One of which has been watching the croakers. Monday night they were out in rare form. They swim against the tide, and have been most prominent when the tide is at its peak, either coming in or going out. Monday night the tide was coming in and they were facing/swimming south. The tides are fascinating. The croakers are fascinating. All of nature truly is fascinating to me. We had a great time soaking in the wonders of the multitude of fish swimming at the dock. And Justin, as you can see in the next couple pictures, is as swift with a net as he is with a gig. I&#8217;ve been thinking a lot about coming to this place and posting, but life is full, and life is busy, and there may be a touch of chaos in the mix too. I can talk myself out of sitting down to post about 9 times out of 10, mainly because I feel my responsibilities elsewhere take precedence. These three little children seem to grow up overnight. As many of you know, they come with great responsibility and in the last few weeks I feel my position as wife &amp; mother have left little room for much else, which is ok, because this is where I am now. We are still living at the beach, with our main home 200+ miles away, and we find ourselves attempting to be here {the beach} which is where we live 90% of the time and still manage a home and business that are there back home. I&#8217;ve often felt like I&#8217;m either preparing to travel {packing} or recovering from travel {unpacking &amp; laundry}. The kids are so resilient and never show signs of being affected by this going-back-and-forth life we live right now. They are eager to go and equally as eager to return, and for that we are so grateful. They make it easier on us, and anything that makes this easier on us is appreciated! We are still loving living here at the beach and all it has to offer, but I would be amiss if I didn&#8217;t admit that I miss my friends, church, and Community Bible Study. I remind myself these are all things to look forward to when we return home. And while we are living in a somewhat unpredictable situation, still unsure of how long we will be here, I am thankful for the promises of God and His unchanging word, and how it becomes afresh again and again. Last week I read and prayed through <a href="http://www.biblegateway.com/passage/?search=Psalm+139&amp;version=NIV" target="_blank">Psalm 139</a> and it was such a sweet encouragement to me&#8230; he searches us, he knows us, he hems us in &amp; he never leaves us.</p><p style="text-align: justify;">I took the kids to the park on Sunday afternoon to play and an added bonus of our park is that it&#8217;s also waterfront. I&#8217;ll report back when I&#8217;m finished reading.</p><p style="text-align: justify;">Backing up to December&#8230; we packed up and headed to the brown house the week before Christmas, and then we packed up again a few days later and made the journey to Illinois to spend Christmas with Mom &amp; Daddy Boy and my extended family. Its a hike to get there, especially loaded down with Christmas loot. It had been over a year since we had traveled there, and when you have growing children that great-grandparents, aunts, uncles, and cousins hadn&#8217;t seen in over a year its worth any heartache to get there. I&#8217;m here to report that I should do nothing after dark, that includes typing on the computer. I told Christy Reid, the very kind and gracious writer who wrote the article about our family in the Mobile Bay Magazine,  that the Maple Cinnamon Pecans go back in the oven the second time at 200 degrees but <strong>really they go back in at 300</strong>! I thought I double checked everything, but somehow I missed this typo. I made them today and was going by the magazine recipe and realized the mistake. I let the magazine folks know, and they&#8217;re going to update the website. There are just a couple copies of the magazine floating around&#8230; if you&#8217;ve clicked over to the blog because your pecans are still sticky, I am so sorry! At 300 degrees they will get bubbly in the oven and then you&#8217;ll set them out on parchment to dry and they will actually dry. At 200 they stay a little sticky, still edible, still delicious, just a little sticky!