<p>While in Copenhagen, we went to <a href="https://aamanns.dk/en/">Aamann&#8217;s Deli &amp; Takeaway</a> in Østerbro. Their contemporary take on the Danish classic of smørrebrød (a kind of open-faced sandwich) was <em>amazing</em>. So amazing, in fact, that we decided to pick up a cookbook to give us some ideas for different ways to do smørrebrød. What we found was Trine Hahnemann&#8217;s <em><a href="https://www.hardiegrant.com/us/publishing/bookfinder/book/open-sandwiches-by-trine-hahnemann/9781787131255">Open Sandwiches</a></em>, and it has inspired many delicious dinner adventures. Whether it&#8217;s a combination of cottage cheese, tomatoes, and avocado or peaches, balsamic reduction, and chevre (all <em>so good</em>), this is a great cookbook. I especially love it for those hot summer nights when the idea of food served cold is extra appealing.</p>
