&lt;p&gt;Food-tasting for royalty has been around for a very long time.  Some lived through it while others unfortunately did not.  So when the call went out from one of Las Vegas&amp;#8217;s vegan food blogger Queens, Apryl Lyttle of Eff Yeah It&amp;#8217;s Vegan, that she needed tasters for one of her new recipes&amp;#8230;I gladly answered that call.  I had an open couple of hours and I headed out to the home and kitchen where the magic of Eff Yeah It&amp;#8217;s Vegan originates.  I knew I would happily live through it and be able to tell you about it.&lt;/p&gt;
&lt;p&gt;Apryl was trying out a new recipe of hers for &amp;#8220;Cheese&amp;#8221; Blintzes and this is something I have not been able to enjoy for well over six years now.  First of all, they looked great.  Slightly thicker than crepes, these blintzes were filled with a slightly sweet tofu &amp;#8220;ricotta&amp;#8221; that was just divine.  I mean spot on and I am sure would fool a lot of people in a blind taste test.  I knew what I was eating and it still fooled me.  Great texture for both the blintzes and the filling.  Topped with fresh strawberries and blueberries and drizzled with a little maple syrup, they were to live for.  This food-tasting is  a great gig.&lt;/p&gt;
&lt;p&gt;There was more to try.  I also had a slice of her Cinnamon Oat Cake which was just terrific and very simple to make.  We had been talking about her recent recipe post of the Pimento Grilled Cheese Sandwiches and she remarked that still had a little of the mixture left.  We tried it on a little bread and it was superb.  I can only imagine what it would be like melted between a couple of slices of grilled bread&amp;#8230;my imagination will no doubt become a reality very soon.  We also tried some of her Pizza Hummus, which is just as good as it sounds. Conscious eating begins at home and it really rocks here and that is why Apryl&amp;#8217;s recipes are so wonderful.  She is one of our treasures here in Las Vegas and the world is quickly finding out about her. All I can say is when Eff Yeah It&amp;#8217;s Vegan puts out the call for taste-testers&amp;#8230;drop what you are doing and go.  You will Effin&amp;#8217; love it.&lt;/p&gt;

&lt;p&gt;I am not sure I can state it any more plainly than that.  If you want amazing vegan sushi where you will not cast even a single thought about missing fish on it&amp;#8230;then there is only Miko&amp;#8217;s&amp;#8230;just minutes from the S. Las Vegas Blvd.  It is one of my favorite places to go in all of Las Vegas and this veg-friendly restaurant has been a go-to place for vegans, vegetarians, and the v-curious for many years now.  You might find a place about town that has a roll here or a roll there&amp;#8230;but none can compare to the sheer selection, freshness, and flavor that this wonderful, traditional Japanese sushi restaurant has to offer.&lt;/p&gt;
&lt;p&gt;I have blogged on a number of occasions about the terrific Hawaiian rolls, The Popeye The Spinach roll, The Agetofu roll, and a list of other vegan sushi roll options.  They also some amazing vegan-friendly noodle dishes.  I am still thinking about the Vegetable Yakisoba and I already have my eye on another noodle dish the next time I come in.  They use only the freshest ingredients that are also free from all of the additives and GMO&amp;#8217;s we are trying to avoid. They make all of their own sauces and anything else that is possible for them to do so. They have tremendous customer service and take such great care of their customers which include many locals and visitors from afar.&lt;/p&gt;
&lt;p&gt;I was treated to a little bowl of the Kinpira Gobo&amp;#8230;slivers of braised burdock root with carrots, mirin, soy sauce, sake, and sesame seeds. It was wonderful along with my edamame.  I also ordered the Lilly Roll, which actually is filled with the Kinpira Gobo and has a sliver of avocado on top with Sriracha Sauce.  It is not only beautiful to look at but delicious to eat&amp;#8230;especially with a little help from Mr. Wasabi.  It was a perfect little meal.&lt;/p&gt;
&lt;p&gt;Miko&amp;#8217;s also serves traditional fish sushi items so it is a place where you can bring anyone and everyone will leave happy.  Miko&amp;#8217;s not only offers the finest vegan sushi in Las Vegas, but perhaps anywhere.  I need to get out and try new places all of the time and visit others again, but Miko&amp;#8217;s is a place that I could very easily dine at almost every day&amp;#8230;I enjoy it that much.  Whether you live here in Las Vegas or you are one of our welcome visitors&amp;#8230;Miko&amp;#8217;s needs to be a regular stopping place for you.  It is that good.&lt;/p&gt;