</p><p style="text-align: justify;">I also, inadvertently, left Christy out of the equation yesterday when I mentioned the kind folks at Mobile Bay Magazine, she is a very talented writer and we are so grateful for her story! We loved it so much we decided to make a handful more. If you live in a climate like ours they&#8217;re super easy to make. They seem to have moved in for the winter. I took this shot of the moon last night while the sun was setting. It&#8217;s been fun to watch the sun and moon take on a new perspective as the days have grown shorter. This is looking to the east from our deck. There is thankfully no shortage of pecans in Baldwin County! They didn&#8217;t have any shelled, so we settled for cracked, and my very gracious husband shelled 6 pounds of pecans this weekend. His office took the cover picture, scanned it and printed it out on a plotter and hung it in the lobby of his office&#8211; resulting in a nearly life-size poster of the cover to welcome him and anyone else entering the building. As you may gather, he has received a small amount of grief over this. I just stay home with the kids and let him have the attention. He thankfully can take it like a champ.</p><p style="text-align: justify;">The folks at Mobile Bay Magazine came out in October to shoot. I feel like there&#8217;s always so much catching up to do and not nearly enough time to actually do it. We have been busy little bees, going back and forth between the brown house and the rental house, packing and unpacking, visiting with friends and saying good bye to friends. Living in limbo between the two may be catching up with me, and honestly, I&#8217;ve found myself being tempted to despair. When I feel overwhelmed, or like this limbo game is one I&#8217;d rather not play any longer, I remind myself the alternative is to live alone with the children and have weekend visits from Justin. I had that last year. While it offers the material comforts of home and is lacking the stress of running two homes, it is truly void of what our family needs, which is being together. So we are all still together, and I am thankful for that. I just have been a little overwhelmed keeping up with, and going between two places. We initially thought we would be here through December, but it looks like it will be quite a bit longer&#8230; which is great because we love it here. I just need a better system to manage being in two places.</p><p style="text-align: justify;">So, back to the catching up business. There seemed to be no alternative considering no one would be there to water it. We survived our quick trip to Lowe&#8217;s, got back home, threw that baby together in a matter of minutes and wasted no time stringing the bright colored lights. Justin had a conference in New Orleans this past week and guess who got to sneak away and join him!? {<em>It would be appropriate to enter excited squeals here.</em>} My very kind and generous in-laws came to our house last Tuesday so that I could head over to New Orleans for a few days with Justin. I feel confident many of you have children and understand how few and far between nights away can be. In fact, this was our first time to get away together, just the two of us, since we&#8217;ve had kids. {<em>Shame on us, we know</em>!} I rolled in to New Orleans alone, Justin was already there, and somehow I didn&#8217;t know, or forgot that New Orleans is a pretty big city! Speaking of crazy archaeologists, I&#8217;m married to one and we got to spend a great deal of time with others as this was a &#8220;Cultural Resources&#8221; conference. The first night we made our way on foot to John Besh&#8217;s <a href="http://www.lukeneworleans.com/" target="_blank">Luke</a> on St. Charles. I did my homework and knew that I wanted to spend at least one day in the Garden District on Magazine Street. Now, let me tell you, all of that was easy to plan out beforehand but when the rubber hit the road and I knew that I was about to venture out in New Orleans alone, including a plan to brave public transportation, I admit I had to have a little pep talk with myself <em>that there&#8217;s no reason why a 31-year-old, mother-of-three can&#8217;t get around New Orleans on her own.</em> To reassure myself I stopped by the concierge to run my plan by her and make sure she didn&#8217;t advise otherwise. She said it sounded good to her. I&#8217;m sure some of you are old pros at navigating cities&#8230; I&#8217;m getting there!