<p>Berries are abundant and affordable these days. There is nothing better than sugar-free homemade jam. Imagine yourself eating warm bread with jam served with freshly squeezed orange juice. Sounds like heaven to me. This jam is sweeten with honey and thicken with pectin. It could last up to three months if stored in the refrigerator. </p>

<h6>Mixed Berry Jam</h6>
<p><h7> Difficulty: Easy  &nbsp;  &nbsp;  &nbsp;  &nbsp; &nbsp; &nbsp; Yield: 1 lbs 12 oz </h7><br />

<h8>Ingredients</h8></p>

<li>580 g Strawberries</li>
<li>110 g Blackberries</li>
<li>250 g Blueberries</li>
<li>200 g Honey</li>
<li>Juice of 1 Lemon</li>
<li>2 Tablespoons Pectin</li>
</ul>

<p><h9>Procedure</h9></p>
<p style="text-align: left;">
<p>Cut the strawberries into small chunks. Place the strawberries, blackberries and blueberries in a saucepan at medium to low heat. Let it simmer for about 15 minutes. Add the honey and lemon juice. Stir occasionally. Continue to simmer. The fruits will release their own juice. Press the fruits down with a wooden spoon to break them apart. Cook for 30 minutes at low heat. Add the pectin to thicken and stir well to combine it with the mixture. </p>

<p>Spoon the mixed berry jam into jars. Let the jam cool to room temperature. </p>
<p style="text-align: left;">
<p>You can store the jam in the refrigerator for up to 3 months.</p>

<p>Today was my last day in school for the semester. As I look through my video files, I happened to see one of the trial shoots I did in my kitchen for a webshow that didn&#8217;t make it here, because I was not 100% satisfied with the quality of the image. I am a perfectionist and I like to deliver my best. So I said to myself, &#8220;Just because the video didn&#8217;t make it, it doesn&#8217;t mean I can&#8217;t share the recipe&#8221;. This recipe is from my mom. She makes the best Flan you can ever taste, experience and enjoy. She does it with the bain-marie method which is a little more complicated to do because you may have  a lot of water activity and ruin the flan. This version is oven baked Flan: The simple way.</p>

<p><h7>For the Caramel</h7></p>

<li>200 g White Granulated Sugar</li>
<p style="text-align: left;">
<p><h7>For the Custard</h7></p>

<li>4 Eggs</li>
<li>1 Can Evaporated Milk</li>
<li>1 Can Condensed Milk</li>
<li>1 Teaspoons Vanilla Extract</li>
<li>Pinch of Salt</li>
</ul>

<p><h9>Procedure</h9></p>
<p style="text-align: left;">
<p><h7>For the Caramel</h7><br />
Pre-heat the oven at 325° F. Place the sugar and a little water in a stainless steel pot over medium heat. As the water cooks down, brush the sugar crystals that will form on the sides of the pan. Once it begins to caramelize, swirl the pot to caramelize evenly. Pour an even, thin layer into each ramekin or into a baking pan.</p>
<p style="text-align: left;">
<p><h7>For the Custard</h7></p>
<p style="text-align: left;">
<p>In a bowl, combine the eggs, evaporated and condensed milk using a whisk. Add the vanilla extract and the pinch of salt. Strain the mixture through a fine chinois into a bowl. Skim the foam from the surface.</p>
<p style="text-align: left;">
<p>Place the ramekins in a hotel pan. Fill the ramekins with the custard mixture. Add boiling water halfway to the sides of the molds. Bake for 35 to 40 minutes. The custards are done when the middle no longer moves when shaken. Once the custards are set, remove from the mold immediately with the help of a plate {Place plate on top, turn it upside down.}.</p>

<p>For some time now, I have been working on another side of Fresalina. The new site will be as accessible as this one, but completely in Spanish for my Hispanic community. It is very exciting and fulfilling. Most of the recipes will be translated and many more will be added like different types of ceviche and the famous Dominican cake. Hungry already?
