<p><br><br>Throwing a dinner party seems so grown-up and sophisticated. Imagine yourself flitting between guests, refilling drinks, and calling everyone in to a meal that will surely be complimented later. In reality, dinner parties are thought of as “grown-up” because they require planning and alcohol is usually served.</p>



<p>Before you let the idea of time management, preparation and general adulting scare you away from the idea of hosting a dinner party, try these few tricks. With a little guidance and some tips, you could be on your way to being the perfect host.</p>



<p><strong>The Logistics</strong></p>



<p>When it comes to planning, it’s best to keep your limitations in mind, both emotionally and logistically. It’s important not to spread yourself too thin or to overextend your resources. After all, you want to have fun at your own party.</p>



<p>Invite a number of people that is doable for your space and for mingling. If you live in tight quarters, a party of 12 is going to be an uncomfortable affair. On the other hand, if you only invite two other friends who don’t know each other, things are going to get awkward really fast. There is a sweet spot. A number where the conversation can flow, the sardines won’t be packed, and you can easily feed the bunch.</p>



<p>When you have reached your magic number it is time to choose your special guests. Try not to make all the attendees strangers. This isn’t the movie <em>Clue</em>. When the only thing guests have in common is the host, conversation can dry up very early in the evening.</p>



<p>Besides the general invitation information presented regarding the what, when and where, also give your guests an idea on the theme of party. Let them know what type of attire is expected. Will this be a casual potluck where Sharon’s Dynamite Bean Dip and basic threads are welcome? Or is this a swanky soirée where cocktail attire is required?</p>



<p><strong>Cocktail Batching to the Rescue</strong></p>



<p>Murphy’s law, we are all familiar with it to a painful extent. But what you may not know is that if your guests have a drink in their hand, they really don’t care whose law it is or why it matters.</p>



<p>Cocktail Batching is where that little bit of preparation makes you look like an adult host. Simply put, you’re premixing large quantities of cocktails rather than mixing them individually later. Having drinks ready for your guests can take the pressure off of you, and also cover for you if you don’t have dinner ready quite yet.</p>



<p>Before you start batching, make sure you have some tools on hand. You will need some empty vessels large enough to mix, store and serve these drinks. These may be pitchers, punch bowls, or empty liquor bottles. You will also need measuring equipment, a funnel, a ladle if a bowl is involved, and the ability to store and chill these batched cocktails until it’s party time.</p>



<p><strong>The Drinks</strong></p>



<p>Cocktail batching is a wonderful way to keep your guests happy without trapping you behind the bar. Pick a couple of spirit-based drinks that lend themselves well to batching. Some easy batching go-tos are martinis, old fashions, Manhattans, and Sidecars. Avoid drinks that include dairy or eggs as those ingredients do not age well.</p>



<p>Be sure to taste test. Some drinks are poured over ice and dilute themselves. Others may need a little water added to them. The only way to know is to try it out.</p>



<p>Punch-style drinks are a great way to cocktail batch for a casual party. The alcoholic version of punch often consists of a combination of juice, spirits, syrups, fruits and sometimes a carbonated element. In preparation for a party, everything but the carbonated liquid and the fruit can be pre-combined a day or so before, sealed and refrigerated. Pre-cut fruit can be added to the non-carbonated liquid concoction at the same time the carbonation is added in a punch bowl or other vessel of choice.</p>



<p><strong>Mixing and Mathing</strong></p>



<p>If you are mixing things up more than a day before the party, the rule of thumb is that like ingredients go together. Your spirits can be pre-mixed with liqueurs or your juices can be combined with other juices. Adding booze and juice together should be saved for day-of, but can still be done prior to the party. Easy sugar-based mixers like simple syrups can be added to either mix at any time, but watch out for bitters, those can get pretty potent on you so keep those to the day of and be conservative.</p>



<p>Now to take a recipe from one drink and make it into several drinks. How you approach this process is entirely up to how much of a purist you are when it comes to the cocktail arts. If you’re just looking to make some nice tasting cocktails and have plenty of them, focus on ratios. Where a drink calls for one ounce, change that to a cup. There are eight ounces to a cup so essentially you have turned a recipe for one drink into eight drinks.</p>