</p><p style="text-align: justify;">My first encounter was with the street car. We stayed in the Central Business District {CBD} right beside the Superdome&#8230; it was a fine location but I probably walked about 20 miles both days I was there. Day one, I ventured down Poydras to St. Charles and planned catch a street car to the Garden District. The first lesson I learned was: it helps to wait for a street car at a street car stop. Don&#8217;t think I didn&#8217;t chase him down &amp; beat on the door. I also learned very quickly that public street cars are usually very full, and not of tourists. In fact, I may have been the only one. I wondered if I looked like a tourist. Maybe the 14 layers of clothes and sweat on my forehead gave me away. Too bad I didn&#8217;t have my big camera around my neck to seal the deal.</p><p style="text-align: justify;">My first stop was the Brass Menagerie where I may have spent way too much time with the older couple who own it, but in turn received first hand accounts of their Katrina story. We headed up to Marigny which is a part of town Justin enjoys for it&#8217;s music joints. We strolled around a while, poking our heads in different bars, listening for music that would draw us in. We finally found it&#8230; with a street band, their dogs, and their instruments. I would imagine they were all late teens to early 20&#8242;s. We spent about an hour with them. Justin played their guitar and they accompanied him with the fiddle and mandolin. It was entertaining and they were great kids. I gathered that they weren&#8217;t truly &#8220;homeless&#8221;, but they welcomed food money and leftovers. I was so thankful to be out in the fresh air with these nice kids than to be sitting in a smokey loud bar. We wanted to go back the last night we were there but didn&#8217;t make it. If you&#8217;re familiar with NOLA, when I tell you I walked from the Superdome to the streetcar and then walked all of the Garden District and then walked from the Superdome to NOLA and then to Frenchman in Marigny&#8230; you know it was a day with lots of walking {not in any kind of athletic shoe}. So again, I set out on foot. My first stop didn&#8217;t require too much gumption&#8230; Anthropologie. It was my first time in one and it didn&#8217;t take me long to realize I really like Anthropologie. From there I ventured further into the French Quarter. I made my way to The Little Toy Shop on Decatur, past Jackson Square. I found a few things for the kids and then made my way to Felipe&#8217;s {you need to read that in Spanish, not French} for lunch. I happened to go to <a href="http://www.felipestaqueria.com/" target="_blank">Felipe&#8217;s</a> by way of<a href="http://www.cafedumonde.com/" target="_blank"> Cafe Du Monde</a> because I could think of nothing that was better suited to follow my Mexican lunch than a beignet. Even Felipe&#8217;s Taqueria is beautiful&#8230; I love OLD cities! I was nearly walked out at this point so we hopped on a pedicab and were actually a little early so we stopped in a <a href="http://www.crescentcitybooks.com/" target="_blank">great bookstore</a> on Chartres before dinner. Napoleon House had good ambiance but the menu, in my opinion, didn&#8217;t measure up to the ambiance of the restaurant. But we had a great time with the dinner crew&#8230; I was again outnumbered by the archaeologists but had a great time and enjoyed their conversations.  They are a super nice group of folks, and I believe we all had a great evening. We shut down the Napoleon House and made our way to <a href="http://old-new-orleans.com/NO_Lafittes_Blacksmith_Shop.html" target="_blank">Lafitte&#8217;s Blacksmith Shop</a>, one of the oldest buildings still standing in New Orleans. I am not a night owl so at this point I was fading fast, but I was thankful to be able to see a really cool spot on Bourbon Street, they have NO indoor lighting, all candles. Very cool. With temperatures hovering around 80, I have no choice but to wear shorts&#8230; at least they are corduroy.  