&lt;p&gt;So here is a little bit about how I try and eat each and every day.  Obviously, plant-based all of the time.  No exceptions. Then, it would be unprocessed, organic, and local whenever possible.  One other thing that I have been doing this past year that has been really good for me is that I have been trying to consume all of my food within an 8 hour window. That might differ some days&amp;#8230;but most of the time I am able to fit my consumption of food into an 8 hour time frame&amp;#8230;usually something like 11:00 a.m.-7:00 p.m. This allows proper time for the body to digest the food and then get busy on other things that it needs to do&amp;#8230;even if that is just rest.  It is like a little mini-fast built into each day.  I usually have one larger meal and the rest smaller meals during my eating zone.&lt;/p&gt;
&lt;p&gt;Of course there always exceptions based on my workload, special events, etc. But on those days when I know I am going to be eating late, I also try and get a later start on when I start consuming my solid food&amp;#8230;juicing doesn&amp;#8217;t count on any of those days&amp;#8230;as well as water, coffee, tea, hot water and lemon&amp;#8230; whatever.  The great thing about Las Vegas is that when you know your schedule is going to require a late meal, there are plenty of quality places that can accommodate you.  Such is the case recently when I had a later dinner Downtown at one of my favorite spots, Le Thai.  Le Thai is located on E. Fremont St. between Las Vegas Blvd. and 6th St., perhaps the hottest little area going in Las Vegas right now.  Le Thai offers some vegan-friendly dishes and most can be adapted to plant-based except for the curries.  The only exception to that would be the Vegan Massaman curry&amp;#8230;which is delicious.&lt;/p&gt;
&lt;p&gt;One of the things that you have to be careful of in Thai cooking is the fish sauce, so it always good to let your server know that fish sauce is a no-no.  This late night at Le Thai I tried the Mixed Vegetable Stir Fry with Tofu (and no fish sauce) with brown rice and a side Cucumber salad and peanut sauce. The spiciness range from 1 to 5 at Le Thai runs a little on the hot side, so 3 is plenty hot for most people.  I only go for 4 or 5 if I want a good cry. The Mixed Vegetable Stir Fry with Tofu was delicious and the Cucumber Salad was a nice, cool compliment to it.  It was a wonderful little meal, no matter the time of day. If you love good authentic Thai food, like I do, then Le Thai is a must for you to try, especially if you are already long into the night.&lt;/p&gt;

&lt;p&gt;I had the pleasure of being able to make it back to The Bronze Cafe at The Center in Downtown Las Vegas.  I was fortunate to be able dine there shortly after they opened about a month ago and I know many of you have visited since then.  It is really a beautiful place and is such a wonderful addition to the Downtown area and the community as a whole.  The Bronze Cafe located in The Center is very vegan-friendly and has been adding a number of wonderful things to the menu since I had last been there.&lt;/p&gt;
&lt;p&gt;I had heard about The Tree of Life Pita Sandwich and I knew that it was the next thing that I was going to try.  The sandwich is filled with red peppers, avocado, mixed greens, tomato, house-made pickled onions, house-made vegan sour cream, brazil nut &amp;#8220;parmesan,&amp;#8221; and a mango/cilantro/ginger vinaigrette on a flat pita bread.  It was outstanding&amp;#8230;so delicious and bursting with freshness and flavor.  One note&amp;#8230;they are not making their own breads as of yet and this pita does contain some sugar if that is not something you partake of.  You can always order it without and it will be still be very enjoyable.  I also had a terrific side salad&amp;#8230;the Poblano Black Bean Corn salad with roasted corn, roasted poblano peppers, pico de gallo, and the mango/cilantro/ginger vinaigrette.  A great compliment to the sandwich.&lt;/p&gt;
&lt;p&gt;David Mozes, the Bronze Cafe general manager, also brought out one of their amazing and refreshing drinks that they made&amp;#8230;a Watermelon Q-Cumber Chia concoction that was simply one of the best drinks I have tried in quite a while.  I also had a chance to sit and chat with David and he is such a remarkable person and it was tremendous to be able to share heart about the change that is taking place in the world, not only for humans, but for the animals as well.  It is a discussion that will be continued soon because I know that I will be back to The Bronze Cafe in The Center as soon as I possibly can.  You must come down and experience all of this goodness for yourself.&lt;/p&gt;