<p>If you prize yourself on your ability to mix the perfect drink, you’re going to need to be more precise. Much of your chopping and portioning can be done ahead of time, or better yet, prepackaged. Your meal should be something easy and one that doesn’t require a lot of your attention during the party.</p>



<p>Food doesn’t need to be complicated to be delicious. Guests don’t usually leave a party thinking, “Steve’s food was yummy, but I wish it had been more of an involved process to make it.” There is no shame in prepackaged salad. Think of it as adding more time for your guests.</p>



<p>Make sure you have enough cutlery and dinnerware for your guests. Coming up six spoons short on party day is not an opportunity to suggest bonding by sharing. Take stock of your utensils and dishes before-hand and use disposable or borrow if you have to. If your party is a potluck, check to see that you have plenty of serving tools.</p>



<p>Prior to settling on food choices, it is a good idea to confirm RSVPs and any dietary restrictions that your guests may have.</p>



<p>Set yourself apart from other dinner parties by engaging your guests in an old-fashioned practice made new again, the digestif. A digestif is exactly what it sounds like, an after-dinner sipping drink that is supposed to aid in digestion. Science hasn’t backed up the claims of these drinks being digestive aids, but your guests didn’t come to your party to learn hard science.</p>



<p>Why not combine the idea of coffee and a digestif with this <strong>Espresso Martini</strong>? <p>When the weather is warm enough for those outdoor BBQs, one of the last things you might consider adding to your ingredients list is a hot cup of coffee. Sure, some dads might stand around in their sandals and socks drinking bean juice out of their “World’s Okayest Dad” mugs, but really, coffee and summer cookouts haven’t jived. <em>Until now.</em></p>



<p>Coffee is a wonderful marinade and brine for chicken, pork and beef. Believe it or not, this brewed morning miracle acts as a meat tenderizer while imparting a rich flavor, that is not distinctly “coffee.” Whether you enjoy coffee or would rather start your mornings with something a little less intense, using it as an ingredient while cooking meat can add variety and complexity to your meals.</p>



<p><strong>Meat Baths 101</strong></p>



<p>Before we get too far down the roasted bean road, let’s talk a little bit about the difference between a marinade and a brine. In short, the purpose of a marinade is to add flavor and the purpose of a brine is to add moisture. Of course, there will be some flavors with brines and some moisture with marinades, but the majority of their functions are set. Consider coffee as a new “spice” to add to your marinades and brines.</p>



<p><strong>Marinating in a Cup of Ambition</strong></p>



<p>Most of us are working for a living, so all cooking and meal prep needs to be done outside of the hours of 9 to 5, or some variation of Dolly’s schedule. The good news is that many people brew brain juice on the regular every morning. The trick is to brew more of it and to brew it so strong that it will fuel a rocket.</p>



<p>Most homes are not equipped with an espresso machine because we would rather be pampered by the good folks who misspell our names on cups at Starbucks. You will not need a coffee chain-worthy machine to get a strong, rich brew for your marinades or even for your own delicious beverages. <a href="https://escali.com/stovetop-espresso-coffee-maker">A stovetop espresso maker</a> such as this one from <a href="https://escali.com/london-sip-coffee-products">London Sip</a> is an economical and space-saving way to get coffee-house quality brew at home. <p>A coffee marinate is like any other. It features an acid such as vinegar or wine to help tenderize the meant and allow it to absorb flavor. Red wine can be an especially nice companion to coffee in a marinade. You will also need a fat in the form of an oil, such as olive oil, and lastly your flavoring.</p>



<p>Here is a simple coffee marinade recipe to try on chicken, steak, or pork.</p>



<ul><li>3 cloves garlic</li><li>&nbsp;1 cup strong coffee/espresso, room temperature</li><li>1/3 cup balsamic or red wine vinegar</li><li>½ cup extra virgin olive oil</li><li>2 tbs Dijon mustard</li><li>¼ cup packed brown sugar</li><li>1 tbs worchestershire sauce</li><li>1 tsp kosher salt</li><li>Freshly ground pepper</li></ul>