Despite the warm and stormy weather outside, I&#8217;ve been sneaking in a little Christmas music. I do this at home when Justin&#8217;s at work because he&#8217;s the &#8220;<em>no Christmas music &#8217;til after Thanksgiving&#8221;</em> type. It was a post-church lunch celebration and the only way I could pull it off was to host it in the newly renovated {so-close-to-being-done} garoffice! I had to tell her that &#8220;I had it all clean and didn&#8217;t want any kids out there getting it dirty&#8221; in order to keep her out! It paid off. She was thrilled with the surprise and loved seeing her old friends, and it was such a treat for Justin and me too! I made a somewhat hasty decisions to make all the food from scratch&#8230; you know, sweet potato casserole with Baldwin  County sweet potatoes and Baldwin County pecans. Thankfully all the sides were accompanied by fried chicken that I didn&#8217;t fry and a beautiful birthday cake that I didn&#8217;t bake!</p><p style="text-align: justify;">Our sweet <a href="http://thestorywood.com/" target="_blank">friends</a> knew exactly what would bring the birthday girl a GREAT big smile&#8230; post-party they invited her out to ride their beautiful horses. This &#8216;trying to live in two places&#8217; deal can be somewhat challenging. Every time we go home to the brown house we all find such comfort there. I think it&#8217;s the familiarity of our belongings that makes our trips home feel so nostalgic, and the wonderful friends we have there help, too. That&#8217;s my &#8216;coffee pot corner&#8217; in my kitchen pictured above, taken apparently at 6:46 am as the coffee was just starting to fill the pot. I love that little corner of my kitchen and when I go home I appreciate it. I bought that tiny 4-cup coffee pot last year when Justin was gone, it was all I really needed since there was no one to join me for my morning coffee drinking. The kids were in absolute heaven! They love their cousin Sloane and their MommaSis&#8217;, Uncle Chance, Mom &amp; DaddyBoy, so I knew the weekend would not disappoint&#8230; and to top it off our beloved dog Eufaby was there too! The girls slept soundly on the daybed together, until 1:30 am Thursday when I knocked a piece of plywood down the stairwell that was serving as a gate. Have you ever heard a sheet of plywood go down a wood staircase? It&#8217;s all Erika&#8217;s fault, she woke me up and said something about one of my children coughing&#8230; or something. Mom and DaddyBoy have recently purchased a house just a couple doors down from Erika and Chance, so there were many trips back and forth {2 doors down on a gravel road in a neighborhood}. And all trips by car were easily justifiable because who doesn&#8217;t love a Grand Wagoneer, especially one with a green license plate! My goodness life has apparently taken over the time I used to have for blogging. What on earth has happened to me? I certainly want to update more than once or twice a month. How did I used to blog several times a week? Times have changed, our little children are growing so fast right before my eyes and I&#8217;ve been busy with them, trying to cherish every moment. I know the time I have with them at home is so fleeting, its hard to make computer-time any kind of priority. On the other hand, I want to record these precious moments that we have together. I am so thankful for her sweet life, what a blessing this angel is to our family. Smart, sweet, helpful, and kind! Besides liking horses, she&#8217;s also into being &#8220;teacher&#8221;. It&#8217;s funny how often she and Paige remind me of Erika and me. I often send Erika text pictures of the girls and say, &#8220;Look, it&#8217;s Darby &amp; Erika!&#8221; I&#8217;ve also been reminded lately that I do things that my mom used to do&#8230; like raid their Halloween candy loot for Almond Joys. Would you believe that NONE of them got a single Almond Joy! All that trick-or-treating for nothing!</p><p style="text-align: justify;">So, back to the teacher business. I was shopping at Claire&#8217;s and spotted some &#8220;fake&#8221; glasses. I could not resist. Erika, Cousin, and I used to wear fake glasses {from Claire&#8217;s} when we were little so when I saw them I knew the girls would love them. I figured every &#8220;teacher&#8221; needed glasses and I couldn&#8217;t leave her pupil out. You got us sunglasses?&#8221; I was all, &#8220;No girls, these are fake glasses, aren&#8217;t the cool!?