&lt;p&gt;It&amp;#8217;s a Friday or Saturday night in Las Vegas.  It&amp;#8217;s just past two in the morning and the group is hungry&amp;#8230;this is a more likely scenario than one might believe.  Pizza&amp;#8230;yes, pizza would be great.  But where are we going to find a pizza&amp;#8230;let alone a vegan pizza&amp;#8230;at this time of the morning.  Well&amp;#8230;at this point you might need to head Downtown&amp;#8230;if you aren&amp;#8217;t already there&amp;#8230;and get to Radio City Pizza on E. Fremont St.  If there is a hotspot now in Las Vegas, it might be the E. Fremont District Downtown.&lt;/p&gt;
&lt;p&gt;I had visited Radio City Pizza when they were located in Tivoli Village.  They have since closed that location and are focusing their attention on their new Downtown location.  Radio City Pizza makes it really easy for you to order a vegan pizza.  You have your choice of a regular or gluten-free crust and then you can pick your toppings and add their dairy-free mozzarella cheese.  I decided to try the gluten-free crust which is thinner and made in a gluten-free facility.  At 14&amp;#8221; it is also a little smaller than the regular 18&amp;#8221; pie.  I added mushrooms, artichoke hearts, and roasted garlic along with the vegan mozzarella.&lt;/p&gt;
&lt;p&gt;The gluten free crust is thin and has a good crunch to it.  RCP uses a good, rich sauce on their pizzas and I really enjoyed the mushroom, artichoke, and garlic combo.  The vegan mozzarella was scattered in little chunks that melted smoothly and nicely around the pizza.  It was not two in the morning when I enjoyed it&amp;#8230;more like two in the afternoon&amp;#8230;but it is good to know that a vegan pizza would be available till midnight at Radio City Pizza five nights a week and up till 4:00 a.m. on Fridays and Saturdays.  Late night/early morning hunger cravings&amp;#8230;solved.&lt;/p&gt;

&lt;p&gt;This was a week to visit some of the my favorite places that I have visited during my vegan eating adventure here in Las Vegas.  First, it was Pura Vida earlier in the week, and now, Panevino for lunch on a beautiful spring day. It is always good to see my friend, Vincenzo Granata, a vegan who also happens to be the general manager of Panevino.  I can easily say that Vincenzo is one of the best people that I have ever met&amp;#8230;not just in my travels about here in Las Vegas&amp;#8230;just one of the best ever.  He is easily one of the best and most dynamic restaurant personalities here in a town that is full of them.&lt;/p&gt;
&lt;p&gt;I was very eager to come in and try something off of the newly-expanded vegan menu at Panevino.  For those of you that are uninitiated with all that Panevino is, it is a breathtakingly beautiful restaurant just a couple of blocks east of The Strip on Sunset.  It has an amazing view of sunsets over the western mountains, the airport, and The Strip.  It is a very classy place to eat without all of the pretense.  They take very good care of you, whether you are at the bar, in the lounge, or in the dining room.  I was able to get a great seat by the window and I opened the menu to find the first page entirely covered with vegan menu options.  They have had a couple of terrific vegan options in The Homemade Vegetable Burger and the Spinach Tortelloni.  Now they have a full vegan appetizer section with things like Eggplant &amp;amp; Artichoke Bruschettone, Artichokes &amp;amp; Zucchini, Hummus Rolls, and a Caesar Salad.&lt;/p&gt;
&lt;p&gt;New vegan entrees include Ricotta &amp;amp; Spinach Gnocchi, Whole Wheat Linguine &amp;#8220;Bolognese,&amp;#8221; and Brown Rice Mushroom &amp;amp; Pesto Risotto.  After enjoying some fresh vegan bread, I decided to try the Ricotta &amp;amp; Spinach Gnocchi.  Vegan ricotta and spinach formed into little two to three bites sections and covered with sage.  The gnocchi itself does not have any oil in it but they do drizzle some over the top of them.  These were so fun to eat and absolutely delicious.  There are a couple of vegan desserts offered, The Chocolate Pudding and a Chocolate Gelato &amp;amp; Almond Milk.  The pudding sounded really good and it truly exceeded my already high expectations. This is a Dr. McDougall recipe and is 90% organic and so much lower in fat and calories but it sure didn&amp;#8217;t taste any less of anything.  Made up of cocoa, coconut sugar, corn starch, and soy milk it was rich and creamy, but still amazingly light and surrounded by pieces of fresh and juicy strawberries.  The pudding was a perfect compliment to the gnocchi.&lt;/p&gt;
&lt;p&gt;Panevino has certainly taken it to another level with their newly-expanded vegan menu section.  You open the menu and it is right there.  As one of the best restaurants in Las Vegas, they are certainly making a statement.  Plant-based eating is not a trend and is only going to grow in its scope, so let&amp;#8217;s embrace it and do this the best that we possibly can.  Well Panevino, you have done just that and I hope that other restaurants here in Las Vegas take notice.  I will be back very soon to try some more of the wonderful that Panevino has to offer.  I would not be surprised to see some of you there&amp;#8230;&lt;/p&gt;

