<p>This simple salad is perfect for spring holidays! The ingredients are drenched with vital anti-oxidant nutrients and color.</p>
<p>Choose spinach with a few details in mind. Bagged spinach has good flavor and less waste and is fairly well trimmed and washed. However, even triple washed may still have sand and grit. Baby spinach has small delicate leaves, very mild flavor and can be used with stems on. Bunched spinach has the best true flavor and texture but is pretty sandy and needs trimmed. An alternative to spinach is arugula. Some folks enjoy the more pungent taste. With either choice you can buy leaves nearly ready to serve. The sweet Maui-style Winter Squash and Citrus Soup onions, fruits and vanilla-scented dressing balance well with the texture and earthy flavor of greens. For a whole meal salad, top with grilled shrimp, poached salmon or baked teriyaki-flavored tofu.<br />
Following the rule of rainbow nutrition (vary your colors to vary your nutrients), enjoy potassium for heart health, caroteniods for a healthy immune system, bioflavonoid and folates (vitamin B’s) for guarding against certain cancers and vitamin C for overall healthy cell function. Your springtime healthy table is so easy. Hop to it and enjoy!<br />
<strong></strong></p>
<p><strong>Ingredients</strong></p>
<ul>
<li> Fresh Spinach, washed and broken 6 cups (about 6 ounces)</li>
<li>Pineapple, pre-sliced and cut into cubes 1 cup</li>
<li>Sweet Hawaiian onion, very thinly sliced 1 small or ½ large, sliced, separated into rings</li>
<li>Pomegranate seeds or small berries 2 tablespoons</li>
</ul>
<p><strong>Dressing: </strong></p>
<ul>
<li>Wine vinegar, white or fruited ¼ cu</li>
<li>Extra virgin olive oil 2 teaspoons</li>
<li>Sugar 1 teaspoon</li>
<li>Salt ¼ teaspoon</li>
<li>Vanilla extract ¼ teaspoon</li>
</ul>
<p>Combine dressing ingredients and set aside. Toss spinach leaves and pineapple cubes with the dressing. Arrange the sweet onion on top of the spinach leaves. Sprinkle with pomegranate seeds or berries. Serves 4.</p>
<p>Nutritional 3 grams fat, 4 grams protein and 5 grams dietary fiber per serving.</p>

<p>My biggest transformation is going from totally sedentary to being active.  I have so much more physical strength and energy.  Everyday tasks and housecleaning have become much easier. Lifting things also has become easier.  I look and feel better.  When I began working with Sheila, I was afraid that any physical activity I did would hurt me in some way.  I was afraid of tripping and falling.  I was afraid that every muscle ache would lead to 3 weeks of couch or bed rest. Simple walking caused severe muscle cramping in my back, hips and legs after only 20 minutes and so I didn&#8217;t do it thinking I was hurting myself.  I was afraid of hurting my knees or my hips walking or running.  I was afraid of developing lymphedema in my left arm if I lifted anything too heavy or pushed and pulled the vacuum too long.  I am just about over those fears.  I am moving again, a little jogging even&#8230;gasp, and embracing muscle aches as progress.  I am lifting weights and building strength again.</p>
<p>This program saved my life.  The small group interaction gave me very carefully supervised direction in doing the exercises so I had more trust and confidence that I wouldn&#8217;t hurt myself.  I loved having a positive and encouraging coach driving me on to push myself beyond what I believed I could do.</p>
<p>As to food&#8230;.whenever I&#8217;m not eating whatever I want, I feel like I&#8217;m on a diet.  However, that being said, the amount of calories suggested is satisfying and healthy and the diet plan is very livable as a lifestyle.  For me, changing eating habits is more than an education process.  It will require mastering and controlling the urges to binge and give into cravings.  (At our lunch the other day) I think she hit it on the head when she compared it to alcoholism.  For me, it feels like an addiction that can easily get out of control if given a chance.  I&#8217;m not sure what the answer or key to changing this behavior in me is yet.  Maybe like alcoholism and drug addiction, the longer and more I practice good eating choices, the easier it will be to avoid giving in.</p>
<p>Just a note of thank you, Sheila for helping me get to this point in my progression.  I feel like a transformed woman.  I feel like I’m reversing the aging process in my body to some extent.  I feel like I’m getting my life back a little more each week as I get stronger”.</p>

<p>With Sheila’s wonderful, warm nature, style and expertise in this field, I have lost 140 pounds.  I feel fabulous and now love to exercise daily.  I am 40 years old and have arthritis in both knees.  Sheila goes above and beyond when it comes to her clients.  She applies her knowledge and experience to each client individually to cater to whatever ailment they may be experiencing.</p>
<p>Sheila spends a lot of time with each client getting to know them, their ambitions, their physical needs and their personal goals.  She then helps them to develop a personalized plan that will help them to succeed.</p>
<p>She is genuinely concerned for the health and well being of every individual person that she works with and it shows through her hard work and continuous dedication to this business.</p>
<p>Sheila Schneider has inspired and assisted me to drastically improve the quality of my own life.  She is truly a gift to the San Diego community and should be recognized for her contribution to the well being of the people who reside here.</p>