<p>Marinate the meat of your choice anywhere between 4 and 24 hours rotating so that all of the meat gets a chance to soak. The longer the meat sits, the more flavorful it will be. Other fresh herbs and spices can be added based on personal taste.</p>



<p><strong>It’s Brine O’Clock Somewhere</strong></p>



<p>As mentioned above, brine is meant to keep meat juicier. It is a method that is usually used for meat that has a tendency to dry out during the cooking process, like chicken or turkey, but also ribs. Brine is basically a saltwater bath that lets you give your meat that extra cook time without worrying about it getting dry. Cooking insurance, if you will.</p>



<p>Like in a marinade, coffee will act like a flavor in a brine, while the water and salt do the heavy lifting. The difference is that you might need a lot more of it depending on what you’re going to soak. That turkey will need more than a cup. No, not your significant other, the other turkey.</p>



<p>Brining is all about the salt to liquid ratio. The best way to measure things accurately is to use measuring cups and spoons for liquid ingredients and a food scale for dry ingredients. Dry ounces are not the same as fluid ounces. A kitchen scale, such as the <a href="https://escali.com/metallic-arti-glass-kitchen-scales">Escali Arti Glass Scale</a>, is a valuable tool that will help with accuracy and save on dishes.</p>



<p>One trick to making a brine is to heat the water in a pot and to add the salt and sugar in order for it to dissolve. If your water is still hot when you are ready to add your meat, cool it down with a few ice cubes, but make sure you know ahead of time so you can adjust the salt for this added water.</p>

<p>Your friends and neighbors will never believe the secret ingredient to your rich, flavorful steaks or your savory chicken. Marinades and brines are a great way to prepare meat for grilling, frying or roasting. Many of the ingredients, including coffee, are often inexpensive and on-hand and the preparation can be done hours ahead or even the night before.</p>

<p>But with these tips and tools, you’ll be so excited to cook your leftovers that they won’t have time to get hidden behind the milk.</p>
<h2>Leftovers: Can They Be Just as Good the Second Time?</h2>
<p>There are a few general rules to remember no matter what it is you’re reheating.</p>
<p>Do not reheat leftovers more than once. If you’re planning on eating the same meal for multiple meals, take out the portion you want to heat and return the rest to the fridge or freezer. Using a kitchen scale, such as the Primo Digital Kitchen Scale, to divvy up the portions into individual containers can save you time. Having your lunch prepped can shave minutes off your morning routine and you will also know exactly which buttons to push to heat it up.</p>
<p>Freeze your leftovers for up to three or four months. Any longer and you might be risking freezer burn.</p>