&lt;p&gt;There is no other restaurant that I have eaten at and blogged about than Pura Vida, the love creation of the very talented Chef Mayra.  When I was in the midst of my 365 day blog project it seems like I was in there at least once a week trying something new.  It has been a while since I have been in because my schedule and the work that I have been doing to try and include as many other restaurants that I could into my e-book before it launched last week. Believe me, though, I have kept track of the many friends that have visited there regularly and I have lived vicariously through so many of the out of town visitors who have visited there and shared their experiences with me.  Enough of that&amp;#8230;it was time for me to get some of that pure life up close and personal.&lt;/p&gt;
&lt;p&gt;For those of you who may be reading this for the first time, Pura Vida is 100% vegan restaurant that has a palate full of flavors, textures, and beautiful presentations that will be sure to give a new and lasting impression to anyone who was wanting to know what could be done in a plant-based cuisine.  In all my visits there, I still don&amp;#8217;t think I have had the same thing twice, though there have been times I wanted to.  Once again, I went for something new, The Frank.  This is another cruelty-free club sandwich that is eggless, delicious, and soy-based.  The tofu crumbles are mixed with pickles, vegan mayo, celery, green onions, chef&amp;#8217;s special spices, great flavor, served on thick sourdough bread.  There is also spinach on the inside with tomatoes and cucumbers and all kinds of other greens available to add on if you like.&lt;/p&gt;
&lt;p&gt;Now, back in the day when I was eating animal products I never really indulged in too many egg sandwiches.  But I had enough to know of the texture and what could be done with them and I know I never tasted anything this good.  This was a club sandwich on the lighter side but it was still very filling.  It came with a wonderful little fruit salad and refreshing apple/tangerine-infused water.  What a delightful little meal.  It was very satisfying to enjoy and to see some of my old friends and watch others enjoy the cruelty-free art of food that was on their plates in front of them.  Smiles all around and smiles to go&amp;#8230;it was good to be home.&lt;/p&gt;

&lt;p&gt;It was the night before my e-book launch, Eating Vegan in Vegas: If It Can Happen Here, It Can Happen Anywhere.  It was a beautiful spring night and it looked as though I had completed my work for the night.  I had to run an errand downtown for a friend so I decided that I would grab a bite to eat while I was down there and I determined that I would have a little pre-launch party by myself.  Yes, I have the ability to have a party by myself&amp;#8230;but I never let things get too crazy. Smiles.&lt;/p&gt;
&lt;p&gt;I walked through the Fremont Street Experience because I like the energy and music that it provides.  People watching?  Oh my yes.  I had posted a little something about the vegan pizza at Pop-up Pizza and the vegan soft-serve ice cream and got so many comments from people about it that it had planted a seed in me that the next time I was Downtown I would stop in and try that combo.  So I headed to The Plaza Hotel and Pop-up Pizza.  A superb vegan pizza option, The Soho, and I love that I can get it by the slice.  A great crust and sauce with Daiya cheese, spinach, mushrooms, artichoke hearts, roasted red peppers and eggplant all melted together to form the right combo of crunch and chewiness.  &lt;/p&gt;
&lt;p&gt;What I had not tried yet was the vegan soft serve that you can get in either vanilla, chocolate, or a combo swirl.  I am an equal-opportunity eater so I decided to try the combo of both.  Let me tell you, the combo of the pizza followed up with this delicious soft-serve is fabulous.  Some of the best I have ever tried.  It is a great combo meal for seven and a half dollars.  While I was eating I happened to grab a City Life weekly paper from the rack and was just browsing through it.  I turned a page and the party became a little surreal for a moment.  There was a picture of the cover of the e-book and City Life had been gracious enough to give it a little shout out and talk about the Launch Party that was to happen the next night. I had no idea that this was going to be there.  I just looked at that and knew that this little moment in time was supposed to happen just as it had unfolded.  Just for me to enjoy&amp;#8230;and I must say that I enjoyed the moment magnificently.&lt;/p&gt;

