And it&#8217;s delicious and versatile. It is not, however, something that is husband approved. So I when I am in the mood I mix up a big bowl and throw it in the fridge for a weeks worth of quick lunch fixin&#8217;s. Quick, easy, cheap makes mouth happy kinda salad.</p><p>&nbsp;</p><p>&nbsp;</p><p>&nbsp;</p><p>&nbsp;</p><p><span style="text-decoration: underline;">Tabbouleh Salad</span></p><p>3 cups water</p><p>2 cups bulger</p><p>1/4 cup mint, chopped</p><p>2 bunches parsley, chopped</p><p>2 bunches green onion, chopped</p><p>1 large english cucumber, diced</p><p>2 28oz cans diced tomatoes, rinsed and drained</p><p>1/3 cup each of olive oil and lemon juice</p><p>salt and pepper</p><p>1. Bring water to boil in medium sized pot. Take off heat and add bulger, cover. Let set for 45 mins.</p><p>2. Add remaining ingredients, stir until well combined. No need to add dressing as the tabbouleh takes care of that already. My first task was getting things unpacked and functional inside. Next task was to start having fun in my glorious garden space outside.</p><p>&nbsp;</p><p>&nbsp;</p><p>Even though we moved in the tale end of summer, I was hoping to get in lots of gardening time. And by gardening time I really mean weeding, trimming, and digging up time.</p><p>This place has been neglected for awhile. All the trees and bushes need trimming. All the perennial plants need serious love. Everything else is covered in a blanket of thistle bushes, ferns and horsetail ferns. Its getting colder and wet. It will take me though fall and winter to get the yard back in shape. Hopefully not longer. After 29 long hours of labor, our William was born by cesarean on July, 29, 2009.  I exploded in tears, mostly from relief , thankful he was alive and strong and beautiful and I could finally hold him in my arms. He had the cutest little lips, munchable cheeks, striking blue eyes and the most perfect strawberry blonde hair. I fell completely in love that day.</p><p>&nbsp;</p><p>And more in love each day since. I love how he makes me laugh and has the sweetest heart. My greastest pleasure these days is watching him grow and learn and discover his own opinion, likes and dislikes. He is stubborn with an attitude, just like his mommy and daddy. He<a href="http://cdn.gardengal.org/wp-content/uploads/2011/07/SAM_0851.jpg"><img class="alignright size-medium wp-image-59" title="Big boy!" src="http://cdn.gardengal.org/wp-content/uploads/2011/07/SAM_0851-300x225.jpg" alt="" width="300" height="225" /></a> has the greatest facial expressions EVER. He is very serious about being a complete goofball. He loves his kitty cats, cars, blanket and being outdoors.</p><p>So here is to my sweet William, here is to two of the best years of my life. Soon I will have garden space, garden space like I have never known.</p><p>In just a few short weeks we will be signing the lease to GardenGal heaven and the daydreaming and plant planning has already started.</p><p>The reality of a bigger place with lots of rooms, big living spaces, fantastic proper kitchen (gas stove!!!!), enormous laundry room (so big I will be making it into a craft space as well!!), amazing views inside and out, and loads of outdoor possibilities is just starting to sink in.</p><p>So excited to finally be able to properly get my hands dirty and have space to breathe! Well my husband did.</p><p>As we approach our son&#8217;s second birthday it has become very apparent that we no longer are a good fit for apartment living. We are bursting at the seams, we all need more space, more rooms, Will and mommy require more outdoor play space, and daddy needs a office and a bigger BBQ!</p><p>So insert my husband&#8217;s miraculous find.</p><p>4 bedroom, 2 large living areas, extra large laundry room and beautiful kitchen. Sounds great, right. It gets better.</p><p>2 levels of glorious deck space with sweeping views of the Pudget Sound. Yard includes a wooded walkway to the beach. Yes, I say, a beach in our backyard!!