<p>Reheated leftovers should be streaming hot throughout, and should reach and maintain 165℉ (or 70℃) for two minutes. Stir food while reheating to help it heat up thoroughly. <h2>What is the Correct Way to Reheat Each Type of Leftover Food?</h2>
<p>While it’s good to remember these general rules of thumb, there are some other rules to remember for different types of food to make sure the food tastes as good as possible and is safe to eat.<br />
For convenience, we’re going to list several different types of food you may want to reheat, and what is considered the best method of reheating that type of food.</p>
<h3>Steak</h3>
<p>The biggest deterrent of reheating steak is that it’s going to get dried out and rubbery. <em>Leave the steak out of the refrigerator for ten minutes before reheating</em> in the oven to prevent this. Oven temps can often vary so it is important to be sure you are not overheating your leftovers. Investing in an inexpensive, easy to read, <a href="https://escali.com/oven-thermometer">oven thermometer like this one from Escali</a>, can help you in your cooking, baking and reheating.</p>
<p><strong> </strong><strong>Oven: </strong></p>
<ol>
<li>Set your oven to 250°F (120°C)</li>
<li>Place steak on a wire rack inside a baking tray</li>
<li>Cook for 20-30 minutes or until 100–110°F or 37–43°C in the center</li>
<li>Serve with gravy or steak sauce</li>
</ol>
<h3>Chicken and Other Red Meats</h3>
<p>This meat is best reheated using the same method in which it was cooked. Keep this in mind or write a note to yourself on the bag before you refrigerate it.</p>
<p><strong>Oven:</strong></p>
<ol>
<li>Set your oven to 250°F (120°C)</li>
<li>Add meat to a baking tray, with oil or butter</li>
<li>Cover with aluminum foil to prevent drying out</li>
<li>Cook 10-15 minutes</li>
</ol>
<h3>Fish</h3>
<p>Remember that fatter cuts of filet will retain moisture and flavor the best.</p>
<p><strong>Microwave:</strong></p>
<p>Best if fish isn’t breaded or battered. We don’t recommend doing this in an enclosed office space.</p>
<ol>
<li>Sprinkle water or oil on fish before placing in microwave</li>
<li>Cover dish and heat on low to medium for 20-30 seconds at a time, checking regularly</li>
<li>Flip filet regularly for even heating</li>
</ol>
<h3>Casseroles and Single-Pot Dishes</h3>
<p>These are great for batch cooking and easy to reheat!</p>
<p><strong>Microwave:</strong></p>
<ol>
<li>Place food in a microwavable dish, spreading out as even as possible</li>
<li>Cover with a slightly damp paper towel or sprinkle with water to prevent drying</li>
<li>Heat as needed until reheated all the way through. Stir regularly for best results.</li>
</ol>
<h2>Plan Ahead to Prepare Leftovers!</h2>
<p>Think about the foods you know tend to reheat really well or you know you love the most. <p>For anyone who enjoys to tipple, you&#8217;ve no doubt pondered over the possibilities of making your own. Sure it takes time, but, then again&#8230; all good things do come to those who wait.</p>
<p style="text-align: left;"><strong>Here&#8217;s everything you need to know, from ingredients, equipment and steps&#8211;to produce your very own <span style="text-decoration: underline;">MICRO-BREW BEER</span>.</strong></p>
<h2><span style="text-decoration: underline; color: #800000;">BEFORE YOU BEGIN</span></h2>
<p>First, you’ll need a few things:</p>

<p style="text-align: left;">You can easily purchase all of these items at your local hardware store, but you will definitely want to look into some of the options on the market for homebrewing starter kits.&nbsp; They come outfitted with everything you will need, and often the containers and specialized accessories will smooth things along and help ensure better sanitation (a key factor in brewing).</p>
<p>Next, you need to get the <strong>organic ingredients</strong> for your beer.&nbsp; For this, you’ll need to visit your neighborhood <strong>homebrew supply shop</strong>, or do some <strong>online ordering</strong>. Here&#8217;s what to pick-up:</p>
<ul>
<li><strong><span style="color: #800000;">Malt Extract</span></strong> <span style="text-decoration: underline;"><span style="color: #800000;"><br />
</span></span></li>
<li><strong><span style="color: #800000;">Brewers Yeast</span></strong></li>

