Over the past few years, my parents and I unintentionally started a new tradition when I visited for the holidays. A few evenings during my trips, we gathered in the family room after dinner and turned on the TV.</p>
<p>With my dad in his favorite armchair and my mom in her usual place on the leather sofa, often with a golden retriever curled up beside her, I snuggled underneath a blanket in a rocking chair on the other side of the room. My mom picked up the remote and deftly navigated to Netflix.<br />

Moments later, the opening melody of a festive show played through the speakers… A holiday episode of “The Great British Bake Off!”</p>
<p>Mesmerized by the contestants’ skills, as well as their witty banter and charm, we sped through each one and marveled at their creations for every baking challenge. Beautifully iced cookies, intricately decorated cakes, meticulously crafted sugar work, and delicately twisted pastries filled the screen… If only they filled our stomachs too!</p>
<p>Although incredibly impressive and inspiring, reality sank in shortly after seeing the winners celebrated and crowned. I would’ve loved to spend hours making the same festive and elaborate treats, just like those bakers, but with my jam-packed schedule during the bustling holiday season, I lacked the time!<br />

Instead, I often turn to simpler things, like this <span style="color: #000000;"><strong>healthy oatmeal gingerbread loaf</strong></span>. It’s much faster and easier to make than those “Great British Bake Off” creations, but it’s just as festive and flavorful!</p>
<p>Also, unlike most of the dessert-oriented recipes on the TV show, this quick bread is completely healthy enough for breakfast! And gingerbread for breakfast is the perfect way to start any morning during the holiday season… Especially Christmas Day!<br />

One December, my close friend and I met for coffee before she flew to her parents’ house for the holidays. We picked a new Starbucks close to the freeway, making the drive easy for both of us. When I pulled open the glass door that Saturday afternoon, it looked like half of the town shared the same idea!</p>
<p>People filled practically every table, crammed around them like brightly wrapped gifts under a Christmas tree, with smiles on their faces and hands curled around bright red paper cups. I waited by the entrance, one eye on the parking lot and another on a table where a couple had just stood and started pulling on their coats.<br />

My friend walked in right as the strangers cleared their used napkins and cups, so I gave her a huge bear hug before we snagged the now empty chairs. She grabbed our drinks, and although tempted by the aromas of seasonal peppermint mochas and gingerbread lattes, I saw the long line of customers waiting for the baristas to craft their specialty beverages… So I opted for plain black coffee. Much faster and easier!</p>
<p>Besides, the main point of us meeting was catching up and spending time together — not the drinks! We stayed for nearly three hours, laughing and trading stories well after the sun disappeared and stars twinkled in the sky outside. Cozy, warm, and fueled by caffeine, we enjoyed every moment of our holiday coffee date.<br />

We’ve both moved since then — her overseas and me five hundred miles away — so we mainly keep in touch by text these days. One fall during high school, my mom and I started a new afternoon routine. She wanted to stretch her legs after sitting at her desk at work and the ensuing commute home, so upon arriving at our house, we both changed into sneakers and headed outside.</p>
<p>We dashed across the busy street to the housing development on the other side. With large homes and their sprawling yards, plus a few different grassy parks, it provided a safe and spacious area for exercise, and we followed the sidewalks and quiet roads for a mile or two.<br />

Our routes varied, especially as the days grew shorter and cooler. Our house and that neighborhood sat at the base of substantial hills, and the sun started sinking earlier in the day, plunging the homes closest to it into deep shadows… So we began beelining for the farthest side, hoping to catch a few more rays of sunshine before they completely disappeared!</p>
<p>Once back at our house, I stopped by the kitchen for a snack before cracking open my textbooks to start my homework. Complicated math problems, science equations, history timelines, grammar studies… I craved something cozy and comforting before diving into all of that!<br />

<p>Knowing me, I probably would’ve eaten them for breakfast too… With my chaotic high school mornings (I had to be on the football field by 7 am for marching band practice!), a quick grab-and-go healthy option like this definitely would’ve come in handy!<br />

One spring, I flew to Michigan for a short retreat. The hostess planned a fantastic itinerary for us and filled each day with a variety of workshops, relaxation time, and amazing meals. (We were a group of <em>food</em> bloggers, after all!)</p>
<p>The first morning, she booked a reservation at a local brunch spot downtown, situated a few blocks away from our hotel, and we walked over in the overcast, slightly drizzly weather. A warm and cozy atmosphere greeted us as soon as we slipped through the door, with bright yellow walls, exposed brickwork, and tile mosaics covering the pillars lining the main dining room, and a waiter led us to a table in the center with a gorgeous view of our eclectic surroundings.</p>

Although “one of everything, please!” felt like the only right answer, I managed to narrow it down to a single choice. The waiter scribbled down our individual orders, yet he returned moments later… With a gigantic cinnamon pecan roll for us to share — topped with a towering scoop of cream cheese frosting and a generous dusting of powdered sugar — completely on the house. Somehow, he intuitively knew the way straight to our hearts!</p>
<p>Eventually, he carefully set down each of our entrées before us. We all requested something different, so the table ended up covered with almost half of the menu! My meal came with a side of thick, creamy oatmeal filled with fresh blueberries, yet I almost forgot to eat any… The sweet people and lively discussion about our next fun event distracted me!<br />

