Three quarters of the grits sold in the US are in the South! When traveling through the &amp;quot;grits belt&amp;quot; (Texas to Virginia), you&amp;#39;ll find grits is a standard menu item.  I know I&amp;#39;m officially in the south when I start to see grits! Grits are traditionally served with a &lt;i&gt;big&lt;/i&gt; patty of melted butter and cracked black pepper or milk. I love mine topped with a perfect over easy egg and fresh cracked pepper!&lt;br&gt;

My Uncle Ken first learned to add hard-boiled eggs to gumbo from his &amp;quot;Bayou buddies&amp;quot; in Louisiana. The eggs are a perfect addition to your gumbo!&lt;br&gt;

Gumbo most likely originated in Southern Louisiana in the 18th century.  Made with a dark roux and the Trinity (celery, onion, bell pepper) or the Holy Trinity (add garlic as well), gumbo combines ingredients and culinary practices of several cultures, including: West African, French, Spanish, German and the Choctaw Indian. &lt;br&gt;
&lt;br&gt;
My secret to rich gumbo is a dark roux! It takes about 45 minutes of cooking time to achieve the right deep, rich color.  To prevent my roux from burning, I lay a&lt;i&gt; Hershey&amp;#39;s milk chocolate bar&lt;/i&gt; near my cast iron skillet while cooking—periodically matching the roux&amp;#39;s color to the the chocolate bar.&lt;br&gt;

&lt;li&gt;The beer takes the place of the yeast, cottage cheese and butter.  This removed approximately 500 calories, 30 grams of fat, and 2000 mg of sodium—yikes!&lt;/li&gt;
&lt;li&gt;Increased the flavor by using an&lt;i&gt; extra-sharp&lt;/i&gt; cheddar, allowed me to cut the cheddar by a quarter cup removing another 120 calories and 10 grams of fat!&lt;/li&gt;
&lt;li&gt;The recipe called for 1 tsp of salt.  I removed 1/4 tsp which is about 590 mg of sodium. &lt;/li&gt;

It&amp;#39;s important to cut your fries as uniformly as possible so your fries bake evenly. &lt;br&gt;

A big part of the flip was replacing the canned soups used in the original recipe with 98% fat-free soups.  I used the canned soups to make a garlic-herb sauce to drizzle over the eggs!&lt;br&gt;

For the topping, I replaced the croutons with Panko crumbs and the cheese with &lt;i&gt;sharp&lt;/i&gt; 2% Cheddar.&lt;br&gt;