&#8221; Then I had to beg them to put them on for a picture. Thank goodness they were on the $1 rack. My kindergartener &amp; 1st grader are both proud to be drug free, and Morgan told me she had better things to do than drugs. I won&#8217;t get on a soapbox about teaching kindergarteners &amp; 1st graders about drugs. I tried to tell myself that sadly in our world there are some kindergartners &amp; 1st graders out there who do know about drug abuse and hopefully educating them about the dangers is beneficial to their little souls. I read sooo many recipes, have heard rave reviews and not a single person mentioned that your house would smell like a &#8220;dead mammal&#8221;. They taste like baby cabbages, so I&#8217;m not sure why I didn&#8217;t realize they&#8217;d smell like them too.</p><p style="text-align: justify;">Being at the beach in the fall looks a little different than it does in the summer. It&#8217;s usually a challenge to get a smooth texture, as the whole wheat flour tends to be a little more &#8220;gritty&#8221;, turning out sorta dense baked goods.  Well this recipe is certainly the exception!</p><div>3 1/2 cups whole wheat flour {I used King Arthur&#8217;s organic}</div><div>1 1/2 cups sugar {I used organic evaporated cane juice sugar}</div><div>2 tsp baking soda</div><div>1 tsp cinnamon</div><div>1 tsp nutmeg</div><div>1 tsp salt</div><div>Mix dry ingredients.</div><p>&nbsp;</p><div>1 can pumpkin (15 oz)</div><div>4 eggs</div><div>1 cup coconut oil {I used Kelapo and warmed it so that it was a liquid, this take just a few seconds in microwave}</div><div>2/3 cup water</div><div>1 tsp vanilla</div><div>Mix wet ingredients.</div><p>&nbsp;</p><div>Pour wet ingredients in the center of dry.  Mix together until well incorporated.</div><div>Pour into 3 bread pans that have been greased &amp; floured.</div><div>Bake at 350 degrees for 45-1 hr, until a knife comes out clean.</div><p style="text-align: center;"><a title="kelapo by Darby's Pictures, on Flickr" href="http://www.flickr.com/photos/28352717@N02/6254496885/"><img src="http://farm7.static.flickr.com/6102/6254496885_b023734196_o.jpg" alt="kelapo" width="650" height="433" /></a></p><p style="text-align: justify;">As I mentioned above, the folks at <a href="http://www.kelapo.com/" target="_blank">Kelapo</a> have set up a promo code for y&#8217;all to use! I couldn&#8217;t whip some up fast enough to spread on the pumpkin bread. This is what I came up with:</p><p><strong>Maple Cinnamon Cream Cheese Spread</strong></p><p>8 ounces of cream cheese {softened to room temperature}<br /> 1/2 teaspoon cinnamon<br /> a couple drops of vanilla<br /> 3 Tablespoons real maple syrup {or more to your liking}</p><p style="text-align: justify;">Whip cream cheese with mixer until smooth. Mix in cinnamon, vanilla, and maple syrup. {You can add more maple syrup but my opinion is 3 T is just right sweetness-wise.} Refrigerate until set and the best part is it&#8217;s always spreadable even straight from the fridge.</p><p> Next up&#8230;</p><p style="text-align: center;"><a title="brownie2 by Darby's Pictures, on Flickr" href="http://www.flickr.com/photos/28352717@N02/6213313466/"><img src="http://farm7.static.flickr.com/6110/6213313466_46d85dffdb_o.jpg" alt="brownie2" width="650" height="433" /></a></p><p><strong>Health Nut Brownies {aka Paleo}</strong></p><p style="text-align: justify;">This is my new &#8220;go-to&#8221; brownie recipe. It&#8217;s officially a &#8220;paleo/caveman&#8221; recipe, but I think &#8220;health nut&#8221; sounds more timeless and fitting since the main ingredient is almond butter. Just in case the paleo trend dies, I&#8217;m hoping my &#8220;health nut&#8221; brownies won&#8217;t die with it! Again, this recipe is from my friend Tami and they are delicious&#8230; no one can tell they&#8217;re flourless!</p><p>16 oz of almond butter {this is about a jar + 1/3 of jar, I use creamy<br /> 2 eggs<br /> 1 cup honey {don&#8217;t scrimp}<br /> 1/2 cup cocoa powder<br /> 1/2 teaspoon sea salt<br /> 1 teaspoon baking soda<br /> 1/2 of a 3.5 ounce dark chocolate bar {I use 70% cocoa}, chopped</p><p>Preheat oven to 350.</p><p style="text-align: justify;">Using mixer blend almond butter, eggs, &amp; honey. Add in cocoa powder, salt, &amp; baking soda. Fold in chopped dark chocolate. Spread into a greased {glass has best results} 9&#215;13 pan &amp; bake for 20 to 25 minutes. Let cool before cutting.</p><p style="text-align: justify;">Just to be sure we&#8217;re clear&#8230; this brownie recipe calls for no sugar and no flour.