I recently found photos from that fun brunch while nibbling on a cookie after dinner, and that magical moment served as the inspiration for these <span style="color: #000000;"><strong>healthy blueberry oatmeal cookies</strong></span>! Yes, my mind can work in random and mysterious ways… Combining memories from the past with present day actions and packaging them into one delicious sweet treat!</p>
<p>Soon, the oven hummed as tempting aromas swirled through my kitchen, just like the ones from the farm-to-table restaurant on that chilly Michigan morning. The older I get, the more I feel like life constantly speeds along on fast forward. Didn’t 2025 just start? How is it already June?? Where did all of the days and weeks and months go???</p>
<p>I could really use a pause button in life… Or at least a way to slow things down. So much has happened, especially in the past few months, and I’d love to stop and catch my breath before summer flies by in the blink of an eye!</p>
<p>But until someone brilliant figures out how to do that, perhaps the next best thing is taking a few moments to simply sit and chat. Trading stories, sharing highlights, talking about what’s been going on behind the scenes… And maybe, just maybe, avoid the massive mountain of baking dishes currently piled up in my sink.</p>
<p>So pour yourself a cup of coffee or tea — or even water, if that’s what you’re craving! — and pretend like we’re sitting across from each other at the local coffee shop and catching up. Upon graduating, I began trying other breakfasts. For Christmas one year, my brother and I flew to Arizona to visit our grandparents. Mom headed out before us and booked us flights that allowed us to maximize every moment with family, which meant…</p>
<p>Waking up at 4 am to leave for the airport.</p>
<p>We effortlessly cruised along the barren freeways in the pitch-black darkness that morning, making it to the terminal in record time. However, that luck ended the moment we passed through the sliding glass doors into the building. The chaos of the holiday season meant the security checkpoint line snaked through the walkways, wrapped around itself, and wound all the way around the baggage claim room too. It would’ve taken almost two hours to shuffle forward and finally pass through, at which point we would’ve missed our flight…<br />

So with crossed fingers, we darted over to the second terminal. Bingo — only four families waited in line there! We quickly breezed through and rolled our carryon bags down the back hallway connecting the two terminals to reach our gate.</p>
<p>With zero nonstop flights to the small airport closest to our grandparents’ town, we disembarked in Las Vegas for our connection. We walked around the shops and stalls in search of breakfast and caffeine and to stretch our legs while we waited, yet almost every line looked as long as the TSA checkpoint. Miles and miles of people as far as we could see!</p>
<p>Surprisingly, Starbucks had the shortest queue, so we joined the end of it. When we reached the cashier, I immediately realized why… There was virtually nothing left in the glass bakery case and chilled snack shelves!</p>
<p>I ordered a tall black coffee, opting for something simple and quick, then headed back to the gate. Despite the massive crowds, we managed to snag two seats next to each other, and we pulled out snacks from our backpacks to nibble on instead. Nuts and dark chocolate… Quite the breakfast!<br />

Since the holidays and travel chaos often sneak up on me, I’m planning ahead this year and preparing easy, portable, on-the-go breakfast recipes to avoid any repeat experiences of that crazy Christmas. These <span style="color: #000000;"><strong>healthy gingerbread oatmeal muffins</strong></span> are at the top of my list!</p>

During high school and college, I helped prepare nearly every dish for our Thanksgiving feast, other than the turkey. My dad handled that, preferring to barbecue it outside on his charcoal grill, and I stayed firmly planted in the kitchen, carefully reading our well-worn family recipe cards, measuring ingredients, and mixing them together by hand until tantalizing aromas wafted throughout the entire house.</p>
<p>Despite small gatherings with no more than six people, we still cooked enough to feed a small army. Stuffing, cranberry salad, green beans, mashed potatoes, <a href="https://amyshealthybaking.com/blog/2014/11/20/maple-sweet-potato-casserole/">sweet potato casserole</a>, <a href="https://amyshealthybaking.com/blog/2017/11/02/the-ultimate-healthy-whole-wheat-rolls/">whole wheat bread rolls</a>… And especially dessert.</p>
<p>At the bare minimum, we baked both a <a href="https://amyshealthybaking.com/blog/2015/11/05/the-ultimate-healthy-pumpkin-pie/">pumpkin pie</a> and pecan pie completely from scratch. Anything else, whether <a href="https://amyshealthybaking.com/blog/2020/08/31/healthy-one-bowl-flourless-vegan-pumpkin-chocolate-chip-cookies/">soft pumpkin cookies</a> or cozy <a href="https://amyshealthybaking.com/blog/2015/11/10/skinny-pumpkin-cheesecake-bars/">pumpkin cheesecake</a> or other festive treats, was always welcome at the table — but those two pies were absolutely mandatory. Certain family members might have mutinied and jokingly refused to join us or headed to neighbors’ houses instead if we didn’t serve both!<br />