<h2><span style="text-decoration: underline; color: #800000;">STEP 1: SANITIZE</span></h2>
<p>Sanitation is probably the single most important factor in the brewing process, so be thorough.&nbsp; Wash all of your equipment with warm soapy water and sterilize with a solution of 1 tsp bleach diluted in 1 gallon of water.&nbsp; Rinse thoroughly.&nbsp; Also, a good tip if you are using a new plastic container, rinse it out with a solution of water and baking soda to remove that lingering plastic taste.</p>
<h2><span style="text-decoration: underline; color: #800000;">STEP 2: BOILING</span></h2>
<p>Now pour 2.5 gallons of your bottled water into the brew pot.&nbsp; Make sure there is plenty of room left in the pot to avoid a boil over!&nbsp; Stir in your malt extract and boil for one hour.&nbsp; As it boils, dunk in your strainer for about 15 minutes to sanitize it for later use.&nbsp; When the hour is up, submerse the pot into an ice bath in the sink and allow it to cool until the sides of the pot are chilled.&nbsp; The faster you can get it cool the better.No need to stress too much; it will take time.&nbsp; Now, you have what is called <span style="text-decoration: underline;"><strong>wort</strong></span> (unfermented beer).</p>
<h2><span style="text-decoration: underline; color: #800000;">STEP 3: PREPARING THE FERMENTATION </span></h2>
<p>Using the strainer and the funnel, pour your cooled <strong><span style="text-decoration: underline;">wort</span></strong> into your fermenting bottle&#8211; straining out <strong>everything but</strong> the liquid.&nbsp; Because some of the water will have boiled off, add more to the solution until you have 2.5 gallons of liquid again (MEASURE!).&nbsp; Now, add in your brewing yeast and stir thoroughly until it is dissolved.</p>
<p>At this point, you will need to seal the container in such a way that carbon dioxide can escape <strong>without</strong> letting in any outside air.&nbsp; Most brewing kits come with simple airlocks for this purpose, but if you went without the kit, just use a small length of tubing and a glass of water to serve the purpose.&nbsp; Drill a hole in the lid of your container, secure the tube tightly in the hole so that air can’t escape and put the other end in water.&nbsp; This way, gas can bubble off of the yeast without any air entering.</p>

<h2><span style="text-decoration: underline; color: #800000;">STEP 4: WAIT 4-7 DAYS</span></h2>
<p>This one is &#8216;easy&#8217;.&nbsp; Just keep your batch in a dark space for a week and try to contain your excitement&#8230; you can do it! Just think of the delicious concoction waiting for you on the other side! In the meantime, go play some football, go swimming, plan a poker night with your buddies, or if you must&#8230; just stare at your homebrew&#8230;it&#8217;s really up to you!</p>
<h2><span style="text-decoration: underline; color: #800000;">STEP 5: CARBONATION PRIMING</span></h2>
<p>At this point, you will have flat beer.&nbsp; The sugars in the malt have been converted to CO2 and alcohol, but you&#8217;ve allowed the CO2 to seep out through the air lock.&nbsp; You will need more sugar to produce carbonation, so boil together 3/8 cup of corn sugar with one cup of water (MEASURE!) for five minutes and pour it into your large sanitized container.&nbsp; Then, siphon your beer into the new container on top of the sugar, being sure not to stir up too much of the sediment on the bottom of the tank.&nbsp; Now, you are ready for bottling!</p>
<h2><span style="text-decoration: underline; color: #800000;">STEP 6: BOTTLING</span></h2>
<p>Finally, it is time to bottle your beer.&nbsp; The best idea is to use brown glass bottles with metal pry-off tops, but you can also get creative here if you like. For example, reuse champagne bottles or old soda bottles! Just make sure that your cap seals securely enough to contain the carbonation and that the bottles are thoroughly sanitized in a bleach/water solution beforehand.&nbsp; Siphon or pour the beer into the bottles, cap them and store the case in a cool dark place again for another 10 days.&nbsp; During this time, the yeast will further ferment, the alcohol content of your beer will increase and it will become carbonated. Again, get outside, focus on some work or if you must&#8230;.stare at your concoction and dream about the smooth, liquid gold you&#8217;ve created with your own two hands with a little bit of science. Wow, you&#8217;re so smart!</p>
<h2><span style="text-decoration: underline; color: #800000;">STEP 7: DRINK!</span></h2>
<p>Woo-hoo!&nbsp; We all have to admit, this is by far the best step of all!&nbsp; It is time to enjoy your beer!&nbsp; Make sure it&#8217;s chilled (nothing worse than warm beer&#8230;) and serve. One of the best ways to celebrate your accomplishments, is to invite all your friends over for a tasting party. Receiving compliments for a beer you personally created is one of the best feelings in the world. One suggestion: taste the beer (bottled form)&nbsp; before you unleash it on your friends. You wouldn&#8217;t want everyone&#8217;s face to turn sour the second they take a sip&#8230;(even if they do, a little constructive criticism never hurt anyone.