&lt;p&gt;Dear Mr. Wynn&amp;#8230;I was scheduled to meet some people for an early morning business meeting and they wanted to meet at The Wynn.  It is no wonder why.  So I immediately thought of The Terrace Pointe Cafe or Tableau.  You know that I have given Terrace Pointe plenty of love, but I thought that it might be nice to go back to Tableau, though I had just been there a couple of weeks back.  I must have had Blueberry Pancakes on my mind.  As I was waiting for them enjoying some delicious coffee I discovered that due to their schedule coming in from out of town we were going to have to move our meeting until later in the day.  What was I going to do&amp;#8230;I was certainly in the breakfast mood by that point.  And breakfast is  definitely what I had.  It was lovely.  Also, I want to thank you for the part that The Wynn and The Encore played in my upcoming e-book that is going to be released this coming Thursday.  It is called Eating Vegan in Vegas:  If It Can Happen Here, It Can Happen Anywhere.  I hope that someone will get a copy to you&amp;#8230;I think you will enjoy it.  Thanks again for breakfast&amp;#8230;smiles.&amp;gt;&lt;/p&gt;
&lt;p&gt;I definitely had Blueberry Pancakes on my mind.  I had recently been into Tableau and had the vegan Benedict but I also really wanted the Blueberry Pancakes off of the vegan menu as well.  So I had my breakfast.  Picture this: A stack of warm and fluffy blueberry pancakes bursting with fresh blueberries, covered with vegan butter and powdered sugar, a side of Gardein sausage, all covered with a delicious, warm maple syrup.  Every bite was remarkable and I was just so thankful for any reason that had brought me down there that morning.  Comfort food&amp;#8230;&lt;/p&gt;
&lt;p&gt;We were able to have a very productive meeting later in the day and all was good.  I was reflecting throughout the day on how wonderful the breakfast was and how good it is to know that no animal products were needed or used in the process.  This conscious lifestyle of eating and living as a vegan is not a matter of what we deny ourselves, because at this point the thought of eating any kind of animal product would bring no pleasure, only disgust. This is really a celebration of all that  we can and are able to eat.  And it is so much more than anyone probably could have first imagined.  Tableau just served another reminder that life is good&amp;#8230;life is very good indeed.&lt;/p&gt;

&lt;p&gt;I am very excited about the latest addition to the vegan-friendly eating options in the Downtown&amp;#8230;The Bronze Cafe at The Center.  This is the new Gay And Lesbian Center of Southern Nevada that is going to celebrate it&amp;#8217;s grand opening this Saturday, April 6 from 10:00 a.m.-4:00 p.m.  It is a beautiful facility that now includes the Bronze Cafe, meeting and event rooms, library, computer center, and a wide range of programs and services.  It is open to the public, not just the LGBTQ community.  It was such a pleasure to meet Executive Chef Peter Bastien and General Manager David Mozes when I was there and listen to the wonderful vision that the have for The Bronze Cafe.&lt;/p&gt;
&lt;p&gt;As you walk in the doors of The Center&amp;#8230;the bright red walls of The Bronze Cafe reach out to you and draw you warmly in.  I was so surprised and encouraged to see the number of vegan options on their menu.  They have a variety of hot and cold coffee and tea drinks that you can get with soy milk. They also have a great selection of other vegan-friendly beverages, including a Kale Apple Banana blend and a Coconut-Almond blend.  All of their side dishes are vegan, including a Mini Beet Salad with Quinoa, Curried Quinoa, Edamame Salad, and one that I tried&amp;#8230;The Farro Salad with farro, roasted butternut squash, dried cranberries, parsley, sage, apple cider reduction and lemon juice.  It was outstanding&lt;/p&gt;
&lt;p&gt;For lunch I enjoyed the Roasted Veggie Sandwich&amp;#8230;immensely.  It is bell peppers, eggplant, portobello mushrooms, mixed greens, romesco, hummus,  and lemon vinaigrette served on whole wheat bread.  It was so fresh and just bursting with flavor.  They have a Asian Marinated Kale Salad that I have my eye for my next visit along with some fresh Hummus and Babaganoush. Along with the Farro Salad I also had to indulge in the Raw Vegan Chocolate Mousse.  It was so good.  It was also an appropriate choice because I found out later in the day that it was National Chocolate Mousse Day&amp;#8230;perfect. Oh&amp;#8230;and for next time&amp;#8230;the raw Banana Cream Pie is in my sights.&lt;/p&gt;
&lt;p&gt;I love the look&amp;#8230;I love the spirit&amp;#8230;I love the food of The Bronze Cafe.  This is a wonderful addition to Downtown Las Vegas and the city as a whole.  I am going to try and stop by the Grand Opening this Saturday and I certainly cannot promise you that I will not be indulging in some more food.  In fact, I think it is pretty inevitable.  Bravo to The Center and The Bronze Cafe for building such a wonderful bridge to our community.  We are all better for it.&lt;/p&gt;
