarily a mixture of various inebriants.

Greek wines are produced from reportedly 300 plus native grape varietals grown in Greece’s many landscape and various microclimates. Many of the local wines perfectly complement the flavorful regional food.

The Greek wine that almost every visitor has heard of is the one that almost no foreigner loves: retsina. It’s pine resin that’s ended to the brew to preserve the wine that gives the pungent taste.

It is probably the most recognizable Greek wine. Many other wines also produce in Greece and some of them are excellent.

Good retsina, although an acquired taste, can be delicious. It should be young, fresh and tangibly aromatic, with only a hint of pine, ideally it should also come from Attica, source of the best Aleppo pine.

It is naturally homogenized, with smaller fat molecules evenly suspend throughout the milk.

The gross chemical composition of goat’s milk can vary considerably and the total solids may range between 11.3 and 15, g /100g; the main cases of this variation are breed, stage of lactation, geographical location and diet.

In gross characterization of milk fat, goat milk contains 97-99% of free lipids and 1-3% bound lipids of total fat.

Free lipids of goat milk contained 96.8% triglycerides, 2.2% diglycerides and o.9% monoglyceride, whereas bound lipids contained 46.8% neutral lipids and 53.2% polar lipids.

Goat milk contains slightly less total casein but higher non-protein nitrogen than the cow counterpart.

Milk from goats is also high in vitamin A and niacin.

Goat milk taste varies a great deal by bred, by feed stuffs, by stage of lactation, by the age of the milk and especially by the way it’s handled.

Goat milk is more complex in flavor than cow’s milk. and is gaining popularity in the United States for those with allergies to cow’s milk and for those who choose to avoid cattle byproducts.
Grapefruit juice is consumed by one fifth of American families, endorsed by the American Heart Association, rich in vitamin C and often fortified with supplemental calcium.

The adult requirements of vitamin C is 1000 IU and in 3.5 oz of grapefruit juice, more than half this amount will be found. Vitamin C can prevent scurvy and is such a valuable blood purifier.

It is also credited with cancer fighting capabilities due to its high vitamin C content.

A major unique component of grapefruit juice is the flavonoid, naringen. It can make up to 10% of the dry weight of the juice and is responsible for the bitter taste.

Red grapefruit also contain lycopene, a phytochemical that helps lower the risk of prostate cancer.

It is most helpful in checking the tendency to put on weight, and when taken last thing at night it aids in inducing sleep.