We always ended up with leftovers of everything, so the morning after, when I pulled open the refrigerator to reach for slices of whole grain bread for toast or the carton of milk to splash into cereal for breakfast, those two pies stared back at me… Tempting me with their flaky crusts and sweet fillings and oh so irresistible flavors.</p>
<p>On multiple occasions, I nearly caved and snuck a slice. With its luxuriously creamy texture and extra cozy spices, the pumpkin was my favorite! A small piece of that for breakfast sounded like pure bliss, yet I rarely mustered up the courage to follow through. I didn’t want to upset anyone else by eating more than my fair share of the pies!<br />

I would’ve looked straight past the pies and immediately reached for these <span style="color: #000000;"><strong>healthy pumpkin oatmeal breakfast cookies</strong></span> if they were in our refrigerator on that day though — or any other fall morning! They remind me of pumpkin pie with their cozy spiced flavor, and they have the same texture as regular “dessert” oatmeal cookies. However…</p>
<p>Unlike those Thanksgiving pies, these definitely qualify as a breakfast food! They’re also portable and wonderful for busy mornings, meal prepping, and make-ahead breakfasts or snacks. (Whether for kids, teens, adults… Or all of the above!)<br />

For my last two trips to <a href="https://amyshealthybaking.com/blog/2022/08/24/kauai-22/">Kauai</a> and the <a href="https://amyshealthybaking.com/blog/2019/08/04/big-island-hawaii-19/">Big Island</a>, I booked the only nonstop flight offered by one of my usual airlines from my local airport. Surprisingly enough, it cost the same as other options with connections, and whenever possible, I strongly prefer avoiding the stress of dashing through unknown terminals while hauling an occasionally unruly wheeled bag in search of departure monitors, the ladies’ room, and my next gate.</p>
<p>Before those Hawaiian vacations, I excitedly packed my suitcase with all of the essentials for paradise. Shorts, tank tops, sundresses, swimsuits, coverups, sunglasses, sunscreen, sandals… Along with pajamas, toiletries, and spare chargers. I knew I could easily purchase anything I forgot, but I still triple and quadruple checked my list. I wanted to maximize every moment of my relaxation time by the pool and beach!</p>
<p>The night before each flight, I climbed into bed, turned out the light, and set my alarm…<br />

For 4:45 am. Apparently, the reason each nonstop flight was so affordable was because of its early departure time from the mainland!</p>
<p>So in the pitch-black darkness, I threw off the covers, hurriedly dressed, and prepared to leave my house before the rest of the world even stirred. With so few people awake and in line, I quickly passed through the security checkpoint at the airport and found my gate with plenty of time to spare for a restroom stop and reorganizing my carryon items.</p>
<p>You know the drill… Grab a charging cord from one pocket, phone from another, books and magazines in a different slot, and a spare jacket or another extra layer accidentally shoved underneath everything else towards the bottom. (No? Just me?)</p>
<p>In my haste to arrive at the airport on time — yet still squeeze in a little extra sleep — I skipped breakfast before leaving the house. I knew the terminal offered plenty of options varying from warm bagels and fresh fruit to egg sandwiches and breakfast burritos to jumbo muffins and gooey cinnamon rolls…<br />

In elementary school, one of my closest friends lived right around the corner from my house. We met for play dates at least once a week, and as we grew older, some of those transitioned into sleepovers on the weekends.</p>
<p>After lots of time dressing up our dolls, watching Disney movies, and whispering to each other in her bunk bed in the dark (to avoid her mom overhearing and reprimanding us to go to sleep!), we woke up early the next morning and bounded downstairs for breakfast. Still in our PJs, we clambered up onto dining chairs while her mom opened the cupboards.<br />

Her mom had established a breakfast cereal rule for their house before we started kindergarten. She insisted on wholesome options on weekdays, like plain corn flakes or Raisin Bran, but her daughters could pick anything they liked on weekends and special occasions. Cinnamon Toast Crunch, Lucky Charms, Cap’n Crunch, Cocoa Pops, Golden Grahams… Anything on their kitchen shelves was fair game for our slumber parties!</p>
<p>Yet on chilly weekend mornings, we gravitated more towards hot breakfasts: buttery toast showered with cinnamon sugar, jam-filled toaster pastries drizzled with icing, and even “fancy” bowls of oatmeal. Her mom bought fun flavors like strawberries ’n cream and dinosaur eggs, where the hot water melted the icing eggs to reveal dinosaur-shaped sprinkles underneath.</p>
<p>Those felt extra special compared to the oatmeal options at my own house. My mom mainly bought apple cinnamon — partially because my brother and I were picky (yet we still ate apples almost every day!) — and never strawberry or dinosaur eggs… So those quickly turned into new favorites!<br />

And now, when I whip up bowls of these <span style="color: #333333;"><strong>healthy strawberry protein overnight oats</strong></span>, those childhood sleepover memories come flooding back… But unlike in elementary school, I can enjoy this oatmeal any day of the week!</p>
<p>It’s made with entirely wholesome ingredients, yet it’s just as fruity and satisfying as those little packets I remember eating at my friend’s house on weekends. This oatmeal recipe is also full of protein and incredibly easy to make!<br />
